Windsor, a name that might evoke images of English roy alty but is, in reality, a hidden gem nestled right here in our beloved Colorado. This charming town, with its perfect blend of old-world allure and modern vibrancy, offers a smorgasbord of delights that can tantalize even the most discerning of tastes.

First, on our itinerary, let’s talk about the growing restaurant scene. Windsor's culinary landscape is blossoming like a well-watered garden in spring. Take, for instance, the new hotspot Luna's Tacos & Tequila, where the street tacos are as visually appealing as they are delectable. If you’re in the mood for something fast, Chicken Salad Chick will open their doors soon and transport your taste buds. And don't get me started on all the patios Windsor has to offer. Fun fact...Windsor has over 20 patios scattered all over this town. The Hearth Restaurant, Windsor Mill Tavern, Gourmet Grub, Highland Meadows Grill, Pizza Vino, and Teds Sweetwater Grill, to name just a few! I challenge you to try to find all of them this summer and tell us which ones are your favorites I bet you won't just have one! I know I don't!
Of course, Windsor's heart beats strongest through its community spirit, embodied by its non-profits. Take a glimpse into the 9 non-profits that we explore in this issue. These are only a few in Northern Colorado and a testament to the town’s commitment to giving back.
And speaking of heritage, let's not forget Windsor’s deep historical roots. While it’s easy to get swept up in the excitement of the new, Windsor's history provides a fascinating backdrop to its modern developments. The Windsor Museum (make sure you check times and dates before going), offers a treasure collection of artifacts and stories, and provides a peek into the town's past, from its founding days to its evolution into the vibrant community it is today. Did you know that the Great Western Sugar Company once called Windsor home? The remnants of this sweet legacy can still be seen in the town’s architecture and community spirit.

The Town of Windsor is relying on technology for improving water quality at Windsor Lake this season. Four state-of-the-art LG Sonic MPC-Buoys will be deployed in Windsor Lake before boating season to improve water quality in the lake and downstream by using ultrasonic sound waves to disrupt algae. This technology blocks algae’s access to sunlight and nutrients, causing them to sink to the bottom of the lake and die without releasing harmful toxins. David and Jessica Zumbrun brought Chicken Salad Chick from Auburn, Alabama to Greeley because they wanted to share the food, hospitality and culture from the southern United States restaurant with Northern Colorado. The couple vacationed in Auburn in 2019, discovered Chicken Salad Chick and fell in love with it.

That same day, they contacted the company about the potential of bringing “The Chick” to Colorado. The process took four years, but their dedication allowed them to open the doors to Northern Colorado’s very first Chicken Salad Chick, right here in Greeley.
The Zumbruns’ passion only grew over that time, and this summer, they are opening two new locations in Johnstown and Windsor. Both restaurants will feature a dining room and drive-thru, familiar designs to anyone who has visited The Chick in Greeley.
One of the deciding factors for the new restaurant locations was space for the drivethru. David has worked diligently over the past few years to identify and acquire locations that suited The Chick brand.
As franchisees of Chicken Salad Chick, David and Jessica own all three locations in Northern Colorado. The Zumbruns are proud of their team, many of whom have been onboard from the very start.
When Stacy Brown founded Chicken Salad Chick, the stay-at-home mom relied on her family and neighbors for taste-testing and support; David and Jessica have replicated her process by making their community the center of their business model.
David and Jessica are also proud to support the local community by offering Spirit Nights at the restaurant. Spirit Nights provide organizations an opportunity to have a portion of the sales donated back to the organization.
The Grand Opening celebrations for both of their new locations (Windsor and Johnstown) are scheduled for August, with the first 100 customers receiving free Chicken Salad Chick for a year.

Cattle Baron’s Ball is the American Cancer Society’s (ACS) premier, Western-themed gala, celebrating 32 years in Northern Colorado. For more than three decades, this event and the Northern Colorado Community have supported the mission work of the American Cancer Society, raising over $11 million for patient support programs and lifesaving cancer research.
In 2023, among more than 150 gala events the ACS hosted across the country, the Northern Colorado Cattle Baron’s Ball ranked as the tenth highest grossing event, following major metro markets such as San Francisco and Dallas.
More than three decades ago, the local Director of the American Cancer Society pitched the idea of starting Cattle Baron’s Ball in Northern Colorado to Kaye Monfort. Being no stranger to the livestock industry, Western way of life, and helping others, the idea resonated with Kaye. She loved the idea because “it would be for cancer research, education and help for local cancer patients.” We have made enormous strides and progress over the years, but still cancer continues to hit home for all of us, far too often.
Unfortunately, our community recently lost Kaye to cancer.
While Cattle Baron’s Ball has evolved over the last 32 years since Kaye brought the event to Northern
Colorado, the American Cancer Society and our community are forever grateful to Kaye for her dedication to this event and creating a generous village of people dedicated to supporting local cancer patients and ending cancer as we know it. Kaye was an incredible leader and invaluable member of our Cattle Baron’s village.
This year’s event theme, selected by this year’s chairs Craig & Tara Rasmuson, is “It Takes a Village to End Cancer,” because, as we all know, it takes a village of people to support someone through cancer – from diagnosis, treatment and survivorship.
While each patient’s village looks a little different, from friends and family to their medical team and beyond, the American Cancer Society is honored to be a resource and part of cancer patients’ villages in Colorado and across the country.
This year, the mission paddle raise at the Northern Colorado Cattle Baron’s Ball will fund patient services in Colorado through critical information (cancer.org and 1-800-227-2345), transportation to and from treatment and lodging when treatment is far from home.

Chef Linda Orcutt came to Colorado from California where she hosted a cooking show on San Diego’s premier morning show, “San Diego Living,” which is now known as “Good Morning San Diego.” While traveling internationally for her previous husband’s career, Linda discovered her passion for cooking and international cuisine. The intricate flavors and details each country and their dishes offered inspired Linda to explore them more by talking to chefs at different restaurants and cafes. Linda found herself making connections and began teaching
culinary classes at the Ritz Paris, a legendary hotel located in the heart of the city! French cooking quickly became Linda’s favorite and upon returning to California she couldn’t wait to share what she had learned not just in France, but also Italy, Germany, Spain, as well as culinary techniques derived from her Filipino roots.
Linda began teaching cooking classes at the San Diego Library where a representative with San Diego Living approached her and she soon found herself hosting a cooking show called “The Kitchen Studio,” which aired every Friday afternoon for several years!
After moving to Colorado Linda met her current husband, Jim. Having been a farmer and cattle rancher in Nebraska for 40 years,
Jim not only brought his green thumb to Linda’s culinary world, but also award-winning beef raised and processed directly from his cattle ranch. Together, Linda and Jim created “Thyme For A Taste” where they share their knowledge and farm to table food with others looking to expand their culinary skills, as well as their palates! During the fall, Linda focuses on teaching culinary classes in her home. During the summer, Linda and Jim focus on hosting farm-to-table dinners in the barn on their beautiful property, featuring different international dishes, fresh California cuisine, as well as comforting favorites. Dementia Together cultivates joy while building stronger connections for those living with dementia, their care partners, and our community. Life Stories provides advocacy and support for abused and neglected children in Weld County by advancing coordinated investigations, prosecution, and victim services through the Child Advocacy Center (CAC) and the Court Appointed Special Advocate (CASA) program. These programs served over 1,100 clients in FY 22/23. Life Stories also provides Stewards of Children: Darkness to Light presentations to educate adults in our community to prevent, recognize and react responsibly to child sexual abuse. Colorado Youth Outdoors exists to build relationships through traditional outdoor recreation. Located off I-25 with 220 acres we welcome 20,000 people annually. CYO’s purpose is to teach relationship-building skills using education through recreation including fishing, archery, shooting sports, survival skills, and more. Our passionate board members believe every child and family should have the opportunity to spend quality time together in the great outdoors. The Windsor Area Chamber of Commerce and Visitor Center is the voice of business in the Windsor region. The chamber is a place for everyone who shares the desire to improve the quality of life for the community of Windsor and all northern Colorado residents in the region. The mission of the Windsor Area Chamber of Commerce is clear: to empower and promote local businesses while enhancing the quality of life for residents in Windsor and the surrounding areas. Windsor Gives supports a healthier community through access, education, and participation in endurance events, specifically running-related. With the support of volunteers and sponsors, they fulfill their mission by providing free kids’ fun runs in Windsor schools, endurance event scholarships to people of all ages and abilities, and free or low-cost motivational speaking events. The board of directors is passionate about supporting knowledge surrounding the benefits of physical activity and providing the community with direct access to these events.
