ONG BEFORE they opened Nemea Greek Taverna and Flames Coffee Shop, Nick Tsigaris and his brothers loved eating Greek gyros and souvlaki on family vacations to Greece during the summer. Their newest downtown San Jose restaurant, Nick the Greek, which opened earlier this month, will try to replicate those dishes from the homeland. “Baby Nick” (so called as the youngest of three generations of Nicks in his family) says he is enjoying the restaurant boom in San Jose and is always looking toward his family’s next restaurant venture.

METRO: WHAT HAS IT BEEN LIKE WORKING WITH YOUR FAMILY’S VARIOUS RESTAURANTS? Tsigaris: It’s fun, we’ve all grown up in restaurants—it’s pretty much in our blood. Nemea I started with my cousin because we always wanted to open a Greek place. It was going to be something like this but we changed it last minute to make it more ﬁne dining. Realistically this [Nick the Greek] was our dream place, because this is the kind of place we grew up with, pitas and gyro sandwiches. In Greece it’s all very fast paced, fast service.

EER HAS rarely been known as understated beverage, but it’s all low-key at ISObeers, which opened its doors earlier this month with little fanfare, and on a limited-hours basis.

The downtown San Jose bar’s quiet launch belies the fact that some local beer aﬁcionados had been patiently waiting for its opening, as those who know owner Dee—he also helps run Bobby’s Liquors in Santa Clara—know that he is a big beer fan and a knowledgeable one at that. Don’t expect a formal grand opening any time soon, if ever, as that’s not Dee’s style. Rather, the bar’s current hours will gradually expand while more staff are hired and ﬁnishing touches made. Of note so far has been the hiring of Jake McCluskey, who previously managed Market Beer Company and, before that, Kelly’s Liquors. I recently caught up with Dee, who was low-key as always as he showed me around. On tap were the well-regarded North Coast Old Stock Ale, Drake’s Hopocalypse Double IPA and Deschutes 2010 The Abyss Imperial Stout, among others. The keg room was stocked with a cache of hard-to-get beers that Dee will release in the coming weeks. (The bar will list current offerings on its website and Facebook page.) I was struck by the sleek bar and the modern and spacious feel of the indoor space, as well as the potential of the outdoor patio. Dee mentioned already having ideas for possible events for this summer’s Silicon Valley Beer Week. METRO: A LOT OF FOLKS HAVE BEEN WAITING PATIENTLY—MANY FOR WELL OVER A YEAR—FOR ISOBEERS TO OPEN. CAN YOU SHARE WHY THE DELAY AND HOW IT FEELS NOW TO BE FINALLY OPEN? Dee: Inspections, but it’s all been good. We’re open—I feel relieved. It’s good to start paying some bills off [smiles] WHERE DOES THE NAME ISOBEERS COME FROM? ISO stands for “in search of” and is commonly used in the beer trading community. It sounded like a good name HOW WOULD YOU DESCRIBE ISOBEERS? WHAT KIND OF A PLACE DO YOU WANT IT TO BE? Just a casual craft beer bar. HOW BIG IS THE PLACE? We can hold about 45 inside and 45 outside. We’ll be putting up a trellis in the patio soon. HOW MANY TAPS? HOW MANY BOTTLED BEERS? There are 40 taps, including two wine taps, one for craft root beer and a couple for mead or cider—the rest will be craft beer. We’ll have about 1,000 bottled beers.

UDGING A BOOK by its cover, from the outside, Chaat Bhavan looks like a place for a quick bite. The anonymously squat, square architecture of the building, the plate glass windows and its location in Sunnyvale along a stretch of El Camino populated by other fast food joints further support the idea—as does the name “chaat.” In Indian cuisine, chaat is fast food, served from food trucks or street carts.

Inside the restaurant, however, the white tablecloths, as well as the modern, clean lines of the simple decor, hint at somewhere a bit more luxurious—not too upscale, but a hybrid of casual snacks and sit-down dining. And the menu bears that out. Chaat Bhavan offers a wide-ranging vegetarian menu that does include an array of Indian fast food snacks, but also wraps, thalis (assortments of small plates) and a variety of familiar Indian dishes such as aloo gobi (potatoes and cauliflower) and sag paneer (spinach and fresh cheese). Portions of even the snack-oriented fare were substantial enough for a meal. The dahi papdi chaat ($4.99), a snack of light, crispy crackers topped with potato, chutney and yogurt, hit the right balance of sweet, sour and salty—as well as crunchy—with hints of cilantro and mint, as well as bits of cucumber. The paneer tikka skewers ($7.99) arrived still sizzling on an iron plate, reminiscent of fajitas. Large cubes of paneer (at least the biggest I’ve ever seen) came with a nice char at the edges. The garlicky, slightly spicy tang of the tikka sauce offered a perfect contrast to the subtly creamy, rich cheese. Chunks of skewer-roasted bell pepper and onion complemented the firm bite of the paneer. The masala poori ($6.99) pairs puffy deep-fried bread with diced potatoes that have a subtle spiciness that can sneak up on you after a few bites. The bread helps cool the heat from the potatoes. But diners seeking a bit more spice can add the sliced jalapeño that’s served on the side. “HELLO. Good Morning. Sit Down,” the balding older man in tinted glasses and a red robe said with raised hands, a slight bow and a large smile to a laughing crowd. Downplaying the signiﬁcance of his own presence, His Holiness the 14th Dalai Lama, Tenzin Gyatso, visited Santa Clara University on Feb. 24. It marked the ﬁrst visit by a Dalai Lama in the Jesuit institution’s 162-year history. Finishing up his three-day Bay Area trip His Holiness, a recipient of the Nobel Peace Prize, was the guest of honor for “Business, Ethics, and Compassion: A Dialogue with the Dalai Lama.” The event was cosponsored by Santa Clara University’s Markkula Center for Applied Ethics, along with Stanford University’s Center for Compassion and Altruism Research and Education.

The event proceeded smoothly in spite of the expected protestors (practitioners of Shugden Buddhism, a subset of the religion that disagrees with the Dalai Lama) who lined up across the street from the university. His Holiness arrived a fashionable 15 minutes late. The estimated 4,000 attendees who were asked, for security reasons, to arrive two hours before the event gave only positive energy for the Dalai Lama, cheering when in lieu of his traditional red sun visor he donned one instead emblazoned with the words “Santa Clara University.” After performances by traditional Tibetan throat chanters and a youth choir, the Dalai Lama addressed his audience on the importance of humanity and kindness in a materialistic world, stressing his belief that humans are born with an innate compassion. The Dalai Lama then joined a panel with Santa Clara University President Father Michael Engh, S.J. and Lloyd Dean, the president/CEO of Dignity Health, one of the top ﬁve largest healthcare systems in the United States, to further discuss the ethical issues of compassion in business and medicine. “The Dalai Lama’s words were very thought-provoking. Proﬁt and compassion are often seen as antonymous in today’s business world, but it doesn’t have to be that way,” said Ian Teraoka, an SCU marketing major attending the event. —Michael Rosa

Switch Back THE SWITCHED-BABY melodrama has been dormant for some time now. One of cinema’s great living kid-wranglers, Hirokazu Kore-eda, brings the once popular genre to life in the overlong, occasionally poignant Like Father, Like Son. As always, Kore-eda is capable of subtle, tender moments, but the too-stark contrast between the victimized families oversimpliﬁes his story. It’s the problem of going big: he’s making a statement about the contrasts in today’s Japan, and he does it by illustrating a north-south split, which seems to be as much of a divide in Japan as it is in France, Italy or California. Masaharu Fukuyama is playing an essentially stereotypical character: a cold, swaggering, success-chasing Tokyo architect. He’s pushing the boy who he believes is his son hard right at the beginning of his scholastic career—at age 6. Down in the south, the architect’s natural son is being raised by a much more easygoing dad—Yudai (Riri Furanki) the tattooed, Hawaiian shirt–wearing proprietor of a funky ﬁx-it shop/hardware store. Furanki’s presence proves the Howard Hawks principle that you ought to try to make a comedy out of your story. When you see the sympathy Kore-eda has

for this happy-go-lucky slob, you wonder why the director bothered using the workaholic in his blood-freezing modern apartment as his starting point of the tale. Yudai has so much grit that he’s even openly looking forward to the settlement the Like Father, Like Son hospital is going to lay on him for their Not rated; 121 min. mistake. Could Homer Opens Fri. Simpson be earthier? Naturally, Yudai is perfect and doesn’t have an arc to follow, and it’s the architect who needs to rescue his inner child. There’s never been a switched-baby melo without third-act problems, and this lauded (and doomed to an American remake) drama is no exception. There are instances where you’re certain that Kore-eda is as good as Mike Leigh or the Dardenne brothers in dramatizing the banal thought: the human race’s refusal to acknowledge the familial ties between us worsens the world. This inconceivable switched-atbirth situation takes on a sad plausibility in those instances: you wonder what you’d do if it happened to you. —Richard von Busack

to play Lewis to her Clark, she wouldn’t even consider dating a guy whose idea of a nature hike is probably cutting across the lawn to get the mail. I shared this thought with a mentally ill friend of mine (translation: one who camps on purpose), and she agreed. She also added that “camping with 20 people is not camping; it’s ‘camping.’ It’s getting drunk beside your car, tripping over your tent stake and passing out next to your sleeping bag. Even a city boy can do that once.” Let your girlfriend know that camping isn’t your thing but that you’re sure you’ll have a great time with her over the weekend. This sets her up not to expect much more of this outdoorsy business from you while setting you up as a good sport who’s willing to go out of his way to make her happy. If both you and your relationship survive the weekend, maybe you can show her a thing or two about the great indoors—like how, of all the current wonders of nature, one of the most wonderful is how you can sit in your house drinking martinis while watching them on Discovery Channel. And don’t forget my absolute favorite thing about nature—the whoosh it makes as you’re driving past it to get back to your hotel.

My best friend, “Rob,” is really into this girl he’s been dating. She is loud, talks constantly about vapid subjects, generally rubs everyone the wrong way and—I’m not kidding—makes cat “meow” sounds. (For instance: “I'm hungry; let's get pancakes! Meow.”) Recently, a mutual friend blurted out to Rob, “Dude, seriously, how do you put up with her?” Rob was upset, and I sympathized, but the reality is, we all think that. Shouldn’t he know the truth—that none of us wants to be around him when he’s around her? —Biting Tongue When you’re all out to dinner, you must live for those moments when she and some other woman excuse themselves to go talk about all you guys in the litter box. As hard as it must be for you to hold back, all this guy should know is that you’re his friend. People mistakenly believe that you can criticize somebody into changing. You can’t. What you typically end up doing is criticizing them into clinging even more tenaciously to whatever you were hoping to pry them away from. Because,

in relationships, initially adorable idiosyncrasies can turn screechingly annoying, it’s possible your friend will eventually grow allergic to loud, vapid women who make cat sounds. Until then, well, that’s why there’s guys’ night out at the cigar bar. You might also try to curb your annoyance by feeling happy for him. For him to be blind to how irritating she is, she must do some really special things in the bedroom—you know, like marking the bed with urine and killing mice and leaving them on his pillow.

This great girl I’ve been dating just invited me on a camping trip. Frankly, there is nothing I would like to do less. I hate camping, and I won’t know anyone but her. The trip is three days with 20 of her friends, including her ex-boyfriend, so I worry about asking her to go without me, especially since we aren't “official” yet. Can I skip this without it being a big deal, or is it a mistake to let her go when we're right at the monogamy crossroads?—City Boy The comforts of civilization abound. Even Walmart stocks a heated toilet seat—complete with a handy-dandy nightlight in the bowl—for a rather reasonable $119. Yet—go figure—there are all these people who think it would be super-cool to go out for a weekend and squat behind a bush. In other words, I’m right there with you, City Boy. My idea of camping is waiting for our room to be ready in the lobby of a hotel with exposed wood. My favorite hiking safety tip? Avoid hiking. But I understand your problem. It’s a bad idea to stay home when it means she’ll be out there in nature with nothing to block the view of her ex-boyfriend. The mainstream view is that microwaves basically do what conventional heating does, only faster. A few scientists, however, think there may be what are known as nonthermal microwave effects of possibly ominous significance. Since precision microwave ovens have become widely available in labs, an opportunity to settle this longstanding controversy is now at hand—or so it seemed in 2005. Which brings us to the article cited above, published last year by three Austrian chemists, C. Oliver Kappe, Bartholomäus Pieber and Doris Dallinger, in the journal Angewandte Chemie (“Applied Chemistry”). Having reviewed the literature and done some experiments, they report as follows: Everyone agrees microwaves are far too low-energy to break molecular bonds and cause chemical reactions. (Cooking, whether done conventionally or with microwaves, unbends or “denatures” proteins, changing their shape much as one might unbend a paper clip, so in that sense it changes molecular structure. But it doesn’t turn the molecules into something else.) That said, laboratory microwave ovens do things that are difficult or impossible to replicate with conventional heating. A reaction that might take five hours to complete if the starting mixture were simply boiled can be accomplished in one second using a microwave to superheat the stuff in a sealed vessel. The fact remains: these are still thermal effects. Claims of nonthermal microwave effects continue to show up in the scientific journals, but in the opinion of Oliver, Bart, and Doris, these are mostly due to (a) chemists not really getting how microwaves work and (b) experimental error. A common problem is inaccurate temperature monitoring. One article won’t end the argument. But I’m inclined to agree with Oliver, Bart and Doris: mysterious microwave effects (and presumably their attendant dangers) are a myth.

The jury was still out, although if my eyes don’t deceive me they just filed back into the courtroom. More on that in a moment, but first a word. Next time you get some fragile eggshell mind telling you that “microwaving changes the molecular structure of food,” look them in the eye and reply as follows: “You’re 100 percent correct— it’s been scientifically proven that microwaving changes the molecular structure of food. THIS IS CALLED COOKING, YOU NITWIT.” The verdict comes in the form of an article published last year entitled: “Microwave Effects in Organic Synthesis: Myth or Reality?” The answer, not to kill the suspense, is: myth. To recap, people freak out about microwaves because they use (horrors!) radiation, failing to grasp that there are two kinds of radiation: (1) ionizing, the high-energy kind produced by nuclear bombs, radioactive elements and such, and (2) non-ionizing, the relatively lowenergy type we encounter every day in the form of light, heat and radio waves. Microwaves are located between radio and heat (infrared) on the non-ionizing end of things. Microwave heating is different from conventional heating because, whereas infrared energy warms up pretty much any molecule it plows into, microwaves only affect molecules having polarity— that is, positive and negative ends, which rotate rapidly back and forth as the microwaves go by. A common type of polar molecule is water, which, happily for us, is distributed fairly evenly throughout many foods. So while ordinary heat gets absorbed by the outer layer of a food and only slowly penetrates to the interior, microwave energy passes through most of the food as though it were transparent and heats up mainly the water and, to a degree, the sorta polar fats and sugars, which in turn heat up everything else. The food thus cooks uniformly (more or less) and in much less time.
