T
his simple phrase perfectly captures the essence of new Italian restaurant Bertolone. Owners and sisters, Sonia Bertolone-Carrillo and Mary Bertolone-Perez are committed to providing Chilton County residents with some of the best cuisine Italy has to offer. Combining both northern and southern Italian fare, Bertolone’s Italian Cafe gives the customer an enhanced dining experience, with authentic dishes full of perfectly balanced flavor. From crowd favorite lasagna, made with traditional bolognese sauce and cooked for six hours, to chicken saltimbocca that is stuffed with fontina cheese, prosciutto and sage and sautéed in a white wine cream sauce with mushroom and capers, there is something on the menu to suit any palate. Bertolone-Carrillo is passionate about the food she serves and credits her parents for instilling within her an appreciation for quality cuisine.
“My parents were very, very passionate people. My mom has always been passionate about food of all kinds, and she loves to cook,” Bertolone-Carrillo said. “She can take three ingredients and make the most fantastic

creation that you’ve ever tasted. My father was very much the eater, and he loved food, so I got my passion from both of them. We just always had really, really, really good food in our home; that’s how we were raised. Most kids would go home after school and open a bag of chips, but by 4:30 or 5 p.m., my mom would have a gourmet meal ready. She made cannelloni with two different sauces, and she always had fresh vegetables, which she grew herself, along with spices and herbs. She always made us dessert, and was just very much the gourmet cook.” Born in Italy, Bertolone-Carrillo understands the secret behind great Italian food: simplicity and flavor. “In some cuisines you have to rest, and braise, and poach, and do this and do that, but Italian food is not like that. It is simple, but all of the flavors come through,” Bertolone-Carrillo said. “When I was a kid, food used to have flavor, but nothing has flavor anymore. Everything is over-processed, boxed and ready to go. We make sure that all of our food is full of flavor, because that is important to us.” She also shared that fresh ingredients are a priority, and is building relationships with local
vendors to provide the best ingredients for her customers. Bertonlone’s offers an outstanding menu and will feature several specialty dishes including the mouth-watering lobster ravioli cooked with Maine lobster, along with their signature Italian desserts, which are made fresh daily beginning when the first baker arrives at 5 a.m. In keeping with the secret to great Italian food, Bertolone-Carrillo shared one of her late father’s favorite spaghetti dishes, which is full of flavor yet wonderfully simple. “No one has time to cook, so this is very quick and easy,” explained BertoloneCarrillo. “But it is so delicious and has a ton of flavor.” To replicate this favorite, begin by cooking spaghetti pasta in boiling water. While it is cooking, combine fresh tomatoes, basil, garlic, olive oil and salt and pepper in a bowl. This creates a light pomodoro mixture and is what gives the pasta its flavor. Once the pasta is cooked, simply add the pomodoro mixture. The noodles will heat the mixture, and the result is a quick and light dish that will leave your taste buds satisfied.

Bertolone-Carrillo adds that to enhance the flavor, you can allow your ingredients time to marry and blend with one another. She suggests preparing the pomodoro mixture in the morning and refrigerate until dinner. The Bertolone sisters are happy to be a part of this community and hope to contribute to the revitalization of downtown Clanton. “I want to do everything I can to help bring it back to what it used to be,” Bertolone-Carrillo said. “My heart is drawn here. It feels like Mayberry where everybody knows everybody. It’s very refreshing. J
ason Cleckley first performed as a disc jockey at 14 years old. A passion for playing music was ignited that day and has remained strong for the past 18 years. It all started with a birthday party for Cleckley’s sister and her friend. “They needed somebody to play music, so I grabbed my parents’ surround sound system out of the living room and set it up,” said Cleckley, owner and operator of Boombox Entertainment. That performance quickly snowballed into opportunities to assist other parties in need of entertainment help. “It grew way quicker than anybody ever thought it would,” Cleckley said. “I had already done a couple hundred parties by the time that I could actually drive.” According to Cleckley, his dad was a major reason for the early success as he handled the driving duties to various events. For the longest time, he was called “J.C. the DJ” but changed the name to Boombox Entertainment about five years ago. Cleckley helps Chilton County High School with the lighting effects and props for its annual “Blast From the Past” show.

Cleckley unpacks has also performed for events in Huntsville, equipment and sets up Montgomery and Tuscaloosa. prior to an event. “I’ve really never advertised,” Cleckley said. “It’s all just been word of mouth.” Quite a bit of equipment has been accumulated over the years, all of which he has bought with money earned from his performances. According to Cleckley, he had $5,000 worth of supplies by the time he was 16 years old. “I’ve always been into electronics, and it just seemed to come natural for me,” Cleckley said. “I never really liked going to parties, but I figured if someone is going to pay me to go to one, that’s a pretty good deal.” At a certain age, Cleckley grew out of the birthday party scene and now focuses his attention on weddings, while also providing live sound and lighting for bands. He has added to his performing arsenal over the years. He has gradually grown from equipment that would fit in the back seat of a car to occupying the space of a 20-foot enclosed trailer. Technology within the business has also undergone its share of changes since Cleckley first began.
According to Cleckley, the biggest change endured over the past few years has been the introduction of digital sound mixtures as an option instead of the traditional analog format. “When I first started out, I had several hundred CDs that I had to fight with,” Cleckley said. “Now everything is done on a computer that holds 10,000 songs. You just have to type in what you’re searching for instead of flipping through a bunch of CDs and hoping you find the right one.” Despite making it easier, Cleckley grew up learning on analog systems, and that form of mixing has always had a special place in his heart. “Everybody has their own preference,” Cleckley said. “I like to adjust the knobs until it sounds perfect instead of touching a screen.” According to Cleckley, he enjoys feeling the connection with the music that only analog can provide. It is about an even mixture of people using digital compared to analog. Every event is treated with a professional attitude, but he understands that the approach leading up to a wedding will differ from a bar setting. “There is no room for error because the bride wants the day to go off without a hitch,” Cleckley said. “I take weddings very seriously.” Cleckley has developed a habit of arriving five or six hours before a wedding and making an appearance at the rehearsal. That way he has time to take care of any issue that may occur. “As soon as they book it, I am constantly in touch with them,” Cleckley said. “I want to make sure that their day is as special as I can make it. hen brothers Odis and Bobby Sherrill purchased an old store at the corner of U.S. 31 and County Road 59 in Verbena, their original intent was to turn the building into apartments. But after repeated requests from people who longed for a new place to dine, the brothers decided to embark on a new venture—into the restaurant business. The Verbena Pocket Express, named so because of its proximity to railroad tracks and because Odis Sherrill refers to the location as a “good little corner pocket,� is now open six days a week. peach living 13
They serve everything from burgers, hotdogs and pizza to salads, sandwiches and chicken fingers. Not to mention they also serve a full breakfast menu, with pretty much all the items one would expect. “I get here at 4:30 (a.m.) and start cooking, and I don’t stop until 5:30 (p.m.),” Bobby Sherrill said. The brothers, who have worked in construction their whole lives, are no strangers to hard work. And when it comes to cooking, their philosophy is simple: “You’ve got to buy good food and season it good,” Odis said. Bobby said he has been cooking since he was 8 years old. “I pretty much just learned from watching Mamma,” he said. Opening a restaurant has been a learning experience in itself—but the brothers have had the support of their family and friends, as well as members of the community. Nieces Kim Boothe and Robin Horton help serve customers, and Louellen Martin is the “Special of the Day” cook. Brittany Sparks and Rose Claudele are also among the friendly faces you will see there. “They stepped up and really have helped us out,” Odis said. “I couldn’t ask for better people if I tried. Everyone’s just as nice, polite and respectful as can be.”

The restaurant’s atmosphere echoes its past. The former convenience store and gas station has a “mom and pop soda shop” look with bar stools and old-style soda signs on the walls. The part of the building where customers enter and pay for their meals also serves as a convenience store with plenty of drinks and snacks available for purchase. Odis said they wanted a look that matched other structures in the historic community. The concrete railing in front, for instance, was made from molds the brothers had been keeping for just the right project. 16 peach living
“I wanted something that was going to make people look over here, and boy it did, too,” he said. “I want people to feel comfortable and remember the place. The main thing I stress with everyone is be nice, ‘cause people remember that too.” The Verbena Pocket Express is open Sundays from 11 a.m. to 3 p.m. and Tuesdays through Saturdays from 6 a.m. to 6 p.m. They are closed Mondays but hope to extend their hours soon. T
he 2016 Chilton County Chamber of Commerce banquet had a large attendance Jan. 29 at the Clanton Conference and Performing Arts Center. There were about 290 in attendance. The tickets were sold for $25 a piece and included dinner, awards and entertainment by De’Ja Blue, a sixmember dance and show band from Birmingham. The banquet started with a “social time” at 6 p.m., which allowed those in attendance the opportunity to mingle and meet Suzannah Campbell, the new administrator for St. Vincent’s Chilton. Dinner was served at 6:30 p.m. with Southern Sweets catering the food. 2015 Chamber President Van Forrester said it had been a busy year at the Chamber. Forrester said the Chamber was also asked to handle “retail recruitment and retention” which resulted in a regional 20 peach living
chain that made use of the airport and courtesy car provided. Forrester said at this time the chain is concentrating in other areas, but the Chamber is still in conversation with them. The Chamber also assisted in recruiting Bertolone Italian Café in Clanton, which should be opening in the next few months. Trick or Treat Streets was continued for the second year in 2015 to provide a safe environment for children at Halloween and to get more people visiting the downtown area, Forrester said. The Chamber also partnered with the Chilton County Commission and hosted two economic development sessions where Brad Carter’s idea of “Come Grow With Us” came to fruition. Forrester also said for the first time in more than 20 years, the Chamber nominated MorLyn’s Fine Jewelry as Alabama’s Retail Business of the Year. “We were very proud at the awards ceremony when MorLyn’s Fine Jewelry brought home the bronze award,” Forrester said.
Stokes Automotive was named the 2015 Business of the Year. Connie Bainbridge with Central Alabama Electric Cooperative presented the award to Kirk Stokes. “We appreciate this,” Stokes said. “We just want to thank our customers and we are glad to be a part of this community.” The Community Spirit Award was presented to Senior Connection of Chilton County. Chamber Director Janice Hull presented the award to Vanessa McKinney. “People have been so generous in this community,” McKinney said. “We are just so appreciative of this award.” Forrester announced that Stephen Dawkins with The Clanton Advertiser is the 2016 Chamber President. Dawkins said the Chamber has pledged to continue helping the Chilton County Commission with image enhancement and work sessions, and the retail committee is committed to making a difference. Dawkins recognized Forrester for serving in the role as 2015 Chamber President. Dawkins thanked those in attendance for coming before adjourning the “meeting” portion of the night. This was the second year for the banquet to be held at the Clanton Conference and Performing Arts Center.

Senior Connection of Chilton County held a Southern Gospel singing on Jan. 30 from 6-8 p.m. The event was hosted by the Modern Woodmen and was a fundraiser for Senior Connection. Canaan Land, Crystal, Jerry and Grayson Russell performed and tickets were sold at the door for $5 which included hot dogs, chips and a drink. The group held the fundraiser to get a lighted sign for the front of the building at Senior Connection.

Chamber banquet
The 2016 Chilton County Chamber of Commerce banquet had a large attendance Jan. 29 at the Clanton Conference and Performing Arts Center. There were about 290 in attendance. The tickets were sold for $25 apiece and included dinner, awards and entertainment by De’Ja Blue, a six-member dance and show band from Birmingham. The banquet started with a “social time” at 6 p.m., which allowed those in attendance the opportunity to mingle and meet Suzannah Campbell, the new administrator for St. Vincent’s Chilton. Dinner was served at 6:30 p.m. with Southern Sweets catering the food.

COMMUNITY HAPPENINGS BLAST FROM THE PAST Blast from the Past 2016 will be held at 7 p.m. Feb. 26 and Feb. 27, and 2 p.m. Feb. 28 in the auditorium at Chilton County High School. Tickets are $7 and can be purchased by any cast member, at the office at Chilton County High School during school hours or on Monday nights from 5:30 p.m. until 8 p.m. during practice. This is the 24th year for Blast from the Past. All of the proceeds from the event will be used to fund various school projects, including the current seat renovation project for the school auditorium. ‘RIGHT BITE’ COOKING SCHOOL The Chilton County Extension Office will host a diabetes cooking school called “Right Bite.” The classes will be held from 10 a.m. until noon on March 1, March 8 and March 15. Participants will learn about portion control, reading labels, choosing carbohydrates, various sweeteners, controlling blood pressure and much more. The cooking school will show how to enjoy healthy foods while controlling diabetes. Recipes will be prepared with an opportunity for tasting. The program will be conducted by Regional Extension Agent and registered dietician Christina LeVert. Pre-register by calling the office at (205) 280-6268 and mailing the $10 registration fee to P.O. Box 30, Clanton, AL 35046. Space is limited. HEART OF DIXIE PAGEANT The 18th annual Heart of Dixie Pageant and most photogenic contest will be held at the JHS auditorium on March 5. Scholarships will be awarded for the top two age groups. The deadline for entry forms is Feb. 17. The pageant is sponsored by the Jemison Blue Regiment Band. The times for the pageant are 10:30 a.m. (ages 0-11) and 3:30 p.m. (ages 12-21). No interviews or talent performances are required. Girls 0 to 21 from anywhere in Alabama or nearby states invited to participate. If interested, pick up a registration form from the nearest Chilton County School office or like the Heart of Dixie Pageant on Facebook to find the link and print a form.
