Fourth of July, Summer, and Adventure Summer is the perfect time to come up with a bucket list of activities to enjoy and ways to unwind and relax. However, some of the best summers spent are often not filled with constant activities and trips but are those that reflect a slower pace and simple moments of enjoying those around us. Although the “lazy days of summer” isn’t always something we can attain with our packed schedules, it is so refreshing to take some time to slow down and enjoy some of the simple pleasures that remind us of our childhoods. Some of the best times can be a backyard barbecue with friends, making s’mores by a fire pit, spending a day on the water, eating ice cream on a hot summer day, or simply taking in the night sky with someone you love. I hope you can enjoy some of the many things our city offers during these hot days of summer and that you make memories with those around you that you love. With summer in full effect, the first thing that comes to mind is good old-fashioned barbecue. Good barbecue is essential to fulfilling your summer experience, and Ellie Lou’s BBQ might just be what you are looking for. They started out in 2013 with a passion for providing the best quality food and service in Central Florida. After visiting one of their two, soon to be three locations, I can confirm that they are on par with maintaining that goal. Once inside, you are greeted

by an incredibly warm and welcoming staff who seem more than happy to help each customer with their individual orders. If you’re new to Ellie Lou’s, you can rely on their recommendations based on what you like, and if you’re a regular, they may just know your name already and what you prefer to order. Their menu has anything and everything you might want when it comes to barbecue. You have many choices, including St. Louis ribs, chopped bbq, Kansas City brisket, and the list goes on. what to order, try ordering the “Q for 2,” which feeds two to four people and includes a little bit of everything like chicken, brisket, pork, ribs, and your sides. Now, everything is made from scratch and any ingredients they need come from local sources only. They have your traditional southern sides like the “gospel grits,” collard greens, three cheese Mac and Cheese, and even carry incredibly decadent desserts like blueberry cheesecake and Mississippi mud pie. Even their sauces are made in-house and can be purchased in bottle form if you really take a liking to one, which may just happen in my experience. Their sauces come in four different flavors: the Kansas City Sweet, Memphis, and Carolina Gold, and if you can handle the heat, they have the Southern Lava Sauce. They also carry several different craft beer options and have selections from breweries throughout Central Florida. You can either get these beers on tap or by the bottle/can, and they pair nicely with all the delicious food. Ellie Lou’s also has an amazing catering side and would be great to cater for any special gathering you have coming up. Susan has been a part of the Ballard Financial family for a few years now; she sought out the help of Chris when she was getting ready to retire and has lived her dream ever since. Retiring from Disney World, one of her goals was to travel to many different places around the world and experience the differences in culture, food, and environment. She loves exploring places she has seen on TV shows or even in her own backyard at Disney. Venice, Italy is one of the places she strived to visit. “One of my favorite memories about Italy was being able to walk over the Venice bridge. Disney has a replica of it at Epcot, which I’ve walked plenty of times, but being able to experience the real thing was indescribable” -Susan Not only has Susan been able to visit Italy, but she has gone on a Game of Thrones tour in Split, Croatia. For many of you Outlander fans, she also visited the Bakehouse Close which is an area they filmed in Edinburgh, Scotland.

When they first met with Chris and Briana, they were asked what the purpose of their money was. Sonia replied she and Freddie wanted to travel to different places including Mexico (which was on their bucket list).

The Modern Host, located on South Dillard Street in Winter Garden, may be the new kid on the block since opening in February, but they are already a favorite among locals looking for specialty foods, stunning charcuterie, and a truly unique culinary experience. I met with the owner, Karem Rodriguez, at her shop and learned all about the conception of the store, her vision for the future, and experienced firsthand her innate passion for what she does.

Karem has spent the year leading up to the opening, curating the most interesting and taste bud tingling selection of specialty foods for her store. She sources exclusively artisan and batch-made products and imports, while also stocking her own house-made creations including Bacon Beer Dip, Pulled Pork, Krab Salad, Shrimp Ceviche, and so much more. Her distinctive culinary creations are sure to be a hit for your next party, picnic, or quick dinner on the go. The Modern Host also holds fabulous sommelier-led wine tasting events where you can experience their extensive collection of vino, sample pairings, and meet other passionate foodies in the community! Not only is Karem providing the Winter Garden community with a go-to place for specialty foods, but she is also helping her customers expand their horizons, try new ingredients and dishes, and find their taste for adventure. After seeing the incredible selection The Modern Host has to offer, I felt inspired to whip up something special, simple, and perfect for all of those outdoor, Summer adventures. Whether your Summer plans include trips to the beach, long days on the lake, or picnics in the park, this recipe is the perfect way to elevate your traditional on-the-go cooler sandwich. While perusing The Modern Host, I was surrounded by gourmet meats, rare cheeses, spreads, and toppings galore. Photos hung in the store of their specialty charcuterie boards inspired me to pack all of those savory flavors into one transcendent bite. I grabbed a couple of ciabatta sandwich squares, an assorted pack of imported cold cuts, some creamy Spanish goat cheese, spreadable ‘nduja for a smokey kick, olive salad for a salty, briny note, and added some peppery dressed greens and a few tomato slices. While I highly recommend this particular tasty creation, the vast selection at the Modern Host gives you creative license to formulate your own masterpiece. I rounded out my meal by adding some of Karem’s fabulous house-made lemon squares, a bag of artisan potato chips, and a tart blood orange soda there at the counter. With my ingredients in hand, I went home to assemble my feast, then hit the park for a lovely picnic, and a dip in the lake. Good food and beautiful summer weather. What more do you need? A quick stop into a local spot turned an average Summer day into an adventure and I hope this inspires you to find yours!

Met hod:

1. Split and lightly toast the ciabatta squares. 2. Dress the arugula in a mixture of olive oil, lemon juice, salt and pepper 3. Spread the goat cheese on one side of the bread, and the ‘nduja on the other. 4. On the cheese side, stack your deli meats, tomato, and arugula, then spoon the olive salad on the ‘nduja side so it has a surface to stick too. 5. Stack both sides together, wrap in parchment, cut in half, and behold the beautiful layers of savory goodness. Out at the Space Coast, rockets are lifting off at a pace never seen before in Cape Canaveral's nearly sixty-year history, thus creating an abundance of one's ability to be in awe watching these complex machines venture out beyond the comforts of Earth. The increased rate from both Kennedy Space Center and Patrick Space Force Base is genuinely pushing the boundaries of human exploration, innovation, and technological capability. While replenishing the International Space Station (ISS) with Crew, supplies, and science experiments has been one of the most significant priorities for launch providers, these only occur as much as the ISS allows for and needs. The Cape's increased rate has been primarily due to SpaceX's Starlink Satellites, in which often fifty-three satellites are lofted into a Low-Earth Orbit (LEO) upon a Falcon 9 Rocket. The Starlink program, planned to be a mega-constellation, has been on a blistering pace of launching nearly every seven days - completely unheard of for the aerospace industry. Despite seeing the current cadence significantly increase, the Space Coast is eagerly awaiting to welcome new launch vehicles to the world's busiest spaceport. Over the upcoming two years, Floridians can expect to see NASA's Space Launch System (SLS) Moon Rocket, United Launch Alliance's Vulcan Centaur, Blue Origin's New Glenn, and SpaceX's Starship launch vehicles standing in glory at their respective launch pads. Needless to say, the Cape is only beginning to heat up, and we are living in a new golden era of spaceflight! With launches lifting off so frequently, there is an abundance of locations to feel the rumble (or sonic boom) and intense light of engines pierce the sky! For launches, some of my favorite spots include:

PARRISH PARK: This park is situated on both sides of SR-402 at the Max Brewer Bridge. Located only ten miles away from the closest launch pad,

Parrish Park provides an unobstructed view across Banana Creek Bay to watch rockets towards the heavens. Parrish Park is an exceptionally great place to watch night launches as the night appears to turn into day due to the engine's powerful light reflecting across the water!

THE COVE AT PORT CANAVERAL: The Cove at Port Canaveral offers an abundance of areas to watch a launch. While this location is further away from the launch pads themselves, what makes Port Canaveral unique is the potential for a booster return. Should a SpaceX Falcon 9 rocket have a Return-to-Launch-Site (RTLS) maneuver to either of their Landing Zones, Port Canaveral is the closest distance the general public can get to the landing zones. In this case, be on the lookout for the boosters making their descent towards the pad and feel the sonic booms thud against your chest! Port Canaveral also makes a fantastic destination to watch Stage 1 of a Falcon 9 Booster float into port on one of SpaceX's drone ships.

PLAYALINDA BEACH: Located in the Canaveral National Seashore, Playalinda Beach offers some of the closest locations to watch a rocket liftoff; it is especially incredible for launches coming from Space Launch Complex (SLC) 39A, as onlookers can be within four miles of the pad! With most flight trajectories flying to the northeast, Playalinda Beach will offer some of the best launch views up until Main Engine Cutoff (MECO). Note that Playalinda Beach has an entry fee and is only open during certain hours. I encourage you to embrace your sense of adventure, lift your gaze towards the heavens, and watch as humanity continues to push the envelope on what is possible in our pursuit of understanding the cosmos and home planet. On the top of the wish list for most homeowners and home-hunters is an outdoor living space. As we’ve spent much more time in our homes over the last year, an outdoor space that goes beyond the traditional outdoor furniture and a large umbrella has become a necessity. “Being outdoors has always been a huge draw to living in Central Florida,” said Al Villamil, Founder and CEO of Orlando Outdoor Living, “and now, with much more of our lives being at home, transforming your backyard into an area to cook, dine, work, relax, or as a sanctuary has become critical.” As of last month, year-over-year Google searches for outdoor living terms has increased over 450%. Wayfair reports searches for “outdoor kitchen” and “outdoor dining” rose 130%, and searches for “outdoor bars” increased 155% during the period. Russ Faulk, Head of Product at Kalamazoo Outdoor Gourmet, says that consumers are taking the opportunity to learn new grilling and outdoor cooking techniques and hone their skills. “They’re learning to use a kamado and cook with charcoal, or to master wood-fired grilling. Trying to master that perfect pizza dough and pizza-making skills with new pizza ovens… All of these things are great ways to enjoy extra time with family, and the newfound skills will pay dividends, in the form of great meals,” he says. “Across social media, we’ve seen a huge increase in pictures and posts from home-cooks of their latest pulled pork and smoked ribs that’s spent hours in their new smoker or teppan-yaki style dinner crafted in their backyard on a new outdoor griddle,” said Chef David Betz of Smoking Soul BBQ. He added, “cooking at home, and especially outdoors, has become the new form of ‘Dining Experience.’”

Gary Klein, a local Real Estate Agent with Level Realty, shares, “homebuyers rank additional square footage, the backyard, and neighborhood as the top three considerations when looking for a home... The outdoor space is equally as important as the indoor space, especially here in Central Florida where it’s truly additional and usable living space.” It’s not just outdoor kitchens that are in demand for outdoor living spaces. Consumer reports indicate sales of fire pits, trampolines, backyard games, gardening supplies, pools, and outdoor living structures top the list as families search for new ways to entertain themselves at home. “People are looking for livability and private outdoor space that goes beyond the traditional outdoor kitchen and caged-in pool,” said Villamil, who specializes in building luxury outdoor living areas and is the only authorized agent for StruXure Pergolas in Central Florida. Villamil adds that people are looking for their outdoor spaces to be multi-functional, “they want formal adult spaces, kid spaces, areas to be covered and sheltered from the Florida elements with others being open to the sun. Cozy nooks and intimate spots for relaxing and conversation and larger entertaining (when we are able to do that again) and outdoor dining spaces.” Pergolas and pavilions are trending in outdoor living design. A study by the National Kitchen and Bath Association (NKBA) cited 52% of outdoor living space projects now include a fixed overhead structure; 30% of those structures are pergolas. People recognize that an outdoor structure is worth the investment because it extends the ability to use the space and allows the normal indoor living to transition seamlessly outdoors. The home design website Houzz.com notes that pergolas and pavilions help to maximize usage of outdoor space, especially when the structure is customized. Features such as automatic louvered ceilings, integrated lighting, water features, outdoor audio/video, and retractable screens. “We are also seeing a trend in outdoor living for homes with pools, away from the typical ‘pool cages.’ Outdoor spaces are becoming more flexible and open; that means finding creative solutions for mosquito and pest control,” said Dustin Condos, Operating Partner at MosquitoNix. “As an example, residential mosquito misting systems are highly effective, nearly invisible,

and can be easily added to existing outdoor living areas or integrated into outdoor structures allowing you to fully enjoy your outdoors nearly free of mosquitos, no-see-ums, and other unwanted bugs.” Fueled by the drastic decline in domestic and international travel over the past year, homeowner’s interest in replicating the sophisticated style and comforts of a luxury hotel or resort in their homes has continued to grow. Villamil adds, “Finding new ways to maximize your living spaces and new forms of home entertainment have always been important, even more so now. With more of our community spending a majority of their time at home and even working at home, our backyards have been transformed into a true space for living and a choice destination for the staycation.”
