rowing up, I was never particularly one for summers at the lake—though Minnesota offers thousands of them (literally, of course!), I preferred my time to be spent cozied up with a book on the patio or gathering with friends and family around the bonfire. These quintessential summer memories parade around as some of the best I have. As an adult, I’m still keen on my fonder memories, but I much prefer a day boating along the St. Croix River or Lake Elmo to the previous. Summers also include an annual trip to the Northwoods of Wisconsin for a celebratory Fourth of July weekend, hiking in one of Minnesota’s many local and state parks or—my passion discovered during COVID-19—making plenty trips around town to different greenhouses and nurseries to fuel my houseplant collection. During the pandemic, many people have discovered a new hobby, passion or lifestyle. For Woodbury High School graduate Madison Sosa, her newly-discovered passion for delicious superfood bowls led her to open Woodbury’s own Nautical Bowls franchise. When you read Sosa’s story and more about the nautical-themed brand, your mouth will water for a taste. Read the story on page 42. Also in this issue of Woodbury Magazine, writer Staci Perry Mergenthal chats with former Woodbury resident Luciana Verhoye Passeri, M.D., on the creation of her slow-fashion footwear brand, Passeri. president of Independent Pet Partners (IPP), owners of Chuck & Don’s, relocated its headquarters to Woodbury in August 2020. He knew Woodbury was a great place to live—amazing restaurants, great citizen well-being and, of course, amazing backyard space for the animals—and he thought, for him and his team, Woodbury was the perfect spot for IPP. Team members are often encouraged to bring their pets to the HQ, where furry friends free to roam in a fenced area attached to the facility. Murphy notes the trails in Woodbury complement the health of pets, which is a big goal for the company. For Murphy, it comes down to a community that engages the overall well-being of our beloved pets, and Woodbury is a hotspot for that. He says, “Independent Pet Partners is going to bring an increase in pet wellness to the Woodbury community and be doing things like adoption and other wellness events where residents can get involved.” He also says there will be around 80 to 100 employees working in an office out of the facility in Woodbury. —Hanna McDaniels

Stella Snacks I’ve written many recipes for loved ones over the years: sister, daughter, son, husband, mother-in-law, best friend and so on. However, there is one very special friend I’ve yet to write for, even cook for—until now. This furry friend came into my life at what should have been a hard—very hard—time. In the midst of 2020, while preparing to send my oldest off to college, sheltering in place and all that came with that, I found the support I needed in my sweet Boo Boo Baby or as most people know her, Stella, my cavapoo (cavalier King Charles spaniel-miniature poodle). Those who know me well were beyond shocked when I brought Stella home with me. I’ve said over and over that I’d never have a pet in my house, to the point where my 14-year-old son once didn’t speak to me for two days. But 2020 changed all that, and I came to deeply understand the concept of therapy dogs. She’s one loved little baby and is always there whenever any of us needs a snuggle, a walk, a chat, or—my favorite—a nap. I’m particularly fastidious about what Stella eats. She doesn’t get table scraps of any kind— and we’re picky about her food and treats (more so than I probably was with my actual children). But, in return for all Stella has given me and my family and to celebrate her second birthday on June 6, I finally created a recipe just for her. My recipe for Stella Snacks is really simple, made from clean, dog-safe ingredients that I know she loves (carrots and apples, with a little sweet potato mixed in). I make them in dog bone-shaped silicone molds, but Stella wouldn’t care if they were hearts, fish or teddy bears; you could even roll them out and use cookie cutters. Baby food makes them super easy to prepare, but you can certainly purée your own combination of dog-safe vegetables or fruits and use either whole wheat or oat flour to create a custom snack for your own fur baby.

Building a Strong Foundation A Woodbury-based physical therapy clinic offers a new way to support families. By Madeline Kopiecki
parent-friendly hours that accommodate busy work schedules to cross-disciplinary services that allow back-to-back therapy sessions, the clinic was designed with the patients’ families in mind as much as the patients themselves. This innovative approach to pediatric physical therapy was inspired by founder Tom Hoel’s own personal experience as the father of a child with Duchenne muscular dystrophy. “With the terminal diagnosis, Tom had a lot of frustrating experiences with therapy,” says his wife and co-owner Sarah Mason. “Just having to do so many different therapy appointments and not having places that were multidisciplinary or collaborative … He felt there was a more innovative familycentric model that could be created.” Hoel left his corporate job to launch a pediatric therapy clinic founded on the things he experienced as a parent, Mason says, adding that many of those concepts have remained part of the center’s core values over the past 20 years. One of the biggest differentiators between the Family Achievement Center and other clinics is how its team speaks to one another and collaborates with the community—the team is involved with the Miracle League and founded the Move to Your Own Groove all-abilities race. “It’s such a funny thing, how simple that sounds,” Mason says. But every time she interviews parents, she says their number one desire is cross-collaboration between therapists, which is a rarity. “It’s not unusual at all in the therapy world for

speech to be really siloed, physical therapy to be very siloed and [occupational therapy] to be very siloed,” Mason says. Having a clinic with multiple therapy disciplines under one roof serves many purposes. Aside from keeping schedules simple for young patients and their guardians, the model also allows collaboration. “[Being at the same clinic] allows us as therapists to learn what kiddos are working on in other therapies,” says Jana Smith, speech therapy manager at the Family Achievement Center. Since the pandemic, the center has expanded its vision of family support in more ways than one. It acquired a second clinic location in Bloomington, began providing telehealth services and launched the Family Achievement Foundation. “We always dreamed of building a nonprofit arm of the business,” Mason says. “... We’re very missiondriven here. Our mission is to provide hope and improve lives. I think, for us, our mission on the foundation side is to provide love and support and resources to parents on a challenging journey.” Aside from an education series and a parent support group, Mason says there are currently two financial aspects to the foundation, including the Journey Award and the Comfort Club. Mason says, “Family Achievement Foundation offers many free events for parents and caregivers on a challenging journey.” This includes parent support groups, family jam nights and educational events. “[We] also honor parents with the Journey Award and the Comfort Club,” she says. “Moving forward, our number one dream is helping our parents with respite,” Mason says. “That’s a huge need. Our parents are exhausted. It’s hard to get away and do things. Our dreams are really to do respite and then a brick-and-mortar location as well, a place people can go and rest and be together,” Mason says. “And know they’re not alone,” Smith says.

Senior care service goes beyond transportation and chores.
FOR ELDERS, every day tasks, such as general house maintenance or getting to-and-from doctor’s appointments, can be daunting. It can take away from family time and can be physically and mentally exhausting for themselves and loved ones—this is why Touching Hearts at Home exists. Started in 1996, Touching Hearts at Home is a private home care company, which mainly serves seniors. Many clients have just been discharged from the hospital or are entering hospice care.

However, it also cares for older adults, seniors, people with medical conditions and/or disabilities and those who simply need a hand. It handles what may be tricky chores to lift a burden off of the client and family, transport clients to appointments or errands and assist in meal prep or other housekeeping tasks. “We take the approach of being the additional support,” says Sam Kaelberer, CEO of Touching Hearts at Home. “This way, the family can focus on being family and not a caretaker.” In addition to the basic household
chores, Touching Hearts at Home is licensed to provide personal care, such as medication administration, which is something a lot of other home-care services are unable to provide. It can also start services on the same day clients get home from the hospital—time is precious, so starting as soon as possible is important. The services it provides goes beyond chores and medication. The staff puts a large emphasis on companionship. Many clients live in isolation and may struggle to leave the house. This is

recognized, and staff ensures clients that they’re not alone. They’re someone clients can talk to. “I think it’s the first step of clients reaching out for help,” Kaelberer says. “They maybe just need that companionship.” After recognizing the need for a company that was more than just housecleaning for seniors, Renae Peterson started Touching Hearts at Home. While running her first cleaning company, her cleaners would get delayed because clients wanted someone to sit down and talk with them. Hence, the reason the business focuses on companionship. There’s over 70 locations nationwide, with five located in the Twin Cities Metro. Kaelberer says, “The philosophy originated from the natural compassion of Touching Hearts’ founder Renae Peterson, who received such a strong example of caring, kindness and concerns from her mother, Meliva Peterson. It continues to fuel her passion in our work to this day, and that we refer to as our ‘Legacy of Love.’” COVID-19 has impacted Touching Hearts at Home, but it’s handling the change well. Each staff member and client receives a bag of personal protection equipment before his or her first shift. “Obviously, COVID has had its challenges,” Kaelberer says. “But I’m really proud of our team and how they’ve handled it.” Its phone lines are available 24/7, so clients will always reach a live person when they call, whether they’re in need of services or just want to learn more to see if Touching Hearts at Home can of benefit to them or a loved one. Three to Beat Spenga debuts in Woodbury as Minnesota’s first location. By Hailey Almsted

WOODBURY RESIDENTS Kristen Braun and Patty TenBroek happened to meet when their children, Parker and Ava, developed childhood crushes on one another in pre-K at Primrose Academy. Six years later, the friendly duo is opening Spenga, a Chicago-based boutique fitness studio franchise, right here in Woodbury. TenBroek first discovered Spenga through a simple Google search. “I’m

currently an exercise physiologist, and it’s been a dream to open my own fitness studio and that’s where Spenga comes in,” she says. “I stumbled across Spenga … I thought, ‘This is exactly what I need in my life.’” Her fitness background pairs well with Braun’s background in marketing—but it’s their combined passion for fitness that has prepared them for Spenga’s grand opening this month. “After having my third child, I figured this is my body now, and I wanted to get back into working out … I started going to a boutique fitness studio, and I love the community,” Braun says. Her partner agrees. “I see how important that sense of community is, especially for moms or anyone who stays home all day … I wanted to be able to create that community for other people as well,” TenBroek says. Spenga encompasses three pillars of fitness: strength, flexibility and recovery. The name is built out of its principles— spin, strength and yoga—in which clients do equal periods of all three during its 60-minute sessions. “I love that it’s just 20 minutes. We love to say, ‘Anyone can do anything for 20 minutes,’” Braun says, with TenBroek adding that Spenga is for anyone. She says, “Spenga is a workout that everyone can do … We really want our studio to be an environment that isn’t intimidating at all for people, who might not be as comfortable in a boutique studio.” The studio is currently slated to open early this summer. Braun and TenBroek are over the moon about opening the location and can’t wait for others to fall in love with it just as they did. “In one workout, you’re getting crazy awesome cardio, strength to tone and, at the end, you’re doing a bit more toning, but also mindfulness. When you leave the workout, you’re feeling amazing,” Braun says. Braun and TenBroek have signed on to do four other locations throughout Minnesota, but they’re most excited for the location just five minutes away from their homes. MANY PEOPLE HAVE HIDDEN TALENTS that just need to be found.
A few go undiscovered, while others are found and become a lifelong passion. Some are even able to turn their new skills into a job. Juli Rojas is one of those people to turn her hidden talent into more than just a hobby. Rojas baked a birthday cake for her daughter Sofia and received many compliments on it. She tested out a few other baking recipes—experimenting with different cakes, cookies and even macarons. Her friends loved them and told Rojas that she needed to start a business. “I really had nothing to lose,” Rojas says. “I was already doing it for free, so why not give it a try?” She started Bake Me Love by Juli in 2020 and has been baking custom goodies ever since. Many of her cakes are created for birthday parties or other celebrations with most of her customers in the Woodbury area. Though, she notes that she’s open to business to anyone in the surrounding area. Not only are Rojas’ creations delicious, but the decorations are artistic and creative—it almost feels wrong to cut into them. She has created many different designs, ranging from cakes inspired by Harry Potter to cookies decorated like seahorses. Out of everything she makes, Rojas says sugar cookies are her favorite because of the detail she can put into them. She also enjoys cakes because there’s endless options for designs and decorations. While Rojas didn’t discover her love for baking until a few years ago, she’s always enjoyed making things with her hands. As a child, Rojas loved to make things out of clay or Play-Doh. Now, she’s traded the clay for frosting and still gets the same feeling. “I really love the creation process,” she says. Baking became a way for Rojas to find her niche in Minnesota. Born and raised in Colombia, she moved to Woodbury in

October 2018 after her husband transferred here for work. Though Rojas says it can be daunting to move to a new country, between her new passion and the community, Rojas has enjoyed the process. “The people here are super nice and willing to help,” she says. “It’s a united community.” Bake Me Love is still a side gig for Rojas, and she does all of her baking in her own home. As the company establishes itself in the community, Rojas hopes she’ll be able to open her own bakery and turn it into a full-time gig in the next few years. For now, she enjoys showing off her latest creations on her Facebook page, where customers can browse her work and get more information about ordering. As much as she wants to grow her business, Rojas loves baking so much so that the extra income is just icing on the cake. Getting in the kitchen and baking is a way for her to relax, and she finds it very rewarding. “I love seeing the customer’s smile and just how happy they are with the product,” Rojas says. “It brings me a lot of joy.”

From the studios in Hollywood to the famed pages of Instagram, it seems as though IV therapy is an A-list celebrity move. But for those of us without VIP status, there’s Restore Hyper Wellness. “We’ve coined the term ‘Hyper Wellness,’ and what that is and our goal is finding different alternative therapies … that will help the body naturally do what it already wants to do, which is heal and recover,” says Katie Etzold, store manager of Woodbury’s Restore Hyper Wellness. Wellness includes our hyperbaric oxygen therapy and IV therapies and our specialty esthetician servic-

es include hydrafacials, cryo facials and more,” Etzold says, noting that the dominating services include IV therapies, oxygen therapy and red-light therapy. But what exactly are these different types of holistic therapies? IV THERA P I ES “A lot of people think they can’t get IV therapy because it’s a bougie, A-lister lifestyle,” Etzold says. “But it’s so beneficial for a lot of people.” Restore offers several types of IV drip therapy—including premade drips and custom drips—that are performed by registered nurses. “We help people to hydrate, and we have a whole menu of ingredients, different vitamins and minerals that we cater to each client depending on their needs,” Etzold says. Each service lasts anywhere between 45 minutes to an hour and a half, depending on “how long you take to drip,” she says. IV drips assist in a number of things, Etzold says, including weight management, feeling energized, detoxing, building immunity and more, plus there’s numerous vitamins/minerals to be added to drips, such as B12 vitamins for energy building or biotin for skin/hair. For those who don’t have an extra hour to spare, Etzold recommends Restore’s intramuscular (IM) shots, injections that offer similar benefits from IV drips without the time commitment. With options ranging from vitamin D or vitamin B complex to detoxifying glutathione, there’s a variety of options. noting that red light therapy is especially beneficial to Minnesotans, who live through harsh winters. Sessions last 12 to 20 minutes and can be used up to five times per week. It’s used by athletes to reduce soreness or those looking to balance their moods. It can also stimulate collagen production in the skin, leading to more firm skin. “It’s so good after workouts in the winter and really daily,” Etzold says. “Once you’ve done it, you understand. It’s easy.”

Stepping into your Power W
hile on a walk on day 26 of her monthlong trek in the Amazon jungle with no running water, no electricity and bathing in the same swamp water as anacondas and crocodiles, Luciana (Anna) Verhoye Passeri, M.D., avoided a step that changed her life. “I went to put my foot down and, instinctively, I felt something underneath my foot, and I looked down and there was a massive coral snake ... I did a Herculean leap to my left to avoid it because they’re extremely deadly,” says the former Woodbury resident of 20 years. She hollered for help, and the indigenous men from her group did what is customary—knocked out the snake with a stick, so it couldn’t bite and eventually burned it. Because the snake was just react-

ing and trying to protect itself, Passeri felt badly. “I thought about how often in my life I have hurt other people out of defensiveness, not intending to, but I was protecting something that really didn’t deserve or need protection,” she says. “I knew I could do better.” The snake came to Passeri in her dreams and waking moments, and she kept saying to it, “‘You cannot come into my presence until you transmute your power,’” she says. “On the last day, I said, ‘You must transmute your power. Look to your skin. You’re beautiful,’ ... In this poof moment, the snake kind of evaporated, and I felt this really beautiful white holy presence.” She left the jungle three days later and met up with her husband, Jim, in Cusco, Peru. They walked into a teeny
building and met a man, Julio Huillaca, who later became Passeri’s friend, master cobbler and director of operations at her company. “I saw his work, and I looked at my husband and said, ‘This is it.’ The colors reminded me of the snake and how wearable art is really important, and I wanted to use wearable art to support people in stepping into their power and living their best lives,” she says. Established in 2019, Passeri is now a footwear business with 10 employees in a small village in Peru, carrying products handcrafted by local Peruvian artisans using handwoven alpaca wool textiles and fine leather from South America. The company purchases textiles handwoven on traditional Peruvian pedal, treadle and portable back-strap looms

from three local artisan families, one of which provides wool from its 150head alpaca farm at 12,000 feet in the Andes. Wool is dyed using only natural pigments, and all the shoes are hand stitched, including botitas (booties), kicks, high-top sneakers and tall boots. Passeri designs the shoes, and master cobbler Huillaca helps to co-create the final products, like the pair she found comfort in while hiking Machu Picchu. But she wanted to be more than just another shoe company. “Our vision is to inspire and empower people to live consciously, recognizing all people have the power to live their best lives by unwaveringly embracing their natural gifts and talents,” Passeri says. A lover of nature, it was natural for Passeri to focus on creating a slow-fashion company, dedicated to making the lowest imprint as possible. “As I started designing shoes, I knew that we had to be an antidote for the fast-fashion movement,” she says. “People’s lives have been infiltrated by fast-fashion, and I wanted to give people an alternative, educating people on the benefits of the slow-fashion movement.” She points out that the fast-fashion business model rapidly adjusts to changing trends, mass producing millions of items of clothing, usually using low quality materials, which are difficult to recycle and repurpose. At Passeri, indigenous Peruvian men and women from the Andean mountains hand craft all the textiles, handweaving their indigenous stories into their designs. “There’s one textile in our botitas you can see there’s a little cocoa bean, and the symbol of mountains and stars and that’s them sharing their ancestral stories with people through our products,” Passeri says. “It’s such a gift to them because they want people to know their stories and wear their products.” Because artisans create weavings on their looms, the shoes are constantly changing according to the designs of the families. Products become limited editions because, once a family has created 20 feet or so of weavings, the cuts from the next batch don’t look the same. “It’s

this really beautiful gift that comes out of slow fashion and out of our mission to be that alternative to people,” Passeri says. The Ola (wave) shoe is a good example. There are two weaver families that create the Ola pattern. They switch out the colors regularly, but it takes up to two weeks to turn over a loom and to change all the colors. “These looms are no joke,” she says. “When I watch these people do their weavings, it’s jaw dropping and how they hold these patterns in their minds just blows my mind. But it’s a tradition of theirs in the Andean mountains, and I’m really grateful to be working with these families.” Passeri supports and cares for employees and artisans and sustains the environment using natural fibers and textiles. “For us, slow fashion is not just that all our products are handmade with really beautiful quality products, but we also pay thrivable wages,” she says. “It’s not just enough to live. People can send their kids to school. They can take vacations. They can buy homes. We provide all our employees breakfast, lunch and a snack before the end of their day and clean water, coffee and tea. They get an entire month vacation every year and a bonus as the company thrives, so we share also in our profits.” Passeri is open about her inexperience in starting a company in another country. “In building this company, I had no idea what I was doing,” she says. She has a background in leadership and management, plus she had worked on social justice issues for more than 20 years. Passeri held an annual fair-trade sale in Woodbury’s Eagle Valley community to support social justice issues sourcing clothing, scarves and jewelry from indigenous people and artisans. “There were weeks where every single day I would just say to myself, ‘I got this. I can do it. I can figure it out,’ and I’d be wearing the shoes and it really got me through [it],” she says. Those are the times that helped craft Passeri’s mission to develop a company that encourages people to decompress, connect and inspire people to step into their power.

Splash, dive and run through Woodbury’s kid-friendly obstacle course. with summer fun as your kids make their way through approximately a 1-mile-long obstacle course in Oakwood Park. Woodbury Parks and Recreation is partnering with the City of Cottage Grove to offer a course with an array of obstacles friendly for kids ages 6–12. Elizabeth Owens, recreation program specialist, says, “There are 20 obstacles throughout the course, some of them are challenges where kids have to climb, jump, crawl under nets, dodge dodgeballs, jump through some tires … It ends with a really big mud pit.” She notes that participants can skip obstacles if they’d like. The course will also be held in waves, with four to seven children going at a time to ensure safety and COVID-19 protocols. Owens says, “The kids adventure mud run is a really great, fun opportunity for our youth to be outside and challenge themselves with unique obstacles, all within a really friendly and welcoming environment and in a way they can’t do in their own backyard.” Pre-registration for this event is strongly encouraged on the Woodbury Parks and Recreation website. —Hanna McDaniels

of Nautical Bowls two years ago—she and her sister made the trek to Minnetonka to try it, and immediately fell in love. “[We] found ourselves making two trips a week to Minnetonka to get a Nautical Bowl,” Sosa says. “I was hooked immediately, and it was apparent that this specialty healthy food choice was going to make it big. I wanted to be a part of what they were doing.” Sosa, general manager of Woodbury’s Nautical Bowls, says she emailed founders Rachel and Bryant Amundson monthly with the idea of expanding to Woodbury. “I emailed them each month for two years,” Sosa says. When the Amundson’s announced its expansion, Sosa was over the moon. “I signed up right away, and unfortunately, they said the Woodbury location was taken,” she says. “My heart was broken because I wanted to stay in Woodbury and knew that was really the only option I could make work … Two weeks later, I received a call from Nautical Bowls, and they said Woodbury was open again … I was all in at that point!” Sosa wanted to bring a healthy-oriented brand to Woodbury—for the health-conscious customers, as well as to create a space for teenagers. “[It] will be a great place for young high school kids to hang out with their friends,” she says. “We knew the community of Woodbury would benefit with a great, healthy alternative option for families, teens and kids.” In February, Nautical Bowls made its debut in

Woodbury. Offering superfood bowls created with organic, gluten-free, dairy free and plant-based ingredients, Nautical Bowls is driven by a healthy lifestyle. Sosa says, “Our product is pretty simple … There are 10 signature bowls that a customer can choose from, or they can build their own.” Customers start with a base: cacao (for chocolate lovers!), pitaya, mango, coconut, blue majik (a form of spirulina), açaí and chia pudding (offered in three flavors). Next, top off the bowl with a variety of toppings, including dry toppings, such as hemp seeds, cacao nibs or granola; fruit, including strawberries, bananas and blueberries; and drizzles like honey or peanut butter. “The experience we are trying to create is that with every bite, you taste all the toppings and bases to get a full-flavored experience,” Sosa says, noting that the bowls are packed with nutrients and protein and can serve as a snack, treat or healthy meal replacement. As a WHS graduate, Sosa says it’s been rewarding being able to work with and hire students in the community. “Our team is amazing … They were there from the beginning and really contribute to our success,” she says. “We have hired several team members from East Ridge High School and WHS.” Sosa also says her team is excited to see Nautical Bowls in full swing during the summer months. “We have a patio where customers can enjoy their bowls, hang out with friends and enjoy a great experience,” she says. “We are excited for the city of Woodbury and for all who come out and try our bowls.”

Editor’s Pick Summer is calling, and Nautical Bowls is picking up—it’s one of my favorite sweet treats and the perfect way to cool down on a warm day. Though I’ll take any pick on the menu, I’m drawn toward two specific bowls.

Sunrise Bowl: This is my go-to (and Sosa’s favorite, too)! Made with blue majik, pitaya, granola, banana, strawberries and honey, this delicious bowl is packed with flavor. Sosa says, “I will sometimes add our freshly ground peanut butter as well.” Yum!
The Nauti Bowl: This is a Nautical Bowls staple—for good reason—and the most popular bowl, according to Sosa. This bowl is made with açaí, pitaya, granola, banana, cacao nibs and peanut butter.
