Vacation spots When it comes to the holidays, most people are looking forward to the opportunity to stay home with their loved ones, away from the rush of the outside world. However, that

is not how everyone feels. In fact, some people would rather go exploring the world than remain in their houses during vacation time. Here are some places that some of our

students and faculty have visited during the holiday break.

Zachary Tabingo (12): Italy; Spain; London; Vancouver, Canada Place to Revisit: Italy: “I walked around five villages, and even though my feet hurt, it was worth it.”

Kalisa Lum (10): Hawaii; Florida; Australia; New Zealand Place to Revisit: Africa/ somewhere with wildlife: “To me, Europe and other cities aren’t very interesting.”

Erica Rantung (ESL/Religion Teacher): Taiwan; Hong Kong; Boracay, Philippines; Sedona & Phoenix, Arizona; Chicago, Illinois Place to Revisit: Chicago: “It was beautiful to visit Chicago during Christmas. I especially loved The Magnificent Mile in Chicago which was adorned with Christmas lights and the Christmas Around the World exhibit in the Museum of Science and Industry.”

baking the dough. Preheat oven to 350 degrees F (175 degrees C) 2. Roll pie crust onto a floured surface. Cut 12, 3 inch rounds into

each pie crust by using a cup. Fit the rounds into muffin tins. 3. Take the separated egg white and place it in a small bowl. Beat the egg white until it appears

large bowl and beat them. Add in the cream cheese, sugar, pumpkin spice, ground cinnamon, vanilla,

and pumpkin to make the smooth filling. Spoon about 2 tablespoons of the filling into each crust. 4. Bake the pies for 40 minutes or until the filling is solid and the crust

is golden. Watch them! Allow to cool completely before serving.

What You’ll Need 2 prepared pie crust dough (homemade or store bought) 3 eggs, 1 divided | 1 (8 oz) package cream cheese, softened ½ cup white sugar | ½ cup sweetened condensed milk 1 ½ cup of pumpkin | 1 teaspoon vanilla extract | 1 teaspoon ground cinnamon 1 teaspoon pumpkin pie spice

Box of Pasta

Skylar Evans Apple Pie Recipe Filling: Dough: 2 tablespoons freshly squeezed lemon juice 2 ½ Cups all-purpose flour 3 pounds baking apples like Golden Delicious, Cortland or Mutsu 4 teaspoons sugar ⅔ cup sugar (plus more for sprinkling on the pie) ¼ teaspoon fine salt ¼ cup unsalted butter 14 tablespoons of cold butter, diced ¼ teaspoon ground cinnamon 1 large egg, lightly beaten with 2 tablespoons cold water a generous pinch of nutmeg

1 large egg, lightly beaten

Directions:

Make the dough by hand. In a medium bowl, whisk together the flour, sugar, and salt. Using your fingers, work

the butter into the dry ingredients until it resembles yellow cornmeal mixed with bean sized bits of butter. (If the flour/ butter mixture gets warm, refrigerate it 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoons more of cold water over the mixture. Make the dough in a food processor. With the machine fitted with the metal blade, pulse the flour, sugar, and salt until combined. Add the egg and pulse one to two times; don’t let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade, and bring the dough together by hand. Form the dough into a disk, wrap in plastic, and refrigerate until thoroughly chilled (at least one hour).

Make the filling. Put the lemon juice in a medium bowl. Peel halve, and core the apples. Cut each

half into four wedges. Toss the apple with the lemon juice. Add the sugar and toss to combine evenly.

In a large skillet, melt the butter over medium-high heat. Add the apples, and cook, stirring, until

the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce heat to medium low, and cook until the apples soften and release most of their juices, about seven minutes.

Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander a medium

bowl to catch all the juice. Shake the colander to get as much as liquid as possible. Return the juices into a skillet, and simmer over medium heat until thickened and lightly caramelized, about ten minutes.

In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely.

(This filling can be made up to 2 days ahead and refrigerated or frozen for up to six months.)

Cut the dough in half. On a lightly floured surface, roll each half of dough into a disc about 11 to 12 inches wide.

Layer the dough between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.

Place a rack in the lower third of the oven and preheat the oven to 375. Line the bottom of a 9-inch pie pan

with one of the discs of dough, and trim it so it lays about ½ inch beyond the edge of the pan. Put the apple filling in the pan and mound it slightly in the center. Brush the top edges of the dough with the egg. Place the second disc of dough over the top. Fold the top layer of dough under the edge of the bottom layer and press the edges together to form a seal. Flute the edge as desired. Brush the surface of the dough with egg and then sprinkle with sugar. Pierce the top of the dough in several places to allow steam to escape while baking. Refrigerate for at least 15 minutes.

Bake the pie on a baking sheet until the crust is golden, about 50 minutes. Cool on a rack before

serving. The pie keeps well at room temperature (covered) for 24 hours, or refrigerated for up to 4 days.

Christmas Music Imagine this: “Chestnuts roasting on an open fire, Jack Frost nipping at your nose, tiny tots with their eyes all aglow…” It is quite obvious where this is going. Although the holidays are finally here, Christmas music has been playing since Thanksgiving. So what is it about Christmas music that makes hearts soar with the angels and souls become warm like hot chocolate? Christmas music brings out a variety of feelings when the holidays roll around. At Loma Linda Academy (LLA), many students love Christmas music and all the feelings that come along with it.

Areli Merodio (12) says that Christmas music “brings everything together,” in a sense. Essentially, Christmas songs set the Christmas ambiance. The religious aspect of the holidays is also a big part of the music that comes with the season. Lindsay Purpura (11) says that the music is sacred and allows her to realize that it is “not about the surface, it is about the message within.” It reminds her of the “reason for the season,” which is an important aspect of the holidays. The holidays in general do something to people that makes them want to jump for joy (on the

inside of course) and smile like idiots. The music can especially cause them to “sing really loud all the time when [we] hear it,” says Brianna Del Real (10). So the next time the ringting-ting-a-ling of sleigh bells can be heard and the chorus of angels comes through the speakers, ask yourself this: how does Christmas music make you feel?
