2 lb. stone fruit such as peaches, apricots, and cherries, pitted and wedged 5 oz. spring mix or other salad greens mix ¼ c balsamic vinegar 2 T honey 8 oz. burrata or other soft cheese, such as chevre
Steps • Combine all dressing ingredients. Divide in half. Marinate chicken in half of dressing for 1 hour, up to 4. • Grill chicken to mark and move to lower heat, basting with marinade for last few minutes. Cook to internal temp of 165F. Remove from grill and let rest for a few minutes before slicing thinly. • Toss salad greens with remaining half of dressing. Place on large platter. Add stone fruit, chicken and quartered burrata. Drizzle salad with honey and balsamic and garnish with more basil and thyme as desired. Serve immediately. For variations add toasted nuts, prosciutto and/ or croutons.
