Premier fabricant mondial de sièges d'avions, l’entreprise française du groupe Safran, Safran Seats a signé un protocole d'accord avec Emirates pour la création d'une usine de fabrication et d'assemblage de sièges à Dubaï. Cette coopération industrielle, une première du genre, se concentrera dans un premier temps sur les sièges de classes affaire et économique pour les projets de rénovation de cabines. Cette usine ultramoderne offrira une capacité de production qui sera mise à la disposition d'Emirates et d'autres clients de Safran Seats, permettant ainsi de répondre à la demande croissante de fabrication de sièges d'avions et d'optimiser l'efficacité grâce aux technologies les plus récentes. Safran est un partenaire clé de la rénovation de la flotte d'Emirates. Cette usine constitue la première étape de la construction d'un pôle de production aérospatiale plus vaste à Dubaï. La mise en service de cette usine d’une surface industrielle d'environ 20 000 à 25 000 m 2, prévue fin 2027, se fera par étapes avec l'assemblage initial de 1 000 sièges de classe affaire par an.

French registered company Safran Seats, a worldleading aircraft seating manufacturer, have signed a Memorandum of Understanding with Emirates to establish a manufacturing and seat assembly facility in Dubai. The industrial cooperation, the first of its kind, will initially concentrate on Business and Economy Class seats for cabin retrofit projects, with plans to expand to line fit in the future. This state-of-the-art facility will bring production capacity to serve Emirates and other customers of Safran Seats, enabling to meet the growing demand for aircraft seat manufacturing and optimizing efficiency through the latest technologies.

Safran has been a key partner in Emirates' fleet refurbishment efforts. The facility is the first step in building a broader aerospace manufacturing cluster in Dubai.

Emirates and Safran aim to have the facility completed by Q4 2027 bringing approximately 20,000- 25,000 Square Metres of industrial footprint. The ramp up will be in a phased approach, with the initial assembly of up to 1,000 Business Class seats per year.

The Dubai-based carrier, flydubai, has signed a Memorandum of Understanding (MoU) with Airbus for 150 A321neo aircraft, making the airline a new Airbus customer.

The addition of the latest generation A321neo will support flydubai’s strategy to expand its network, offering customers access to new destinations with greater efficiency and comfort.

flydubai has built a network of more than 135 destinations across 57 countries, further reinforcing Dubai’s position as a global aviation hub.

The A321neo is part of the A320neo Family, incorporating the latest technologies including new generation engines, Sharklets and cabin efficiency enablers, which together deliver more than 20% fuel savings and CO2 reduction compared to previous generation single-aisle aircraft.

Cette reconnaissance marque 80 ans d'engagement philanthropique de la famille Jameel et plus de 20 ans de soutien aux arts sous l'impulsion de Fady Jameel en Arabie Saoudite, aux EAU et ailleurs, ainsi que par le renforcement des liens entre le Moyen-Orient et la France.

Le développement des échanges entre la France et le monde arabe est un axe majeur de la programmation d'Art Jameel. L'Alliance Française est installée à Hayy Jameel, lieu culturel emblématique de Djeddah. The recognition marks 80 years of the Jameel family’s commitment to philanthropy, and more than 20 years of support for the arts led by Fady Jameel, including major initiatives in Saudi Arabia, the UAE and beyond, and the deepening of ties between the Middle East and France. Nurturing exchange between France and the Arab world is a strong thread within Art Jameel’s extensive programming. Alliance Française is located in Hayy Jameel, an iconic cultural site in Jeddah, while Hayy Cinema, Saudi’s first independent picture house, regularly showcases French cineastes, with musicians invited to collaborate with Saudi creatives and present concerts within the creative complex. One example of such collaborative exchange includes the ongoing joint project between the Cinémathèque of Toulouse and Art Jameel to restore and screen a tranche of rare Palestinian films from the 1960s-80s.

SKAFOS HYDROPONIC FARM

Le restaurant Canopy by Hilton Dubai Al Seef annonce l'ouverture de Skafos, sa ferme hydroponique, urbaine innovante. Conçue pour renforcer la durabilité et repenser l'expérience culinaire du restaurant situé en bord de mer, cette nouvelle initiative témoigne de l'engagement continu d'Hilton en faveur de la réduction de son impact environnemental, tout en offrant à ses clients des produits frais, cultivés localement. La ferme hydroponique produit actuellement environ neuf kilogrammes de légumes verts et d'herbes aromatiques fraîches par jour, parmi 28 variétés différentes, dont de la laitue, de la menthe, du thym, du basilic et une variété de micro-pousses. Tous les produits sont cultivés grâce à une technologie hydroponique de pointe qui permet une culture tout au long de l'année dans un environnement parfaitement contrôlé. Restaurant Canopy by Hilton Dubai Al Seef announces the launch of the Skafos Hydroponic Farm, an innovative, on-site urban farm designed to enhance sustainability and redefine the dining experience at the hotel’s signature waterfront restaurant. The new initiative underscores Hilton’s continued commitment to reducing its environmental impact while providing guests with the freshest, locally grown produce.

The hydroponic farm currently produces around nine kilograms of fresh greens and herbs daily, cultivating 28 different varieties of plants, including lettuce, mint, thyme, basil, and an array of microgreens.

All produce is grown using advanced hydroponic technology, that allows year-round cultivation in a fully controlled environment.

The freshly harvested produce will be used across the cluster’s hotels, Canopy by Hilton Dubai Al Seef, Hampton by Hilton Dubai Al Seef, Al Seef Heritage Hotel, Curio Collection by Hilton, integrated into à la carte dishes and breakfast buffets. The initiative is expected to supply up to 50% of the hotels’ daily produce needs, significantly reducing external sourcing and helping lower the overall carbon footprint.

« CLEAN UAE » SHARJAH

La 24e édition de la campagne «Clean UAE», organisée par l’Emirates Environmental Group (EEG) sous l’égide du ministère du Changement climatique et de l’Environnement, a accompli sa troisième étape dans l’émirat de Sharjah. L’événement s’est déroulé sur plusieurs sites et a rassemblé 1 900 participants issus de divers horizons. Vêtus de t-shirts, de casquettes et de gants en coton et équipés de sacs poubelle biodégradables, ils ont rejoint la campagne avec enthousiasme, témoignant de l’engagement indéfectible de la communauté des EAU en faveur de la préservation de l’environnement. Les bénévoles ont travaillé sur un vaste espace ouvert de 10 km, collectant 1 237 kg de déchets ménagers. Les matériaux recyclables (550 kg de papier, 56 kg de plastique, 23 kg de verre et 20 kg de ferraille) ont été soigneusement triés et envoyés vers des centres de recyclage locaux pour y être traités. Cette initiative souligne l’engagement de la campagne en faveur du développement durable et d’une gestion responsable des déchets.

The 24th cycle of the Clean UAE campaign, organised by the Emirates Environmental Group (EEG) under the patronage of the Ministry of Climate Change and Environment, made its 3rd stop in the Emirate of Sharjah. The event spanned multiple locations, bringing together a total of 1,900 participants representing diverse segments of society. Adorning cotton T-shirts & caps, and equipped with cotton gloves and biodegradable garbage bags, participants enthusiastically joined the campaign, demonstrating the UAE community’s unwavering commitment to preserving the environment. The volunteers worked across a wide-open space covering 10km, collectively collecting 1,237 kg of general waste, while recyclable materials were carefully segregated (550 kg of Paper; 56 kg of Plastic; 23 kg of Glass; and 20 kg of Scrap Metal) and sent to local recycling facilities for proper processing - underscoring the campaign’s dedication to sustainability and responsible waste management.

Traquée dès l’enfance, une petite fille garde enfoui le secret de la mort atroce de sa mère et de sa nourrice. Fière et rêveuse, elle est sauvée par un prêtre animé d’une bonté rare. Devenue jeune fille, elle se révèle avide de savoir et de lectures, apprend à monter à cheval puis à manier l’épée, bravant l’interdit des religieuses chargées de son éducation. Dans son corsage, elle dissimule depuis toujours un poignard et des poisons : pour être libre, il faut savoir se défendre. Amante passionnée, tour à tour aimée et trahie, ambitieuse et lucide, elle est aussi une mère prête à tout pour protéger son fils. On la dit puissante, à cheval entre deux royaumes, mais nul ne parvient à la comprendre vraiment. Qui est-elle ? L’une des figures les plus célèbres de la littérature, condamnée à un rôle figé : intrigante, empoisonneuse, séductrice, criminelle de génie, sorcière. Son nom est Milady. Il est temps d’écarter la légende pour rencontrer la femme. Même un personnage de fiction mérite sa vérité. Dans ce roman saisissant, Adélaïde de Clermont-Tonnerre redonne chair à la petite Anne et imagine l’histoire que Dumas, dans Les Trois Mousquetaires, n’a fait qu’esquisser.

Par une construction d’une grande habileté, jouant avec les codes du roman du XIXᵉ siècle pour mieux les réinventer, l’autrice compose un récit résolument contemporain. Témoignages et temporalités s’entrelacent en courts chapitres haletants, recomposant peu à peu un puzzle d’intrigues politiques et amoureuses, au cœur de l’Europe déchirée par les conflits sous Louis XIII et Richelieu.

Fragments in Harmony, une collection qui se déploie comme un poème murmuré, une œuvre attentive à la pensée de Rumi, mystique et poète persan du XIII ᵉ siècle, pour qui la plénitude naît précisément là où les choses se brisent. Ici, la couture devient un passage : de la séparation à l’unité, de la structure à l’abandon, de l’immobilité au mouvement.

Au premier regard, les silhouettes semblent suspendues, presque immatérielles. Les lignes s’allongent, les surfaces se fragmentent, les textures paraissent se dissocier. The visual language of Fragments in Harmony is built on deliberate contrast. Fractured motifs recall broken glass and ancient mosaics, their sharp origins softened through embroidery and light. Organza and lace layer upon one another, creating depth without weight, opacity without heaviness. The garments seem to hover between states — neither fully solid nor entirely ephemeral. Color emerges as a quiet illumination. Ivory, alabaster, pale pink, and soft peach form a luminous foundation, gradually deepening into powdered rose, warm beige, delicate blue, and sage green. Accents of gold, pearl, champagne, and lilac catch the light like fleeting thoughts, while subtle coral and amber tones bring warmth — a pulse of life beneath the surface.

Madame Magazine - Cocoon Beauty began at home in 2020 and grew quickly within the UAE. How did the local ecosystem support your journey as a new brand?

Noha and Noura - Cocoon Beauty was born at home during a globally challenging moment, but the UAE was a beautiful exception. Flexible regulations, fast procedures, and real support for women-led businesses allowed us to transform a small idea into a brand with high-quality manufacturing aligned with international standards. The UAE gave us space to grow and to dream.

MM - Noha, en quoi votre formation d’ingénieure a-t-elle influencé le système de fabrication de Cocoon Beauty ?

Noha - L’ingénierie m’a appris la précision, la méthodologie et le sens de la résolution de problèmes. Ces compétences sont devenues le cœur de notre production certifiée GMP. Nous avons mêlé la science, le regard esthétique et et pris en compte la réalité les besoins des femmes du Golfe : la chaleur, l’humidité, la sensibilité de la peau, les

MM - Noura, you are the voice of the brand. How have you maintained such a genuine bond with your audience?

Noura - I chose to show up “without filters.” I shared my real daily routines, answered questions sincerely, and spoke to women the way I’d speak to a friend. This honesty built a relationship of trust, and it shaped Cocoon Beauty’s identity; simple language, heartfelt messaging, and content truly rooted in Arab women’s lives.

MM - Noha, how did your engineering background shape Cocoon Beauty’s manufacturing system in the UAE?

Noha - Engineering taught me precision and problem-solving. These skills became the foundation of our GMP-certified production line. We combine science, aesthetic sensibility, and an understanding of Gulf women’s needs: heat, humidity, sensitivity, pigmentation. Our goal is to create formulas that work for real conditions.

MM - What gap did you notice in the Arab beauty market, and how did Cocoon Beauty address it?

Noha and Noura - Most products were not designed for this regions skin type. We focused on formulas tailored for our climate, high-quality ingredients, luxurious soft scents inspired by Arab preferences, and accessible pricing. Cocoon Beauty was designed for women here, their routines, their challenges, their beauty rhythms.

MM - Cocoon Beauty has become closely connected to Arab and Emirati women. What are your non-negotiables in every product — and what role do scents play in your identity?

Noha and Noura - We never compromise on quality. Clean formulas, real results, transparency, and respect for the skin are core values. As for scents, it is part of our DNA. Arab women love fragrance, so we developed gentle, long-lasting

Noura et Noha - Nous refusons tout compromis sur la qualité. Des formules pures, des résultats tangibles, une transparence totale et un profond respect de la peau sont nos fondations. Quant au parfum, il est au cœur de notre ADN. Ici, dans cette région, la fragrance n’est pas un simple détail: c’est une présence, une émotion. MM – Comment envisagez-vous le futur de Cocoon Beauty ?

Noura et Noha - Des Émirats au Golfe, puis vers le reste du monde, nous rêvons d’élargir nos lignes, d’accentuer notre présence en boutique, d’entrer en Arabie saoudite, au Koweït et au Qatar, et de bâtir une empreinte internationale solide d’ici trois à cinq ans. Pas de moteurs surpuissants, ni de carrosseries rutilantes. Juste des Renault Twingo, parfois cabossées, souvent colorées, et 450 équipages prêts à traverser des milliers de kilomètres pour une aventure hors norme. Le Twing Raid 2026 n’est pas un rallye comme les autres : c’est une odyssée humaine, brute et sincère, où l’essentiel ne se mesure ni en vitesse ni en performance.

Fin février, dans l’air encore frais du Pays basque, les premiers moteurs s’éveillent dans une atmosphère électrique. Entre excitation palpable et appréhension discrète, les équipages s’élancent pour dix jours d’aventure. Très vite, la route défile, les frontières s’effacent. L’Espagne est traversée comme un prélude, avant que le Maroc ne s’impose, vaste, minéral, imprévisible. Là, tout change.

Les pistes se durcissent, les repères disparaissent. Le sable s’infiltre partout, le vent se lève, les tempêtes balaient les traces. Dans le désert, la lumière écrase les reliefs, tandis que les mécaniques souffrent et que les corps fatiguent. Puis, sans prévenir, c’est le froid qui prend le relais. In late February, in the still-chilly air of the Basque Country, engines begin to stir in an atmosphere charged with anticipation. Somewhere between palpable excitement and quiet apprehension, the crews set off on ten days of adventure. The road quickly unfolds, borders blur. Spain becomes a prelude before Morocco takes center stage— vast, mineral, unpredictable. There, everything changes.

The tracks grow rougher, familiar landmarks disappear. Sand seeps into everything, the wind rises, storms erase all traces. In the desert, the light flattens the landscape, while engines strain and bodies tire. Then, without warning, the cold takes over. At the Tichka Pass, a snowstorm descends upon the convoy, trapping vehicles in a surreal setting. The white silence replaces the roar of the sand. Time itself seems to stand still.

À première vue, rien ne prédestinait Jasmine et Christophe à écrire une histoire liée à l’aventure extrême. Et pourtant, leur parcours s’est construit autour d’une même quête : créer, ressentir et transmettre.

Originaires tous les deux du nord de la France, ils partagent très tôt une sensibilité artistique, presque instinctive. Jasmine grandit entourée de sa famille, entre ses parents et ses grandsparents. Très jeune, elle évolue entre deux univers.

Modèle photo dès son plus jeune âge, elle pratique également la gymnastique pendant treize ans et participe à des compétitions à travers la France. Cette discipline lui apporte rigueur, exigence et une grande capacité d’adaptation. Attirée par les coulisses, elle passe naturellement de l’autre côté du décor : coiffeuse puis habilleuse dans le spectacle, elle évolue ensuite vers des postes de coordination, jusqu’à la direction artistique. Christophe, de son côté, débute à 14 ans un apprentissage en serrurerie aux côtés de son père. À 18 ans, il rejoint l’entreprise familiale et, trois ans plus tard, ouvre deux magasins et embauche 17 personnes, devenant un acteur majeur de la sécurité dans sa région.

Mais depuis toujours, un autre univers l’anime: il amuse, crée, se déguise, improvise. Un véritable showman. Cette passion le mène sur scène, notamment au Plus Grand Cabaret du Monde de Patrick Sébastien. Il y découvre la mise en scène, devient magicien, crée ses propres spectacles et affine son univers. Le tournant s’opère avec le Groupe Partouche. Pendant plus de vingt ans, il y façonne des expériences, orchestre des univers, signe une vision artistique exigeante et immersive. Puis vient la rencontre. Celle qui ne s’explique pas. Dans une rue, une voix, celle de Jean-Baptiste Guégan. Brute, vibrante, immédiatement familière. Christophe reconnaît l’évidence avant même de la comprendre. Il ne voit pas seulement un artiste, mais une histoire à révéler. Il s’engage, produit, accompagne. Entre eux, une relation rare se tisse, faite de confiance et d’intuition.

At first glance, nothing seemed to predestine Jasmine and Christophe to build a life shaped by extreme adventure. And yet, their journey has been shaped by a shared quest: to create, to feel, and to inspire. Both originally from the north of France, they developed an instinctive artistic sensibility from an early age. Jasmine grew up surrounded by her family, between her parents and grandparents. From a young age, she moved between two worlds. A photo model as a child, she also practiced gymnastics for thirteen years, competing throughout France. The discipline instilled in her a deep sense of rigor, resilience, and adaptability.

Drawn to the magic behind the scenes, she naturally gravitated toward the world of performance — first as a hairstylist, then as a dresser for live productions — before moving into coordination and eventually artistic direction.

Christophe, meanwhile, began an apprenticeship in locksmithing at the age of 14 alongside his father. At 18, he joined the family business, and just three years later, he had opened two stores and employed 17 people, becoming a key figure in the security sector in his region.

Yet another universe had always called to him — the world of entertainment. A natural performer, he thrives on creating, improvising, and transforming reality into spectacle. This passion led him to the stage, most notably on the iconic French television show Le Plus Grand Cabaret du Monde alongside Patrick Sébastien. There, he discovered the art of staging, refined his identity as a magician and performer, and developed his own creative productions.

A defining chapter began when he joined Groupe Partouche, where for more than twenty years he imagined immersive experiences, orchestrated artistic worlds, and cultivated a demanding creative vision. Then came the encounter — the kind that defies explanation.

One day, in the street, a voice stopped him in his tracks: Jean-Baptiste Guégan. Raw, powerful, hauntingly familiar. Christophe immediately sensed something extraordinary. He did not simply discover an artist; he recognized a destiny waiting to unfold. He

Il se tourne alors vers des activités plus extrêmes, dont le parachutisme. Lors d’un saut, Christophe est victime d’une chute de 20 mètres. La colonne vertébrale brisée, la moelle épinière comprimée, son pronostic vital est engagé.

Pendant près de deux ans, leur vie devient un combat. Jasmine refuse qu’il parte en centre de rééducation et décide de prendre en charge sa reconstruction, chez eux. Son passé de gymnaste devient essentiel. Elle comprend les mouvements, adapte les gestes, accompagne Christophe qui doit tout réapprendre. Bouger est un défi, chaque pas une victoire. Les médecins avaient été formels: il ne marcherait plus.

The brutal Covid period brought the entertainment world to a halt. Stages closed, everything stopped. At that moment, Christophe felt the need to refocus, to regain balance. He turned towards extreme activities, including skydiving. During a jump, Christophe fell 20 meters. His spine was shattered, his spinal cord compressed — his life hanging by a thread. For nearly two years, their lives became a battle. Jasmine refused to send him to a rehabilitation center and made the courageous decision to oversee his recovery herself at home. Often compared to Sleeping Beauty's castle, it was built in the fourteenth century and restored in the nineteenth by architect Eugène Viollet-le-Duc (who had already restored Notre Dame de Paris), at the

2 courgettes moyennes

1 pâte brisée

3 œufs

20 cl de crème liquide entière

2 crottins de chèvre (120 g)

1 petit bouquet de ciboulette

Sel, poivre

Préparation

Préchauffer le four à 180°C.

Disposer la pâte dans un moule à tarte. Piquer le fond de pâte avec une fourchette.

Laver les courgettes et les couper en fines rondelles. Mélanger la crème avec les œufs, un crottin émietté et la ciboulette coupée finement. Saler, poivrer, ajouter les rondelles de courgettes et verser sur la pâte. Ajouter le second crottin coupé en tranches sur le dessus de la tarte, et mettre à cuire au four 45 minutes.

Servir chaud, tiède ou froid.

Pour une cuisson plus rapide, vous pouvez aussi râper la courgette.

1 short crust pastry

200 ml heavy cream

2 small goat cheeses (120 g)

Preparation

Preheat the oven to 180°C (350°F).

Line a tart tin with the pastry. Prick the base with a fork.

Wash the zucchini and slice them thinly. Mix the cream with the eggs, one crumbled goat cheese, and the finely chopped chives. Season with salt and pepper, add the zucchini slices, and pour over the pastry. Top with the second goat cheese, sliced, and bake for 45 minutes.

Serve warm, at room temperature, or cold. For faster cooking, you can also grate the zucchini.

FILET D’AGNEAU, CAROTTES RÔTIES AU MIEL ET SÉSAME

Pour 4 personnes

Préparation : 25 minutes

Cuisson : 30 minutes

Ingrédients

8 côtes d’agneau dans le filet

1 botte de carottes fanes

3 CàS d’huile d’olive

1 CàS de miel d’acacia

1 CàS de graines de sésame 1/2 citron

300 g de yaourt à la grecque

1 CàS de persil plat ciselé

1 CàS de coriandre ciselée

Sel, poivre

Préparation

Préchauffer le four à 190°.

Peler les carottes et les couper en deux dans le sens de la hauteur. Les disposer sur une plaque allant au four. Mélanger l’huile avec le miel, saler et poivrer.

Verser la préparation sur les carottes et mélanger bien afin de les enrober.

Cuire au four pendant 30 min jusqu’à ce que les carottes soient tendres.

Sauce : râper très finement le zeste de citron. Ciseler persil et coriandre. Ajouter le zeste de citron et les herbes dans le yaourt, saler et poivrer.

Faire chauffer une poêle et cuire les côtes d’agneau sur les deux faces. Saler et poivrer.

Étaler la sauce yaourt dans un plat, ajouter les carottes et parsemer de graines de sésame. Servir de suite avec la viande.

LAMB CHOPS WITH HONEY AND SESAME ROASTED CARROTS

Serves 4

Preparation: 25 minutes

Cooking: 30 minutes

Ingredients

8 lamb loin chops

1 bunch of carrots

3 tbsp olive oil

1 tbsp acacia honey

1 tbsp sesame seeds

1/2 lemon

300g Greek yogurt

1 tbsp chopped flat-leaf parsley

1 tbsp chopped coriander

Salt, pepper

Preparation

Preheat the oven to 190°C (375°F).

Peel the carrots and cut them in half lengthwise. Arrange them on a baking sheet. Mix oil with honey, and season with salt and pepper. Pour the mixture over the carrots and toss well to coat them.

Roast in the oven for 30 minutes, or until the carrots are tender.

Sauce: Finely grate the lemon zest. Chop the parsley and cilantro. Add the lemon zest and herbs to the yogurt, and season with salt and pepper. Heat a frying pan and cook the lamb chops on both sides. Season with salt and pepper. Spread the yogurt sauce on a platter, add the carrots, and sprinkle with sesame seeds. Serve immediately with the meat.

1 kg de patates douces

SWEET POTATO GRATIN

Ingredients

1 kg sweet potatoes

1 clove garlic, chopped

40 cl cream

125 g grated cheddar cheese

2 sprigs of thyme

1 pinch ground nutmeg

Salt and freshly ground pepper

Preparation

Preheat the oven to 180°C

Peel the sweet potatoes and cut them into thin slices.

In a saucepan, heat the cream and chopped garlic, add a pinch of nutmeg, salt and pepper.

Arrange the potato slices in layers in the oven dish, sprinkle with thyme leaves, and cover with the hot cream.

Bake for 30 minutes.

At the end of the cooking time, sprinkle with cheddar cheese and bake for another 10 minutes.

ROCHERS COCO

Ingrédients

4 blancs d’œufs

250 g de noix de coco râpée

200 g de sucre

Préparation

Préchauffer le four à 180°C (th6)

Monter les blancs en neige pas trop ferme puis ajouter les poudres en mélangeant délicatement. Sur la grille du four poser un tapis en silicone ou bien une feuille de papier sulfurisé, former dans la paume de la main des petits tas coniques de 4 cm de haut environ. Enfourner pour 12 minutes. Sortir la grille du four et retourner les rochers pour que leur base soit visible et remettre au four 3 minutes pour qu’ils soient dorés de toutes parts. Laisser refroidir et déguster.

Ingredients

4 egg whites

250g shredded coconut 200g sugar

Preparation

Preheat the oven to 180°C (350°F).

Whisk the egg whites until soft peaks form, then gently fold in the dry ingredients. On a baking sheet lined with parchment paper or a silicone mat, form small cone-shaped balls about 4cm high in the palm of your hand. Bake for 12 minutes. Remove the baking sheet from the oven and turn the coconut rochers over so the base is visible. bake for 3 more minutes, or until golden brown on all sides. Let cool and enjoy.
