It has always been said that the lures of Sotogrande work

From a distance, it may seem that it is all about golf on these sun-soaked shores but up close, it is a different story altogether. While golf is undoubtedly a big part of the outdoor culture here, one must peer through Sotogrande’s kaleidoscope of sport and activity, from horse riding to tennis, paddleboarding, fishing and kitesurfing, to see the full technicolour picture. Come rain or shine, the temperate weather from autumn to spring means that the local community upholds their ‘al fresco’ lifestyle twelve months of the year with never-ending opportunity to delight in the fresh air on foot, horseback, board, wheels or with a racquet in hand. In December, polo and showjumping events at the Santa María Club grow in popularity as the equestrian elite around the world take notice of these ‘off-peak’ fixtures. Matador, picador and torero,

Pepín Liria, is a household name is this part of the world. Characterised by his elegance, courage and dedication, with more than 700 bullfights under his belt, few can deny that he is a true specialist at his game. Born José Liria Fernández in Cehegín, Murcia, he made his professional debut at El Bombero Torero at the tender age of just 17, and it was around this time that he first visited Sotogrande – a place where he would return to again and again.

this region is amazing and there are so many different restaurants that I often go to.”

Q: What is it that most attracts you to Andalucía? Practically everything… the sea, beaches, mountains and towns. The particularities of the cities here, Córdoba, Granada, Málaga, Sevilla and Cádiz, are spectacularly attractive. Also, the food in this area as well as the amazing climate. The truth is I’m in love with Andalucía! Q: What are your most special memories at Sotogrande? My fondest memories of Sotogrande come from the period when I first started training as a bullfighter. I had a friend whose relatives lived in the area and had bull pens that I could use to train so I spent quite a lot of time here. In fact, some of my first experiences playing golf were at Sotogrande too.

Q: Do you have a favourite restaurant? As a rule, the food in this region is amazing and there are so many different restaurants that I often go to. Sotogrande, La Reserva, San Roque and Algeciras all have a gastronomic richness which is extraordinary. Q: Can you tell us a bit about your experience at La Reserva Club? My experience at La Reserva has been thanks to one of its first members, Pedro Zapata, who was a friend of Manuel Piñero, an important figure in the world of golf. It was because of them that I first came to join the community at La Reserva. The truth is that I have wonderful memories of this early period, of having lived unforgettable moments playing golf on this amazing course. I also have great affection for the team behind La Reserva – the staff there are all wonderful, everyone from the management to the people who work on the greens. There are so many different reasons why I escape to La Reserva as often as I can.

Nacido como José Liria Fernández en Cehegín, Murcia, debutó profesionalmente en El Bombero Torero con tan solo 17 años, y fue por esta época cuando visitó por primera vez Sotogrande, un lugar al que volvería una y otra vez.

P: ¿Qué es lo que más le atrae de Andalucía? Prácticamente todo … el mar, las playas, la montaña y los pueblos. Las particularidades de las ciudades aquí, Córdoba, Granada, Málaga, Sevilla y Cádiz, son espectacularmente atractivas. Mis mejores recuerdos de Sotogrande proceden de la época en la que empecé a formarme como torero. Tenía un amigo cuyos parientes vivían en la zona y tenían toros que podía usar para entrenar, así que pasé bastante tiempo aquí. The resort lays on regular night skiing from 7–9 pm and every Sunday, lifts open at 7.30 am for eager skiers and snowboarders looking to make fresh tracks on near-empty slopes. There’s also good off-piste skiing when fresh snow has fallen. The Sierra Nevada has three ski schools offering a range of alternative snow-centred activities. Try snow touring, cross country skiing or sledging with huskies. Snow shoeing, either above the ski area of the Sierra Nevada or on its southern slopes, the Alpujarras, is considerably more aerobically challenging than it might sound. Freestyle skiers are catered for too. The Superpark Sulayr on Loma de Dílar has hosted world-class international events but everyone is welcome to experience the 165 metre half pipe, cross circuits and a range of snow jumps across all abilities. Non-skiers can sign up for ski-biking, ice skating and tobogganing while the apres-ski comes with a typical Spanish swagger, starting well after dark and carrying on to dawn. Cooler temperatures, autumnal rains and dense woodlands: every autumn the stage is set for Spain’s magnificent mushroom season. It’s a season Spaniards relish. As devoted and knowledgeable foragers, they eagerly search the forest floors, filling wicker baskets with a haul of earthy delights. Mushrooms are an essential ingredient in Spanish cuisine and celebrated in regional cooking from Galicia to the Costa Brava. In Andalucía, where over 30% of the land is protected parkland and forests are densely packed with oak, beech and cork trees, the produce is especially golden. Think of a simple plate of champiñones al ajillo, mushrooms sizzling in olive oil laced with garlic, and champiñones a la Andaluza, button mushrooms fried with paprika, wine and a handful of parsley. Both are staples on tapas menus, at their best served with a chunk of bread to on the side. Andalucía has over 1,500 species of wild mushrooms. Best known varieties include Boletus, meaty brown porcini which can be served simply with a glass of rioja or added to soups and pasta dishes and are delicious in croquettes. Setas or oyster mushrooms, are wide and flat, delicious when sautéed or thrown into a stir fry. Then there are the wonderfully named amanitas cesareas, Caesar’s mushrooms, with a distinctive orange cap and yellow gills, an apparent favourite of Roman Emperors and níscalo, saffron milk-cap or red-pine mushrooms. Its most famous son, Pablo Picasso, born in Málaga in 1881, is the inevitable star of the show. The eponymous Picasso Museum, located in the sympathetically restored 16th century Palacio de Buenavista, displays some 280 works spanning all the decades and is usually the first port of call for most. Many of the pictures on show were donated by his family and are complemented by loans from other collections around the world. The wonderful ceramic display is always worth the visit, and long-time friend Roberto Otero’s photographs of the artist adds significantly to a man whose life itself often appears indistinguishable from his creative legacy. Thereafter, the now famous multi-coloured cube beside the Mediterranean, is the stunning home of the Pompidou Centre. The only satellite of its better known Parisian sister, its permanent collection is littered with great names, such as Tàpies, Brancusi, Giacometti, Magritte, Chagall, Léger, Bacon, Kahlo and, unsurprisingly, Picasso. However, temporary shows are on throughout the year as

well, with the absolutely compelling and multi-media Sophie Calle exhibiting this winter. For those of you that are uncompromisingly contemporary in taste, the modernist building housing Centro de Arte Comtemporáneo is the perfect place. It hosts a permanent collection of international artists from the 1950s, alongside the more recent stars of the Málaga art community. It has become a genuine destination for important international exhibitions, and in recent years it has shown some of the most compelling contemporary names such as Ai Weiwei, Tracy Emin, Anish Kapoor, Cristina Iglesias, Damien Hirst and Marina Abramovic.

This delightful gallery boasts some wonderful scenes by Manuel Barrón y Carrillo, snapshots of life in flower strewn homes in unremitting heat by Manuel Garcia y Rodriguez and romantic white dressed interludes by the ever-popular Joaquin Sorolla. Other magnificent secrets can be discovered in the seriously extraordinary private archaeological collection at the Ifergan Collection; the Russian Art Museum has works on loan from the Russian State Museum in St Petersburg including Repins, Kandinskys, and Rodchenkos; there is the challenging expressionist homage of the Museo Jorge Rando, and for the hot sand enthusiasts, the Museo del Vidrio y Cristal is a magical journey across the centuries of beautiful glassware. Finally, for the passionate, a visit to the art district of Soho Málaga should be a must. Independent galleries and artist’s studios sit side by side with a multitude of restaurants and cafés, with a design, craft and art market, ‘Made in Soho’ held beside the harbour on the first Saturday of the month. The winter mood in Andalucía is set by snowy mountains, flamenco and dancing horses, wild olive trees and twinkling Mediterranean views. Guitar is played and tapas is cooked then shared, washed down with a nice glass of something on the side. Traditionally, that something is sherry. Produced in the southwest of the region, this fortified wine dates back more than 3,000 years becoming world famous when Sir Francis Drake collected thousands of barrels in his ship in 1587 and travelled home. Sherry is largely based on sun-dried Palomino, Pedro Ximénez and Moscatel grapes grown in the white-chalk soils of Andalucía. The wines range in style from the crisp Fino and saline-driven Manzanilla to richer bottlings of Amontillado, Oloroso and Palo Cortado. With seven different types from dry to sweet, each come with a stickier texture and are often infused with hedonistic flavours of chocolate, raisin and prune. A fabulous course that offers magnificent views to the Mediterranean and is an oasis of peace that starts in the stunning clubhouse with an immaculate restaurant and terrace that allows visitors to enjoy the glorious landscaped vistas. The course itself is long at 6,700 metres and wanders down two beautifully curated valleys and presents a genuine but rewarding challenge. The staff are delightful, the service first-class and La Reserva is possibly the best value of all these extraordinary clubs. Nearer the sea is Real Club de Golf Sotogrande. Often regarded as one of Europe’s best and found close to the marina on fairly level ground, sand is the early hazard and water punishing the wayward as the round progresses. Founded in 1964 and the oldest in the area, it retains is mildly old-world sophistication with its elegant clubhouse and rather fine food and drink, but most impressive of all is the landscape, the variety of oak, palm and eucalyptus trees and the occasional views of the mountains of Sierra Blanca.

Amongst the best regarded clubs along the Costa del Sol is San Roque, both for its old and new courses, nestled in the hills close to Valderrama. It has recently had a major remodelling and spectacular new clubhouse and upgraded facilities, as a result of a change in ownership. The highly regarded old course has become a lot more accessible and whilst not necessarily easy, it requires fewer balls for those without the word ‘scratch’ beside their name. The new course, designed by Perry Dye, is no less demanding and is a visual feast as well as one the best new courses in Europe. It is a masterpiece of illusion with fairways that are wider than they initially appear and contain bunkers that are merely aesthetic to bunkers that are absolute monsters. It is a genuine pleasure to play at a clubhouse that welcomes with warmth and a serious sense of luxury. Once you have played the famous five, you can take on another set of courses, all of whom have their significant moments. The 27-hole Almenara Golf Club is often underrated, whilst the Trent Jones designed La Cañada Golf Course also has its fans and deserves to be substantially better known. Sotogrande is simply a golf glutton’s Shangri-la. And for those who look forward to the peace when their other half is hacking the fairways, it is a pretty nice place for them as well. Q: Can you discuss your inspiration for the staff uniforms at SO/ Sotogrande? Our major inspiration came from the big Andalusian symbols. Firstly, the Farmhouse (Cortijo), reinterpreted and renovated: revolutionised. We have also revolutionised the uniforms. We wanted to make them completely different to standard uniforms. We created some prints based on other Andalusian icons such as the Fan, the Carnation, and the Arches of the courtyards and with a nod to the exuberant and carefully tended vegetation at Sotogrande. We designed them to be colourful and we worked with unusual shapes for these garments/pieces, we wanted them to be audacious and creative, seeking to transmit the personality and the spirit of Sotogrande through the clothing that the hotel staff wear. These drawings and designs have also been used in many elements of the interior design, helping to create the special style and atmosphere that you experience in the hotel. P: ¿Puede contarnos un poco en qué se inspiró para crear los uniformes del personal de Sotogrande? La inspiración básica fueron los grandes símbolos andaluces: En primer lugar el Cortijo, reinterpretado y renovado: revolucionado, también nosotros “revolucionamos” los uniformes. Quisimos hacerlos totalmente diferentes de lo habitual. Creamos unos estampados basados en los otros iconos andaluces como el Abanico, el Clavel y los Arcos de los patios y con algún guiño a la vegetación exuberante y cuidada de Sotogrande. Los hemos diseñado coloridos, hemos trabajado con formas inusuales para estas prendas, hemos querido que sean audaces y creativos, buscando transmitir la personalidad y el espíritu de SO/ Sotogrande a través de la ropa que visten las personas del hotel. Q: Was trying to create a sense of place through the uniforms important?

Realmente fue importante y supuso un reto muy interesante, ya que mi trabajo se centra en la Moda Baño, el colaborar con mis uniformes, junto al resto de creativos, a crear un ambiente, a transmitir la esencia y filosofía del hotel: Ese Cortijo revolucionado singular y atractivo que es el alma del Proyecto.

It was really important and a very interesting challenge, since my work focuses on swimwear, to incorporate this with the uniforms. Not only this but also collaborating with the rest of the creatives, to create an ambience and to transmit the essence and philosophy of the hotel through these designs: this unique, attractive and revolutionised Farmhouse which is the soul of the project.

Un viaje de un día para A day trip to see the Great Mosque at Cordoba is an experience to be treasured; it is a pilgrimage to a magical place, a fusion of the Islamic and Christian cultures that dominate the heritage of this part of Spain. Now a Roman catholic cathedral and world-heritage site, the Mosque was initially commissioned by Abd ar-Rahman in 785 ce, when Cordoba was the capital of the Muslim controlled Al-Andalus. It subsequently became a cathedral in 1236, when the city was captured during the Reconquista, and the mosque’s lanterns sent to Santiago de Compostela to be made into bells for that city’s cathedral.

The Great Mosque has evolved over centuries and become one of the largest religious buildings in the Islamic world. You cannot but be bewitched by the sheer genius of its design, however organic and fractured its development. Visitors usually enter through the fountains and trees of the Patio de la Naranjos, a vast and open courtyard, before being exposed to the astonishing theatre of 856 granite and marble pillars supporting the magnificently striped horse-shoe arches and roof – probably the best-known image of this inspiring place. They were built partially from the Roman and Visigothic ruins of earlier buildings on the site. Equally breathtaking, but more refined is the exquisite decoration of the crescent portal of the mihrab. Commissioned by Al-Hakrim II, the Christian emperor of Byzantium had gifted, in response to a request for talent, not only a brilliant mosaic craftsman but also a mountain of gold mosaic cubes. The result is sheer glittering and shimmering beauty. Looking up is an experience that takes a little bit of breath away. Christian monarchs added to the structure over the centuries but never demolished the mosque. It remains a magnificent legacy of two religions and two cultures – a jewel in the astonishingly beautiful crown of Andalucía.

La Gran Mezquita ha evolucionado

durante siglos y se ha convertido en uno de los edificios religiosos más grandes del mundo islámico. No puede dejar de ser hechizado por la pura genialidad de su diseño, por más orgánico y fracturado que sea su desarrollo. Los visitantes suelen entrar a través de las fuentes y árboles del Patio de los Naranjos, un patio amplio y abierto, antes de ser expuestos al asombroso teatro de 856 pilares de granito y mármol que sostienen los arcos y el techo magníficamente rayados y de herradura, probablemente el mejor. Imagen conocida de este inspirador lugar. Fueron construidos en el mismo sitio parcialmente a partir de las ruinas romanas y visigodas de edificios anteriores. Igual de impresionante, pero más refinada, es la exquisita decoración del portal en forma de media luna del mihrab. As the colours of winter emerge in Southern Spain, the green mountainsides, the white tops of the Sierra Nevada and the crisp early morning light under clear blue skies, there’s a noticeable shift in the flavours served up at tables across Andalucía. Light summer salads and grilled fish are supplemented by seasonal produce that packs a punch – wild asparagus, fennel and game. It’s time to sample the hearty dishes that traditionally warmed and nourished fishermen and farmers. Gazpachuelo is perhaps the most traditional winter dish of all, a creamy and not-so-subtle rift on gazpacho that’s a regular in homes and restaurants around Málaga. It’s a mix of fish broth and garlic mayonnaise, eaten hot and finished with potatoes, fish – cod or monkfish most usually – and sometimes eggs or clams. Andalucían stew – puchero – is a stalwart on menus across the region, again with many homespun versions. Puchero refers to the large clay pots where the stew was made, in rural villages where cooks relied on whatever food was available. So while the traditional base of chickpeas and spices 2

has its roots in Arabic cuisine, over the centuries the dish has evolved. Menudo gitano, known as Andalucían tripe, uses pig’s trotters or ham, berza de acelgas is made with pork and pimento and Berza Malagueña has a bit of everything, beef, pork, bacon, and blood sausage. Choto al ajillo includes goat meat and smoked paprika. Meat is a staple of all these Andalucían stews and of winter dishes in general. Pork and lamb are easily found but there’s also oxtail from bulls, venison and wild boar. Rabbit and partridge are still on many menus as is wild duck from Seville, served with local olives. Determined not to give up your Andalucían seafood? Try baked hake served on a base of potatoes or travel to Huelva, famed for its siesta-inducing seafood paella. And no winter trip to Andalucía would be complete without sampling. Translating as ‘crumbs’ this is an intoxicating mix of chorizo, pancetta, garlic, bread and oil, a recipe credited to shepherds and widely served today. Buen provecho.

Q: How do you appoint the construction team and project manage the experience? Sotogrande has an excellent database of local construction companies and we usually request bids from at least three appropriate construction companies before, with our client, selecting the one that is most appropriate. Throughout the build, we supervise construction, co-ordinate with engineers, utility providers and ensure budgets and timelines are adhered to while of course, reporting to clients at every stage. Q: How does working with L35 offer an easier solution? Well we believe we’re a good choice because we’ve been a permanent presence in this area for twenty years and know it well. Through projects in Málaga, Marbella, Rincon de la Victoria, Benahavis, Sotogrande and Cadiz, we have a reliable black book of contacts and have developed good relationships with the local administration. Q: How does L35 interact with interior designers? We have an experienced interior design team. However we also understand that some clients might want to appoint their own interior designers and have a detailed list of designers we’ve collaborated with in the past and are confident to recommend. Q: Can you explain L35’s work on the Village Verde luxury estate? It’s a similar process to designing an individual villa in many ways except our client is Sotogrande S.A. We go from conceptual design through construction incorporating any modifications apartment buyers might want. In Village Verde, the landscape project has been especially important, correctly siting the different low-level blocks to take advantage of views and protect privacy as much as possible.

How a small town two hours north of Sotogrande is selling the finest leather goods to the world. The town of Ubrique in the province of Cadiz lies at the foot of the Serrania de Ronda mountains between the two heavily wooded Natural Parks of Grazalema and Los Alcornocales. In many ways, Ubrique is typical of all Andalucían pueblos blancos, the blisteringly white hill villages that form an historic chain across the region. The Arabic-influenced architecture has narrow streets lined with tightly packed houses, there’s an annual feria in September and the every-day sounds centre on gently tolling church bells and free-flowing fountains. Yet despite the calm, Ubrique has something to really shout about. This town in the Rio Ubrique valley, population 17,000, is where some of the world’s most exclusive and expensive designer leather goods are made. If you have a Gucci belt or a Louis Vuitton bag, there’s a strong chance that the delicate and highly skilled work on it was carried out in Ubrique. The town’s link to high-quality leather work began in the nineteenth century when a number of skilled artisans arrived from Italy. Ubrique had produced leather for centuries thanks to a local abattoir and plentiful water flowing down from the mountains, crucial for tanning leather. The Italians took it up a notch or two, using their expertise in embossing to add artificial patterns to the skins. Soon their work was in demand for clothes, bags and leather tiles for wall panels and furniture.

Fast forward to today and Ubrique’s reputation for excellence is well established. Leather is no longer tanned in the town but the skills of the leather workers have been fine-tuned and handed down from one generation to another and around half of the working population are involved in the industry. Ubrique manufactures around 75% of Spain’s total leather production, making anything from key fobs right up to exquisite bags and leather panels destined for the most exclusive super yachts. Shoes, clothes and bags are on sale in Ubrique itself but the majority of goods produced are shipped around the world and sold on the world’s most prestigious shopping boulevards: Fifth Avenue, Bond Street and Champs-Élysées. The prestigious British firm Connolly, who in their 140 years in business have supplied leather for Queen Elizabeth’s coronation coach, Concorde and for the red benches in the House of Commons, are proud of their association with Ubrique, outlining it on their website. In general though, an air of secrecy hangs over the town’s businesses, in part because of the high value goods produced there and the risk of unauthorised copies damaging the market. Unofficially the roll call of designer names said to use the town’s ateliers include Hermès, Chanel and Loewe, international brands who value the excellence of the work and the story behind it. In a time when the environmental ills of fast fashion are increasingly clear, the concept of painstaking mastery is seen as the very definition of luxury and a price worth paying. It’s a concept that the elite brands are committed to, ignoring the lure of countries offering cheaper manufacturing. When some brands chose to relocate their manufacturing to China in 2008, many returned for the superior quality of Ubrique.

Ubrique’s history is celebrated in the Museo de la Piel, an understated museum dedicated to all things leather and housed in a restored seventeenth century Baroque convent. Old machinery and hand tools used in production and the goods themselves, hundreds of items including the early tobacco pouches made in the town, are on show. In 2006, the MOVEX Foundation was established to support and promote the work of Ubrique’s leather ateliers and act as a go-between with collaborators and designers. They advise on new techniques and technologies while supporting the traditions at the core of the town and also act as translators – Ubrique’s leather workers use over 8000 specialist words to describe their processes. Over 85% of Ubrique’s leather factories have ten or less employees who benefit hugely from the commercial advice MOVEX provides. Looking to the future, huge time-saving advantages have been made in digital cutting while sustainability and the best use of resources – how off cuts are used and how to make the manufacturing energy-efficient for example – remain critical. But overall, with a buoyant luxury sector which relies on exclusivity, exquisite craftsmanship and exceptional design, the future in Ubrique looks bright. As is tradition in many countries in the northern hemisphere, winter is the time of year where family and friends huddle together to celebrate a festive string of holidays, one elaborate meal after the other. Decorated tables are laden with turkey, ham and seafood. Andalucían households tuck into grilled Sanlúcar shrimp, suckling pig, Doñana cheese and pestiños for dessert. In Sotogrande, the added advantage is that, instead of bitterly braving the cold for that icy pre- or post-Christmas lunch walk, sunshine bathes the landscape with inviting colour and the clement weather inspires all to cycle, ride, paddle or swim and work up a healthy appetite that each beautifully presented dish deserves. Every year after Holly Week, Seville is taken over by its ‘Feria de Abril’, the fair of all fairs and a spectacular festival of light, colour and joy. On the first night of the ‘alumbrao’ where the fairground lights are ceremoniously lit, attendees tuck into the traditional pescaíto frito. From then on, it is a week of constant celebration, the fair resembling a small, ornate town with over 1000 striped ‘casetas’ lining both sides of the streets. These casetas constitute an intrinsic part of the tradition, intimately decorated and equipped with a kitchen, bar, tables and chairs for enjoying delicious tapas and wine. Festival-goers sing, dance and rejoice with women in bright, polka-dotted flamenco dresses and men on horseback donning traditional clothing of farmworkers. This week also sees the best bullfights of the season, so be sure to bring your white handkerchief and follow the Sevillians to the bullring. ¡Olé! The Feast of San Martín falls on the 11th of November and is a classic autumn fiesta called ‘La Matanza’, literally meaning ‘The Killing’. All through the towns, villages and mountains of Andalucía, pigs are slaughtered to make ham, sausages and black pudding in preparation for the winter months ahead. It is a joyful time with plenty of food and lashings of drink. Similarly, Christmas Eve is reserved for rejoicing over plates piled high with all kinds of goodness at the dinner table – sea bass, baked lamb and stuffed eggs. Shops and bars close on this day so that everyone can return home. Right at the heart of the Andalucían Christmas season, the Verdiales Music Festival takes place on the 28th of December outside Málaga. A competition of ‘pandas’, groups that sing, fiddle, strum, rattle and dance in Verdiales style and incredible costumes, this event is a flurry of colour, vibration and sound – a veritable feast for all the senses. Fiestas, fairs, pilgrimages, carnivals, parties and celebrations – over 3,000 are celebrated every year in the region. Despite the dip in temperature during the darker months, towns and villages spill outside into the fresh air to put on a splendid show. Welcome to winter in Andalucía. Make sure you arrive hungry.

Como es tradición en muchos países del hemisferio norte, el invierno es la época del año en la que la familia y los amigos se juntan para celebrar una serie de días festivos con una comilona tras otra. Las mesas decoradas están cargadas de pavo, jamón y mariscos. Los hogares andaluces comen camarones de Sanlúcar a la parrilla, cochinillo, queso de Doñana y pestiños de postre. En Sotogrande, la ventaja añadida es que, en lugar de desafiar amargamente el frío para esa gélida caminata antes o después de la comida navideña, el sol baña el paisaje con colores acogedores y el clima benigno inspira a todos a andar, pasear en bicicleta, remar o nadar y realce el apetito saludable que se merece cada plato bellamente presentado. La Fiesta de San Martín cae el 11 de noviembre y es una fiesta clásica de otoño llamada “La Matanza”. Por todos los pueblos, aldeas y montañas de Andalucía, se sacrifican cerdos para elaborar jamón, embutidos y morcilla como preparación para los meses que se avecinan de invierno. Es un momento alegre con mucha comida y mucha bebida. Del mismo modo, la víspera de Navidad está reservada para regocijarse con platos llenos de todo tipo de bondades en la mesa: lubina, cordero al horno y huevos rellenos. Las tiendas y bares cierran este día para que todos puedan volver a casa. Justo en el corazón de la temporada navideña andaluza, el Festival de Música de Verdiales tiene lugar el 28 de diciembre en las afueras de Málaga. Una competencia de ‘pandas’, grupos que cantan, tocan el violín, traquetean y bailan al estilo Verdiales y con trajes increíbles, este evento es una ráfaga de color, vibración y sonido, una verdadera fiesta para todos los sentidos. Cada año, después de Semana Santa, Sevilla se ve invadida por su Feria de Abril, la feria de todas las ferias y una espectacular fiesta de luz, color y alegría. En la primera noche del “alumbrao”, donde las luces del recinto ferial se encienden ceremoniosamente, los asistentes se sumergen en el tradicional pescaíto frito. A partir de entonces, en una semana de celebración constante, la feria se asemeja a un pueblo adornado con más de 1000 casetas a rayas a ambos lados de las calles. Estas casetas constituyen una parte intrínseca de la tradición, íntimamente decoradas y equipadas con cocina, barra, mesas y sillas para disfrutar de deliciosas tapas y vinos. Los asistentes al festival cantan, bailan y se regocijan con mujeres vestidas con brillantes trajes de flamenca de lunares y hombres a caballo con ropas tradicionales de los trabajadores agrícolas. En esa semana también se celebran las mejores corridas de toros de la temporada, así que asegúrese de traer su pañuelo blanco y siga a los sevillanos hasta la plaza de toros. ¡Olé! Fiestas, ferias, romerías, carnavales, fiestas y celebraciones: más de 3.000 se celebran cada año en la región. A pesar del descenso de temperatura durante los meses más oscuros, los pueblos y aldeas salen al aire libre para ofrecer un espectáculo espléndido. Bienvenidos al invierno en Andalucía. The Kindred Project is SIS’ student driven NGO to raise awareness about pressing social and environmental issues and over the winter months, students are kept busy planning activities such as monthly non-uniform days to raise funds for these important causes. And, if you thought they weren’t busy enough, SIS continue to achieve outstanding results in terms of their sporting achievements, with students delivering fantastic performances in both local and international Tennis and Polo Tournaments. Uno de estos proyectos es The Permaculture Project, que transforma lo que alguna vez fue el vertedero de escombros de la construcción en un espacio de aprendizaje multifuncional al aire libre. Este espacio vibrante es mucho más que un jardín escolar, actúa como un espacio de aprendizaje al aire libre que inicia una conexión cercana con el proceso de cultivo de alimentos. Los estudiantes esperan ansiosos la Exhibición de Artes Visuales D2 en marzo de 2022, que le da al SIS la oportunidad de mostrar algunos talentos sobresalientes en términos de Música, Cine, Artes Visuales y Drama, ayudándolos a desarrollar su confianza y habilidades de interpretación. Andalucía is famous for many things. Horses for one. Extraordinary Islamic architecture another. Antonio Banderas and Joaquín Cortés to name more. And rather special brown Ibérico pig with a particular penchant for acorns is yet another. These creatures are responsible for Jamón Ibérico, a speciality that is regarded by some as one of the world’s rarest and most exquisite tastes. Not to be confused with Jamón Serrano, the product of more conventional pigs, the very finest Jamon Ibérico is highly regulated and the gift of pigs often known as ‘pata negra’ as a result of their curious black hooves. These noble animals have been foraging the landscape for millennia and are rather fatter than their cousins, which is central to the length of time the hams are able to be cured and the resulting complexity and intense depth of flavour. Indeed, ham is at the very heart of Spanish cuisine and was released onto a grateful world following the end of Moorish rule in 1492. Pliny the Elder wrote about Spanish pigs as early as 77ad and Christopher Columbus was sustained by Jamon Ibérica on his voyage to allegedly discovered America in 1493. It is thought that the black-booted Iberians were the result of interbreeding between wild boars and pigs some 1,000 years ago. The little village of Jabugo in the Sierra de Arecena in Huelva province, is entirely and passionately devoted to the production of this ham. It is also home to one of the most celebrated producers of all, the great Cinco Jotas. The choice of many of the finest Spanish chefs, Cinco Jotas has been crafting its hams since 1879. The American author Alice M. Hart, referred to it as ‘The Rolls-Royce of ham’ and it is generally regarded as the ultimate gold standard in gastronomy. Unsurprisingly and reassuringly expensive, Cinco Jotas has retained its traditional processes and cures its

finest hams slowly, with the very best black label produce taking up to five years, accompanied by obsessive attention being paid to each and every ham. If you fancy a tasting sensation, you can now visit the bodegas itself. There is a glorious Cinco Jotas experience available, that can be as indulgent as your taste buds and time demand. The team at Cinco Jotas arrange experiences where you can either visit on foot or horseback the beautiful landscapes and meadows where the pampered pigs roam. Tastings can take place amongst the trees or back in the cellars and throughout, visitors are taken through the artisanal processes that have been fine-tuned over generations. For Andalucían experiences, a visit to Cinco Jotas is one to be truly treasured and the taste always remembered.

Y el cerdo ibérico con una especial predilección por las bellotas es otra muy importante. Estas criaturas son las responsables del Jamón Ibérico de bellota, una especialidad que algunos consideran como uno de los gustos más especiales y exquisitos del mundo. No confundir con el Jamón Serrano, el producto de cerdos más convencionales. El Jamón Ibérico más fino está muy regulado y los cerdos conocidos como ‘pata negra’ como resultado de sus curiosas pezuñas negras son especialmente cuidados. Estos nobles animales han estado buscando alimento en el paisaje durante milenios y son bastante más gordos que sus primos, lo que es fundamental para la cantidad de tiempo que los jamones pueden curarse y la complejidad resultante y la intensidad de sabor. De hecho, el jamón está en el corazón de la cocina española y fue lanzado a un mundo agradecido después del fin del dominio árabe en 1492. Plinio el Viejo escribió sobre los cerdos españoles ya en el 77 d.C. y Cristóbal Colón fue supuestamente alimentado por jamón Ibérico en su viaje hacia el descubrimiento de América en 1493. Como era de esperar y con un precio razonable, Cinco Jotas ha conservado sus procesos tradicionales y cura sus mejores jamones lentamente. Los mejores productos de etiqueta negra tardan hasta cinco años, acompañados de una atención obsesiva a todos y cada uno de los jamones. Si le apetece una degustación, ahora puede visitar las propias bodegas. Hay una experiencia gloriosa de Cinco Jotas disponible, que puede ser tan indulgente como lo exijan sus papilas gustativas y su tiempo. El equipo de Cinco Jotas organiza experiencias en las que se puede visitar a pie o a caballo los hermosos paisajes y prados donde deambulan los mimados cerdos.
