Chef Profile Behind this menu is MCEC Chef Dinesh Kumar, a chef grounded in tradition and driven by flavour. Drawing on the depth and diversity of Indian cuisine, his approach brings together time-honoured techniques with a fresh perspective, suited to shared dining experiences. Working with seasonal Australian produce, Dinesh pairs local ingredients with Indian spices to create dishes that feel authentic, balanced and full of flavour. Traditional recipes retain their soul, with techniques adapted to maintain quality and consistency. Bold flavours, rich tradition and a balance of Indian heritage and fresh local ingredients, brought together on every plate.

mcec.com.au

Working closely with local growers, producers and sustainable suppliers, nearly 80% of what’s served is sourced from Victoria. The result is food that feels fresh, considered and connected to place.

External Chef Collaboration MCEC welcomes partnerships with Indian groups, including the option to bring in external chefs as part of your event delivery. Our team will run collaborative sessions that create space to align on menus, refine flavours and work through every detail together. It’s a process designed to support your team and ensure the final menu feels authentic, considered and resonates with your guests. 5
