2 lb. picanha Brazilian steaks, cut ½” thick ½ c Market of Choice Fresh Squeezed Orange Juice 2 limes, juice and zest of 3 T soy sauce 1/3 c Sebastiano’s extra virgin olive oil 2 t brown sugar 4 cloves garlic, smashed ½ c cilantro, rough chopped 1 chipotle pepper in adobo ½ t each cumin, coriander and chili powder

1 tub local Pico de Gallo salsa, such as Dos Bandidos 1 c melon, diced fine, such as cantaloupe, watermelon, or other ¼ c fresh cilantro leaves 12 corn tortillas 2 T olive oil 2 limes, wedged Crema Mexicana or sour cream

• Combine orange juice, lime zest/juice, soy sauce, oil, sugar, garlic, cilantro, chili and seasonings in blender on high speed for several seconds until mixed well. • Score fat cap in diamond pattern to allow it to render and crisp up on grill. Add steaks to marinade in zip top plastic bag and chill 4 hours to overnight. • Preheat grill. Remove steak from marinade and grill, reserving marinade. For traditional Brazilian style picanha, skewer each steak in a flat “C” shape on metal skewers and grill to medium rare 125F or desired doneness, basting with marinade, approximately 7-8 min total. Remove from grill and let rest 5 min before slicing. • Meanwhile, add oil to hot skillet and warm tortillas a few at a time for a few seconds per side. Remove from heat and add to serving platter. • Mix melon and pico de gallo together with a dash of hot sauce as desired. Build tacos with thinly sliced steak, then salsa, fresh cilantro and finish with crema as desired. Serve immediately with fresh lime wedges.
