It’s been called the 5-minute way to make amazing ice cream. Liquid nitrogen freezes ice cream almost instantly, resulting in a smoother, richer, denser product. The key is the extreme temperature, which does not allow enough time for ice crystals to form. Family-owned Scoop in Palo Alto is so far the only place in the South Bay where one can try it. Their ice cream is frozen in small batches throughout the day. The process often includes the sight of nitrogen “smoke” erupting from the freezing chambers. Each flavor begins with an organic base consisting of Straus cream, milk, eggs and sugar. All sauces are also made on-site. Currently, Scoop’s most popular flavor is Maple Bacon Crunch, mapleinfused ice cream with bits of crunchy candied bacon. Their Bourbon Vanilla with Salted Caramel, which offers a generous kick of Jim Beam, is also worth a try. Scoop is located at 203 University Ave. Hours are Sun-Thu noon-10pm, Fri-Sat noon-11pm. Tri-Tip Love Barbecue is now claiming status in the fast casual market. Next month, Winters, Calif.-based Buckhorn Grill will be opening in the food court at Oakridge Mall. The company specializes in marinated sirloin tri-tip, which is rubbed with spices, chargrilled over wood and then roasted slowly. Doneness varies, but most of the time it is medium-rare with a juicy center. A whole tri-tip runs about $24.95 Mon-Sat, and $19.95 on Sundays. Yulan debuted last fall in China and now the show, created by Nahat for China’s Dalian Acrobatic Troupe, makes its U.S. premiere Oct. 10-13 at the California Theatre in downtown San Jose. The ambitious work, set to a commissioned score by composer Paul Chihara, also has a multimedia aspect, with five projectors beaming colorful images on the stage and a rig of moving lights that required a custom-built transformer.

Yulan is presented in the U.S. by Theatre Ventures International, a ballet school and production company founded by Nahat last year. “I was asked to come to China to create a new work for this company, and it was something that I created on the spot with the company for them. The flower, yulan, is the magnolia. It’s the flower of Shanghai,” Nahat says. Yulan blends dance and acrobatics. “Everybody dances in the show in one way or another, they do their highwire acts and acrobatics, so you can’t tell who’s an acrobat and who’s a dancer because it’s so integrated,” he says

Nahat describes a delicate chain of daily emails, texts and phone calls over the summer to secure U.S. visas for the company. Even so, a delay in obtaining visas led to the cancellation of Yulan’s first week of performances (the planned opening had been Oct. 3). Now, however, all of the artists are in San Jose. The magnolia, Nahat points out, stands for peace, love and harmony in Chinese culture. “They [Dalian Acrobatic Troupe] wanted to be able to present it as a gift from China, so we raised all the money in China for it. The production is not government supported. The piece was funded and produced by this company and myself,” Nahat says. “It’s the first of its kind. We wanted to offer it to all the cities that we are touring to as a gift to help raise funds for scholarships.” Yulan is presented in partnership with the San Jose/Dublin Sister City program, which raised money for arts and science scholarships for students in Beijing, Dublin, Ireland and San Jose. In addition to San Jose, Dublin also has a sister city relationship with Beijing. Yulan’s opening night, Oct. 10, kicks off with a gala honoring KRON-4 News’ Catherine Heenan, this year’s recipient of the Spirit of Ireland awards presented by the San Jose/Dublin Sister City Program. SHUTTLING AROUND in a jet pack chair while slightly buzzed from neon-lit martinis sounds like a scene from the newest James Bond flick, but it's actually one of the attractions offered at After Hours at the Tech Museum of Innovation. The monthly 21-and-over event opens the museum up to nightlife where party games, cocktails, science and pizza bites collide. Upon entering the cavernous space, I was greeted by thumping Top 40 dance music and the first round of many drink specials for the “Retro Space: Sci-Fi Versus Reality” themed night. The first thing that struck me was how the open architecture of the museum is ideal for an after-hours After Hours at the Tech event. It acts as a natural sound amplifier and provides Museum of Innovation many angles for people watching, from guests lining up for commemorative Laser-tinis and Alien-tinis ($7 First Thursday of the then $5 for refills) to the crowd that was forming on the month, 7pm-midnight dance floor below. One such guest was birthday girl Radhika, 23, from Sunnyvale. The Tech Museum's offer of free admission for those whose birthday falls in the same month added to the cheerful mood. Activities set up just for the sci-fi evening included hovercraft creation with test wind tunnels and a Social Robots Lab. Though it did get hard to hear others right next to the dance floor, robot creation proved captivating enough for guests to shout at one another over the bass. The wine and cheese tasting on the roof had a more classic vibe and additional pricing starting at $12 for three pours. Michael Kowitz of SignatureWines.com organized the rooftop event, which showcased local wines and in the future could branch out with international offerings. With so many different activities going on, After Hours attracted a good crosssection of Silicon Valley. Match.com and a Meetup.com group sent out their own invites. There were groups of 20-somethings, young couples, and college students, as well as older patrons and solo adventurers. I have a dear friend who’s an alcoholic. When he came out of treatment, I told him I couldn't see why he wasn’t able to condition himself to have, say, a single glass of beer and stop at that. He said it didn't work that way, but never got specific. Why can't an alcoholic learn to drink in moderation? —Name withheld

Because alcoholics, by definition, are incapable of drinking in moderation. Sorry if that seems like a kiss-off answer, but research and experience tell us that’s how it is. Alcoholism is no trivial problem. The estimated 75 million or more alcoholics worldwide cost society from 1 to 5 percent of its gross domestic product. In Russia, where the problem is especially acute, male life expectancy is only 60 years, 15 years less than for U.S. men, largely due to alcohol abuse. The question of how to control heavy drinking—abstinence or moderation— has been surprisingly controversial for something like 60 years. I say surprising because the basic facts have never been in dispute. The dominant school of thought favors abstinence, arguing that alcoholics are too fragile ever to resist temptation and that a single drink can trigger a binge. Alcoholics Anonymous, founded in 1935 and at something like 2.1 million members the largest alcoholism support and treatment organization in the world, is a strong proponent of abstinence. Abstinence has an impressive success rate, researchers have found. But some say it’s not the only way. Over the years strategies were developed to teach heavy drinkers to control but not necessarily halt their consumption. An approach that became a lightning rod in the 1990s was Moderation Management, a nine-step self-help program. “Prominent figures in the treatment and research communities denounced MM as a ‘dangerous temptation to alcoholics’ that was ‘built on the illusion’ that alcoholics could return to controlled drinking,” writes Stanford addiction researcher Keith Humphreys in a 2003 review of the program’s effectiveness. Exhibit A: MM’s founder, Audrey Kishline. She “left MM, joined AA, and several months later caused the deaths of two people in a horrific car accident while severely intoxicated,” Humphreys reports. But he points out the MM and AA crowds don’t fundamentally disagree. MM participants are told initially to abstain from drinking for 30 days, then switch to moderate consumption.

If moderation fails, then a return to abstinence is recommended. The implication is that some heavy drinkers can control their habit and some can’t. AA, he notes, says the same thing. Both groups “make explicit distinctions between problem drinkers who are able to return to controlled drinking and alcoholics. Both [groups] also concur that failure at the goal of moderate drinking indicates that a drinking problem is serious and is best addressed by abstinence.” Research supports a two-pronged approach, finding that the most outof-control drinkers generally get better results with abstinence, while those with less severe drinking issues often do OK with moderation. So what’s the dispute about? A key element in AA theory is alcoholics’ capacity for denial, and its advocates see only the potential for tragedy in a system that lets drinkers decide they’re capable of drinking on occasion. Humphreys, though, says his research showed people who sought help for excessive drinking for the most part were pretty clear-eyed and tended to correctly self-sort. AA members were more likely to be older males with severe alcoholrelated problems—recent episodes of binge drinking, things like that. No doubt partly for that reason they had a greater chance of being jobless or otherwise socially and economically unstable. (Other research suggests they’re also more likely to be minorities.) MM participants, on the other hand, tended to be younger, female, and white, with fewer indications of severe alcohol abuse. But not all of them. About 15 percent of MM members, Humphreys reports, had major alcohol problems—“shaking when not intoxicated, delirium tremens, blackouts, convulsions or fits after drinking, and cravings for alcohol upon waking,” plus alcohol-related job issues. These people, he says, fit the profile for alcoholism—they just don’t admit it. Thus your friend’s response. You don’t say whether he was in AA, but the first of the 12 steps is to acknowledge you’re powerless over alcohol. The research suggests no one arrives at this stark conclusion unless it’s true.
