What’s the philosophy of your bar program? “We only have high end spirits. It’s a nice, clean bar with a nice tap system. We make good drinks. We don’t sell a ton of liquor, but we want to give somebody a good quality drink so they can enjoy it and have it with their food. “It’s about having a high quality experience from food to drink to interaction with everybody. We support local as much as can. We use Jeremy (Elliot’s) stuff from Smuggler’s Notch whenever we can. It’s about high quality beverages that people like.”

J
ohn Raphael has been involved in the restaurant business for almost as long as he can remember. The chef/owner of The Family Table, in Jeffersonville, recalls standing on a chair and helping his parents prep food for their catering business as a young child. So after attending Champlain College and then the prestigious Johnson and Wales University, in Rhode Island, he made it his career. When it came time for him to open his own restaurant, there was no question about where it would be. “This is my favorite part of the state,” he says of his restaurant’s home. “This was perfect. It’s a beautiful area, I really like it, so I decided to live here.” The Family Table, which opened in 2010, offers a menu that ranges from lobster tiger rolls with a sweet chili ginger dipping sauce and maple pork chops to a 30-day dry-aged Written by Bill Burke | Photography by Oliver Parini 4 | 802spirits.com u AU G U S T 2018
grilled rib eye and a lamb burger with tzatziki, feta and roasted red peppers. A new cocktail menu has upped the offerings from the restaurant’s bar, as well. “We used to do seven percent liquor,” Raphael says. “Now we’ve come out with a nice, new drink menu with fancier drinks, that’s up to 20 percent.” It all comes from the imagination of a chef with years of diverse experience in a wide variety of establishments. But like the name of the restaurant would suggest, for Raphael, it all comes down to the personal connection with his guests. “Customers and fun people know they can eat at the bar and interact with me and the wait staff,” he says. “They know it’ll be fun and we can talk and socialize with everyone hanging out there. It’s like ‘Cheers,’ everyone knows your name. “It’s really not about making money off of one visit. It’s about relationships with customers — a lifetime relationship. You’re involved
“Listen. It’s all about being a therapist. I just had that conversation with good customer. At the end of the night he shook my hand and said, ‘thanks for listening — this was a great therapy session.’ You need to evolve that relationship so they trust you and want to talk to you. If they’re stressed, that’s why they're there — to have a drink and escape the every day stuff. You need to be open to that and be attentive. Give them that extra attention. It’s all about the relationship. You should engage everybody and smile all time. If don’t have it, run next door. A customer came in and wanted a Moscow Mule. I had to tell him I had no ginger beer, so I ran next door, got some and made the drink. You should make people feel like they’re family.”

Kings and presidents eat around a table, enjoy a feast and talk. Eating is an important part of life. A lot of things come about from a good meal and a good discussion.”
At the end of a shift, I… “I clean. Everybody’s got to clean everything, so I end up breaking everything down and then doing paperwork. It’s a clean-fest, really. It takes a couple hours to clean and make everything perfect for the next day. I work constantly, but when I want to unwind the TV works for me — but nine out of 10 times I fall asleep before the lion roars before the first scene of the movie.”
What advice would you give aspiring bartenders? “Make good drinks and listen. Make the drinks the way you’re supposed to. Drinks were invented a certain way to taste a certain way, so make them properly. That’s so important. If you over-pour, you’ll ruin the flavor. Mixology is a science like baking and cooking. The portions are made for a certain reason to achieve a certain taste. If you keep it to that, people will enjoy it more and come back for another taste. It’ll be so good they remember it.”

ermonters are a hardy breed. We barbecue year-round — even when we have to shovel a path to the grill through a foot of new snow. And now that the warmer months are here and the rest of the world is catching up to cooking outdoors, it’s time to add something extra to the menu: cocktails. The burger-and-a-beer approach is fine, but pairing your barbecue with a thoughtfully chosen mixed drink can add an unexpected yet welcome dimension to your dinner. Of course, there are as many different styles of barbecue as there are states. There’s Kansas City style (rubbed with spices and served with a thick, tomato- based sauce), Texas style (a preference for beef, cooked low and slow over indirect heat), Carolina style (using a mustard-based sauce), and Memphis style (slow cooked in a pit and covered in a dry rub or served ‘wet’ and brushed with sauce before, during and after cooking), among other regional approaches. Whichever style you prefer, choosing the proper sipper can add a new, unexplored depth to whatever you serve. Here are a few suggestions that you can try the next time you put fire to food.

The bold, complex flavors of this barbecue season favorite hit every note across the palate, so when choosing a drink to pair with it, think cool. Bourbon, of course, is a natural choice for a lot of different barbecue options — in part because barbecue often features delicious, smoky flavors that are also present in bourbon. Since barbecue is normally associated with the American south, it stands to reason that a spirit from the same neighborhood would make sense. In this case, consider the southern classic mint julep. The beauty of a burger on the grill is that it can be as simple or as complex as the grillmaster wants to make it from a humble patty topped with American cheese served on a sesame seed bun, to much more involved creations with special seasoning, hand-crafted toppings and exotic cheeses gracing an artisanal bun. And while burgers may pair perfectly with beer, the appropriate cocktail can change things up memorably. The trick is to find the right pairing. Burgers can be very personal — with mustard or ketchup (or both) or a pile of pickles and a garden full of onions, peppers or tomatoes. When choosing a cocktail to go with a burger, its best to focus on something that cuts through the fat of the meat and something that can counter the rich flavors. The beauty of grilling chicken is that it can be tangy, sweet, spicy — or a combination of all three. It can also be mildly seasoned or exotically-prepared. The one constant is that it’s a classic that calls for a tried-and-true cocktail like the sidecar.
Sidecar 1½ ounces Cognac 1 ounce Cointreau or triple sec 2 tablespoons superfine sugar 1 tablespoon fresh lemon juice 1 lemon wedge 1 cup of ice Spread superfine sugar on a small plate. Rub lemon wedge halfway around the rim of a chilled martini or coupe glass. Dip moistened side of glass in sugar to lightly coat the outside rim of the glass. Set aside. In a cocktail shaker, combine Cognac, Cointreau and lemon juice. Add ice and shake vigorously until well chilled (about 30 seconds). Strain into prepared martini or coupe glass and serve.

Johnson’s Sterling Market

D
uring a particularly cold Saturday, early last January, Bobbi Gillespie — store director of Johnson’s Sterling Market — was going about her day like any other. Minutes later, she was standing knee deep in the icy waters of the Lamoille River. A fluctuation of temperatures resulted in an ice jam in the river, which sits alongside the store. The waters rushed into the ice, and then up and over the banks, into the town and into Johnson’s Sterling Market. “The fire department came in and asked us if we wanted sand bags,” Gillespie says. “We just didn’t have time.” Employees went to the parking lot to move their cars away from the rising waters, but as ice jams began to pile up, conditions worsened. “No sooner had I left, when our meat manager came on the store’s PA system and said water was coming in the back door,” she says. “By the time we got everyone out, I was knee-

I called to the grocery manager because the current was so strong that I needed his help to get the front door shut in an effort to keep as much water out as we could.” In the end, the water was “two shelves deep,” Gillespie says. The disaster necessitated a massive cleanup effort by both the store’s 33 staffers and the town’s fire department. The bottom shelves had to be cleared, and the lower shelf of the store’s liquor agency was cleared of product and disposed of. Most shops would shut the doors and take some time to reassess. But this market is located in Johnson — a small, northern Vermont
town that welcomed the store with open arms just a few years prior. Even the name, chosen in a town-wide contest, reflects its connection to residents and to nearby Sterling Mountain. “People just stopped and asked if they could help,” Gillespie says. “The fire department was dispatched immediately. The water receded within the first five or six hours and then we were cleared to come back in. They stayed with us and cleared every product off the floor and squeegeed the water out the front door.” Within days the store was back open, and residents of and visitors to Johnson were coming back to pick up everything from meat, produce and deli sandwiches to coffee, party platters and Vermont-made dairy products,

cheeses, wines and breads — though the market’s renowned chicken wings are responsible for many return customers. “We use an age-old recipe,” Gillespie says. “Even when there was a wing place in town, people would come here for them — especially during events like the Super Bowl. I stick with the Buffalo wings. They’re not super-hot, and there’s a chipotle that’s a little spicier, but the Buffalo wings are the most popular.” Quite often, customers will head for the front of the store for the liquor agency’s

Two end displays feature the entire line of Smuggler’s Notch Distilling and Green Mountain Distillers’ spirits. “The Smuggler’s Notch Vodka is the most popular item in the liquor store,” Gillespie says. “We also do quite a bit with the maple flavored items, as well.” Johnson’s Sterling Market hosts tastings in its liquor agency, including a recent visit from Vermont Spirits, which featured its Coppers Gin, made with wild juniper berries picked right in the northern reaches of the Green Mountain State. Gillespie, who spends as much time with her four grandchildren as possible (her six-year-old has a summer goal of riding 19 roller coasters), didn’t have an extensive spirits background before working in the liquor agency, but was able to pick things up rather quickly. “I learn on the go,” she says. “I work really well with the reps that come in, I read ‘802 Spirits’ magazine, I do a lot of beer and wine research, and I think we work really well with Vermont Liquor Control as well.” After a 25-year career in the grocery business that began at the Grand Union in Winooski, Gillespie says what makes the 12-aisle Johnson’s Sterling Market special is the clientele. It’s a market tucked into a plaza in a town that feels like it has a stake in its future. “I get a lot of compliments about it feeling like a hometown store,” Gillespie says. “I hear often that it all just feels very familyoriented.”
