The photo is a Dover Sole from Old Brea Chop House. Welcome Fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. After all, food is not only nourishing and delicious, it also puts smiles on our faces.
The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple, pumpkin, chili, and soups of any kind brings me right back to her table.
There is an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can take us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.
We know food is often considered one of life’s great pleasures and we are excited to share several options to put on your local bucket list.

When perfecting his vision, owner, and steakhouse savant Tony Fasulo knew exactly the kind of ambiance he wanted to create within the walls of Old Brea Chop House.
“Tony was adamant about having all of the steakhouse staples nailed in technique but elevated in quality. He then added dishes that are seasonal but with the best execution and true to what a steak lover wants.”
With over 40 years of experience in the hospitality industry, Tony was no stranger to the level of dedication required for creating, running, and driving the success of a thriving dining establishment.
His experience includes working for Morton’s Steakhouse (Beverly Hills, Las Vegas, DTLA, and Palm Desert), opening their first casino venture in Atlantic City, and their first Latin America partnership in Mexico City.
These experiences all guided him through successfully navigating any challenges at Old Brea Chop House since opening its doors in November 2019.

Autumn is in the air, and with the cooler temperatures and fun fall festivities, it can be tricky to keep your sugar intake in check.
From snacking on yummy Halloween candy and sipping hot chocolate by the fire to feasting on ooey-gooey pumpkin goodness and baked apple pies, the temptation is real—and it can have really detrimental effects on your health, too.
“Having all these delightful treats might not be so delightful to the health and well-being of you and your family,” says nutritionist Penny Foskaris of Foskaris Wellness.
“Sugar, sugar, and more sugar! The more processed sugar you eat, the harder your pancreas works to produce insulin to lower your blood sugar,” she explains.
“Over-consumption of processed sugar can lead to Alzheimer’s, increases your risk of heart disease, liver disease, and inflammation, and increases your risk of other chronic diseases.”
However, that doesn’t mean you can’t still treat yourself—moderation and making smarter nutritional choices are what it’s all about.
Through her work at Foskaris Wellness, located in Anaheim Hills, Penny focuses on helping you modify or replace foods in your diet so you’re not missing any of your favorite foods.
For over three decades, she’s been helping her clients find balance and create healthier versions of their favorite recipes.
To date, she has helped more than 4000 clients better understand what their bodies need to feel their best.
To help curb your sugar cravings this fall, Penny has plenty of easy tips to share that can reduce sugar intake while still enjoying the foods and flavors you love.
1. Look at serving sizes. “We can help children eat less candy by buying mini-sized candies—or better yet, by passing out little toys or even quarters! What kid wouldn’t love a pumpkin full of quarters at the end of the night after going trick-or-treating?”
2. Create smaller portions. “When baking treats this holiday season, make them minisized. This is the time of year when everyone who loves to bake is sharing their home-baked goods with their friends and family.
By creating smaller portions, you are helping your loved ones stay healthier.”
3. Pack a punch with protein. “When looking at smaller portion sizes, you might feel deprived, but if you pair it with a protein (like a delicious protein hot chocolate) you’ll feel more satisfied and fuller.”
4. Opt for delectable substitutions. “When making hot chocolate, replace your regular mix with Vital Proteins Collagen Peptides in the chocolate flavor. By doing this, you’ll add 20 grams of protein and reduce the amount of sugar to zero. It tastes delicious!”
5. Do your research. “Go online and search for a reduced sugar version of your favorite recipe. With the

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

INGREDIENTS:
• 1/4 red onion, sliced
• 2 tablespoons brown sugar
• 1 tablespoon olive oil
• Sliced sourdough bread
• 1-2 tablespoons butter
• 4 ounces Brie, sliced
• Fig jam, or preferred choice of jam
• 1 Granny smith apple, sliced
• Arugula
• Thinly sliced ham, optional
INSTRUCTIONS:
Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!

At the annual “A Taste of Yorba Linda” Yorba Linda City Lifestyle held a drawing for one local business to win an editorial feature. Chad & Adrienne Seaman of Southwood Pest Control were the winners!
