3 hearts: ours and the lifeless chicken
4 (8-oz.), 2 cutlets of boneless chicken breasts, kosher salt, and ground black pepper; one should be seasoning, the other should be keeping the conversation
2 finely chopped garlic cloves: by me
1 Tbsp fresh thyme leaves: you, hovering the steaming skillet, always caring to ask, ‘what can I help you with?’
1 tsp. crushed red pepper flakes, by you
3/4 cup low-sodium chicken broth
1/2 cup sun-dried tomatoes
1/2 cup heavy cream
1/4 cup finely grated Parmesan and fresh basil, for serving, by me
1 wine: let’s not get drunk on this too early, shall we?
I PRAY for my grandfather’s guidance again as I spread his worn-out piece of paper on the kitchen counter along with the ingredients I tell you a little more about that summer in Nagano as I preheat the oven (we pray over that oven too, ‘be kind to us and let us hear you, we won’t make the same mistake’), and season the chicken, and start to cook


One afternoon, when the liquid gold was drenching my grandmother’s pink curtains similar to the color of my shirt I owned a heaving chest underneath from running around our Nagano farm, picking the ingredients for it in haste with my grandfather. I was out of breath early when he said, “Hurry, I made a grave mistake. I’ll teach you how I apologize to your grandmother. Don’t close your eyes.”
