PUBLISHER One Nation Under God EACH YEAR AS THE FOURTH OF JULY rolls around, I reflect on how blessed I am to live in a country where I am free to express and exercise my religious beliefs and to have such an abundance of opportunities for me and my family. Lately, however, we are beginning to experience a vulnerability like never before. The 9/11 attacks were horrific. Yet, many believed things such as that only took place in the “bigger cities” such as New York City or Los Angeles. We felt safe in our own community. But things are changing. One only turn on the news to see the things that are happening in small communities not too different than our own. So how can we do our part to keep one another safe? While no one is immune, we need to be aware and to not be afraid to speak up when something does not feel “right.” Whether it is a student at our child’s school who may show a tendency towards violence or we overhear someone talking about things that are alarming, coming forward and reporting things to the appropriate authorities can help deter and even prevent an act of violence from taking place. On this Fourth of July, let’s make a commitment to ourselves and to one another to do what we can to protect ourselves and our neighbors. After all, we are one nation under God, indivisible, with liberty and justice for all. Creating. Connecting. Living Local.

ALL LIVING THINGS on this planet need a form of shelter to survive. A fairly simple concept – shelter – something that forms a place of protection. Yet, the subject is far from simple. How do we meet our basic needs in today’s built environment?

We have become a somewhat static civilization. Most of our dwellings are built on-site and are completely locationdependent. In our contemporary civilization, we do not need nearly as many of the survival skills that our ancestors required to avoid fatal interactions with other humans, animals and plants. Once the basic necessities to sustain life are met, we then have the privilege to engage our freedom of choice. We thrive when we a have a place to call home. A sense of place plays a critically important role in how we decide on our desired type of shelter. People form a relationship to

place and others by sharing a particular space. This relationship, or attachment, to place links us physically, emotionally and socially. It is incredibly likely that we will have more than one type of relationship that forms the bonds of sense of place. Perhaps it is a historical or familial bond to a place that keeps us around, as in being born there or residing there as a child. It may be the case that we are entirely dependent on a specific place due to economic opportunity, such as location-specific occupations. Possibly, we depend solely on another person who is tied to that location. Different but not less insignificant, we may be drawn to a place due to a moral or ethical responsibility to place, congruent to one’s religious or cultural beliefs. Conceivably, it may simply be because we have a sense of belonging intuitively drawing us to that place. Whatever locale you choose to call home, place has an anthropological and perhaps architectural history.

THROUGHOUT YOUR ENTIRE LIFE you’ve planned carefully, invested wisely and analyzed countless financial decisions. As you face the choice of where to retire and how to plan for your health care needs, utilize those finely-tuned analytical techniques. After all, you deserve the confidence that comes with fully understanding your senior living options. No longer “the old folks’ home,” communities are increasingly attractive and appealing. But understanding the choices can be confusing. There are a wide variety of senior living options, one of which is a Continuing Care Retirement Community (CCRC). Nationally, this is changing to “Life Plan Community.” CCRCs provide all of the following services: independent living, assisted living, memory support and skilled nursing. There are many CCRCs, but it’s important for you to know that there are three different types: type A, B or C. All offer housing, services and amenities, but there are differences in how health care costs are managed. Type A – Full Life Care. This has two pricing elements – an entrance fee and monthly fees. Thanks to the entrance fee, the financial advantages of a Type A are substantial because your monthly fee stays the same (aside from annual increases for inflation) even if you move into higher levels of care. In

other words, no worries about fees doubling overnight when a health crisis occurs. Type A offers you financial predictability and the security of knowing your health care needs will be covered throughout your lifetime. A significant portion of the monthly service fee in a Type A community qualifies as a medical deduction under IRS guidelines. Type B – Modified Care. This also has two pricing elements, but long-term health care services are only covered for a specified number of days, after which you’ll be responsible for the higher health care costs. Entrance fees are generally less than a Type A, but make sure you can afford to pay for health care services after your coverage ends. IRS medical deductions for Type Bs are substantially less than Type A’s. Type C – Fee-for-Service. Type C communities vary in terms of fee structures, but in essence you’ll be paying for all the health care services as you need it. Monthly costs can escalate rapidly, and you’re fully responsible for assuming the risk of the financial burden. Make sure you’re asking the right questions when evaluating local communities, because the type of CCRC can make all the difference to your financial peace of mind.

NEXT WEEK, we observe the Fourth of July with sparklers, picnics and parades. And living in a country that offers so much freedom, we have a lot to celebrate. But on a more personal level, you may still be working toward another type of independence – financial independence. What can you do to speed your progress toward this goal? Here are some ideas to think about: • Free yourself from excessive fear. As an investor, it’s not hard to find something to fear. Oil prices, interest rates, political squabbles, even natural disasters – at any given time, each of these factors (and many more) might be blamed for volatility in the financial markets. In response, many people take a “time out” from investing. Don’t let fear hold you back. It takes discipline and some mental toughness to stay invested in all economic environments, but if you’re constantly jumping in and out of the market, you’re almost guaranteed to miss out on the kind of continuity and opportunities you need to move toward your financial freedom. • Liberate your investments’ growth potential. Many investors avoid investing too aggressively, wishing to lower their risk level. And that’s certainly not a bad idea. So, try to always maintain a reasonable percentage of growthoriented vehicles in your portfolio. The exact amount may depend on your age and tolerance for risk, but at virtually every stage of your life, you need some growth potential.

• Avoid the tyranny of debt. It’s not easy to stay out of debt. But carrying a heavy debt load is truly a burden – you’re not only concerned about making the payments, but you’re also depriving yourself of dollars that could be used to invest for your future. Try to do everything you can to live within your means and avoid racking up more debt than is necessary. And when you do whittle down your debts, put that “found” money to work. The more you put in your investment portfolio, the more opportunities you have to reach your objectives. • Free your thinking about the future. Here’s another roadblock on your journey toward financial independence: short-term thinking. Instead of seeking quick gains (which are notoriously hard to achieve), strive for steady growth. Instead of reacting to the news of the day by making impulsive moves, chart a long-term strategy that’s appropriate for your needs, and stick to it. Instead of focusing on the losses you might see on one month’s investment statement, look back over the progress you’ve made over the last five or 10 years. In short, worry less about today – and plan for tomorrow. It will take a lot of time, effort and patience to ultimately achieve your own Financial Independence Day. But once you do, you’ll have reason to rejoice – and you won’t even need the fireworks.

To discover if you’re more like a thermometer or a thermostat, simply “notice what you’re noticing.” This means taking a step back so you clearly see the relationship between your energy and attitude and what’s happening around you.

As a business-life coach, I see firsthand how developing, implementing and executing strategies is important to a successful business. So is mindset. Whether or not you’re a business owner, you know that high energy and a good attitude make better interactions with others. Working with computers, gadgets and tools is easier too. Your problem solving skills are at their finest when your energy is high and you have an attitude of positive expectancy. The reverse is also true. When your energy and attitude sag, it’s just a matter of time, and your results sag too.

In our fast paced world, we encounter many challenges. When outer circumstances dictate our energy and attitude, we act like a thermometer. But when we notice what’s going on around us and choose how we’ll manage our energy and attitude, we respond like a thermostat, increasing our capacity to arrange resources for a desired outcome.

This means it’s okay to obsess on keeping your energy and attitude high. Yes, obsess – like it’s okay to obsess about keeping your children safe, making sure there’s enough gas in the tank or taking care of your clients. Energy and attitude are only one part of mindset; nevertheless, they work in tandem to alter your neurochemistry and positively impact both your thinking and your health. The first step to maintaining high energy and

THERE IS ALWAYS SOMETHING happening in downtown Gig Harbor, and the first Saturday of each month is no exception. Showcasing our downtown as an enjoyable destination for both visitors and residents is the First Saturday Art Walk. This is a free, award-winning event put on by the Gig Harbor Downtown Waterfront Alliance that runs all day from 10am to 9pm.

Along Gig Harbor’s downtown waterfront, art enthusiasts can tour through seven different galleries featuring artist demonstrations, refreshments and displays of different mediums and styles. Moore and her husband moved to Gig Harbor in May of 2014. A career army officer, her husband was stationed at Joint Base Lewis-McChord. “We fell in love with the Harbor,” said Moore of her desire to call Gig Harbor her permanent home. “My husband is retiring within the year and we are finally setting down roots.”

Better Gym is a physical training facility that many have benefitted from since it first opened in November of 2014. With modalities such as kettlebells, barbells, SandBells, TRX and bodyweight, Moore and her staff of four help their clients reach their goals in a safe and effective manner.

And it is her husband to whom Moore attributes the success of her business. “As a collegiate athlete and career Army officer, he has always been very rough on his body. His injuries and surgeries span his body from head to toe. He was always told what to do but never taught how,” said Moore.

“We also help manage and reduce pain through movement education and application,” said Moore.

She spent the first half of their marriage rehabilitating him. “I then started ‘pre-habbing’ him,” she said of her work helping him to prevent injury. “I’ve been able to learn from some amazing people worldwide and realized I have a knack for assessing and teaching movement whether it’s one’s own body or with heavy weights.”

The philosophy behind Better Gym is that training should be focused on practice and quality of movement. That focus on quality is important to Moore as is keeping her class sizes small so she can foster a supportive, family environment. In addition to fitness and exercise, Moore offers programs aimed at nutrition. She offers three, six or nine week fitness and nutrition intensive programs to help jump-start your fitness goals.

EVEN THOUGH GIG HARBOR’S FISH Food Bank has been a Gig Harbor staple for the past 40 years, their actual operation is comprised of a modest area shared with our local Eagle’s Club. Neither the building nor the food bank’s small sign on Burnham Drive adequately tells the story of what happens once inside the food bank. For the real miracle of the food bank originates in the dedication and boundless generosity of everyone involved. Founders Ron and Jan Coen, over 200 dedicated volunteers, our local stores, and all of the private donors in our area make the seemingly impossible happen. Their tireless work of the past 40 years demonstrates that compassion can indeed move mountains. But the success of FISH all hinges on the day-to-day human element and a team of volunteers ready to respond to a variety of needs.

One of the newest FISH volunteers, Jan Mallavia, a beautiful woman with soft eyes and an infectious smile, graciously described an experience she had with a client. “A woman came through the clothing section of the food bank looking for a blanket or coat to wear because she was living in her car until she could find permanent housing. It was this past January, and she needed to stay warm. We were able to find her not only a nice blanket and coat, but wool socks and a pillow. She just wanted her basic needs met, but I told her, ‘you need a pillow to rest your head on!’” Such is the mission of the FISH Food Bank and its volunteers — the general giving spirit and attention to even the smallest details that only the human element can bring. It’s very easy to see that those involved in the FISH Food Bank have taken Jesus’s message to feed his sheep and have put it into practice. “My favorite thing about

As our community continues to change at an everincreasing pace, we want to be ahead of the curve in making sure that those in need continue to get the assistance they need. We want to be able to provide that help in a way that is timely and respectful of the individual.”

Last, but not least, FISH is so much more than a food bank since they also incorporate programs that account for life’s other necessities. For example, FISH administers programs that offer rent and utilities assistance, college expenses, and textbooks for students. FISH also provides gas cards, clothing, toys, and even birthday cakes and birthday kits. Finally, a dedicated team of volunteers provides transportation for those who might otherwise be unable to complete the types of errands that are often taken for granted. As the old adage says, “A friend in need is a friend indeed.” If you have ever been curious about how you could contribute your time, talents, or financial gifts to FISH Food Bank, now is the time to get involved. Nonetheless, the FISH board is cognizant that serving the needs of our community requires laser focus and future planning. In order for the FISH Food Bank to be able to accomplish these goals and more, it has become apparent that they will need a new location. Our community is changing and growing and FISH leadership knows that the food bank needs to be positioned to assist with the shifting needs of our community. Ron noted, “Our existing building has limitations. What we are looking for is essentially a small grocery store with room for shopping, storage, food processing, offices, waiting room, walk in cooler, walk in freezer, space for other social services agencies, and a clothing area. We need the new building because all indications are that development in Gig Harbor North will eventually result in the loss of our current location. We don’t know when that will happen, but we need to be ready when that happens. One of the

The Puerto Vallarta restaurant located in Gig Harbor is owned by Sergio and Patricia Andrade. Along with various business partners, the couple also owns Puerto Vallarta restaurants in Kingston, Lacey, Lake Tapps, Port Orchard and Federal Way.

Sergio and Patricia have called Gig Harbor home since 1991. They opened the Port Orchard Puerto Vallarta with the help of Clemente and Anita and Patricia’s parents, Rafael and Marina Rodriguez. The success they have had in the restaurant business can be attributed to their hard work and dedication and to quality food and service, but if you ask Sergio and Patricia they add that it is also due in large part to their employees and customers.

But it is not just Puerto Vallarta Restaurants that Sergio and Patricia own and operate; in 2008 they opened Blue Agave Mexican Grill in Port Orchard followed by a second location in Uptown Shopping Center. Patricia shares that Clemente and Anita opened the Puerto Vallarta location in Gig Harbor in 1982.

“A few of them have been with Puerto Vallarta for over 20 years,” said Patricia. “Rogelio is one of them. He is well-known server and asked for by many of our customers. Our Chef, Valente, is another employee that has been with us for over 15 years. His style of cooking and managing the kitchen is consistent.”

“The first location was up on Kimball Drive,” said Patricia. “Clemente and Anita then bought the property at 4225 Harborview Drive where Puerto Vallarta is now located and moved to that location around 1987.” As a family owned business, Puerto Vallarta Mexican Restaurant enjoys catering to families. Authentic and fresh, the food they serve is a favorite of many.

But of course they would not be where they are today without their loyal customers. “Our customers are also a big attribute to our success,” said Patricia. “There have been a few customers that have mentioned to us that they went to eat at the Puerto Vallarta in Port Orchard for those 37 days that we were closed (in Gig Harbor) for the remodel. That is loyalty!”

“We make our food right here at the restaurant including guacamole, salsa, tamales and chips,” said Patricia, who adds that it is important to them to cater to those who may have special dietary needs as well. “We also have gluten free dishes.”

DOWNTOWN UPRISING IN GIG HARBOR

T

he future of the Peninsula Shopping Center has been the subject of considerable debate for some time now. Among the possibilities for the site is a phased redevelopment that would make it a “livework” place with apartments and community spaces.

He remains positive the process is working and has laid out three options to move forward with. The three building options are bird’s eye views of what could be built on the location. Given a set number of multifamily residential units—determined by how many will make the project economically doable—the tradeoff between the options becomes one of height versus width. Build higher and there’s more room on the ground for open space, small retail and surface parking. Or build lower with more sprawl.

Prior to April of 2015, Jon Rose, president of the Olympic Property Group (OPG), approached the owners of Gig Harbor’s Peninsula Shopping Center (PSC) after learning the Milgard family, the current owners, was interested in the possibility of improving their retail property. The 5.6-acre site is home to the U.S. Post Office, 7 Seas Brewery, Columbia Bank, and Obscurities Hair and Art Studio and a few other small shops and restaurants. Larger retail businesses, Rexall Drugs and Ace Hardware, have left the shopping center in the past few years. These departures—along with the inability to attract large grocers like Whole Foods Market or Trader Joe’s—spurred the owners to consider a multi-use future for the ailing site.

“With the two taller apartment options,” says Rose, “there’d be plenty of room for a town square or community space, donated to the city that could enhance our project’s integration with the surrounding neighborhood.” This type of approach to pedestrian-friendly streetscapes is a key aspect of well-designed, multi-use development. An exciting possibility is working its way to the forefront. Along Judson Street, Rose and his team have suggested offering flexible “live or work” units that could house either residential or retail. This dynamic idea would allow single folks who are starting a business to manage costs by living at work.

“[This is] a chance to do something amazing, in an amazing town ... by improving the fabric of a growing community,” Rose said. The OPG decided that before jumping into the official city proposal process, they’d get local input to begin the conversation about the site’s future development. They held four public meetings between April 28, 2015 and May 3, 2016.

Possible effects on postal services In every community, the post office is essential, and it is often a source of neighborhood cohesion.

“This is just us floating an idea ... starting a dialogue to see if we can get together enough to take the next step,” said Rose to a gathering of about 60 people on May 3. “Someday, if there is going to be an actual project, there will be a city process; there will be applications filed, permits filed, environmental reviews done, traffic studies done, and there will be the right to appeal anything and everything ... but we are not there yet.”

“Customers who get street delivery of their mail still visit the Gig Harbor Post Office to buy stamps, mail parcels, chat with neighbors, or to conduct the daily needs of running a small business,” says Corporate Communications Specialist, Ernie Swanson.

The OPG, the real estate arm of Pope Resources, began influencing Gig Harbor’s development in the late 1980s and, according to Rose, has “owned land in the area since Ulysses S. Grant was president.” A recent example of their work is the Harbor Hill development, between Peacock Hill Avenue and Borgen Boulevard. Development there includes a YMCA, Costco, a public park and trails, along with an as yet unfinished performing arts center.

Today and Moving Forward Many locals expressed a desire to see the entire shopping center redeveloped, instead of an earlier approach of only working with the older half west of 7 Seas Brewery. “I think the most likely plan to come out of this process will be a phased redevelopment of the entire property,” says Rose. For now, the PSC project is still one of exploration, community outreach and preproduction. The hope of enhancing a languishing retail mall within reach of established neighborhoods, like the waterfront area along the harbor, is a common goal. And many cities have turned to mixed-use designs for solutions.

Challenges to come A major obstacle to achieving multi-use residential may be the area’s zoning and building codes. Currently zoned Downtown Business (DB), building height limits would make the four- and five-story options unfeasible. However, codes are mutable and the city planning department has two avenues the OPG could take to facilitate the necessary changes.

However, sometimes a development can go up with the best intentions to combine multifamily living spaces with small retail, or postal services and entertainment, but then fail to achieve integrated results. One approach is to apply for the Authority to amend from chapter 17.100: site specific rezones are a type III permit application. Another is to gain an exception for a particular project under chapter 19.08, in which the city may consider, and enter into, a development agreement with a person having ownership or control of real property within the city limits. Although the ongoing public outreach process is not required by city planning rules, the city’s planning director Jennifer Kester is paying attention to the progress. She is also interested in gauging the public’s interest. Kester commented that with either text amendment OPG will have to go through the city council. And the legislative process could take at least a year. The OPG and the city—with input and cheerleading from the public—will have to work through these issues together if the Milgards decide the time is right to begin the official planning process. Balancing state mandated density with livability In Washington, the state government requires cities to take their share of population growth. There are also mandates for city planning to direct population into urban growth areas. Gig Harbor, like most cities in the U.S., has developed along isolated pathways of opportunity. Generally, this is because individual contractors

WHEN THE STORY OF Gig Harbor is told, it typically centers on the beauty and serenity of the area. While this is a major factor for those who decide to make this place their home, often overlooked by newspapers, magazines and film makers is a deeper dive into the community and how a diverse group comes together to make a truly special place. The Gig Harbor Chamber of Commerce recently partnered with Dennis Minor, a filmmaker of more than 30 years, to help look beyond the beauty and find out why so many people don’t want to live anywhere else. Minor has spent time in advertising and producing TV commercials in major metropolitan areas like Denver, Portland, San Francisco, Los Angeles and parts of Europe. It was a project interviewing winemakers in Burgundy, France that helped change the way he looked at storytelling. “I find that we all relate to real people telling real stories better than something scripted,” said Minor. That approach was taken when creating phase one of a new video series about Gig Harbor called “Gig Harbor Chamber: Coming Home.” Minor interviewed 20 locals of various backgrounds to really get the feel of why they’ve kept their families here for generations or chose to move here to start a business.

“I really just let the people tell the story of what this place means to them and why they are here,” said Minor. Instead of a typical “rah rah” scripted piece, locals really opened up to Minor about unique opportunities, events, and how young and old, longtime and new residents mingle together. Having moved to the area nearly three years ago when his wife accepted the position of vice president of marketing and communication for Pacific Lutheran University, he is thankful to have settled in a truly special place, something reflected by many others in the film. “Once you cross over that bridge and down the hill, you really are in a different world.” The four-minute film is just phase one of the project. Minor is currently working on phase two which will be a series of five segments expanding on specific topics about the community. These films will be shared at conferences, trade shows and with those looking to start a business or move their family here. morning before the race on April 18. “My whole goal is to finish.” He did finish the race. The 51-year-old began his fourth running of the Boston Marathon along with 7,500 other runners in the second wave of participants at 10:25 on the morning of Patriots’ Day and completed the demanding course five hours and 30 minutes later. A record number 30,000 qualified runners took part in the 120th running of the Boston Marathon; 500 of them were from the state of Washington.

The long distance runner began the 26.2 race mile competition through the streets of the city and eight nearby townships just 15 days after his latest treatment for advanced melanoma. The race gave Council his first break from the grueling series of surgeries and procedures he has endured over the past year in his battle against the deadly disease.

Council said he met the three-hour and 40-minute qualifying time to qualify for the Boston Marathon last March, the week before he was diagnosed with cancer. When Council informed his doctor that he had qualified to run in the 2016 edition of the prestigious race, his doctor rescheduled his treatment schedule and encouraged him to run.

Council made the trip to the East Coast with members of his extended family and the full support of his oncologist. “I am nervous and overwhelmed,” he told KOMO News via Skype on the

Council has been a runner since high school. He ran his first marathon in 1982 as a high school junior in Seattle when he took part in the Emerald City Marathon.

Another runner came up to Council to ask what type of cancer he was battling. Ironically, the other runner was participating in the race to help raise funds to help find a cure for melanoma.

However, the seasoned runner had not run a marathon since before his diagnosis. He knew his body would not be able to tolerate the demand of running the entire course in Boston, so he devised an alternative plan.

Although running is an individual effort, Council was not alone on the course. His sister and brother-in-law were with him at the starting line and cheered him along the course of the race. His wife and daughter were waiting at the finish line on Boylston Street. Council fought his way through the crowd to embrace his family and then to his sister and her husband 300 yards away. He was told by others that he sat down and went to sleep moments later.

Mind over body “My plan was to run as far as I could, then walk as much as I needed until I felt strong enough to run a little more,” he explained. “It was all mind over body that allowed me to run the first 10K (a little over 6.2 miles).”

“(I had a) tremendous amount of pride that (my family) just wanted to be here for me,” Council told his supporters.

After passing the 10K marker, Council knew he still had 20 miles to go. At that point, he began to search out a landmark ahead of him and push to reach that point, then began the process again by selecting another point in the distance until he reached the finish line.

Council’s daughter, Carly, expressed gratitude to friends and neighbors from Gig Harbor who encouraged her father to run in Boston and have been at his side throughout his fight against cancer.

The proud father of five ran the race wearing the T-shirt his daughter made for him that proclaimed, “Cancer Will Not Beat Me.”

Before he was stricken with cancer, Council said it would take his body about a week to recover from the torture of a marathon. This year it took three to four weeks for his body to go “back to where it had been, which is still not great.” His race injuries included numerous blisters and a lost toenail.

“People all along the route saw the T-shirt and shouted out words of encouragement that helped me tremendously,” he remembered. “Several people came out of the crowd to put their arms around my shoulders to express how much my effort meant to them, personally.”

“It was pure pain toward the end,” he recalled. “For me, just finishing was a victory. In my eyes and in my heart, I was the true winner of the

He has already reached more than one person. Council said he has received messages from individuals who are using his story in their own personal struggles, including one woman who said she had always hoped to run a half-marathon. The woman wrote that she is now training to run the full 26.2 miles.

Council hopes his achievement will inspire others to battle adversity and, “never give up.” His initial efforts will be to educate firefighters who face the reality that one in every five will get cancer in during their lifetime. “If my efforts inspire just one person, then all of the pain will be worth it,” he said. “This is just the latest chapter in my life. A chapter that I hope will leave a lasting legacy to help others.

IF YOU WERE ONLY ALLOWED to do one exercise for the rest of your life, what would it be? Before you say the first thing that comes to mind, think about what you need to accomplish in this exercise. We exercise or train to gain strength. To gain stability, mobility, endurance and metabolic conditioning. You want to hit all muscle groups and ranges of motion. I’m assuming you know what my answer is because it’s in the subtitle. The turkish get-up hits all of these qualifications and more to include open and closed chain stability and mobility, thoracic rotation and stability, linking the upper and lower body mechanics and more. But before I get too geeky on you, let’s define what this crazy exercise is. The

turkish get-up is a precise way to go from lying down to standing up with a weight over head being held with one arm. And then back down again. When done correctly it is poetry in motion, but when incorrect can exacerbate many skeletal and soft tissue issues. The key is, take it slowly and unloaded until you get the hang of it, and then challenge yourself once you have the steps down pat. It takes practice, but is well worth it if you attack the challenge methodically and with patience. Here’s how it goes: 1.

perpendicular to the floor. The right knee is bent and the left arm and leg are both on the floor and 45 degrees away from the body. Both shoulders are packed into the body and the elbow is locked. Keep your gaze on the kettlebell until you reach the bottom of the lunge position. 2.

Roll to your left forearm while maintaining your shoulder position away from your ears and pointing your chest towards the sky.

Push your body away from the floor coming up to a post position on your left hand and wedged between there and your right foot.

Sweep your left leg under your body while further wedging your body between the right foot and left hand. Keep your shoulders packed and chest up. Your body should make a straight line with your left hand, left knee and left foot. You are now in the half-kneeling windmill position. You should be able to rock your hips towards your left foot, and your right hand holding the kettlebell should be directly over the right hand that is pressed against the floor. Both elbows are still locked out which is referred to as “stacked.”

Sit up so that your left knee is on the ground stacked under your left hip, shoulder and kettlebell. At this point, your gaze shifts to the horizon so that your neck remains in neutral and you don’t put any unnecessary pressure on your lumbar spine.

This exercise is a labor of love. I have yet to come across someone who cannot at least perform a portion of this movement in a productive capacity. It can be frustrating to learn, but like I said, if you are patient and methodical the rewards are unparalleled. There are a ton of great resources on the interwebs and some incredible trainers in the Northwest who have studied this movement at length. Use every day as a practice of strength and see your strength, mobility and stability increase.

Many people dread going to the dentist. For some, it’s an irrational fear. I have that same fear about heights. Even thinking about heights can make the palms of my hands and the soles of my feet sweat. MENTAL ATTITUDE: Large Waist Size Could Mean Higher Risk for Cognitive Disorders. In the May issue of the Journal of the International Neuropsychological Society, new research indicates a relationship between a greater waist size and lower levels of brain-derived neurotrophic factor (BDNF), a protein that supports the survival of existing neurons in the brain and encourages the growth and development of new neurons and synapses, that may hasten the development of dementia and other cognitive disorders. While it’s unclear how central adiposity influences BDNF, researchers suspect engaging in BDNF-promoting behaviors like regular exercise and eating a healthier diet may protect the brain function of adults with a larger waist circumference. Diet: Cleanse Naturally Through Diet. Are you looking for a way to “detox” your body safely and naturally? The Academy of Nutrition and Dietetics in its May 2016 issue offers advice on “cleansing” your body safely: drink plenty of fresh water, eat five to nine servings of fruits and vegetables daily, eat plenty of whole grains, consider a supplement to ensure proper nutrients, and consume fermented foods or take a quality probiotic to support gut health. Exercise: Exercise Improves the Minds of Seniors. Oxidative Medicine and Cellular Longevity, April 2016 and another study show that walking is good for your health. Enjoying regular walks can help keep you healthy without extra strain on your body. According to the American Academy of Orthopaedic Surgeons, walking can offer the following benefits: a stronger heart, lower blood pressure, greater oxygen intake, slower loss of bone mass with age, slower onset of arthritis, improved muscle tone, less stress, improved sleep, improved mood, and improved attitude.

Chiropractic: Trigger Points & Women with Migraines. A trigger point is a hyperirritable spot in the tissue surrounding a muscle that many people commonly refer to as a “knot.” In this study reported in The Clinical Journal of Pain in May, researchers examined the head, neck and shoulder regions of 143 women with either episodic or chronic migraines and found they each had an average of three or four trigger points in those anatomical areas. The research team suspects that these trigger points may either trigger the onset of a migraine headache or contribute to head pain once a migraine attack has begun. Wellness/Prevention: Live Longer By Staying Lean. Two new studies reported in the British Medical Journal in May 2016 indicate that staying trim throughout your life may increase your longevity, while being obese may do the opposite. The first study found that slim individuals had the lowest risk of dying over a 15-year period, while obese men and women had a greatest risk of early death. The second study found that gaining weight over time increases one’s risk of premature death. This information should not be substituted for medical advice. WATER PROVIDES the safest and fastest way to begin the recovery process for most orthopedic injuries, especially those involving the ankles, knees and back. How many times have you heard from friends and doctors, “Stay off of that sprained ankle until the swelling goes down.” Or, “Just elevate and ice it for a few days.” What you may not be aware of is that the scarring process begins within seven hours of an acute injury, which usually involves tearing of the soft tissue

Gentle range of motion (ROM) should begin within hours of acute injury. If delayed more than 48 hours, scar tissue can quickly over produce, leading to tightening of the joint capsule and/or weakening of muscle fibers. Additionally, if the injured part is over stressed by load bearing, the healing tissue can re-tear, thus prolonging recovery and resulting in chronic pain and inflammation. The properties of water that accelerate the healing process include: Buoyancy - This is one of the key features of aquatic rehab. Buoyancy decreases the load on painful, inflamed joints. It allows for movement of the rest of the body so strength, endurance and speed are not lost during the recovery process. It also allows for more normal movement patterns such as running, while decreasing the gravitational pull.

If not properly diagnosed and rehabilitated correctly, a simple Type I strain/sprain can lead to an early end to a sports season, chronic pain, chronic instability and premature arthritic changes in the involved

It was not because of nerves or excitement, but the frigid air that hovered around zero degrees Fahrenheit. Darlene Arviso, an elderly Navajo woman, chuckled from the driver’s seat as she saw me rubbing my hands next to her. “The desert isn’t just hot. It’s tough year-round,” she said. We were driving through Northern New Mexico,

just outside of a town called Thoreau on the Navajo Reservation. White snow sat on top of the red plateaus and rock formations around us. Beautiful as it was, this was no leisurely scenic drive. In this sparsely populated part of the country, Darlene is the only source of clean drinking water. I was sitting with the “Water Lady,” and that day, like every other day, she would be delivering clean water.


It was the first day of my internship with DIGDEEP, a water rights nonprofit based out of Los Angeles, California. As a recent college graduate in International Relations and a future Peace Corps volunteer, I had grown interested in global development. I viewed issues of clean water access to be as foreign a problem as Ebola or military coups. So it came as a great shock that my first project in providing such a basic utility began in the United States, just a day’s drive away from my apartment in Southern California. As Darlene and I drove that day, filling up cisterns, barrels and buckets with the precious clean water, it became clear just how real – and how American – this issue is.

Driving between homes I was able to pester Darlene with questions fueled by equal parts anger and confusion. As a resident of Thoreau for over 50 years, Darlene knows too well the troubled history that led to the lack of potable water in her community. A chemical sampling of the water from a traditional well would show a variety of fatal contaminants. Arsenic and uranium are found frequently throughout the southwestern U.S., a result of hastily constructed, then abandoned, uranium mines during the nuclear arms race in the 1960s. Both the uranium and the chemicals used to extract the ore have since seeped into the most immediate water tables, leaving the water that

one might extract from a basic well poisonous. The Navajo Nation, extremely tight on money and resources, has been unable to provide adequate housing or utilities for its people. As a result, Thoreau and other parts of the Navajo Nation struggle. More than just history, Darlene is intimately in touch with the struggles of those families to whom she delivers water. On a good day, Darlene can refill the water supply of eight homes given the restrictions of time and water she is able to carry with her 3,500 gallon tank. As the sole water source for a community of over 200 households, this means that a family


would have to make a 1,200 gallon cistern last for a month. For a household of four, that is just 10 gallons a day per person for cooking, cleaning, bathing and of course drinking; the average American uses over 145 gallons per day. Those who do not have a costly cistern system are not as fortunate. Many fill up buckets, barrels, jerry cans or whatever receptical they can find to store water for the month. Storing water in open containers often leads to contamination and disease.

change in water source rendered the tap water undrinkable in the city of Flint, Michigan. Afterwards media outlets and politicians began a national conversation on water access. But still the problem remains greater than most understand. The latest census tells us that at least 1.7 million Americans lack access to clean, running water. These people are rarely urban dwellers like those in Flint. They are more often rural, isolated agricultural communities and are disproportionately Native American. In this year alone, 40 percent of Navajo Native Americans will live without running water.

Thoreau is not an outlier. This small town shares its water problem with many other American towns and cities. Beginning in April of 2014, a

water issues, with projects in Arizona and New Mexico and more U.S. locations on the horizon. For DIGDEEP, running water is a basic human right. The organization uses community centered approaches to solve water problems in a sustainable fashion. The organization is molded in the image of its co-founder and CEO, George McGraw. McGraw founded the organization in 2011. As a human rights law expert, he primarily worked on water rights issues while working for the United Nations Development Program. McGraw fused expertise and passion in creating a nonprofit focused on access to clean water following his work at the U.N. He challenged himself to introduce the issues of water poverty

In the five years of DIGDEEP, they have launched projects in three continents, raised millions of dollars, and brought clean water to numerous families across the world. It was to my surprise given the organization’s accomplishments that I was joining a team of merely six people, with only two of them being full-time employees. DIGDEEP is a small, intimate team of passionate changemakers. Over the course of five months I had the pleasure of working with a dynamic group who have been able to achieve so much with so little. Over my time with the nonprofit, I was able to be involved in a wide array of tasks given our small staff.

But when I was able to focus on my own projects, I spearheaded a new campaign on the Navajo reservation. My task was simple: to bring running water to one family who need it more than most. For La Tanya Dickson and her family, access to clean water means so much more than drinking or bathing. While working with La Tanya I learned that water means happiness; water means family. I first met La Tanya at the community center in the desert town of Birdsprings, Arizona. The bulletin board that hung above our table read “Veterans of Birdsprings” with photos of men and women in uniform below. While we made our introductions, two of her young boys played a giggly game of tag. But that day, it was

their little sister Lisa who would be the subject of our conversation. For the past 16 months, Lisa had been living in a medical group home in Phoenix, over three hours drive from her mother. When Lisa was just three days old she was diagnosed with Microvillus Inclusion Disease, a genetic disorder of the digestional tract which prevents her from processing food and extracting nutrients. As a result of her fragile health condition, Lisa requires constant medical attention and a safe and sanitary environment. But like the majority of the families in the Birdsprings area of the Navajo reservation, Lisa’s family lacks the vital resource of running water. Just months after her diagnosis, Lisa was

denied an intestinal transplantation because of her family’s lack of this basic necessity. Without water and electricity, a recovery in her own home would be impossible. La Tanya has already missed some of her child’s most important milestones in development. Lisa’s first laugh, birthday and steps have been in a medical group home under the supervision of nurses, not her family. After hearing about Lisa’s story, DIGDEEP pledged to help bring running water to her home and reunite her family. To do so we

raised $50,000 to build a 1,200-foot water line extension to bring water to the house as well as the basic in-home water amenities. Once given the go-ahead by the Navajo Nation, DIGDEEP will partner with the local Keyah Construction company to begin building. After launching a fundraising campaign for Lisa, DIGDEEP received an overwhelming demonstration of support from the public, raising the necessary funds in just over a month. “Lisa’s story is so powerful because it so clearly illustrates the ancillary effects

of water poverty,” McGraw said. It is not just about bringing water to the thirsty. For Lisa and her family, clean water means a safe home. It means a family coming together. For communities across the world, clean water access means drastically lower instances of disease and infections. It means women and children can spend less time hauling water and more time attending school or earning money. Water access is an all encompassing issue. It means education, economic development, security and gender equality.

Going forward, DIGDEEP intends to expand its projects within the United States. In partnership with the St. Bonaventure Mission in Thoreau, DIGDEEP will build a 1,400-foot well to access uncontaminated water for the Navajo communities nearby. It will soon introduce a second water truck to deliver concurrently with Darlene, cutting the month long waiting period for families down to roughly two weeks. The neglect and irresponsibility that lead to the water crisis will take years of creative problem solving to undo. Difficult as it has been and will continue to be, DIGDEEP is dedicated to doing it. In the water truck with Darlene on my first day, I repeated the same few words again and again. “Really? Here? In America?” This ignorance that I embodied on my first day is the very thing that I have since tried to combat. Because despite the collective national silence on water access, the problem is not going anywhere. The 1.7 million Americans will continue to struggle without running water and these communities will disproportionately be poor minorities, particularly Native Americans. It remains one of the great embarrassments of our nation. “Really? Here? In America?” Darlene responded with a disappointing nod, again and again. Hydroboarding

The wave of the future is here. Why ride in the water when you can ride over it? Create your own breeze on a hot summer day by strapping on some jet packs and coasting above the water’s surface. Helmets and floatation devices are a must if you’re renting your gear, but the hydroboard itself is buoyant, so feel free to take a breather in the water if your legs can’t handle the pressure. Also, you’re connected to a watercraft via a large hose that forces water into the boots and down through the jets, giving the rider the ability to fly up to 49 feet in the air or dive up to eight feet underwater.

Paddleboarding

Who doesn’t want a casual day of fun on the water with friends? Paddleboarding is a great low-impact exercise when you propel yourself through the water using a paddle, standing or sitting on a paddleboard. Paddleboarding was originally performed in the open ocean, with the participant paddling unbroken swells to cross between islands. These days, and in our Northwest region, it’s all fun and games. Paddleboards can be surprisingly affordable to own, and most rentals are even more affordable for a day’s use, making it the perfect water intro sport for newcomers to the area. Bonus points: Paddling standing up puts tension on stabilizer muscles, building strength, stability and increasing your center of balance.

Air chair, also known as hydrofoiling, is basically sit down waterskiing. With the motto “Be safe, have fun, go BIG,” air chair is gaining a name for itself. Your balance skills have to be onpoint in this sport, as it takes some strength and balance to maneuver over the wakes your boat will throw back at you. Once you’re up, you’ll start to rise out of the water and onto the lower blades of the air chair, and you’ll be able to feel the wind rushing underneath you. If you don’t look down, it will feel like you’re miles above the water, minus the spray from the waves. We won’t talk about the spray.

Diving conjures up such an elegant picture. While we don’t have the tropical coral reefs that we typically associate with when we think of diving, the Pacific and Inland Northwest is home to varied water life that can be seen best when fully submerged. Diving requires some lessons, as there is a lot of gear involved. Our inland lakes, such as Lake Pend Oreille, have a depth to them that is best explored from below, as you can dive further than the light can reach. othing says summer like the great American road trip. There is something freeing about packing up the car and taking a vacation, even when the destination is within close proximity. The Pacific Northwest brims with endless splendor and opportunity for adventure. Idaho’s and Washington’s abundance of pristine waterfalls is enough incentive to hit the open road. There are hundreds (if not thousands) of waterfalls that will leave you awe-inspired.

Because of the rough terrain and its remoteness, few individuals exert the effort to visit this waterfall, which is a bonus for those looking for more of a solitary wilderness experience. The waterfall is typically reached through the Canadian side in British Columbia. Neither stateside nor Canada pose an easy or accessible entry route. A four-wheel drive is certainly required to navigate the rugged terrain. Visitors should anticipate at least a 10-mile hike before they reach the falls. Three large glaciers on the face of Mount Redoubt form Depot Creek. Under warmer conditions, this powerhouse of a waterfall can pump out a volume of 500 cubic feet per second as it plunges nearly 1,000 feet to its base. In this instance, the triumph is well worth the adversity.

BIG SPRING CREEK FALLS – Skamania County, Washington If a picturesque landscape not far from the beaten path is what you are looking for, Big Spring Creek Falls located in the Gifford Pinchot National Forest cannot be rivaled. This mossy, stair-stepped, enchanted cascade is the essence of a photographer’s dream. This serene waterfall consists of three tiers where the tallest drop is only 15 feet. The waterfall can be seen from the road and is easily accessible for foot traffic. This is truly one of the most camera-friendly landscapes that needs to be at the top of your waterfall road trip.

PANTHER CREEK FALLS – Skamania County, Washington Panther Creek Falls is considered to be one of the most unique waterfalls in the country. The roughly half-mile trail is well-groomed and is rated as an easy hike to the viewing point. This distinctive waterfall located in the heart of the Gifford Pinchot National Forest that is uncongested and apparently few people are aware of it. Hikers will unveil a richness of hanging moss and vibrant colors. The water seems to emerge as streamers from an enchanted forest. After a full day of abundant activities in the Gorge area, travelers can indulge and stay at the nearby Carson Ridge Luxury cabins.

DEPOT CREEK FALLS – Whatcom County, Washington This waterfall in the North Cascades National Park is considered by some to be one of the best waterfalls in the world. Unfortunately, this waterfall

SHOSHONE FALLS – Twin Falls, Idaho The list of best waterfalls would not be complete unless it includes the renowned “Niagara of the West.” Shoshone Falls is located on the Snake River only 3 miles to the northeast of Twin Falls. The falls plummet over 200 feet (which is almost 50 feet higher than Niagara Falls) and is nearly 1,000 feet wide. The city of Twin Falls maintains and operates a lookout that is easily accessible and provides optimal views of this majestic cascade. This waterfall is best seen in spring or early summer as agriculture and irrigation season tend to diminish its velocity. The park offers shaded picnic areas, hiking trails, boat ramps and play areas, making it ideal for the entire family. SNOQUALMIE FALLS – Snoqualmie, Washington As a premier attraction for Washington State, Snoqualmie Falls draws in nearly 1.5 million visitors each year. Its appearance on the television show “Twin Peaks” made this 268-foot waterfall a cult series icon. The twoacre park and observatory are easily accessible to visitors. There is the option of a 0.7 mile (non-strenuous) informative trail from the upper to the lower falls. This waterfall is perfect for families and pets. The falls are located only 30 miles from Seattle and offer a true Pacific Northwest experience. Thousand Springs - Hagerman, Idaho Just to the south of Hagerman is one of the most unique geological areas in Idaho. It is here that ribbons of water pour from the permeable basalt face of the canyon. This waterfall road trip experience is on a 67-mile scenic byway that stretches along the corridor of the Snake River. This waterfall destination is a genuine family vacation as it offers a resort and spa experience for the family. There is something very freeing about rolling down the windows of a car to feel the embrace of summer. Allow for the wind to tangle your hair and for the sun to kiss your face. We must live for these days – these simple moments of setting aside the grind of existence so that we may fully live. Get out of the house and go see something beautiful. To witness the wonders of these falls will make space for something amazing to be born inside you. Start here. Pack your car and hit the open road to experience at least one of the pristine waterfalls of Idaho and Washington.

Africa AN AMERICAN’S PERSPECTIVE

THERE IS NO DOUBT that a trip through the vast expanses of Africa is the trip of a lifetime. With the exception of my wife, who returned for a second visit last May to share her excitement with me. The truth is, an African safari was never on my bucket list. But when I sensed the exhilaration and saw the photographs Susan brought back from her excursion with my son, the long plane flight and the rustic accommodations were no longer an insurmountable challenge. Our adventure was broken into four separate, equally thrilling segments. We started off at a private game lodge in South Africa, made our way to the inspirational grandeur of Victoria Falls that forms the border between Zambia and Zimbabwe, then to the stark remoteness of raised tents in the Okavango Delta in Botswana, and finally across the continent to Tanzania where we traversed the Serengeti and spent a remarkable day in the Ngorongoro Crater. Elephant Plains The 21 hours of flying – including the last 40 minutes on a small single-engine prop aircraft

– all seemed like a small price to pay after our first day on our bush tour with Dawie Jacobs at the Elephant Plains Lodge in the Kruger portion of northeast South Africa. Our four-day stay at Elephant Plains included game drives in the early morning (wake-up at 5:30am) and an evening drive that returned after dark. On our first afternoon we were treated to an hour observing a pride of 13 lions and the sighting of a rare African pangolin, an animal that looked like a cross between an armadillo and an artichoke. Our first morning ride set the bar extremely high. Dawie spotted a leopard in search of her next meal. We watched as she crept through the tall brush….then bounced on a small duiker, a tiny member of the antelope family. The leopard made the dash and all we could hear was a faint yip. When we caught up to the leopard, she had her breakfast pinned with one paw. The end did not come quickly but, surprisingly, it was not bloody. The leopard began her meal while the duiker was still struggling to escape. Later that same day we watched as two lions

performed their mating ritual. The courtship took almost a half an hour. When the mating finally took place, it happened literally below the passenger door of our vehicle. The actual mating took only about three-and-one-half seconds. We were fascinated to learn that big cats often mate 50 times per day when they are in season. Within our first 48 hours in the brush, we had up close and personal experiences with each member of the “Big Five” (lion, elephant, rhino, leopard and the Cape buffalo). Dawie told us we were “incredible lucky.” But I think we were just lucky to have him at the wheel of our Land Cruiser. The next day we watched an emotional reunion between a leopard and her cub. But the highlight for my wife was on the third morning when we left two leopards mating to discover wild dogs feasting on an impala. Dawie was shrewd enough to place our vehicle on the shore of a watering hole where the dogs came to play after they finished devouring the impala. Dawie was not only a wonderful ranger, but an incredible photographer as you can see from

Deep in the Delta

From the rustic raised tents in the delta, we flew across the vast African continent to Tanzania. Our adventure in the Serengeti took us to three separate lodges, each with their own unique splendor. We were treated to breathtaking views of Lake Manyara and the white-linen opulence of the Kirawira tented camp. Our wake-up call in the morning at the luxury camp was a charming room steward wearing white gloves when he brought coffee and pastry to our veranda on a silver tray.

From South Africa we spent a day at Victoria Falls. Then traveled by car, ferry boat and tiny airplane to the Oddfellows Camp deep in the Okavango Delta. Instead of Land Cruisers, our twice-daily game drives were on dugout canoes known as a makoro. Our four nights in Botswana were highlighted by a close encounter with a raging hippo who rumbled through our camp about 12 yards from where we were having dinner. The tents were fun, but the real adventure came watching and listening for animals while using the outdoor toilet and bucket shower. From our makoro and hikes on adjacent islands, we came face to face with a 65-yearold bull elephant and several hippos who were not thrilled to see us intrude on their solitude. We saw herds of wildebeest in fields guarded by impala and zebra who roamed the perimeter. The most frightening incident of our stay took place one afternoon when Susan was confronted by a cobra. The snake raised its head, but thankfully slipped back into the brush as my wife calmly stepped backward and

It was on the six-hour drive across the Serengeti that we were privileged to witness a partial migration of wildebeest. The sight of the large animals rumbling in front of our vehicle for as far as the eye could see was truly inspirational. The Serengeti is also the only place in the world where you can see lions that climb trees. At one point, we watched a female sitting majestically on a branch while 12 lions from her pack hung from the limbs of a nearby tree. Garden of Eden Our final stop was at a lodge perched on the edge of the Ngorongoro Crater, close to where the first proof of humans were discovered. It’s

easy to believe that this is where the Garden of Eden once might have existed. Inside the steep walls of the crater were several distinct ecosystems, ranging from a lake populated with pink flamingos to desert terrain where animals lived without any natural predators. There is so much more to reflect from our African adventure. But it is important to emphasize, like all vacations, the best part was the people we met. That began with Dawie and the staff at Elephant Plains, to our guide Rep who pushed our makoro through the shallow waters of the delta with his long pole, to Amos who drove us for six days in Tanzania and shared the traditions of his native people, the Maasai. Unfortunately, space limitations do not allow me the opportunity to mention the giraffes that pose for photos or the thousands of mischievous baboons who entertained us for hours at a time. An African safari is truly the vacation of a lifetime. If it’s not on your bucket list, it should be.

In a skillet, place 1 tablespoon of sesame oil over medium-high heat and add tofu cubes. Cook and stir frequently until tofu is golden brown. Once cooked, turn off heat and set aside.

In another skillet, place olive oil over medium-high heat and add diced potatoes. Stir frequently. Once they start to brown, add ⅛ cup of water and cover for 2 minutes or until tender while continuing to stir frequently (this will steam the potatoes). Add onion and 1 tablespoon liquid aminos and cover for 1 minute. Remove lid and add kale and Swiss chard stirring constantly until greens cook down. Add 1 more tablespoon of water and continue to stir. Once kale and chard are almost cooked down add shiitake mushrooms and 1½ tablespoons of tamari and add tofu. Remove from heat and serve.

WINE AND FOOD FESTIVAL JULY 21-23 By Maddie Russo

THE GIG HARBOR WINE AND FOOD FESTIVAL celebrates the region’s wines, spirits, brews and food! The three-day, four-event festival kicks off Thursday, July 21 with the second annual Summer Sip and Stroll. The Sip and Stroll runs from 4 to 8pm and costs $30 a person in advance, $35 per person on the day of the event. The price includes a commemorative glass, 15 taste tickets and small bites at many stroll stops. Enjoy strolling the downtown waterfront and savoring sips and tastes at 20 stroll stops. The Pierce Transit Trolley will be running late for your convenience, and your trolley fare is included in the price of the Sip and Stroll ticket. Sip and Savor events take place on Friday, July 22 at Morso, JW Restaurant, Heritage Distilling Company and Brix 25/NetShed No. 9. Each participating restaurant has created its own menus and pairings for the event. Check out harborwineandfoodfest. com/winemaker-dinners for more information. Seating is reserved by directly contacting the hosting restaurant or business. Saturday is the popular grand tasting event which includes a celebrity chef cook-off, classes and demonstrations, and tastings from over 50 wineries, breweries, spirits, and small bite food providers. This year the festival will feature celebrity chef Roy Breiman of Copperleaf Restaurant at Cedarbrook Lodge. Chef Roy’s talents will be on stage for all to enjoy during the popular Celebrity Chef Cook-off, emceed by Chef in the Hat Thierry Rautureau. Challenging Chef Roy will be Chef Bill Trudnowski from Adriatic Grill Italian Cuisine & Wine Bar in Tacoma. Additional cooking demos will be presented by Chef Alex from Il Lucano, Chef Tak from Bistro Satsuma and Steve Lynn and Laura Learned from Morso.
