Hello, and welcome to the inaugural issue of Windsor City Lifestyle. Let me take a minute to share my heart with the community of Windsor, Colorado. This community has shaped who I am today, and it has always held a special place in my soul . After attending Tozer Elementary, Mountain View Elementary, Skyview Elementary, and Windsor Middle School, it is where I first developed my love for bringing people together. We all have a super power and mine is connecting others. I am excited to be back in Windsor after moving during my 6th-grade year over 35 years ago. In the last couple of months this community has embraced me with open arms and been incredibly welcoming. It is full of amazing people, businesses, and what a wonderful place to raise a family. It is my honor to bring you this publication dedicated to the amazing people, families, businesses, and events that make this a great place to live, work, play, and raise a family. This is a wonderful place to launch this magazine, and I am excited to tell the stories of the people of Windsor. As we embark on this journey together, I look forward to learning more about you and the hidden gems of our backyard. I hope the pages of this magazine will help you celebrate everything there is to love about the place we call home. My goal is to have the people of Windsor embrace itself. The Windsor Chamber of Commerce says it best, “Small enough to be quaint. Big enough to be a destination.” I’ve always believed what we can do together is so much more than what we can do apart and I’m so grateful to serve a place that values championing the community and supporting each other. Thank you for being a part of this journey and for letting me be a small part of the life you’re building. I hope you’ll be inspired to take a moment to come together with the people in your home, across the street, and in your neighborhood. I cannot express how grateful I am for the support and your belief in my endeavor. Michelle Vance the new Executive Director for the Windsor Downtown Development Authority, joined the DDA in January of 2023 from the Windsor Chamber of Commerce. Michelle graduated from California State University Bakersfield where she earned a Bachelor of Arts degree in Public Policy Administration with a concentration in marketing. She is a member of Weld County Workforce Development Board, Business Retention and Expansion Team, and she participates in Regional Economic Development Initiatives.

Mandy Mullen New Executive Director of the Windsor Chamber Mandy Mullen has taken over as Executive Director of the Windsor Chamber. Mandy began as an ambassador in 2020 and moved her way up and became a board member in 2021, serving as a true community leader in this capacity. Mandy’s experience as a brick and mortar business owner, leader in the event industry, founder of a nonprofit and drive for supporting other businesses makes her an excellent choice for this interim position.

Real estate has always been something in the back of Brandon McNeil’s mind. In October of 2020 the McNeil family experienced a pretty life changing event that pushed them to start thinking of doing things differently. This event became the catalyst for them to get the ball rolling on their real estate journey. They originally began looking at two houses near the downtown Windsor area, one located on the street behind this one. Comically, the other home they discovered, ended up being purchased by some good friends of theirs. It would seem
as though fate had decided to direct them towards Elm St, and they purchased this home last summer. Originally built in 1929, the previous owner had already done some work to the house that helped lay a foundation for remodeling. The McNeil family found a wonderful handy man, Josiah Trujillo, who helped them add some unique touches to the house. He located some white oak beams from an old barn in Tennessee that had been torn down and were around the same age as the home. They used

pieces cut from the beams to add extended counter tops, shelving, and a breakfast bar area to their kitchen space.These vintage beams brought in a history from the house's original era from across the country. From knocking down walls, to painting, and rewiring electric, they have tackled every project as a team and as a family. This location has been home to Kenslee, Brandon, their three boys, and two pups since July of 2022 while they renovated the space! While planting roots, they made the best of being cozy during that time, enjoying the nearby parks, downtown area, and lakes. They are now under contract on a new home in the Windsor area and will be offering Elm Street up for temporary rentals via Airbnb!

What makes the restaurant special isn’t just amazing food, or oneof-a-kind cocktails, it isn’t just its colorful walls, or unique décor, it is that it is a home away from for all. A place where people can feel seen, heard, recognized, and connected. An establishment where it is casual on purpose and the focus is on building and having lasting relationships with people. “Our guests are our heart, we don’t have customers, we have guests just like we would in our home, the people are what comes

first” states founder Clay Caldwell. His goal is to know his community and to have the community know him; he believes that success comes from connection. Growing up in the south, food was king; everything revolved around food and the kitchen was the heart of the house. As a young boy, Clay was surrounded by great cooks in his family “we had a large family, and we were always getting together and throwing meals on the table. I can remember my grandparents and parents entertaining weekly. Community was such a vital part of my upbringing and food was that vehicle

to connection, you shared life together,” said Clay. He remembers sitting at the kitchen table with his mom over a piece of pie after school and talking about his day. “Everything was done around the kitchen table; serious discussions, casual conversations, you did your homework there, we had breakfast together, dinner together.” The memories of those experiences are what became guidelines for how he wants his guests to feel at his establishments; as if they were visiting his home for a meal, as if they are sharing life together. As a young man, Clay went on to attend the Culinary Institute of America in New York, where he graduated with honors. He loved culinary school and felt like it opened a whole new universe for him. “Every day and every class just built upon one another, and I was using that information and knowledge daily which was exciting. Where I struggled in primary school being bored, I excelled in culinary school: science suddenly came alive for me because it was tangible to something that I have a passion for. It was a wonderful experience” he stated. Clay worked for decades at five-star restaurants in the NYC area, including the Ritz Carlton before the chapter of Betta Gumbo was to be written. Clay came from a family of entrepreneurs and so that was modeled for him as a kid. Betta Gumbo was born out of an idea to share with his community, He enjoyed owning the whole approach of taking care of people and to what standard did

he wanted that to evolve to. The design, the delivery, the concept, the hospitality; It all comes together from his perception and life stories. Some may say control, but he sees it more of how he wants the vision of the establishment to be received by others, and that, is something that is extremely important to him. As with his vision for the community he wants to create, the food speaks to who he is and his experiences as well. “My parents and grandparents were big entertainers; our home was always full of community and dinner parties. They may have been just average meals, but it brought people together. People who were struggling, or people who just needed to feel connected to normalcy, or friends and family who stopped by to catch up. My parents used food as a venue of say ministering to people; it could be a pizza party, or burgers, or steaks on the grill, or pots of gumbo or jambalaya, or a crawfish boil but it was always large batch cooking in my house. We cooked food and took it to people who were sick or going through rough times. It was a daily exercise in my home growing up.” The joy for him is what food can bring to somebody, and as such, all the recipes have come from his family table, been adaptations from old parish cookbooks, or been creations inspired out of his love for giving and entertaining. While Betta Gumbo may be featured for its Cajun, soul food, and low country fair dishes; its southern meals are only one of

the few exceptional things about this establishment. It is clear they keep their focus on core values and the quality of their engagements and relationships, they invest into their communities, and they treat everyone they interact with like family. Betta Gumbo is so much more than a business, they have woven themselves into the fabric of their towns and they are leaving their surrounding communities a better place daily, and that is something that should inspire us all to do more of the same.

10 pounds diced chicken 10 pounds andouille cut in half moons ½” thick 5 pounds diced green peppers 5 pounds diced celery 10 pounds diced yellow onions 1.5 cups minced garlic 12oz tabasco 2 cups Worcestershire 3.5 cups Cajun seasoning 2 cups old bay 7 gallons water 1 cup chicken stock 8 cups blonde roux 8 cups chocolate roux Cooked rice Sautéed crawfish and shrimp Fresh parsley Homemade cornbread (add jalapeños for an extra kick)
directions: 1. Add oil to the tilt skillet. Add green peppers, celery, yellow onions, and garlic to the skillet and cook until veggies are soft (about 6 minutes). 2. Then add Tabasco sauce, Worcestershire sauce, old bay, and Cajun seasoning and mix well. 3. Then add diced andouille sausage, shredded chicken, chicken stock, and water and bring to a boil. 4. Add chocolate roux and mix thoroughly. Then add the blonde roux and mix thoroughly. 5. Let simmer until it thickens. 6. Add a scoop of rice to a bowl. Then add sautéed crawfish and shrimp. Fill bowl with gumbo. Garnish with fresh parsley and served with hot cornbread.

WHAT ARE SOME GOALS YOU ARE WORKING TOWARDS IN THAT POSITION? I am embracing the opportunity to advocate for all the schools and engage the community more. I love my community and my students and want to work to move our district forward.
YOU HAVE A BEAUTIFUL HOME. TELL US A LITTLE BIT ABOUT IT. We have a ten-acre farm, with a house that my husband Ryan custom-built. It is designed to incorporate all the things we love. I grew up on the same farm as my grandparents, with my mom and dad modeling hospitality. My grandmother and mother were both excellent cooks. My mother continues her gracious hospitality by making and sharing the best homemade buns in the country! This was very impactful, so naturally, we built our home to entertain others, a place for all our friends and family.
WHAT ARE SOME THINGS YOU LOVE ABOUT GROWING UP ON A FARM? I enjoy the tranquility of farm life. It is simple. The farm taught me that dedication pays off in life. I learned that honesty, respect, hard work, grit, and faith make for a blessed life. We did a lot as a family; we worked together, prayed together, and had family suppers every evening. As a kid, being on a farm offers you a chance to play, be creative, and use your imagination. I believe it helped shape who I am today. My mom always told me to “bloom where you are planted,” and we love where we are “planted!”
YOU HAVE BEEN AN EDUCATOR FOR THIRTY-EIGHT YEARS; THAT IS AN AMAZING ACCOMPLISHMENT!! WHAT HAVE BEEN A FEW HIGHLIGHTS IN YOUR CAREER THUS FAR? For me, the highlights have always been the kids. Not all children have the same opportunities, so when I see all different kinds of students succeed, it warms my heart. I love watching them grow and excel when given the tools to assist in their successes. It is also fulfilling to witness colleagues blossom and become excellent leaders. It is rewarding to know the lives you touch, and the impact your work and words can have on someone’s life. Children want to know someone loves them and believes in them.

WHAT ARE SOME THINGS YOU LEARNED WHEN YOU WERE YOUNGER THAT YOU STILL VALUE TODAY? My parents taught me to be humble and kind to everyone I encounter and to keep my faith first. My grandpa taught me that everyone has a story. If we take the time to listen, we can learn to understand where they are coming from. Faith, family, friends, and fun is our mantra.
WHAT ARE SOME OF YOUR FAVORITE SPACES IN YOUR HOME? Well, since I love to cook and we entertain, the kitchen is a big one. I also love canning, jams, watermelon, asparagus, eggs and more. Another favorite space is my piano loft because music is an essential part of my life. We also have a unique space at the top of our house that I call my prayer room. It looks out over the land and the mountains. It is one of my favorite spaces to reflect and be thankful.
YOU MENTIONED A LOVE FOR MUSIC. CAN YOU TELL US ABOUT THE IMPACT MUSIC HAS HAD IN YOUR LIFE? Growing up, my mom was the choir director at our church and had me playing from an early age. When we would ride in the car with my mom, we either sang or prayed. I have played at hundreds of weddings and funerals and recently sang at the Broadmoor when awarded the CMEA Award for Supporting Administrator. As Principal at Windsor High School, I sang to kids on their first day and at graduation. The tradition carries on as music continues to be part of our growing family.

One of the more distinctive stores and a local favorite close to main street in Windsor is The Pineapple Market. This community space found a home in late 2022, but its seed was something that had been planted to bloom long ago. Owner Shana Stolz’s creative journey began as a little girl, with an entrepreneurial mindset she was crafty from a young age and always creating with her hands. Growing up in Northern Wyoming in a town of 400, there weren’t a lot of stores; repurposing and creating things is something she grew up doing. “I have always done little yard sale things, like make bracelets and necklaces and sell them in my town’s park during the summer. I have always wanted, since I was a kid, to have a shop. I never knew what it would look like or what I would be selling necessarily but I always wanted a community shop” stated Shana. In 2015 Shana decided to quit her full-time job of 15 years in retail at Brown and Gold, a mom-and-pop store at the University of Wyoming and her job as a visual merchandiser at Maurices to stay home with her two boys, Thane and Tanner. She shared with us “The truth is, I started hand painting signs because I was broke, and I needed an outlet. I couldn’t afford presents for like my nephews or family members birthdays, so I started making signs for them. It started out being a creative outlet and a way to give presents that were unique, and everyone loved it. I kept getting asked to make people something for their homes or a gift and so, that is kind of the backstory of how Rise and Shine signs came about.” Then came Etsy, Shana started a shop before Etsy had gotten as big as it is now, when everything was truly handmade. To no surprise, it boomed, and she was doing custom orders for people all over the country. She got wind of Vines Vintage in Fort Collins in 2015 and got her first booth space, where she started mixing old vintage items in with her signs and crafted goods. Not long after came her pregnancy with miss Mabel, her third child, and as a result, the smell of paint and stain was not something she could handle at the time,
and so she decided to take a break. During that time, her family had several life events occur and they ended up becoming new residents of Windsor. Shana kept having this nudge, an urge to create again. She began making jewelry, as it didn’t stink and was something she loved to do as a kid.Consequently, she decided to open something else, a new business that accumulates all these things that she’s always wanted. And so, The Pineapple market came about. The name itself represents so many aspects of who Shana is and what this space means to her. “The pineapple symbolizes to me, warmth, welcomeness, friendship, community, and hospitality. I wanted this space to embody all these things within a community shop but to also honor the things that I love,” said Shana. The market is a mix of unique clothing, pieces from over 20 local artisans that she has met and worked with over the years, and vintage hand-picked items from all over the country. Shana chooses her vintage pieces based on the history, character, and story that the piece itself tells. Her inspiration is all around her and she incorporates that into choosing the pieces and creating items for the shop. So, whether it is something you wear or something you decorate with, this space gives life to her vision of mixing old and new into your space and your story. Her customers love being able to shop and support local and Shana is grateful to provide a space for artisans to get their stories out into the communities and to offer the connection we are so desperately needing within our culture. She encourages anyone wanting to follow their creative path to do so. She says to be smart and do your research but go for it and do not be afraid to fail. The world needs more voices and creators courageously following their paths. Shana’s vision and her marketplace offer us all an opportunity to see beauty in everyday objects, to appreciate the history that came before us, to inspire and lift one another up, and to share our stories.
