A NOTE FROM THE CHEF
While allergy season and its unwelcome pollen are in full swing, this time of year also brings something to celebrate vegetable planting season for those who love good food This is a favorite time of year for many chefs, myself included, as we anticipate those first flavors of fresh food garden peas, spring onions, leafy greens, and eventually early summer tomatoes
I was born in Wilson County, NC, and raised here through the 80s and 90s. As many know, Wilson has a deep-rooted history in agriculture My family were farmers and planters here long before the American Revolution, when this area was still part of Edgecombe County My grandparents lived on a small family farm, growing fruits and vegetables that were taken by horse and carriage down what is now London Church Road to the Wilson Growers Markets, once located near present-day Maplewood Cemetery and Margaret Hearne Elementary School
I’ve been cooking professionally for over twenty years, and it’s no surprise that spring is my favorite time of year, with the long planting season ahead I’ve always loved to garden and have a deep
respect for why fresh, seasonal food matters so much for both flavor and health The key to good-tasting, good-looking food has always been simple: use fresh, quality ingredients. The science behind why fresh food tastes best is simple. When food is harvested at peak ripeness, it retains natural sugars, moisture, and the compounds that create vibrant flavor Unlike processed or stored foods, it hasn’t lost texture to long-term chilling or had sugars converted into starches, and it contains no artificial preservatives allowing those natural flavors to shine You can easily see the difference between food that’s in season and food that isn’t. Strawberries out of season tend to be less sweet and often pale inside, while a peak-season strawberry is sweeter and red all the way through Those rich pigments also signal higher antioxidant content, meaning in-season food is not only better tasting but healthier as well In general, eating from the farm or garden where food is grown helps ensure you’re getting the most nutrients possible
Some of my favorite kitchens I’ve worked in over the years were those with access to fresh food whether from a local farm or grown on-site. Understanding the science behind this makes for better cooking
With that in mind, we’re excited to begin a small kitchen garden project here at WCC, which we hope to feature in our weekly rotating specials. We’re building a sunny space just outside the kitchen, both to enhance the area and to serve as a hands-on way to teach our team about peak flavor We’ll start with simple herbs like basil, oregano, and parsley for our sauces, soups, and garnishes, along with heirloom tomatoes, squash, and a few other sunloving vegetables. We hope you’ll enjoy these additions and that the garden will also serve as a learning tool for future cooking classes and our Kids Club Look for this to begin appearing on menus later this spring, and if you have extra herbs or vegetables, feel free to bring them by the kitchen
As always, it’s a pleasure serving you at Wilson Country Club.
Happy Spring!
Executive Chef Mike Moore
An Ode to the Pistachio
“I love Pistachio as much as I love cookies The pistachio is the well-traveled, smart, and cool nut that sits quietly in the back of the class, calm, collected, and naturally green, with health benefits like healthy fats, fiber, and protein. Originating in the Middle East over 10,000 years ago, pistachios spread through ancient civilizations and became a luxury item for elites, from the Queen of Sheba to Roman emperors, while California now produces 99% of the U.S. supply. Humble yet legendary, pistachios are the perfect chef’s nut versatile, flavorful, and undeniably the best ice cream flavor known to humankind.”

It has certainly been an interesting spring season We have been below normal temperatures, and as I am typing this newsletter, we are on slate to have 4 days of above-average and record-setting hot days Hopefully, we do not skip over what is left of the spring season and the weather finds some middle ground. We could sure use some rain soon. Just yesterday I heard we are over ten inches below on our rolling annual rainfall amount. Even a .75-inch rainfall event does not seem to knock the dust down for long.
In other news, the greens are healing nicely from aeration, and, so far, they are dealing with elevated temperatures The course is in great shape for this time of year but seems to be struggling to come out of dormancy in spots just due to the lack of rainfall It will come around soon enough, I am sure I have fertilized most of the course to encourage it to flush out of dormancy a little faster A good rainfall event will make a tremendous impact on that effort
We have been cutting fairways and tees one time a week We began the week of 4/13 mowing rough to keep it in check and begin to implement the new cutting height that is standard throughout all McConnell Golf properties The new standard is 1 75 inches as opposed to the previous 2 0 inches Hopefully, this will lead to a few less complaints and a few more found balls Routine maintenance and mowing for the season will be in full swing soon enough!
I hope to see you all out on the course soon!
Regards,
Craig Clemmer, Wilson Country Club Superintendent

TEAM MUSGROVE MILL CAPTURES THE SCGA’S TRESCOTT CHAMPIONSHIP
Congratulations to Musgrove Mill Golf Club members Walt Todd Jr , Grainger Howle, Robert Lutomski along with golf professional Theo Davis on capturing the 42nd Trescott Championship! Finishing at 1-over (214), the team claimed the title in a sudden-death playoff on the first extra hole at Solina Golf Club

McConnell Golf once again placed all of its North Carolina private clubs among the state’s Top 100 courses, highlighted by four clubs earning Top 25 rankings in the North Carolina Golf Panel’s 30th annual statewide rankings, published in the April issue of Business North Carolina magazine
Leading the portfolio is Greensboro’s Sedgefield Country Club, home of the PGA TOUR’s Wyndham Championship, ranked No 7 in North Carolina Old North State Club in New London followed at No 11, while Raleigh Country Club climbed to No 15 Durham’s Treyburn Country Club made one of the year’s biggest moves, jumping four spots into the Top 25 at No 25 In total, 11 McConnell Golf courses earned Top 100 recognition statewide, marking a strong year of upward momentum across the company’s North Carolina portfolio
Several Triangle-area clubs posted notable improvements. The Country Club at Wakefield Plantation in Raleigh made a significant leap, rising to No. 75 from No. 94 last year. Treyburn’s move into the Top 25 further strengthened the region’s standing among the state’s premier courses. Eastern North Carolina also saw major gains, as Wilson Country Club surged into the Top 100 at No. 84 after being unranked last year one of the largest upward moves in this year’s rankings
Other McConnell Golf properties earning Top 100 honors include:
Country Club of Asheville, ranked No 52, up two spots year-over-year
The Cardinal by Pete Dye in Greensboro, ranked No 54, continuing its steady upward trend

Peanut Butter & Jelly Cookie
Sean O’Neill
Executive Chef at Treyburn Country Club
“As a chef and a father, I refused to let my kid have a limited palate As long as she tried at least three bites of any food I put in front of her to give her palate time to adjust, I would believe her if she did or didn’t like something This for the most part has worked out well, and she eats all kinds of foods now One thing she never liked was jelly or jam. A kid that won’t eat the classic PB&J? I tried so many things to get her to try jams in different ways. This cookie was one of those ways A little extra sweetness in a peanut butter cookie I enjoyed them a lot and held onto the recipe, my kid Well, she still hates jellies and jams ” - Sean O’Neill
