Healthy meal planning with… Colour My Plate Some meal plans are good while others can be downright awful – and I’ve tried too many to count. But I believe I’ve sourced the best yet and it’s called Colour My Plate. Meals so far have included keto lasagna, salmon niçoise salads, and healthy kibbeh – and while portions are smaller, the quality of ingredients and flavour profiles are making this plan much easier to stick to. Eating anything Chef Moon cooks at… Sushisamba

I began raving about Sushisamba three years before it opened its doors in Dubai. And with good reason. The What’s On award-winning restaurant is undeniably the best addition to Dubai’s dining scene in recent years, with its ambience and service all top-notch. But mostly, we come here for the food. The ever-humble executive chef Chef Moon Kyung Soo’s menu is truly faultless. My top picks? The Chilean seabass straight from the Robata, the flavour-packed Samba Rolls and the tasty yellowtail taquitos. @sushisambadubai

Working my way through the menu at… High Joint You recently named homegrown High Joint as your favourite burger spot in the city at the What’s On Awards 2022, and I am in full agreement. Despite being a bit of a purist when it comes to my usual burger selection (bun, beef patty, salad, sauce), their menu has shown me the benefits of going off-piste. The spicy mango slaw chicken burger, for example, taught me that fruit can be an acceptable burger topping. But its recent opening in Motor City’s new food hall has unlocked some wild taste experiences of which the double ribs high platter, with mesquite smoked ribs and truffle bacon mac and cheese, is a notable example. @high.joint

Rediscovering my love for… Old Dubai At What’s On, we love to tell you about all the latest and the hottest new openings in town, be it a new restaurant, hotel or attraction. However, as the saying goes, ‘old is gold’ and during a recent art event I was able to explore a part of Dubai I haven’t been to in a long time despite living so close by – Bur Dubai. f it feels like Maroon 5 have been making music for decades, it’s truthfully because they have. Prior to forming in 2001, Adam Levine and his bandmates had been known as Kara’s Flowers since 1994 – a stellar career by any musical stretch. The band struggled to find their feet in the ‘90s, bouncing from genre to genre trying to discover the poprock-indie sound we know from them today. Under the new name of Maroon 5, their debut album Songs About Jane – released 20 years ago (and yet we still remember every word to This Love) – is what propelled the band into stardom, eventually going quadruple platinum in 2005. It Won’t Be Soon Before Long was the follow-up album, released in 2007 and welcomed features from Rihanna (on If I Never See Your Face Again) and a Mark Ronson remix of Wake Up Call that featured a verse from Mary J. Blige. Cross-genre collaborations became somewhat of a signature for the band, who have featured everyone from Stevie Nicks, Megan Thee Stallion and Cardi B, to SZA, Future and Christina Aguilera, to name a few. Subsequent releases dominated the charts, cementing Maroon 5 in American pop culture, a statement even more true thanks to Levine’s eight-season stint as a coach on the American version of The Voice. His likeable persona is arguably attributable to the phenomenal success of Maroon 5, as his career delicately dances between building his own profile and his undeniable loyalty to the band. Achieving such longstanding success can only be possible with immense work and dedication, especially towards a fan base that has grown from adolescents to adults throughout the same time. Staying relevant across such a timespan is a sign of true talent, and something that can be said for only a handful of noughties musicians.

It should come as no surprise then that not only are Maroon 5 still touring, but they’ve also expanded their self-titled world tour to include the Middle East, as for the first time ever Maroon 5 will play in Abu Dhabi, taking to the stage at Etihad Arena on May 6. This will mark their third visit to the UAE, after performing in Dubai back in 2011 and at the Coca-Cola Arena in 2019. If the band’s 2019 Superbowl performance is anything to go by, fans should expect a big night, complete with all the bells and whistles, and the air filled with nostalgic anthems of the past

DEMON DUCK It’s all about the Peking duck at this new Caesars Palace destination

lvin Leung (nicknamed the demon chef ) is known for what he calls ‘X-treme Chinese’. His x-rated dishes are known to provide a shock value that is far too naughty to grace the pages of What’s On (just run a quick Google search and you’ll soon see what we’re talking about). However, Leung’s other restaurants – in Hong Kong and London – have garnered a constellation of Michelin stars, meaning that his dishes shock in a more positive sense, too. At Demon Duck, his newest restaurant located in Caesars Palace Dubai, Leung’s cuisine remains in the realm of the Far East, with riffs off Cantonese, Malaysian and Korean classics. But the star of the show is the Peking duck. For those who’ve only ventured as far as the crispy aromatic duck from your local Chinese, best be prepared for a more ritualistic experience here. Peking duck is aromatic duck’s regal aunt. Rather than being met with a deep fat fryer, Peking duck is steamed or plunged into boiling water, dried, and left to hang for a day, before being roasted so that the skin becomes like amber glass. But it is costly. Here it’s Dhs625 for a whole bird, with no options for smaller portions. Ouch. It’s a huge, shimmering beauty of

a bird, though. The staff bring shredded cucumber and hoisin sauce alongside bamboo steamers of buns infused with calamansi – a Philippine lime. The duck arrives on two huge plates, one with sliced duck, and the other with pieces on the bone. It’s enough to feed an army, but goodness is it delicious: soft meat, juicy fat and crispy skin with the soy and caramel kick of the hoisin, all cradled within a pillowy bun. Come with a group early evening (lest the duck be sold out), and enjoy. Other highlights on the menu should you have space: the soft-shell crab spring roll with xo sauce (Dhs135) is an elevated dish that doesn’t scrimp on the crab. Equally luxurious is the wasabi shrimp on toast, that promises a lovely slick crunch with a whisper of wasabi heat, while the

black and white Dover sole with white cream sauce and black seaweed, is a reimagined classic that looks heavy on the plate but instead has a warm comforting flavour. For our visit, we sat in the restaurant’s lovely, zen-like garden, but with soaring temperatures, a spot inside next to the massive sculpture of a duck with horns might be best. Thankfully, the bustling kitchen and the sound of sizzling ensure the atmosphere doesn’t get staid. CANARY CLUB The newest, coolest spot in town, but with Joey Ghazal at the helm, did we expect anything less?

here’s a lot of expectation resting on the shoulders of Canary Club, the newest opening from Joey Ghazal, the restauranteur behind Dubai’s beloved The Maine restaurants. So it’s with excitement that we head to the grounds of JLT’s Banyan Tree Residences, during Canary Club’s second week of operation. A neon sign lit in canary yellow emblazoned on the side of the building tells us we’re in the right place. A trio of glamorous hostesses dressed in shimmering emerald green jumpsuits offer one of the warmest welcomes we’ve ever received. Our friends don’t even greet us like this. A short lift ride away and we’re transported from ’22 Dubai to ‘70s California. There’s no two ways about it – Canary Club looks fabulous. It’s a rattan, macrame and bamboo-lovers’ dream. Cosy booths are finished in dark leather and wood, there are botanicals climbing the stone

walls, and beaded curtains add some of that retro whimsy. Intricate details abound, and whoever the chandelier atelier is for all of Ghazal’s restaurants is a name we need in our contact book. The menu reads as an ode to California, with influences from Japan, Mexico and across Latin America. Ceviches, sushi, salads and bowls sit alongside a robata grill section, plus a collection of pizzas finished with divisive toppings like chicken and pineapple; short rib and burrata; and oyster mushroom. We start with a duo of ceviches, both perfectly presented. The yuzu scallop (Dhs95) is full of fruity flavour, with thin slivers of scallop covered in a cucumber yuzu, topped with crisp puffed rice and just a hint of red chilli. A Peruvian tropicola seabass ceviche (Dhs65) is another appetising mix of sweet and spice, with cubes of seabass, yellow pepper and passionfruit swimming in a light coconut milk. We opt for the spicy tuna (Dhs85) from the sushi options, served on a glazed plate shaped like a palm leaf. The taco-maki options all appeal, and having tried both the tuna belly with caviar and wasabi (Dhs120) and the wagyu tataki with seared foie gras (Dhs95) we don’t know why they’re not on more menus. Nori and sesame shaped into a taco shell is lined

with sticky rice, before being packed with the aforementioned toppings. From the mains, we choose to share the blackened cod (Dhs160) and a side of crunchy steamed broccolini (Dhs35), both of which are excellent. The mirin marinade is deliciously thick and adds a rich glaze to the cod. We order the flourless chocolate cake (Dhs58) to finish a fantastic meal, and it’s as indulgent as we’d hoped. The crunchy coconut base is topped with creamy chocolate and a sprinkling of sea salt, served with a perfectly-risen meringue. JLT is one of the city’s most exciting foodie neighbourhoods for homegrown restaurants, but Canary Club has found a gap in the market. And we’re clearly not the only ones that think so, with every seat in the house full within days of opening. Is chef Gregoire Berger’s next chapter a story worth telling? ike many, chef Gregoire Berger used the pandemic to reset, departing Atlantis, The Palm after six years as chef de cuisine of Ossiano last year. But after a short stint back to his beloved Brittany, the acclaimed chef returns. But he’s brought back more than happy memories to Dubai, using France’s most northwestern region as the inspiration for his next chapter at Ossiano – an 11-waves tasting menu. Décor-wise, Ossiano remains Chef an underwater kingdom, with Gregoire Berger sparkling chandeliers and white marble tables that shimmer against the backdrop of the resort’s stunning aquarium. While the setting remains unchanged, the menu is entirely new. Not to chef Berger, of course, who laces his childhood and travels across the globe into Metanoia, the 11-waves tasting menu that pays homage to the ocean. To begin, ‘Snacks of the Sea’ include a crisp nori tartlet filled with unagi and chicharon, shaped into seaweed stems. Our favourite is the squid and anchovy, although the king prawn is delicious when dunked in a lobster aioli. Not long after they’ve been cleared, a bowl bubbling with dry ice signals the arrival of our next ‘wave’, a dish of creamy cauliflower, cubes of fresh trout and an airy seawater foam that adds a

welcome salty taste. We’ve been following the menu thus far, but chef surprises us next with a secret dish, which he says reflects his ethos that life begins at the end of your comfort zone. Suffice to say, we weren’t expecting a plate of fine slivers of jellyfish, ebi shrimp and oyster seaweed, but it’s a taste sensation. Returning back to the menu with a delicious Brittany brown crab that’s fused with fragrant kari gosse, a combination of popular Moroccan spices – an ode to Berger’s wife’s heritage and the three years they spent there. Each ‘wave’ provides insight into chef Berger and his passion for ingredients, but it’s when we’re invited to the kitchen mid-meal that we get a real feel for the life of this culinary mastermind. Here, he presents a sorbet made from leaves that grew at his grandmother’s Brittany home. It has a hint of lemongrass and chili with a white chocolate coating. We lick the spoon clean. The following courses are presented on plates that further play into the narrative. A plate, designed to look like crashing waves, is the base for a lightly seared langoustine with sea

lettuce pesto; and a piping hot dashi, one of the few ingredients not plucked within a 50km radius of Brittany, is served in a whelk shell. Even the scallop, sourced from Rade de Brest, features a potent truffle and artichoke topping designed to look like frost over the Burgundy countryside. The concluding courses are some of chef Berger’s finest work. The Patagonian toothfish, a challenge to source but one of the standouts, is served with a flavourpacked seaweed and garlic emulsion. To finish, a spin on his daughter’s favourite dessert, an apple tart with a biscuit base and white chocolate ganache. Everything about the design of the dishes and the symbolic plates they’re presented on, to the way the staff recite chef Berger’s story with impeccable finesse, is expertly curated. All hail the rein-Carna-tion of Sunday lunch, just as it should be The Sunday roast, or Sunday lunch, is among the UK’s most celebrated food traditions. When it’s right, it can compete with the world’s most-loved national dishes. The centrepiece is roasted meat: typically beef with Yorkshire pudding. It’s served with roast potatoes, an assortment of vegetables, gravy made from the roasting juices and other delightful additions. Debates about what constitutes the ‘perfect’ Sunday roast have been known to last for hours, but at Carna – helmed by the world’s most famous butcher, Italian Dario Cecchini – we’ve surely now found one of the best in Dubai. Choosing what to eat at Carna on Sundays is not up for discussion, which is no bad thing. Instead, the concise yet generous menu presented is served to the table in its entirety. Posh starters – including smoked salmon with shallots, capers, lemons and chives, a prawn cocktail salad, and the deliciously vintage melon and bresola – precede more traditional Sunday dishes: carved beef rump, roasted vegetables, potatoes (both roasted and mashed) and enormous Yorkshire puddings. Adding their take on more unusual sides – a pan of crispy

Brussels sprouts, grilled portobello mushrooms, and a miniature francessina pie with veal belly, and beef cheek. The meat, as you’d expect from a celebrity butcher, is fantastic with a thin sliver of fat on each carved slice to give it oomph. The foot-long Yorkshires provide a hint of crunch but are moreish and moist. The mound of buttery mash potato is so smooth it was surely piped, and the gravy so wonderfully rich, we only wished they’d offer a bigger pot. Two missed marks for us lie with the roasties and the sprouts, the former lacking the crunch we so desired (the hunt for Dubai’s best roast potatoes continues), while the latter were just that bit too sweet. To finish, the most British of desserts: pineapple upside cake, Eton mess and a trifle. Your aunt Betty would be proud. Chef Reif Othman opens a beautiful new restaurant in Chedi Al Bait, Sharjah It seems that award-winning chef Reif Othman – the man behind many of Dubai’s top Asian restaurants, including the very popular Reif Japanese Kushiyaki – is ready for Sharjah domination, having opened a new restaurant at the luxury historic fivestar hotel – Chedi Al Bait, Sharjah. Nomani, which means ‘in between’ in Japanese, offers a menu that fuses Japanese with Korean cuisine, while the chic decor blends well with the Chedi’s calming and demure atmosphere. We started with the ever-so-morish Reif fried wings (Dhs58), which come tossed in gochujang – a delicious fermented chili paste from Korea that gives it a wonderful sweet and spicy flavour. This was swiftly followed by Reif ’s Korean mandu

dumplings delicately stuffed with chicken and shrimp (Dhs68), and the salmon nigiri (Dhs42 for two pieces). For mains, we opted for the whole boneless baby chicken (Dhs108), mildly flavoured with barley miso. Meanwhile, the bibimbap Chilean sea bass (Dhs198), described by our server as a ‘biryani-style dish’, is a simple Korean favourite that’s elevated here using top-class sea bass, rice, fried shallots, tempura nori and edamame. As with most bibimbap, the dish is bought to the table where it is mixed together so you get a taste of all the various flavours with each bite. And, of course, it wouldn’t be a Reif restaurant without a special version of his signature wagyu sando. You can find it on the menu, albeit with a slight ‘Nomani’ Asian twist for Dhs168. For fans of Reif’s unique style of food curation, Nomani certainly hits the spot, offering a selection of many of his favourites with either a fun twist or an upgrade. SUMMER MOVIES Roll cameras, this summer’s blockbusters are gonna cause an absolute scene...

he summer release window is traditionally the time of year when the big studios line up to release their blockbusters, marking a fairly intense change from the art house-style of the pre-Oscars slew. Out with the monochrome, monologuing and subtitles, and in with the summer furor, conceived to get posteriors on seats with big stars and big receipts. They’re action-packed, CGI enhanced, mega budget flights of whimsy filled with gratuitous shots of slow walks away from explosions.

Doctor Strange in the Multiverse of Madness [EXPECTED: May 6, 2022] A lot has happened in the MCU since Dr Stephen Strange first took a running leap into the bilious technicolor eddies of the multiverse back in 2016. We’ve got a new Captain America, half of all life in the universe was snapped out and then back into existence, and then they did that Spider-Man finger point meme thing. But with the chaotic divergent fall-out from the conclusion of Disney+ series Loki, and the dizzying climax of SpiderMan: No Way Home, along with the threat of a mysterious and powerful new antagonist, there’s no rest for the good doctor, who has fourteen million, six hundred and five problems, and we predict the Scarlet Witch might well just be one. 58_What’s On

Legally Blonde 3 [EXPECTED: May 20, 2022] On paper, the premise of the original Legally Blonde movie (2001) doesn’t sound like the formula for an enduring cult classic — girl falls for guy, girl gets guy, couple split, girl attempts to win back guy by putting herself through Harvard Law School and absolutely bossing a legal career. But 21 years, a sequel and a Broadway musical spin-off later and the public’s hunger for the Reese Witherspoon interpretation of Elle Woods has ‘sustained’ without ‘objection’. In fact, despite there being next-to-no plot details anywhere out there in internet land, this third movie, which includes writing credits for the outrageously talented Mindy Kaling and Dan Goor, has already generated quite the buzz.

Top Gun: Maverick [EXPECTED: May 22, 2022] On initial inspection, this movie has some worrying pockets of potential turbulence. It’s a sequel arriving a full three-and-a-half decades after the original, its main star is now nearly 60 (although still somehow manages to look like an Athenian carving), and the trailer teases sections of dialogue that are so spine-tingling corny you could pop them in a kettle and serve them in a concessions stand. The release has also been pushed back several times over the past three years. This time around, the unteachable has become the teacher. Maverick, the impossibly talented flight school clown has been ordered to train four fresh recruits. Of course we’re going to watch it, and of course we’ll revel in its retro-kitsch, nostalgic fun. Weapons hot, it’s time to buzz the tower for one last run. It’s what Goose would have wanted.

Jurassic World Dominion [EXPECTED: June 10, 2022] The Carnotaurus is out of the bag. Following the cataclysmic finale of Jurassic World: Fallen Kingdom (2018), human beings are now forced to coexist in a world with giant murder lizards. This is the third film of the Jurassic World Series (and the sixth of the Jurassic Park saga overall) and sees Chris Pratt teaming up with OG dino dodgers Laura Dern, Sam Neill and Jeff Goldblum to help humanity avoid ending up as an extended velociraptor tasting menu. It’s great that they’ve got the band back together (sans Richard *sobs* Attenborough), but really at this point, if human beings haven’t learned to stop poking the dilophosaurus nest, do we even deserve a happy ending? Where The Crawdads Sing [EXPECTED: June 15, 2022] Adapted from the brilliant Delia Owens novel of the same name, Where The Crawdads Sing is directed by Olivia Newman and stars Daisy Edgar-Jones, Taylor John Smith and Harris Dickinson. Our story begins in the rural hinterlands of 1950s North Carolina — a place in that epoch not known for judicial integrity. Kya, a young and modestly educated girl, is accused of murdering an abusive lover, and whilst this visual interpretation will lose some substance without the glowing descriptive prose of the book, we’re still looking forward to watching the tense construction of doubt and suspicion play out on the big screen.

Lightyear [EXPECTED: June 17, 2022] Before infinity, this Pixar origin story chronicles the genesis of Buzz Lightyear. The almostimpossible-to-dislike Chris Evans is taking the lead on this animated epic, and puts in a studied ‘Tim Allen’ voice performance. Our hero Buzz leads an exodus mission, attempting to save the remaining human inhabitants of a distant colony planet, as it’s slowly reclaimed by a rival community of tentacled inhabitants. And this time, there’s no Woody to scoop him up and gallop away to safety. The trailer is filled with that trademark, multi-level Disney humour and subtle nods to Toy Story. And it’s a Pixar legacy project, so in terms of quality of craft, and box office performance, this is as close to sure thing as you’ll find in cinema. 60_What’s On

Elvis [EXPECTED: June 24, 2022] Baz Luhrmann projects don’t come around that often, but when they do, you are borderline guaranteed a spectacle. His latest, is another celebration of music – a biopic with the limelight focused intently on the undisputed king of rock and roll, Elvis Presley. Taking the titular lead is Austin Butler. Despite initially offering only a passing resemblance to the legend, the trailer showcases a stage charisma that feels hauntingly accurate. Tom Hanks joins the cast as Colonel Tom Parker, the man who ‘discovered’ Elvis, became his manager and helped carve an icon. We’re given glimpses of a world charged with racial tension, the entertainment paradigm shift left in the wake of the first truly global megastar, and the internal void that opens when the lights go off.

Bullet Train [EXPECTED: July 29, 2022] Based on a Kōtarō Isaka novel, directed by David ‘John Wick’ Leitch and starring Brad Pitt in the lead role, there are a lot of reasons why we’re excited about Bullet Train. It’s a heist movie, based on a train with a hitman looking to retire, but is dragged back in for one last score. Ok, it’s not the most original premise, but the elements are there for an action classic, and for that reason, you son of a gun, we’re in.

Thor: Love and Thunder [EXPECTED: July 8, 2022] Taika Waititi’s second crack at Asgardian magic, Thor: Love and Thunder, reunites us with battle-worn Scandinavian deity, and Avenger, Thor. Despite opting out of the third film in the Saga, Thor: Ragnarok, Natalie Portman returns as Jane Foster and if this movie follows a Mighty Thor comic trajectory as Waititi has hinted at, we’re highly likely to see Portman donning her own cape and becoming an avatar of the thunder lord herself. Villainy is supplied by Christian Bale, who’s set to hit screens as Gorr, a bad guy with pretty lofty mission aspirations, even for a Marvel character, and everyone’s favourite ragtag bunch of space bandits, The Guardians of the Galaxy, are also slated to appear. We’ve got nothing but love for the way Waititi tells his stories on screen, how his humour and abstract asides add to the MCU’s tapestry rather than pick away its threads. What’s On_61
