PETE’S WEEKLY MARKET UPDATE
G’day chefs,
Hard to believe it’s only 30 days till Christmas the silly season is well and truly here!
Severe storms in south-east QLD have been hammering the reef and upper NSW coast, so catches from that region will be shorter this week. Bonito, Jewfish and Coral Trout will all be a bit on the lean side.
Plenty of other fish are behaving themselves, though Flathead, Tuna, Snapper, Sand Whiting and Blue Eye are all doing well. We’ve got plenty of Gurnard crossing the ditch from NZ, and John Dory catches are remaining steady. Kingfish, Murray Cod and Salmon are also in good numbers, so there’s still lots to work with on the grill and in the pan
On the crustacean and prawn front, Cooked Tiger Prawns are ticking along nicely. The live side is really coming into its own now, with Marron in full swing, plus local Lobsters and Mud Crabs looking the goods Just remember to get your pre-orders in early to guarantee stock.
Plenty to play with this week, so get those orders in and holla out if you need anything!
