JA Hatta Fort Hotel was the official starting point at this year’s 7Emiratesrun – a 490 kilometre sevenday run across every emirate of the UAE, which took place in late November last year in honour of the 45th UAE National Day. Under the patronage of His Highness Sheikh Hamdan Bin Mohammed Bin Rashid Al Maktoum, Crown Prince of Dubai and Chairman of Dubai Sports Council, and in partnership with Al Jalila Foundation, the charitable organisation raises funds to help children with limb deformities to get life-changing surgery and post-operative medical support.

Ahead of the fifth edition of the 7EmiratesRun, David Thompson, COO of JA Resorts & Hotels, said: “Located in the idyllic Hajar Mountains just over an hour’s drive from central Dubai, Hatta is the perfect upcoming destination for outdoor fitness and sports activities and it is fitting that the team have chosen to set off from here. Continuing our national pride, JA Ocean View Hotel in Dubai embraced the UAE spirit with the return of our Emirati Village in the run-up to National Day. Situated on JBR’s The Walk, the set-up played tribute to the UAE welcoming guests and visitors to partake in a variety of fun-filled activities showcasing Emirati culture. The festivities kicked off with an opening ceremony on November 23rd attended by JA Resorts & Hotels Chief Operating Officer, David Thomson, and Beit Al Khair’s Executive Director, Abdeen Taher Al-Awadi, to officially open the exhibit in the Atrium area of JA Ocean View Hotel. JA Resorts & Hotels teamed up with local NGO, Beit Al Khair, which provides humanitarian services to needy UAE nationals, to gift the organisation’s orphans during the Emirati Village. All

proceeds from activities at the Emirati Village went towards the Bait Al Khair Society. Over an 11-day period, visitors joined in on a host of unique activities and experiences, including an authentic Majlis tent in which guests could watch local women bake fresh Arabic breads and sweets “logaymat”. In addition to numerous pop-up activities for both little ones and adults, visitors to the village also got the opportunity to dress up in local attire and have intricate henna patterns by professional artists.

In recent months JA Resorts & Hotels has been the proud receiver of numerous awards across the hospitality industry. Two of our Dubai properties were honoured to receive accolades at the World Traveler Awards 2016 for World’s Leading Apartment Hotel 2016: JA Oasis Beach Tower, and World’s Leading Family Resort 2016: JA Jebel Ali Golf Resort. The JA Manafaru resort in the Maldives was also recognised at the World Luxury Hotel Award 2016 as the Regional Winner: Luxury Honeymoon Hotel, Indian Ocean Island. While over at the Leaders in Food & Beverage Awards, White Orchid, an Asian fusion restaurant located within JA Jebel Ali Golf Resort, was shortlisted under the Sustainable Restaurant category.

A celebratory hiking event took place in early December to commemorate the 45th anniversary of the UAE. Arranged by Dubai Municipality – sponsored by the Tourism & Marketing Department – and in collaboration with Dubai Sports Council, the evening before the hike JA Hatta Fort Hotel hosted a camping site and BBQ feast for those participating. The hiking commenced from the Hatta Cycling Mountain Racetrack, passing several tourist landmarks in the city toward the finishing line at Hatta Dam where an integrated heritage village awaited.

RECLAIMING THE FUTURE At JA Resorts & Hotels we are more determined than ever to protect and preserve the spectacular environments we are privileged to enjoy Last year marked a milestone in climate change history. Sadly, it was not because goals were met or progress was made on the

many pressing issues facing the future of the planet. In September 2016, the world officially passed the 400ppm carbon dioxide

threshold. Now, for our lifetimes at least, itâ€™s unlikely that CO2 levels will ever drop back below this symbolic milestone.

Scientists saw this coming. Decades of unabated industrial growth made it a matter of “if not when” we passed the tipping point. What many consider concerning though is the speed with which we raced over the threshold and, in particular, the heavy question mark hanging over the global response now that’s we’ve reached a point of no return. The consequences, if action isn’t taken to reduce emissions, are well documented. Temperatures continue to climb (it’s already looking like 2016 will be the hottest year on record), ice sheets melt and sea levels rise, engulfing low-lying states and flooding coastal areas. These processes, already well underway along with the many other impacts of climate change, will be felt around the

world with increasing severity for generations to come if significant changes aren’t made. Beneath the surface, the picture isn’t any brighter. One of the most visible indications that climate change is catching up is the crisis affecting a growing number of coral reefs. Last year, what scientists describe as a bleaching event took place, wiping out the entire northern section of The Great Barrier Reef in Australia. AIMS (Australian Institute for Marine Science) recently published a report estimating that two thirds of the northern section is dead, while much of the southern section remained relatively unaffected. During the height of the bleaching event, approximately 97% of the northern section was bleached.

Every major reef region was affected in the most widespread bleaching event on record. Experts say this could become the new norm if ocean temperatures continue to rise. In the Maldives, more than 60 per cent of coral reefs are now thought to have been affected by this phenomenon, with the once colourful coral gardens overgrown in algae and abandoned by marine life. The process is not irreversible. If the conditions causing the bleaching cease within four to six weeks, then the corals may still survive. The coral’s colour actually comes from algae that lives in the plant and allows it to thrive. “When environmental conditions move outside of the normal range, corals become stressed and release their algae into the water

and turn white,” explains marine biologist Stacy Mallaby. At JA Manafaru in The Maldives, Mallaby is working to restore damaged corals and preserve the rich maritime ecosystem that thrives beneath the waters. Recently, she has been coral gardening to increase cover at the house reef. “Coral gardening is much the same as normal onland gardening – I go to a healthy colony and cut a portion off. This fragment then gets ‘planted’ onto a metal frame in the water and in two years you may have a colony that can then be placed onto the reef,” she explains. Three times a week, Mallaby holds a presentation for guests at the hotel, where a new marine research and information centre will soon open its doors. Her talks introduce the many natural wonders in the waters surrounding the 35-acre tropical island, which is situated at the tip of the Haa Alif atoll, where some of the most

extraordinary dive and snorkelling sites are to be found. She’s one of the many specialists that JA Resorts & Hotels has called upon to refine and implement

a comprehensive sustainability strategy that has been adopted by every property across the portfolio. New initiatives are constantly being developed to

address the unique environments these hotels inhabit, whether it’s a pristine private beach in The Maldives or a bustling city boulevard in Dubai. “At JA Resorts & Hotels we place a premium on sustainability and enhancement of these environments, taking care to foster cleanliness, awareness and care for the marinas and beaches on our properties,” said Jorg Dittrich, Director Sports & Leisure at JA Resorts. JA Jebel Ali Golf Resort, in particular, has received numerous awards in recognition of environmental best practices, including Blue Flag certification for supporting eco-friendly beaches and marinas and Green Globe certification for sustainable tourism. A mission statement appearing at the top of menus in our restaurants around the world informs readers that ‘JA Resorts & Hotels incorporates sustainable practices by reducing waste, avoiding the use of endangered species and using humanelytreated ingredients. We purchase

eco-friendly, sustainable alternative products and services from selected vendors only.’ This includes a commitment to purchasing Foie Gras, tuna and caviar from suppliers with World Wildlife Fund Humanitarian Certification. In an effort to offset waste generated by the hotel and address local environmental challenges, JA Jebel Ali Golf Resort has joined a recycling initiative designed to reduce the impact of glass waste on Dubai’s landfill sites. The hotel is now recycling around 90 per cent of its total glass consumption each week. Other materials, including paper,

cardboard, plastic, aluminium, kitchen waste oil and scrap metal are also collected for recycling. A major focus is also placed on educating the next generation about sustainable practices and instilling in them a respect for the beautiful environments we enjoy. At children’s clubs throughout JA Hotels & Resorts, we run outdoor activities that combine learning with entertainment, whether its discovering exotic bird life, including peacocks in the hotel gardens at JA Jebel Ali Golf Resort or participating in outdoor games designed to introduce young minds to the many wonders of natural life.

And with an extensive renovation recently completed, the JA Hatta Fort Hotel has brought its traditional charm into sleek, 21st century splendour fit for any city-weary traveller Dubai can be a manic place: sometimes you just need to escape. Fortunately one of the UAE’s hotel treasures is just a two-hour drive from the city, nestled among some of the country’s most breathtaking scenery.

JA Hatta Fort Hotel was first opened in 1981 by HH Sheikh Rashid bin Saeed Al Maktoum. Its 48 deluxe chalet-style rooms, two suites and two villas have retained their early charm, providing a welcome getaway surrounded by nature.

This year the hotel received a makeover, which has transformed its amenities to suit any visitor. Each room matches a soothing pastel palette with traditional fretwork and sleek, modern furniture. Every room includes a soaking tub, shower and climate control which, combined with the sun-filled balconies and terraces, adds to the hotel’s relaxing ambience. “JA Hatta Fort Hotel is one of the first hotels to be developed by JA Resorts & Hotels and has a special sentimental value for the group,” says David Thomson, COO at JA Resorts & Hotels. “The modernisation will ensure guests enjoy a contemporary and comfortable experience without us having altered the unique charm of this venue. “We wanted to remain true to our Arabian roots and at the same time enchant our guests with a refreshed look and the heartfelt hospitality that we are known for.” The blend of old and new design is no mistake: Hatta, an exclave of Dubai just 10 minutes from the Oman border, is a weekender’s dream, filled with ancient wonders. Millions of years ago the entire region was under the sea – and it shows at sites like

Camel Rock and Fossil Rock, curiously shaped rock formations accessible by 4x4 or, for the more adventurous, quad bike. Nearby Hatta Dam may have been forged by man, but its draws are natural, from the striking, jagged landscape to a variety of rare birds including ospreys and fish eagles. Elsewhere peacocks roam the hotel grounds, and there’s even a mini zoo featuring ducks, goats, camel rides and a kids’ play area. Among them all, the hotel is an oasis, and visitors can enjoy an enviable roster of facilities including a fully-equipped gymnasium, field and target archery range, mini-golf course and tennis courts.

It is set among 80 acres of rolling, lovingly-tended gardens and two temperature-controlled swimming pools to ensure more

than enough space for guests and their families. For ultimate relaxation, the hotel has an on-site spa offering treatments such as massages and facials. And the hotel staff, who have been used to serving Dubai’s rich and famous for decades, are as much a draw as any on site. Family friendliness has long been a raison d’être of the Hatta Fort Hotel. Each room has enough space to accommodate two adults and two children up to the age of six. It also comes with complementary WiFi and a desk in case the office calls. Kids have their own pool and there’s even a babysitting service available for mums and dads who’d prefer a night out alone. Jeema has been its flagship eatery for years, and has lost none of its renowned cosiness post-renovation. An updated dinner menu includes dishes such as prawns and scallop salad, snail sizzler, basque-style chicken, lobster thermidor and seared cod fillet. Jeema’s curries are reckoned to be among Dubai’s best, and

include favourites like butter chicken and Ajwain tandoori king fish. Each night diners are serenaded by Perfect Rhythm, whose soulful tunes are enough to heighten any special meal. Afterwards drinks are available at the hotel’s cocktail bar, which harks back to the hotel’s early days – when Dubai was barely beginning to become the modern metropolis

it is today. Its Sunset Terrace is a fantastic place to take in the surrounding wildlife and landscape, whose lunar skyline pokes up at a star-filled Arabian sky. Breakfasts and lunches are served at the Café Gazebo, which overlooks the main swimming pool. Not far away is Hatta Hill Park, just 1.5km from the hotel, which includes walking and jog-

ging tracks, recreational facilities, BBQ huts and a watch tower. The hotel’s renovation comes at a big moment for the region, which was recently awarded AED1.3bn in development plans to boost its credentials as an eco-tourism destination. The Hatta Master Development Plan also includes the building of an AED54m road linking Dubai and Hatta, whose history stretches far back beyond Dubai’s current boomtown status. Heritage Village is a reconstruction of a traditional mountain village. Its 30 buildings, including mosques and homes, are furnished in a way reminiscent of the UAE before its period of rapid expansion in the 1960s. It’s a fascinating chance to see what Dubai, and the UAE, was like before it became one of the world’s super-modern destinations. The old town of Hatta also includes two military towers from the 18th century and the area’s oldest building, the 1780-built Juma mosque. The Hatta Fort Hotel has become as much a fixture of the local circuit as anywhere else in Hatta – and it’s a great chance to catch some much-needed R&R without the effort of a long trip. Oysters with Cucumber Jelly, Sour Cream and Caviar IngredIents • 12 unshucked oysters • 1 cucumber, peeled and roughly chopped • 200ml lemon and lime infused gin • Quarter lime juiced • 35ml verjuice • 1 leaf gelatine • 120gm brunoise of cucumber • Maldon sea salt • 60gm sour cream • 50gm caviar • 12 sprigs of fresh chervil • Salt & freshly ground pepper

method 1 Shuck the oysters and remove from the shells. Drain off the oyster juice, reserve and refrigerate until ready to use. Sterilize the shells by boiling them in hot water. Drain, wipe dry and reserve the shells for the presentation of the dish. 2 Blend the oyster juice, cucumber, gin, lime and verjuice to a fine purèe. Adjust the acidity with extra lime juice and verjuice if necessary and season to taste. 3 Pour the cucumber purèe into a double layer of muslin cloth suspended over a bowl to catch the juice and refrigerate for two hours. 4 Pass the cucumber juice through a fresh double layer of muslin cloth into a clean bowl and soften the gelatine in with cold water. 5 Gently heat 25ml of cucumber juice in a small saucepan. Squeeze the water from the gelatine,

add to the warmed cucumber juice and stir until dissolved. Stir into the remaining chilled cucumber juice and allow to set in the fridge. 6 Break up jelly with a fork and fold through the brunoise of cucumber and fresh oyster. Season to taste with salt and pepper. 7 Arrange three small moulds of maldon salt on each plate and place an oyster shell on top of each one. Spoon an oyster and some of the cucumber jelly into each shell. 8 Make a small quenelle of sour cream using two teaspoons and set onto each oyster. (If the sour cream is not firm. Then thicken by gently folding through a pinch of salt and squeeze lemon.) 9

Top with the caviar and garnish with sprig of chervil.

BABY VEGETABLES • 8 baby carrots, peeled and blanched • 8 baby leeks, trimmed and blanched • 8 baby beetroot, cooked and peeled • 6 green asparagus spears, peeled and blanched • 8 baby fennel, trimmed, blanched • 2 baby turnips, blanched • 4 baby globe artichokes, prepared and cooked • 8 broad beans, shelled and blanched • 4 cherry tomatoes • 12 Slices black olive • 20ml Extra Virgin olive oil • 20ml tomato oil • 20ml Basil oil • 12 picked chervil leaves • 12 picked baby basil leaves • 12 picked tarragon leaves • 12 chives tips • Salt & freshly ground pepper

Chef’s tip: The tomato confit, gazpacho, basil and tomato oils can all be made 24 hours in advance of serving. When the terrine is made, refrigerate for at least six hours, but preferably overnight before turning out for slicing. 1 Prepare the gazpacho: Roughly chop the tomatoes, cucumber, red capsicum, garlic, Spanish onion and basil, place in a food processor and blend to a smooth puree. 2 Pass the puree through a fine sieve press down hard on the puree to extract as much flavour as possible. Discard the pulp. Add the sherry vinegar and Tabasco. Take care not to over spice, as this will overpower the finished dish. 3 Season to taste with salt and freshly ground pepper. Cover the gazpacho with cling film and refrigerate until ready to use. 4 Remove the tomato confit from the muslin cloth and place

in a bowl. Add 25ml extra virgin olive oil, Julienne of parsley and basil and stir through the tomato confit. Add the balsamic vinegar and 5ml basil oil. Season to taste with salt and freshly ground pepper. 5 Soften the gelatine leaves in cold water, remove and squeeze dry. 6 Warm 50ml tomato water over a gentle heat and add the gelatine – stir until dissolved. Remove from the heat and allow to cool slightly before stirring into the gazpacho. 7 Square the four quartered tomatoes. Trim all four sides with a sharp knife and lightly season with salt and pepper. 8 Line a 750ml terrine with cling film, leaving a 25cm over-hang. Pour a thin layer of gazpacho to cover the base of the terrine and refrigerate for three minutes until the gelatine begins to set. 9 Add a layer of tomato confit and smooth out with a palette knife. Pour a second thin layer of gazpacho over the tomato confit, Press the squared tomato quarters into the gazpacho and refrigerate for a further three minutes. 10 Add a second layer of tomato confit and continue to layer the terrine until the terrine is full, finishing with a

layer of tomato confit. Fold over the cling film to enclose the terrine. If the gazpacho begins to set while building the terrine, place over a very low heat to melt again. 11 To press the terrine, cut out pieces of cardboard the same size as the terrine and wrap with aluminium foil and then cling film. Place onto the terrine and set a 500g weight evenly on top. Refrigerate for at least six hours or preferably overnight. 12 Remove the weight from the terrine, remove the cardboard and open the cling film covering the top of the terrine. Run the tip of a sharp knife around the edge of the terrine and invert onto the cutout cardboard. Cut four 2cm slices of terrine and brush with Extra Virgin olive oil. Lightly season with salt and pepper. 13 Place a slice in the centre for four servings and allow to stand for 15 minutes until it reaches reach room temperature. 14 Place the blanched vegetables, cherry tomatoes and sliced olives into a bowl and add 20ml Extra Virgin olive oil. 15 Season to taste with salt and freshly ground pepper. Spoon the vegetables and sliced olives around the terrine. Drizzle the tomato and basil oils over and around the vegetables and garnish with the pickled herb.

Pan-Fried Swordfish with Celery Crushed Potato and Sauce Bois Bourdan IngredIents • 100ml Bois Boudran Sauce • 8 baby artichokes, prepared and cooked • 16x2cm pieces baby leeks, blanched • 100gm tomato concassée • 500gm celery crushed potato • 1tsp sliced chives • 1 lemon • 4 x 140g swordfish portions • 25ml olive oil • 1tsp equal quantities chopped chives, chervil and tarragon • 16 chives tips • 16 spring fresh chervil • Salt & freshly ground pepper

method 1 Have the Bois Boudran Sauce prepared. Cut the baby artichokes in half and add to the sauce together with the blanched baby leeks and tomato concassée. 2 Warm the celery, crushed potato and the sliced chives at the last minute to prevent them from discolouring. Season to taste with salt, freshly ground pepper and a squeeze of lemon. 3 Lightly season the swordfish with salt and pepper. Heat the olive oil in a heavy-based pan and cook the fish for two minutes on both sides until golden brown – keep the fish medium-rare inside. 4 Drain the fish on paper towels to absorb any excess

oil and keep warm. Season with a squeeze of lemon. 5 Warm the Bois Boudran Sauce over a gentle heat and take care not to cook the tomatoes. Add the chopped herbs to the sauce and adjust the seasoning if necessary. 6 Place a 10cm pastry ring in the centre of a warm plate, spoon the potato into it and smooth with the back of the spoon. Gently remove the pastry ring. Spoon the Bois Boudran Sauce, artichoke, baby leeks and tomato concassee around the potato and garnish with the chive tips and sprigs of chervil. 7 Place the swordfish onto the potato.

WELCOME ABOARD I have met and served a number of different personalities, from the famous African singer Nhlanhla Nciza Mafikizolo to world-renowned chefs including Marco Pierre White. We often have well-known UAE food and lifestyle bloggers dine with us, such as Healthy Nomads. However one experience, which I will never forget, was when we hosted Indian Masterchef Kunal Kapoor and his team. I was part of the episode in which they shot onboard JA Bateaux Dubai. My family all saw the show and they were proud of me, which is what makes this event a memorable one for me.

Ever wondered what it would be like to work in the hospitality industry? Meet Ashwin Srinivas Rao, a food & beverage associate onboard JA Bateaux Dubai Indian-born Ashwin landed a job onboard JA Bateaux Dubai just over two years ago after spotting a vacancy online. Here, he reveals exactly what it takes to work in one of Dubai’s top dining experiences and the famous guests he’s met along the way.

CAN YOU TELL US HOW YOU INITIALLY GOT THE JOB ONBOARD JA BATEAUX DUBAI? I joined JA Resorts & Hotels’ Bateaux Dubai in November 2014. I had registered on LinkedIn to look for jobs and while searching came across the role at JA Bateaux Dubai. I immediately applied and the team called me in for an interview after going through my profile – I got the job soon after.

WHAT DOES YOUR ROLE ON JA BATEAUX DUBAI ENTAIL? As a food & beverage associate, my responsibilities include efficiently serving dishes and drinks as per the guests’ request. I’m also assigned with the responsibility of handling a particular section within the restaurant for the operations.

HOW DOES WORKING ON JA BATEAUX DUBAI DIFFER FROM ROLES WITHIN RESTAURANTS ON DRY LAND? Working on a beautiful cruise restaurant like JA Bateaux Dubai

is unique and completely different from any normal eatery. The vessel has its own live kitchen and a fullyfledged bar onboard, so the food is freshly prepared and beverages are served all while JA Bateaux Dubai gently sails along the Dubai Creek. The level of service and high quality of food is no less than any Michelin Star restaurant as per our guest reviews. However, my role does have its own set of challenges, such as time managing while still ensuring each guest experiences an once-in-a-lifetime evening with us. Communication between my colleagues and the kitchen team is very important to ensuring a smooth operation. I truly feel that working on JA Bateaux Dubai is a great opportunity in my career as I get to learn so many new things on a daily basis. It’s definitely exciting!
