I know, it’s February, the weather’s a bit iffy, and we’re all still a bit broke from Christmas. May as well just stay in, yeah? Netflix? Dubai, please – you’re reading the wrong magazine if you think that’s the best we can come up with. This month, Team What’s On has been learning, creating, strumming and making, as we reveal our pick of the UAE’s best courses (p14). From acting to Arabic, from meditation to motorcycling, we’ve been out there and given it a go, just for you. So banish those blues by doing something fun, and improve yourself by levelling up while you’re at it. While you’re on your path to enlightenment, seek nourishment with our favourite comfort foods, where we declare, the bigger and heartier, the better. We’re talking big bowls of ramen, gooey, cheesy toasties, and crispy fried chicken. Mmmmm. Prepare your eyes for pages of golden fried goodness from p23. February also sees a bunch of brilliant wordsmiths hit Dubai for 10 days of literary magic at the Emirates Airline Festival of Literature. Find out who exactly is in town on p28. Enjoy the issue,

THIS MONTH WHAT’S ON LOVES… Matcha Club Not to be confused with the powdery green tea, Matcha Club is the relatively new padel and wellness club in Al Quoz. It oozes hip Palm Springs appeal with burnt orange padel courts, two beautiful wellness studios, and the just-opened Nette café that serves proper elevated café grub. After a spectacular loss on the padel courts – I’m still learning, OK? – I like to eat my feelings with a delicious plate of poached eggs on toast with brown miso butter. @matchadxb

Uma Did you know there’s a secret alfresco bar in Burj Al Arab? Uma is only open to visitors who take the Inside Burj Al Arab tour (from Dhs249). Right now it’s only open for drinks, but it has great views of the city and sunset to enjoy once you’ve finished the tour. @insideburjalarab – Elise Kerr, Deputy Editor

The Platform There are few things that can get me to work out on a weekend, especially as a serial fitness class-phobe. But The Platform’s Sunday spin class is the exception to this rule. I actually really enjoy it. For 45 minutes, instructor Sarah pairs a set of epic, energypacked tunes to an array of challenging sprints, hill climbs and weights tracks, inspiring the whole class to get involved. And knowing you’ve already worked out justifies an extra Yorkshire pudding or two at Sunday lunch, right? theplatformstudios.com – Alice Holtham,

CoinMena This year I plan to understand the whole Crypto thing. But I’m not looking to go full Wolf of Wall Street, maybe just like a hungry Labrador of Wall Street, so it feels achievable. The single best tip I got for making it easy for myself in the UAE, was to use CoinMena which, in a relatively small number of steps, lets you swap dirhams for Crypto currencies. coinmena.co — Miles Buckeridge, Online Reporter

The Westin Mina Seyahi beach day

The team behind Tania’s Teahouse has opened up a new venue called Sereni-tea nestled in Umm Sequeim. It’s not the pretty pink hues that you would find in the first branch, but the hygge design is still so warm and inviting. After my ‘eggs ben-addict’, you’ll find me on the outdoor patio, sipping tea, soaking up the good weather and enjoying a catchup with the bestie. @taniasteachouse

With endless blue skies and sunshine, Dubai is the perfect place to enjoy a beach day – especially at this time of year. I love the one at The Westin Dubai Mina Seyahi Beach Resort & Marina. We tend to forgo a sun bed and instead snag one of the cool wooden deck chairs on the beach. The beach has a bohemian vibe with brilliant music playing all day. If you fancy a dip, check out the pool with its very own built-in bar. Beach and pool access is priced from Dhs255. @westindubai

since the late ‘80s so I’ve seen lots of changes.

LAYLA KARDAN THE SINGING SENSATION

From singer to the co-owner of new concept Papillon. How did this come about? It was in the height of the pandemic that I met the cluster GM of The Westin Mina Seyhai, Tolga Lacin, and we talked about Dubai needing a cabaret. I spoke about my dream of creating an elevated and contemporary cabaret that would push boundaries in an artistic way, combining glamour and fashion and exquisite talent, and he loved it. After much work, Papillon was complete, from venue to concept and menu to show and music curation. Did you have to halt your music career? I worked so hard in the first couple of years of being an artist. I had my head down, grinding every day and finally as I had built momentum in my music career and

U

AE Famous is a What’s On page focusing on people out there making the scene. They’re out there around town, shaping the UAE into what it is, creating the culture, food and life around us. We asked them what’s good in the UAE. We asked them what’s bad in the UAE. We asked them to tell us more, more, more about their wonderful selves…

“PAPILLON IS A CUT ABOVE, AND I KNOW I’M NOT BEING MODEST, BUT I AM PROUD OF WHAT WE’VE CREATED.” Layla, your career has been inspiring. Can you tell us a bit about your journey? I was lucky to launch my music career four years ago when Dubai was ready to receive local artists. I had the support of many to propel me onto stages and festivals. Where are you from? Born in Belgium, raised for the most part in Australia, with Iranian heritage and living permanently in Dubai for the past 13 years – I feel like a citizen of the world. My family has been coming to Dubai

was starting to rise, it all got compromised by the pandemic. Creating a brand and permanent space with the support of the hotel and the Wasl Hospitality Group meant that I could realise my dream, and diversify my business.

What makes Papillon unique? Papillon isn’t just another dinner and a show, it’s an homage to cabaret. It’s fresh, fashion forward and risqué, with each performer possessing a unique talent that makes the show special. Our Creative Director is Denise Faye, a Hollywood legend with movies such as Burlesque and Chicago on her resume as well as being Cher’s tour director for years. She really brought a beautiful vision to the stage. What’s the venue like? It’s chic and understated. It’s not a commercial place, that’s ready to play any type of music to appeal to the masses. We love our brand and won’t compromise the integrity of our DNA just to pull crowds. Papillon is a cut above and I know I’m not being modest, but I am proud of what we’ve created. What’s better, the dinner or the show? That’s tough. Most experiences are about one or the other. Our food is incredible. But since I love the show, I would say the show. What do you love about the UAE? I love my tribe of friends who have become family. I also love the fact that you can make anything happen here. What stresses you out about the UAE? The driving! Do you reckon Dubai is your forever home? Absolutely. For now, I am not going anywhere. q @laylakardan | @papillondxb

COMFORT FOOD

W

hen it comes to comfort food, we say the bigger and heartier the better. Of course, each country has its own form of comfort food staple, but most of them can be found right here in Dubai. Prepare your eyes for an overload of belly-warming goodness.

Roast dinner Bread Street Kitchen It’s a Sunday tradition that takes British expats back to the days of wolfing down their granny’s crispy roasties and all manner of veg that you wouldn’t dare touch midweek. Ramsay’s Roast will take you back to the days when a Sunday soiree involved a hearty feed, an Eastenders omnibus and a pocketful of change (if you finished all your greens). Go midweek for Wednesday Wellington night or stick to Sundays for the classic roast dinner with all the trimmings. a Bread Street Kitchen, Atlantis The Palm, Palm Jumeirah, Dubai, Sun 12pm to 3pm, Dhs135. Tel: (04) 426 2626. atlantis.com

Workshop by folly Who needs a plate when you have a giant Yorkshire pudding as a vessel? Workshop by folly heaps all the good stuff into a supersize pud, for a toad in the hole spin on the classic Sunday roast. We recommend filling the Yorkshire with gravy, letting the bottom get nice and soggy and saving the best till last. a Workshop by folly, Time Out Market, Souk Al Bahar, Mon to Thurs noon to midnight, Fri noon to 1am, Sat and Sun 10am to 1am, Dhs119. @timeoutmarketdubai

Reform Social & Grill When it comes to roasts, head chef Yugal Kishor is Michelangelo and Reform is his Sistine Chapel. The towering Yorkshire puddings that fly from the kitchen every Sunday and Monday can only be sculpted by gifted hands, rising majestically from a plate of gravy in gravity-defying splendour. Meat options rotate here regularly. What’s constant are the juicy cuts, perfectly charred roasties and lashings of delicious gravy. a Reform Social & Grill, The Lakes, Sun and Mon, midday onwards, Dhs115. Tel: (04) 454 2638. reformsocialgrill.ae

Phileas Foggs The gravy at Phileas Foggs could be dripping off an old boot and we’d still love it. Ask for an extra boat and set your roast chicken adrift in a lake of silky, salty loveliness. The veggies are good, particularly the honey-glazed parsnips, while a big, crispy Yorkshire pud is great for mopping purposes. a Montgomerie Acamedy, weekends from 12pm, Dhs125. RAMEN Daikan Ramen Generally, ramen is a combination of five vital components: seasoning, broth, noodles, toppings and aromatic oils. These are the ramen pillars that make it such a comfort food choice, and Daikan Ramen is the real deal, slinging hearty bowls that easily upstage some of its citywide counterparts. Choose from standards like shio and miso, but we say go for the shoyu, a soy sauce base with juicy chicken chashu, egg and scallions. There are a few locations around town, including JLT, DIFC and the soon-to-open branch in Depachika food hall. q @daikanramen_dxb

Pickl Straight up plain or reaper heat? The five spice levels on offer here are enough to get anyone in a Pickl, though the mouthwatering crunch remains everpresent in each vigorous bite. These dill pickle scattered, sauce smothered tenders are some of the best chicken pieces to ever hit a deep fat fryer. Who needs a partner to love you tender, when you have Pickl? a Pickl, One JLT Tower, Jumeirah Lakes Towers, Mon to Fri 11am to 1am, Sat and Sun 11am to 2am, from Dhs45. Tel: (04) 584 6859. eatpickl.com

Reif Japanese Kushiyaki

Kinoya After quietly accruing a small legion of ramen fans from years of intimate, soldout supper clubs, Neha Mishra opened Kinoya in the summer of 2021. The ramen offerings are delightful, soul-warming bowls of goodness worth a weekly visit. There are three permutations: sho ramen (chicken broth with dashi; Dhs50 for a regular bowl, Dhs60 for a large), shoyu ramen (slow cooked chicken broth with shoyu tare; Dhs50 for a regular bowl, Dhs60 for a large) and the spicy miso ramen (chicken broth with a miso, chilli and garlic paste; Dhs50 for a regular bowl, Dhs60 for a large), and you can add extra toppings and ingredients as you like. a Onyx Tower, The Greens, Mon to Sat noon to 1am (closed Sundays). Tel: (0)4 548 6776. kinoya.ae

Good things come to those who wait and when Chef Reif Othman keeps you waiting 18 hours for a bowl of soup, you can guarantee it’s going to be the best soup you’ve ever tasted. The ginger chicken broth is heaped with meat, swimming with bok choy and finished with a tea-stained egg, for memories that will stay with you for at least 18 months. a Reif Japanese Kushiyaki, Dar Wasl Mall, Al Wasl Road, Mon to Thur noon to 11pm, Fri noon to midnight, Sat and Sun 11am to midnight, Dhs65. Tel: (04) 345 0761. reifkushiyaki.com

Eggspectation Fried chicken ‘n waffles. It sounds so wrong yet tastes so right. A pile of fluffy Belgian waffles cushion crispy, salty, chunks of juicy chicken, drizzled with maple syrup and topped with a heap of arugula. No description can do this dish justice, it’s one you simply must try for yourself. a Eggspectation, JBR, The Walk, daily 7am to midnight, Dhs64. Tel: (04) 430 7252. eggspectation.com

High Joint Nothing says satisfaction like spitting a clean wing into an empty bucket, with every last morsel of meat having made it safely down the hatchet. High Joint’s Asian wings are brined and deep fried, tossed in sweet and spicy sauce and drizzled in spicy mayo for ultimate flavour and comfort. a High Joint, Al Manara, Mon to Fri 11.30am to midnight, Fri to Sat 11.30am to 2am, Al Khawaneej, Mon to 1pm to 1am, Fri and Sat 1pm to 2am, from Dhs18.90. Massimo’s

Shawarma Al Malah Al Malah has stood the test of time and more than earned its status as a Dubai institution, due in no small part to its chicken shawarma. There are no bells and whistles here, just salty meat, sharp pickles and silky sauce wrapped in a sturdy bread blanket, and we couldn’t ask for anything more. a Al Malah, various locations including Al Seef, Satwa and Ibn Battuta, from Dhs9. almallahuae.com

Simple, hearty and nostalgic, the arrabbiata at Massimo’s is everything you want in a bowl of pasta. Mop up the rich and fiery sauce with a mound of doughy garlic bread and surrender yourself to the blissful carb coma that awaits. This is what comfort food is all about. a Massimo’s, Dubai Marina, daily noon to midnight, Dhs70. Tel: (800) 2426. massimos.ae

Saad Al Warani Cafeteria

Picnic Home This tiny Lebanese spot just outside of Al Fahidi metro station serves up one of the best shawarmas in Dubai. It’s nothing fancy, as the most authentic shawarma spots tend not to be, but the wraps are bursting with incredible flavour. Try the spicy version if you dare, though it may put some hairs on your chest. a Picnic Home, Al Fahidi, Bur Dubai, open daily 9am to 4am, from Dhs6. Tel: (04) 352 629.

Just when you think you know what shawarma is all about, a new variation comes along and blows your socks off all over again. This restaurant cafeteria in Rashidiya is the birthplace of the Hassan Mattar sandwich, a flat, open variation of the shawarma with toasted bread. We recommend adding chips and cheese, plus Saad Al Warani’s incredible spicy sauce. a Saad Al Warani Cafeteria, Rashadiya, Deira, daily 8am to 3am, from Dhs5.25. Tel: (04) 285 1062.

The Coffee Club If you weren’t uncomfortable before The Coffee Club’s prawn linguine, you certainly will be afterwards when you’re tracksuit bottom clad with elasticated waistband straining. The portion is massive, with sauteed prawns nesting on a tangle of linguine, expertly flavoured with garlic, butter and chilli. Prepare for homemade flavours at their finest. a The Coffee Club, various locations including JLT and DIFC, Dhs60. thecoffeeclubme.com

Cheese toastie Lowe Is it possible to have too much of a good thing? Probably. But when cheese is involved, the more excess, the better. This is exactly how the chefs at Lowe think, bless their gluttonous hearts. Lowe’s Vegemite and molten cheese toastie (Dhs64) features a literal lava of cheese and a thin slather of Vegemite (giving it just a twinge of tangy goodness), squeezed between two slices of thick, shiny, buttery toast. Be warned: this cheesy manifestation of joy is only available on weekends from 8am to 4pm. a KOA Canvas, Wadi Al Safa 3 (Near Al Barari), weekends 8am to 4pm. Tel: 0(4) 3201890. lowedubai.com

Basta This Italian restaurant in Dubai’s Business Bay prides itself on authentic dishes and the robust beef lasagne could have been made by an Italian nonna. Fresh pasta is expertly layered with minced beef and a creamy cheese sauce for a wedge of pure comfort. a Basta, The St. Regis Downtown, Business Bay, daily 12.30pm to midnight, Dhs120. Tel: (04) 512 5522. bastadubai.com

Qwerty All hail the queen of cheese toasties. The simply-named cheese toastie is a sweet concoction of three cheeses (mozzarella, cheddar and Parmesan) and caramelised onion, sealed in brioche and topped with a sky-high Parmesan crispy crown. Break the crown apart with your fingers, dip into the chutney, then proceed to the main toastie body – and it’s like a two-course meal in itself. a Qwerty, Media One Hotel, Dubai Media City, daily noon to midnight. Tel: (0)4 4271000. facebook.com/ qwertydxb

Boston Lane Boston Lane whips up a range of old-school toasties, and Dubai folks just can’t get enough of them. There are seven varieties to choose from, although we’d say stick to the basic options like the classic cheese and garlic packed with vintage cheddar, mozzarella, garlic and a bit of parsley. Or for a touch of crunch, opt for the regional favourite Chips Oman with cream cheese, sweet chilli, Himalayan salt, and crisps. a Boston Lane Cafe, The Courtyard, Al Quoz, daily 8am to 6pm. @bostonlane.dubai

good book can do more than make an entrance, it can make you see the world through new eyes and reach new understandings about your fellow human beings. In a brand new location, and under the subtitle, ‘Here Comes The Sun’, this year’s Emirates Airline Festival of Literature (LitFest) is a presentation of authors, books and storytellers from around the world aiming to bring hope after two years of global uncertainty. Readers and non-readers, men and women, young and old, no matter who you are and where you are from, at the LitFest, there are sessions that speak to us all. Over the course of the 10-day festival, there are hundreds of speakers and events for all ages. There is so much going on that the programme can be a bit dizzying. Here, we have broken it down into bite-size portions to help you make the most of the event.

THE NAMES TO KNOW Julia Quinn, No.1 New York Times bestselling author, loves to dispel the myth that smart women don’t read (or write) romance. A graduate of Harvard and Radcliffe Colleges, Quinn is one of only 16 members of the Romance Writers of America’s Hall of Fame. Her books have been translated into 32 languages, and her popular series of historical romance, The Bridgertons, became a Netflix original hit series starring Julie Andrews, Phoebe Dynevor, and Rége-Jean Page.

Sara Gay Forden, a journalist based in Washington DC, covered the Italian fashion industry from Milan for more than 15 years, chronicling the explosion of labels, including Gucci, Armani, Versace, Prada and Ferragamo from family ateliers into mega brands. She’ll be in town talking about her smash hit book The House of Gucci, which was recently released as a feature film starring Lady Gaga and Adam Driver. Serhii Plokhy, a professor of history at Harvard University, is a leading authority on Eastern Europe. His books include the Baillie Gifford award-winner Chernobyl: History of a Tragedy, Lost Kingdom, The Gates of Europe and The Last Empire.

Other big names in the programme include entrepreneur and Crush it! author Gary Vaynerchuck, TV chef and Great British Bake Off star Nadiya Hussain, comedian and Gangsta Granny writer David Walliams; 2021 Sheikh Zayed Book Award winner Iman Mersal; 2021 International Prize for Arabic Fiction winner Jalal Barjas; and Sleepy Head novelist Mark Billingham. The festival will also host popular new talents, including C Pam Zhang, author of How Much of These Hills Is Gold, The Vanishing Half novelist Brit Bennet, The Guest List writer Lucy Foley and Yesterday writer Felicia Yap. HOW TO NAVIGATE EMIRATES LIT FEST LIKE A PRO Festival Director Ahlam Bolooki shares her top tips for festival-goers

01. Make a day of it. Back in the day before I joined the team, I used to love booking sessions with authors I knew and loved, as well as those I had never heard of, and I found so many new favourites that way. 02. Bring a reusable water bottle. As a foundation and a festival, we have banned single-use plastic at our events. Instead, we make sure there are water fountains provided for free refills. 03. Book special events early. We have some iconic and utterly unique special events planned, and from experience we know they book up quickly. I always recommend that people book the biggest names and the special events as soon as possible because they do sell out.

Q&A

Meet the festival director

Ahlam Bolooki Can you tell us why you’ve moved the festival to a new location? There are many reasons. The canal side of Habtoor City hotels is not just a beautiful setting but it’s a convenient location off Sheikh Zayed Road. But ultimately, it came down to the people. We knew this would be a great home for the festival after meeting with the Al Habtoor City team. We also have a couple of events at Expo 2020, including a stunning spoken word and music event. Why did you decide to go back to the 10-day format for the festival? Every year is different. We have had festivals running over anything from five days to three weekends, and it is dictated by what we want to achieve with each festival; the conversations we want to host and the people we want to bring together. Our priority is always to design something truly magical for our audiences and our authors. This year, we are doing just that over the course of 10 days. Tell us more about the theme for this year’s festival Our theme ‘Here Comes the Sun’ is perfect for where we are today, two years into the global pandemic. We have all collectively been living under a dark cloud, and now is the time for a new dawn where we can look forward with hope. The 2022 festival will bring optimism and renewal. It will 30_What’s On

“NOW IS THE TIME FOR A NEW DAWN WHERE WE CAN LOOK FORWARD WITH HOPE” shed light on issues that are usually obscured by the dark, including some of the most important topics of our time. How long does it take to plan such a big festival? We start planning the festival 18 months in advance. It is a huge production putting together the author lineup, getting dates booked in, planning the conversations, and the special events. With so many moving parts, including

the calendars of more than 150 authors from all over the world, it is a complex operation. What do you most love about the festival? I love it all. On the opening day of the festival when I see people starting to arrive at our LitFest branded venue. It is the most wonderful time of the year. The Desert Stanzas, where we bring together spoken word performers from all over the world at Caravanserai desert camp is a magical event and it moves me deeply every time. Panel

discussions with Arabic world authors together with international speakers are often fascinating. It is hard to pick just one thing to love the most – it is all wonderful. Who are the top authors you personally are looking forward to seeing? Choosing just three is hard. Julia Quinn is the author of the Bridgerton series, which I think has captured the hearts of everyone who had read it or seen it on Netflix. For first-class escapism, you can’t beat it. I am super excited about Toshikazu Kawaguchi, the Japanese author of Before the Coffee Gets Cold, a time-travelling magical realism novel that sold more than 800,000 copies in Japan. Nikita Gill is one of the world’s most successful instapoets, and I predict she will be spectacular. And Sara Gay Forden is a journalist who covered the Italian fashion industry for more than 15 years and wrote The House of Gucci, the nonfiction book that the movie was based on. What book are you currently reading and what’s next on your reading list? Right now, I’m reading How Much of These Hills is Gold by C Pam Zhang, and next on the list is My Life in Full: Work, Family and Our Future by Indra Nooyi. February 3 to 13

SUCRE

A Buenos Aires hit tangos into town ucre has spent two decades charming diners that dance through its doors in Buenos Aires. The electric pairing of chef Fernando Trocca and mixologist Tato Giovannoni has created an elevated dining experience that’s been recognised twice on Latin America’s 50 Best Restaurants list. Fresh from opening in London, the brand is here to make its mark on DIFC, bringing punchy Latin American flavours to Gate Village 05, taking the spot previously occupied by Indie. In its design, Japanese architect Noriyoshi Muramatsu clearly understood the brief to bring Buenos Aires to life: an exposed brick entrance leads into a reception of printed tile flooring, cut glass chandeliers and a tapestry of woven carpets in endless hues of burgundy covering the curvaceous ceiling. Once inside, the restaurant is split into a bar that spills onto a neat terrace at the front, and a dining room towards the back, lined by a show kitchen filled with expert chefs at work. Here you’ll find the enormous La Parilla – the staple grill found in many Argentinian homes. The mishmash of

S

woven carpets in those dramatic dark red shades adorn the dining room walls, and attention to detail has also been extended to the dining room ceiling, with a lattice of boxy wooden structures an ode to the home fronts Muramatsu discovered strolling the balmy Buenos Aires streets. “You can’t come to Sucre and not try the paella,” general manager Flavio Pensa tells us as we browse the menu, neatly divided into snacks, small plates, large plates and sides. While Sucre is largely Latin American, Spanish and Italian influences are evident across dishes, including the king crab tostada (Dhs125), a floury tortilla packed with avocado paste, crunchy scallions, and rich tatemada salsa;

and the mussels (Dhs75) served in a light coconut sauce with the punchy additions of ginger and lime. We were right to order the squid ink paella (Dhs275), with paella rice served just the right side of al dente, coated in thick, jet black squid ink and topped with perfectly cooked mouthfuls of

grilled octopus and drizzled with aioli. Our second main, a piece of Wagyu striploin served simply with chimichurri (Dhs345) is the only dish that slightly misses the mark, lacking the rich flavours of some of the other dishes. Desserts, for those not too full to face them, are all top-notch, but the standout has to be the dulce de leche fondant (Dhs55). Piping hot and sprinkled with sea salt, it oozes a thick dulce de leche sauce when the delicate edges are cut into, and we delight in every mouthful of it paired with an airlily whipped vanilla cream. A special mention should be given to the DJ, who is evidently well versed in playing to a DIFC crowd. While his mixes may not be particularly akin to the restaurant theme, they’re the kind of songs that have the whole room wanting to linger longer to enjoy them. While it may face tough competition from some of its more established neighbours, first impressions offer full confidence that Sucre is here to make an impact. a Sucre Dubai, Podium Level, Gate Village 05, daily noon to 2am. MEET THE OWNER

RICCARDO GIRAUDI In talks with ‘The Beefboy’, owner and creator of Beefbar Dubai There was never a right time to move back to Dubai as we should have never left. I evolved the brand tremendously in the past three years and the stars aligned this winter and we were offered to open at the Turtle Lagoon, making it one of those ‘Back to the Future’ opportunities. My father has been in the beef business since the ‘60s. I realised our industry lacked serious marketing. Why do people spend $200 on a T-shirt and not pay a premium for quality beef? I focus on educating consumers on what a prestigious product meat can be. I’m not a chef. I can’t cook. I am just a crazy guy with insane ideas. I owe everything to my team. I would not be here without their support. We have some signature dishes that you can only find in Beefbar Dubai, like our new shawarma. We also have an amazing set of Bernardaud plates dedicated to this beautiful city, featuring camels and stacks of gold. I don’t think I’ve ever set foot in the kitchen. The best part of my job is working with my chefs, taking them all over the world to get inspired. Spending time with them and sharing my vision of what Beefbar should be is what makes me most proud. a Beefbar, Jumeirah Al Naseem, Jumeirah, Sun to Thurs 12pm to 11.30pm, Sat & Sun 12pm to 12am. Chalet 105

POP-UP RESTAURANT

Act like a diamond level skier in a snow-less Dubai Want to capture the spirit of an Alps getaway without any of the snow, cumbersome equipment, or actual skiing? If you call Dubai home you’re in luck because the city’s hottest pop-up is a ski lodge-themed chalet. Chalet 105 x Montblanc can be found in two luxurious locations – by Twiggy’s infinity pool at Park Hyatt, and on the terrace at La Cantine du Faubourg. Over at Twiggy, they’ve revamped a wooden cabana into a chic yet cosy cabin complete with a lovely fireplace, vintage leather armchairs, skis, candles and pelts draped over the chairs. The set menu is just ridiculous fun, embodying the best of hearty alpine cuisine. To start, a mulled wine or house mocktail, swiftly followed by a cheeseheavy French onion or truffled chestnut soup. It’s then onto the highly-anticipated fondue savoyarde for two – a veritable sea of liquid gold. Go all Jacques Cousteau and submerge bread bites in between mouthfuls of melted raclette cheese smothering potatoes, a platter of cold cuts, and the obligatory salad. And to finish (as if that’s not enough molten goodness

already), another bubbling pot this time filled with melted chocolate and served with a selection of fresh fruits and sweets. Better hurry: once the month’s over, these cosy ‘lodges’ will disappear, and you’ll no longer be able to act out your classy apres-ski fantasies. a Twiggy, Park Hyatt, from 6pm, sharing menus start from Dhs400 per person. TAMOKA

Beachside dining with an islandinspired menu ccasionally, new venues open up with a special power to make you feel as though you’re no longer in Dubai – where for that night, you can enjoy a transportive dining experience. Tamoka is one such place. With its beachside setting, tropical decor and hedonistic playlist, you would be forgiven for thinking you’ve teleported straight to Tulum. Designed around the theme of the Antilles archipelago, Tamoka’s story is told through Caribbean-inspired dishes, homemade rum infusions and pockets of alfresco seating to match your mood. There are sofas facing the beach, hammocks swinging in the breeze and stylish sunken seating for the ultimate birthday bash. We start our night earlier than planned, as sundowners at Caña – Tamoka’s private beach bar – are too good to miss. As the sun sets behind Ain Dubai, we dig our toes deep in the sand and sip on a coconut concoction. The small shack has seating all around and, wedged in the middle of a circular bar, a DJ drops upbeat house tracks to a small crowd of enthused fans, still sandy from their day at the beach. Once it’s time to eat we walk back

O

towards the main restaurant where tables come in all shapes and sizes, placed both outside and indoors. Our alfresco table is perfectly positioned to spot the world’s tallest observation wheel, but we feel cosy amongst the leafy décor that surrounds the terrace. We start with some raw plates, combining three ceviches into a platter (Dhs155). The scallops and hamachi were particularly delicious, with a refreshing texture and plenty of flavour from the sauce. Each came with its own accompaniments to perfectly balance the fish without overpowering the palette. If you’re in a group (or just want something to enjoy with drinks), the zappalo con queso (Dhs175) is a must try. It’s a whole large pumpkin – yes, really – fondue-style with a warm, gooey cheesy filling that requires you to dip a variety of bites from cassava to plantain, mushrooms and more. A word of warning: it’s addictive. Onto mains and we’re drawn towards the

langosta (Dhs295); craw lobster doused in rum butter and topped with leafy greens. It’s served in the shell but pre-cut, so no faffing about, and we dive straight into the meaty chunks, while the butter gives a light glossy texture to the seafood. In addition, we check out the panza de cerdo (Dhs135), a less aesthetically pleasing but equally delicious mix of roasted belly, burnt onion puree and finely chopped pineapple. The meat is served in slices and topped with crispy pieces to offer delightfully opposing textures. Befitting with the theme, we finish our meal with a torta de ron (Dhs40). It’s a Caribbean rum cake and is as juicy as anything, dripping in sweet syrup and sitting on a bed of caramelised banana puree. Tamoka’s warm hospitality and unique setting make it somewhere we can see ourselves returning to for all occasions, be it a romantic dinner, catch up with friends or even a celebration. a Tamoka & Caña by Tamoka, The RitzCarlton Dubai, JBR, daily 12pm to 1am. Koyo

T H E

Is brunch-and-a-show a popular alternative to dinner?

S

ince 2020, the rise and rise of dinner-and-a-show concepts has seemed unstoppable, with many restaurants across the city upping their evening offering with top class entertainment. The show format has also slowly filtered its way into brunches, such as the loud and lively Kabuki Brunch at Koyo in Intercontinental Dubai Marina. From the menu to the stage, Koyo uses cultural influences to deliver a Japaneseinspired experience. Split over two floors, the venue is packed when we arrive. Our table is on the upper level, overlooking a stage that folds away to reveal a bar in the intervals. We’re welcomed with a cinnamon cocktail and bowls of edamame, and the DJ is already blaring late noughties R&B songs to get the vibe going. Cold starters arrive just as the first performance starts. Four kabuki dancers in traditional dress appear out of the shadows and battle across the restaurant, swiping swords and somersaulting to an intense soundtrack as guests at their tables cheer on amused. Halfapplauding, half-wrestling to open our chopsticks, we sample our way through a colourful presentation of maki and nigiri.

Continuing with the Japanese theme, we’re later brought a chicken katsu sando, prawn gyoza and yakitori skewers. The menu choice is impressive, and plates quickly empty as we eagerly await the next performance. The calibre of talent is high, from passionate dancers to jaw-dropping aerialists. There’s something for everyone, and before long the crowd are up on their feet clapping to the beat. We continue to work through more dishes, including a sea bream fillet, striploin steak and chicken thigh, alongside udon noodles and vegetable fried rice. URLA

Alfresco dining at its best ith a luxe address, fountain and Burj Khalifa views, and Dubai Mall on its doorstep, Urla won’t struggle to bring in diners. And yet, despite having a location that ticks all the boxes, this Aegean restaurant has ensured that great food and service are top of its priorities. Those who want a full-fountain experience should book at night, but there’s definitely something to be said for a late lunch at this alfresco spot. Parked underneath a parasol we plough through starters from ‘the sea’ and ‘the mountain’, as indicated by the menu split. Kicking off

W

with Kiwami wagyu carpaccio (Dhs180), we’re shown the correct method to eat it, which involves using pliers to wrap the raw meat around a raspberry before dipping into apricot jam. We can’t recall ever experimenting with this combination before but it’s surprisingly good. Shrimp kiss (Dhs180) also makes for a delightful warm starter, with three large croquettes served under a spoonful of caviar, bursting open to reveal a warm creamy filling. The setting is undeniably pretty, with a large tree taking centre stage inside a spherical marble bar, with the world’s tallest building standing proud in the background. There are plenty of tables dotted across the terrazzo floor, sectioned

off with greenery and large umbrellas. For mains, we loved the Tulum cheese erişte (Dhs120), a traditional dish made with Turkish pasta and crushed walnuts. Not something we’d normally choose but after a strong recommendation from the waiter, we were pleased to have placed our trust in him. Service throughout the meal was faultless, which was appreciated when we struggled to understand some of the menu items. Urla’s one of the pricier options in the area, likely thanks to the views, but definitely one to add to your list for a birthday lunch or date night dinner. a Urla, Address Downtown, daily, noon to midnight. Harrie’s Pancakes 02

Founded in the small town of Graskop, South Africa in 1986, and famous for delicious savoury pancakes, Harrie’s recently opened in Dubai Marina. This cute Japanese bakery certainly knows how to make a light-as-a-feather pancake. Try the traditional Fuwa Fuwa (Dhs42), which translates to ‘fluffy fluffy’ and is served with mixed berries, Chantily cream and honey or syrup. They use a classic batter mix but also add vanilla, lime juice and a secret ingredient. The chef tells us they achieve the souffle style by mixing at various speeds with precision, care, and ensuring the final batter is super airy. a Yamanote Atelier, Dubai Mall, weekdays 10am to 12am, weekends 10am to 1am. Cook for 2-3 mins on each side and when the pancake is ready it will be golden brown on each side.

sole black telephone in a boxlike room is the indicator you’ve made it to Hudson Tavern, a speakeasy-style bar that’s bringing New York cool to Business Bay’s Hyde Hotel. This dimly lit, two-sided drinking den oozes date-night appeal: one side laidback with leather booths built into cosy corners, the other sees a grand bar take centre stage, backed by a trio of alcoves packed with rainbow-coloured bottles and fancy glassware. Jewel tones of ruby red and emerald green pop against a palette of dark woods, adding a touch of glamour to an otherwise masculine space. It’s small and inviting, and even though it’s quiet on a midweek evening when we visit, it still manages to feel warm. The drinks menu is an impressive read, divided between ‘wind up’ (alcoholic) and ‘wind down’ (non-alcoholic) with a collection of bottled and draft brews, too. A Peachy Keen (Dhs70) is sweet and fruity, blending peach puree with apple juice, tequila and a punch of lime and jalapeno, while We are the Champions

(Dhs80), served in a long glass over ice, fuses tequila with berry beer and grapefruit. Going far beyond the traditional bar bites menu, there are sharing plates such as beef tartare (Dhs95), neatly plated and packed with flavour and served with veal bone marrow, and a seafood corner from which we select tuna tacos (Dhs95) – tortillas loaded with diced tuna and topped with Hudson’s special sauce. Both arrive swiftly. Forgoing the collection of burgers that can be paired with endless sides and sauces, we pick the Hudson lobster roll (Dhs125), which comes as mouthfuls of fresh lobster dunked in a delicious spicy mayo served in a brioche roll that unfortunately edges a little on the dry side. Our only critique is the music, cranked unnecessarily loud for the early evening crowd, and somehow the current chart hits seem misplaced in this sultry, speakeasy setting. a Hyde Hotel, Marasi Drive, Business Bay, daily 4pm to 1am. Pure escapism Anjunadeep label showcase returns to HOT Dubai TICKET

W

hen it comes to deep house, British label Anjunadeep is arguably the best in the world. The prolific label consistently delivers the finest lush melodic house and has turned numerous talented artists – like Tinlicker, Ben Böhmer, Lane 8 and Luttrell – into global superstars on the clubbing scene. We’re still banging on about how good the Anjunadeep label showcase was when it came to town in 2020 – so find us down the front when the Anjunadeep party makes a welcome return on Saturday, February 19. Label bosses James Grant and Jody Wisternoff headline the Anjunadeep party at Bohemia at Beach, right on the sand at Five, Dubai. The pair’s DJ sets are epic affairs of beautifully emotive music that’s pure escapism. Label signings Mia Aurora, Braxton, Dosem and Luttrell will join James and Jody in Dubai this time round.

“We’ve been coming to Dubai for a few years now and I’m always impressed by the atmosphere at the shows,” label chief Grant told What’s On. “The winter sun is a bonus too. “We’ve got some cracking artists on the line-up this time,” added Grant. “Luttrell is a massive fan favourite; Dosem took the roof off at our Printworks London show in December; and Braxton is making some amazing melodic breaks stuff right now. of the up-and-coming DJ talents at Anjuna HQ and another one to watch.” Grant and Wisternoff’s annual mix compilation is always one of the most highlyanticipated drops of each year, and the latest in their Anjunadeep series is due for release around March. “Jody and I are just putting the finishing touches on our Anjunadeep 13 compilation and are excited to show that to the world in a month or two,” said Grant. “We have so much great music coming this year and it feels like there’s never been a more exciting time for the label.”

RAK parties

Two chances to get your groove on in the Northern Emirates 01 Escape by the Beach It looks like there will be an exodus to Ras Al Khaimah this month, where party people can really shake it loose. With dancefloor restrictions still in place in Dubai, clubbers can dance like no-one is watching in the neighbouring emirate. First up, DJ, producer and promoter Bachir Salloum has organised Escape by the Beach, a two-day event packed with quality music, great DJs and good vibes. Held at Banan Beach, it will run over Saturday and Sunday, February 5 and 6. With an impressive discography on labels like Innervisions, Diynamic, Mule, Muteq and Kompakt, German duo Frankey & Sandrino are signed up to headline the event. The duo’s own imprint is also a favourite with DJs the world over. “Their Sum Over Histories record label is one of my go-to labels for solid, groovy tracks,” Salloum told What’s On. “And they consistently deliver a great show wherever they play.”

A quality selector in his own right, Salloum – who featured in dance music site iamCrü’s UAE Music Power List 2021 – points to Frankey & Sandrino’s remix of Oxia’s Domino as their best production ever. “I was convinced that no remix could be as good as the original but I was very wrong,” said Salloum. “I’ve played the Frankey & Sandrino remix endless times and the reaction from the crowd is always the same. It’s a banging classic.” Local groove masters, including Barada, Hassan Alwan, Hoolz, Jixo & Danz, Ledwarf, Maks and Sam Farsio, will also be on deck duty. Don’t miss Salloum’s set on day one or the special Boogie Box showcase on day two for a dose of house, disco and funk. Banan Beach offers a variety of accommodation options. ue to hit cinemas in March this year, The Batman promises to be a caped crusader story that is fundamentally different from anything we’ve seen on the big screen before. It will stand alone, a full bat span away from all the other DC Universe releases. And from the trailers, it certainly feels like director Matt Reeves’ vision of the billionaire vigilante is a much darker, more conflicted, human take on the costumed detective. The Batman is a Year Two story, which means we join the hero in his formative years beneath the cowl, where he’s finding his feet, finding out who he can trust, and indeed who he truly is. What’s On secured a regional exclusive, talking to some of the talent from both sides of the camera. This is what they had to say: MATT REEVES [Director] What’s On: Even from the trailer, this feels like a saga that’s building. Can we look forward to a series of Matt Reeves Batman movies? Matt Reeves: From the beginning, I wanted to create a standalone Batman universe – ‘a Batverse’ that could be definitive in its own way. And there was a point with the movie where the script was getting longer and longer, and I thought, this would have been an amazing series about Year Two Batman, but they were

like: “you gotta do the movie first”. So I was wrestling it down, but I always felt like there were paths that you could take, getting into more detail with all of these characters, where you can focus on them in a really rich novellistic way that streaming is totally suited to do. So, we have plans for that as well, but I can’t tell you how much of it will come to fruition. That depends on how the audience connects. ROBERT PATTINSON [Bruce Wayne/Batman] WO: Traditionally Batman has to balance external foes with an internal battle, both inside his own mind and the ghosts of his family history. Should there ever be a resolution for this character? Can he find peace? Robert Pattinson: It’s a difficult thing to accept that, at the end of your character’s ark, you’re never going to be OK. But in some ways that is kind of what Batman’s journey is. I think with

this story, he’s unclear what his purpose is. He truly believes he can change the fate of Gotham, but he’s dismissed by everyone, and the people of Gotham are just as scared of him as they are of the criminals. The most he can hope for in this story is that he starts to believe he can have an impact on the city, and improve his own life in a healthy way. Because where we begin with Bruce (Wayne), it’s a very destructive road he’s on. He’s like: “OK I’m probably going to die doing this, but if I don’t do it, I’m dead anyway”.

ANDY SERKIS [Alfred Pennyworth] WO: Has there been anybody in your life that you see as an Alfred – a sort of semi-parental figure that’s been able to give you sage advice? Andy Serkis: Probably more friends than parental figures, certainly a particular older friend of mine, who at a certain point my life was instrumental in guiding me. I didn’t draw from that

stars of The Batman really influenced it, but no, I didn’t want to stuff my cheeks with cotton.

relationship, but thinking about it now, I can certainly relate to it. WO: We could probably all do with an Alfred right? AS: 100 per cent. JEFFREY WRIGHT [James Gordon] WO: In the world of Batman, Gordon is one of caped crusader’s closest confidantes. in The Batman, where are we at in the ark of their relationship?

Jeffrey Wright: This is a Year Two story for Batman, a post origin story, so we’re on the ground floor of the building of their relationship. What I appreciated about Matt’s script is that he’s kind of peeling off these assumptions that we make about the characters, and Gotham and their relationships. The first scene we shot was one where Gordon and Batman are walking into the room with all of these cops, and it’s a whole window into the story for me because it raised in my mind some questions that could be taken for granted: “Who is this guy in the weird animal suit? It’s

strange that Gordon is with this guy, right?” Immediately we begin to ask these questions, and in this instance they are asked through the eyes of Gordon’s colleagues in the police department. All of these assumptions are being reconsidered and it’s still new and maturing. That’s where we are at the beginning of the film and we see where it goes.

DYLAN CLARK [Producer] WO: You’ve worked with Matt Reeves now on a number of big projects. What are the key strengths between you two? Dylan Clark: We both like the muscularity of stories that deal with men, but we’re not afraid of the intimate, emotional moments. The best movies always have those dichotomies inside characters. We both are empaths, so we always try to find the best in the worst people. A lot of movies miss the step of trying to find out why that bad guy is how he is. I don’t have the ability to do the things he does, I just sit there and marvel at his direction. Everything is in service of character and emotion and theme.

JOHN TURTURRO [Carmine Falcone] WO: One of the cocreators of your character once said that he based the character on Don Corleone. Did that inform your portrayal of the role? John Turturro: Not really, but I could see from the comic that he

LASTMINUTE TRIP A hip new hotel brings youthful energy to the Trade Centre The self-proclaimed ‘new kid on the block’, 25hours One Central is making noise among the city’s staycationers for all the right reasons.

The location One Central isn’t known for its buzzing scene but it’s right on the doorstep of the definitelybuzzing DIFC. 25hours is also a stone’s throw from the soon-to-open Museum of the Future, which serves as a landmark view for the property’s rooftop pool, alongside Sheikh Zayed Road’s skyscrapers.

The look and feel Created in Germany, this hotel oozes European cool. We could fill a page about the lobby alone, with its 5,000 books, analogue circus filled with retro gadgets, spiral staircase decorated with bicycles and spinning egg chairs hanging from the ceiling. Through the lobby is a courtyard which serves as the alfresco area for two of the hotel’s restaurants. Wooden decking, Moroccan-style rugs and a vintage icecream cart make this welcoming space a must-see during your stay.

The rooms A far cry from your cookie cutter hotel room model, the attention to detail is astonishing. A vintage polaroid camera decorates the shelf, a typewriter sits on the desk and there’s even a full-size hammock hanging in the corner. We stayed in a Farmstay Suite, a spacious, stylish room with views over the city, a large double shower, double sink bathroom with a freestanding tub and all the amenities. The bed feels like you’re sleeping on a cloud.

The facilities The aforementioned rooftop pool boasts 74_What’s On

“CREATED IN GERMANY, THIS HOTEL OOZES EUROPEAN COOL.” not only city views but a dedicated tiki bar, and chic cabanas, bean bags and sun loungers to soak up the sun. There’s also a spa for both men and women, and a fully kitted gym that looks so inviting and stylish despite being a room full of paininducing equipment.

The food and drinks Monkey Bar is the hotel’s junglesque rooftop bar, with both an indoor area and alfresco seating with big circular booths and cages. It overlooks DIFC and Downtown Dubai, and serves up dangerously good cocktails with plates championing Latin American cuisine. A more family-friendly option is BritishIndian fusion restaurant, Tandoor Tina.

With a vintage vibe, varied menu and cheerful service, this old-meets-new, eastmeets-west spot is a no-brainer. While we wait for German-focused Ernst to finish construction, Nomad is the final option for dining. Run by the team behind Alserkal Avenue coffee shop, Nightjar, the cosy spot serves excellent brews with hearty comfort food (be sure to order the truffle rigatoni).
