ollowing a varied career, including 13 years at RTL, Charles became a leading light in the emergence of a new night life scene in the city in the 1970s and 1980s. It was at the vibrant Club 5 restaurant that Charles first introduced Carpaccio (which he discovered at its birthplace, Harry’s Bar in Venice) to Luxembourg. The dish is still a mainstay of Brasserie Guillaume, the excellent poissonnerie and restaurant run together with “highly talented” business partner Sébastien Sarra. Meanwhile, Club 5 has opened branches in Kirchberg, Esch and Bonnevoie. But even at the age of 76 Charles is not resting on his laurels and, together with Sébastien, will soon take over L’Osteria in Paris, one of the best Italian restaurants in the city of lights – a city Charles has adored since a young age. “I missed the action, the challenge, the constant renewal.” This venture is in keeping with his motto, Carpe Diem. près une carrière variée, dont 13 ans à RTL, Charles devint le chef de file d’une nouvelle vie nocturne à Luxembourg, dans les années 1970 et 1980. C’est au très animé restaurant Club 5 que Charles révéla à la ville les délices du carpaccio (qu’il avait découvert sur son lieu de création, au Harry’s Bar de Venise). Ce plat est toujours à la carte de la Brasserie Guillaume, l’excellent restaurant-poissonnerie cogéré avec son associé, « hautement qualifié », Sébastien Sarra. Depuis, le Club 5 a ouvert des succursales au Kirchberg, à Esch et à Bonnevoie. Mais à 76 ans, Charles ne se repose pas sur ses lauriers et, avec Sébastien, il va bientôt reprendre L’Osteria, un des meilleurs restaurants italiens de Paris (Charles adore la Ville Lumière depuis son plus jeune âge). « L’action, le défi, le renouveau constant me manquaient. » Ce nouveau projet cadre avec sa devise : Carpe Diem.
