That’s thanks in no small part to Candice Barnes-Wackman, who oversees the cozy spot in the Hilton Milwaukee, using decades of restaurant and nightclub experience to create an inviting space, whether it’s for a big dinner or just a beer at the bar. What do you find most rewarding about working in hospitality? One of the things I really enjoy is that we have the opportunity to create a memory for everyone who walks in. Our pub has such an awesome atmosphere. I hope that guests leave feeling sincerely, genuinely welcomed and relaxed. Whether they’re staying at the Hilton on vacation or a local just coming in for a drink, I want every guest to feel that they received the friendliest, most attentive service. What’s your favorite dish at Miller Time? I’m a burger lover, so I would have to say our smashburgers. They are definitely my weak spot. The thin patty is thrown on a super hot grill so it caramelizes but it still stays nice and juicy on the inside with that crisp outside. ◆ 80 | milwaukeemag.com
