As the designated Thanksgiving host in my family, I know firsthand how stressful two full days of cooking for friends and family can be. After many years of trial and error, I’ve figured out a few tips and tricks that can save you time without sacrificing flavor. Making the dessert the day ahead of time is one of the keys to a stress-free holiday. My Sweet Potato Souffle makes for a tasty Fall
treat that is certainly a departure from the typical pumpkin pie. Plus, you’ll be amazed by how easy it is to make! All it takes is two bowls, a hand mixer, and a casserole dish, and you’ll have enough to feed Plymouth Colony. When the L-tryptophan kicks in and you feel your food coma approaching, you’ll be thankful that all you have to do is pop this delectable dessert in the oven!

Pecan Topping: INGREDIENTS • • • • •
1 cup Brown Sugar (light or dark) 1/3 cup All Purpose Flour 1 cup Chopped Pecans 1/3 cup Melted Butter Vanilla Bean Ice Cream
Sweet Potato Filling: INGREDIENTS • • • •
5 Large Sweet Potatoes 1 cup Sugar ½ tsp salt 2 tsp vanilla
• 2 eggs • ½ cup melted butter • 1 tsp cinnamon
METHOD 1) In a large bowl, mix the topping ingredients and let chill in the refrigerator or freezer until the butter is solidified and cold. 2) Peel the sweet potatoes and cut into 1-inch chunks. Place into a pot of room temperature water and bring to a boil. Allow to boil for 15-25 minutes or until fork tender and mashable. Strain the potatoes and allow all the water to drain. 3) While still warm, add the potatoes to a large mixing bowl, and using a hand mixer, combine the potatoes with the remaining filling ingredients until you have a smooth, fluffy consistency. 4) In a 9x13 baking dish, spoon the filling into the bottom and smooth with a rubber spatula in an even layer. Next, sprinkle the chilled topping in an even layer atop the filling. 5) If you are making this dish a day ahead of time or the morning of Thanksgiving, cover the dish tightly with plastic wrap and let it sit in the refrigerator until you are ready to bake. Once ready, remove the wrap and place in a 375° oven for 25-30 minutes. Let sit for 10 minutes, then serve hot with a hefty scoop of vanilla bean ice cream.

What We Are Thankful For
Being a part of Foundation Academy (FA), whether a student or faculty member, means you are a part of something bigger than yourself: family. With God as the Foundation of their school, they try to set the example and reflect what true Christianity represents. We sat down with seven members of the FA family to dig deeper into what it means to be thankful, not only during the holidays but throughout our lives.

Dave Buckles President of Foundation Academy
Dave holds an MBA from Capella University and is also an ordained minister. He has been the president of Foundation Academy for eight years now. Since taking over, he has grown their attendance, added a third campus, and has completed plans for more development at the Tilden Campus. His leadership and passion for the children and this community have turned FA into a premier educational institution. “Every year, I make it a point to reflect and be thankful for all the provisions God has made, both personally and professionally. I have so much to be grateful for. It is unbelievable to look at the past seven years at our school and realize over 40 projects we have prayed and strived for
have come to fruition. As we move forward at Foundation Academy, we are currently in our final phase of Expansion Set Apart. A part of this phase will be our new cafeteria/worship center for use by our students for lunch and chapel and our church, First Baptist of Winter Garden, for worship. And we have a new brick-and-mortar spirit store. As we approach Thanksgiving, we look back on these accomplishments and efforts, not saying what we have done but looking at what God has done through us! We are most thankful for our opportunity at FA to partner with our church and families to raise the next generation of Christian leaders. It is genuinely a privilege.”

Deb has been with Foundation for twenty years. Her son and daughter started at Foundation in Pre-K and were there until they graduated high school. She is so passionate about her job and the community at Foundation Academy and considers it a blessing to be a part of the FA family for all these years.
WHAT ARE YOU MOST THANKFUL FOR IN LIFE AT THE MOMENT, AND WHY? “I am most thankful for my family. I have two kids who both attended Foundation and are grown now. I also have a grandson who now attends Foundation, and I hope that he will be the next generation to begin and finish at FA. I am also thankful for my big family at Foundation. The relationships here are so personal. For example, when my daughter was in high school here, one of her good friends’ father passed away, and one of her teachers stopped class one day to pray over them and made sure she was ok to take her quiz. We all really care about each other.”
HOW DO YOU ACT AND SHOW THAT YOU ARE THANKFUL TO THOSE IN YOUR LIFE? “I try to give back in any way I can help them. I think the best way to show your thankfulness is to give back through love, kindness, and talking with them. I always try to sit with our employees, check in on them, and ask about their families.”
WHAT DO YOU THINK PEOPLE SHOULD TRY TO REMEMBER DURING THIS TIME OF YEAR? “It’s very easy to get caught up in the negative. Unfortunately, we live in a world where there is a lot of negativity and selfishness. So, going into the holidays, we should focus on what is wonderful in our life. Focus on being with family and friends and spending quality time together.”

Rachel Sivells American Sign Language Teacher
HOW DO YOU ACT AND SHOW THAT YOU ARE THANKFUL TO THOSE IN YOUR LIFE?
Rachel has been a teacher at Foundation for three years. She married her best friend and had three wonderful children. She decided to teach sign language because her father lost his hearing as a young child. Her love for her family and community exudes through her as she speaks of them.
“I try to tell them and show them every day. But I also try to pass on what has been given to me. They have loved me and supported me, so I try to do that for others in my life.”
WHAT ARE YOU MOST THANKFUL FOR IN LIFE AT THE MOMENT AND WHY?
WHAT DO YOU THINK PEOPLE SHOULD TRY TO REMEMBER DURING THIS TIME OF YEAR?
“Community, my family, and friends. Life is tough, and you need a strong support system. I am thankful for my family because I am who I am today because of them and God. They are my joy and a reason to get up in the morning and do life well.”
“Life is short. I think we should cherish every minute we have. Whether that’s with our families or our friends, remember that life is precious, and we have been given a gift. So, live each day as if it’s your last and be grateful for it.” CONTINUED >

Born and raised here in Orlando, Thomas is the last of ten kids. Family and God are the center of his life. He has a wife and daughter whom he loves dearly. Thomas has been a teacher for eighteen years in Orlando and is currently in his first year at Foundation. He feels truly blessed to have become a part of this community and has never witnessed any school like Foundation.
WHAT ARE YOU MOST THANKFUL FOR IN LIFE AT THE MOMENT, AND WHY? “My relationship with the Lord and Savior, Jesus Christ. Without him, none of this is possible. I am also very thankful for my family and this school. The people here are amazing! From the president to the principals, to teachers and janitorial, they are all amazing Godly Christian people.” HOW DO YOU ACT AND SHOW THAT YOU ARE THANKFUL TO THOSE IN YOUR LIFE? “I try to pour out the skills that God has given me every day. Then, I try to show everyone I meet the love of Jesus.”
WHAT DO YOU THINK PEOPLE SHOULD TRY TO REMEMBER DURING THIS TIME OF YEAR? “Life is short. You have to love people and love them for who they are. Regardless of what people have done, forgive them and love them. That is what Christ is all about, and we are to be a witness for him and reflect the characteristics of what a true Christian is all about. God is love, so that is what we should be every day.”

Tyler Whiddon Senior
Tyler has been a student at Foundation for fourteen years. He runs the spirit club, a group of students who dress up and show spirit for home football games, and is a part of the Foundation basketball team. Tyler plans to attend FSU or UCF and wants to study business and real estate.
WHAT ARE YOU MOST THANKFUL FOR IN LIFE AT THE MOMENT, AND WHY? “My friends and family. They are always supporting me and guiding me. I’ve been at Foundation for fourteen years, so I have grown up with all my friends here. I am thankful to have those friendships and to support each other as we all head off to college.”
HOW DO YOU ACT AND SHOW THAT YOU ARE THANKFUL TO THOSE IN YOUR LIFE? “Whether it’s my friends or my family, I let the people in my life know all the time I am thankful for them. My friends come to my games, and I make sure I am at their games. I love to be a support system for my friends.”
WHAT DO YOU THINK PEOPLE SHOULD TRY TO REMEMBER DURING THIS TIME OF YEAR? “Family is so important. I have a really big extended family, and being able to see everyone during the holidays is so special. It’s so good to stay connected and make sure we are a part of each other’s lives.” CONTINUED >

Emma has been at Foundation for four years. Since then, she has become the vice president of the National Art Honor Society and won awards for her art. She plans to attend UCF to study animation. She is currently going through training to become a character artist for Disney!
WHAT ARE YOU MOST THANKFUL FOR IN LIFE AT THE MOMENT, AND WHY? “God’s forgiveness. I have made a lot of bad decisions in recent years, which has caused rocky relationships with my family and friends. I wasn’t very kind to people and would talk badly about others. But God completely turned me around. He has healed my relationship with my parents and friends. Many are familiar with the name "Nick's AC" and know they are a reputable and reliable local business. Yet, most have no idea the story behind who they are and what they really stand for. Dan Orientale, the owner, started Nick's Air Conditioning and Heating in 2019. His humble and laid-back demeanor is what makes him so likable, but his life story helps you understand him at his core. Raised by a single mother to two boys, Dan quickly became an entrepreneur doing anything he could to make money. Over the years, Dan became a highly skilled tradesman. Then, in 1996, his world changed when he had his son Nick. Dan raised Nick as a single father, which left Nick usually tagging along on jobs. Over the years, Nick picked up on his father's skills, becoming mechanically inclined. At ten years old, he could rewire a thermostat like a professional.

“He never missed a day or called out sick; he had an amazing work ethic,” said Dan. “He always worked hard and wasn’t scared to jump right in and do anything. He was always there to help people too. I was so proud of him.”
He learned to lay tile, paint, and build, making him a skilled tradesman by the young age of thirteen. They had an unshakeable bond, but that doesn't mean it was always easy. Dan shared a story that when Nick was fifteen, he was working for him as an AC contractor, and they often butt heads. He ended up "firing" Nick, which proved to be the best thing for his son. He got a job at a local restaurant as a dishwasher, one that Dan also worked at as a boy. He worked there for five years and eventually became a cook. "He never missed a day or called out sick; he had an amazing work ethic," said Dan. "He always worked hard and wasn't

Dan and Nick scared to jump right in and do anything. He was always there to help people too. I was so proud of him." In 2015, Dan left the state of Florida in hopes of a fresh start and exploring new opportunities in Missouri. He desperately wanted his son to come with him, but he understood why he didn't with his whole life being here. During the years Dan moved, he was a truck driver. He enjoyed his job and life but always missed his son. "I started to get this feeling and hear this voice that was telling me to move back to Florida. I couldn't shake the feeling for six months, so I sold all my belongings and decided to move back." On March 6th, 2019, Dan was driving back home with what little belongings he had left, ready to be reunited with his son. However, life had different plans. Dan received a call during his travel home that his son had been killed in a tragic car accident. While I sat across from Dan as he recalled these memories, tears swelled in his eyes. His love and longing for his son was so evident. It was clear he felt robbed of the future he envisioned for the two of them. "I was just a little too late." "The first few months following the accident are blurry as I was in the middle of moving, trying to get work, and grieving the loss of my son." But, when life is at its lowest, and you think you have nowhere else to turn, God is always working for you. He remembers reflecting on how Nick always wanted them to own an AC company and work together like they did when he was younger. So that's what

he did. With help from friends and a lot of hard work, he opened a new air conditioning and heating company. When it came time for a name, there was only one option. "The only thing I have left of my son is his memories. Everything else was taken from me. Naming the company after him allowed me to share one last thing with him." Nick's Air Conditioning and Heating is founded on the identity of honesty, kindness, and giving back. "I taught my son always to do what's right, whether that's the hard thing to do or the easy thing to do, just do what's right." It is so evident that Dan has a passion for this work and his customers. You should know that when you receive service from anyone at Nick's AC, you get honest and reliable work. but this is only possible when they have jobs continually coming in. That is why Dan started the Preventative Maintenance Program. THANKFULNESS IS HEALTH, AND HEALTH BREATHES; THANKFULNESS! You are healthier when you are thankful. Your serotonin increases, creating healing in your body. While your cortisol decreases, lowering your blood pressure and disease. Thankfulness is a healer! Sometimes we focus on issues that are overwhelming to us instead of the many things that are going well. As a result, we fail to consider the blessings that should make us thankful. As a missionary for over nineteen years, I have found that the people who have the least are the most thankful for what they have and are most likely to be the givers because they understand the depth of need.
They appreciate the value of what they have and do not have. I believe when you've experienced lack, you learn to appreciate and be thankful for everything. Many of us have much to be thankful for, but it can be hard to tap into Thankfulness when abundance is your dominant experience. If Thankfulness becomes hard for you to embrace, here are some facts to consider. • According to the WHO (World Health Organization), over two billion people drink contaminated water. Most of us have clean drinking water and water to bathe with, available at a turn of a knob. • Did you know that most people of the world live in poverty? According to Our World in Data, 85% of the world lives on less than $30.00 a day, 2/3 live on less than $10.00 a day, and every tenth person lives on less than $1.90 daily. One billion people live in extreme poverty (less than $1.25 per day). Most of the world's daily wage for basic needs equals what we spend on tips for our nonessential wants. • According to World Bank/WHO (World Health Organization), half of the world's population goes without access to basic or essential health services. Aren't you thankful that we live in a country where whether you have insurance or not, we have access to 911, and a team of medical professionals will come and save your life? • 60 million children of primary age are not in school. According to UNESCO estimates, 129 million girls worldwide are out of school, including 32 million of primary school age and 97 million of secondary school age. Education is the foundation for any society to sustain and grow. All children should have access to equitable education, including our girls. I'm thankful that education is accessible and free, aren't you? Most of us have clean water, clean air to breathe, and food for our families. We have homes that keep us safe and schools for our children, both boys and girls. Healthcare is available, and we have the freedom to pray to whomever we desire. Clean clothes on our backs and cash in our pockets. Most of those reading this Inspiring issue are blessed beyond measure with opportunities and options. We are indeed blessed, even if those choices are what ice cream to buy or what shoes to put on. That said, I find those of us with the most find Thankfulness the hardest to express. So I encourage you today to hug those you love because you have love in your life. Eat slowly and enjoy your food; so many are hungry. Don't waste anything; your time, your food, your energy, or your thoughts on negativity. Look at all the reasons to see gratitude in your life and be thankful.
