In autumn, enjoying fresh herbs is as easy as a trip to the grocery store. As beautiful as it is tasty, I think my recipe will become a favorite in your home!

WHIPPED FETA TOAST WITH CHERRIES, HONEY & HERBS INGREDIENTS • 8-ounce block feta cheese • 1/2 cup full-fat Greek yogurt • 1/4 cup extra virgin olive oil + 2 tablespoons, divided • 2 tablespoons honey, divided • 4 sprigs fresh dill • 4 sprigs fresh lemon thyme (or substitute 4 springs thyme + 1/4 teaspoon lemon zest) • 4 small roasted beets, peeled and quartered • 1 cup strawberries, halved • 1/3 cup cherries, pitted and halved • 1/4 English cucumber, peeled and diced • 1/4 cup raw pistachios, roughly chopped • 1/2 fresh lime, juiced • 6 mint leaves, torn • 6 slices crusty sourdough bread • 1 tablespoon extra virgin olive oil • 1 tablespoon salted butter • salt and pepper to taste • edible flowers and herbs, to garnish The finished dish is a delight to tastebuds and eyes

DIRECTIONS Whipped Feta 1. In food processor, blend feta, Greek yogurt, and oil until smooth, adding more oil if necessary. 2. Add leaves from two thyme and two dill sprigs. Blend and transfer to a small bowl; salt and pepper to taste. Chill. Honeyed Fruits 1. Mix prepped fruits and vegetables with lime juice, 1–2 tablespoons of honey, and one tablespoon of oil. 2. Add mint and leaves of two sprigs of lemon thyme and mix. Salt and pepper to taste. Toasts 1. Preheat oven to 350F. Fresh herbs are Jessie-Sierra Ross's "secret weapon"

2. Melt one tablespoon of salted butter in microwave and add one tablespoon of oil. Spread mixture over both sides of sliced sourdough. 3. Bake on large baking sheet for 5–7 minutes, until golden. Flip the slices and bake for 2–3 minutes more. Cool. Assembly 1. Using a large plate or platter, add a generous dollop of whipped feta, then top with honey and herbed fruit and vegetable mixture. 2. Tear toast into large pieces; place along edge of plate. 3. Garnish feta with pistachios, and garnish fruit mixture with edible flowers, mint, and dill. Or, make individual toasts by spreading with whipped feta. Top with the fruit and herb mixture; sprinkle with pistachios. Garnish with herbs and flowers.

Pub Food: Theodores’ Booze, Blues & BBQ, Springfield A Springfield institution once voted the best blues club in the country, this restaurant has excellent BBQ and Southern dishes, including crawfish and fried green tomatoes.

Whether entertaining at home or bringing a dish to share, we’re offering some simple secrets to give prepared foods extra flavor and flair with an autumn appeal. Add a personal touch to prepared foods for easy, lovely dishes that wow at tailgate parties, book club meetings, and meals with family and friends.

Baked Brie or Feta For brie, heat in oven at 350 degrees in a pretty casserole dish until soft, then drizzle with honey and top with chopped pistachios, pomegranate seeds, and dried cranberries. For feta, brush with olive oil and heat in oven in a small casserole dish until just golden, then drizzle with balsamic reduction or glaze and top with fresh diced Roma tomatoes and chiffonade fresh basil leaves. Serve with warmed pita wedges or gourmet crackers. Sliced apples complement brie, while feta is perfect with figs. Bakery Desserts Top a rustic apple tart or pie with drizzled caramel sauce, sliced pears, and chopped walnuts, or decorate a cheesecake with slightly thinned chocolate sauce, caramel sauce, or raspberry preserves, then top with raspberries or blueberries, candied walnuts or pecans, and fresh mint sprigs.

Warm baked cheeses make an easy appetizer

Mac and Cheese Make it special from the store—place in an attractive casserole, heat through, then top with 1/3 cup of panko breadcrumbs mixed with two tablespoons melted butter and bake again until topping is golden. Garnish to serve with warm crumbled bacon and chopped chives, and drizzle with truffle or chili oil for extra color and punch. Dips Add a teaspoon of beet juice to hummus or tzatziki for an autumnal hue. Drizzle with olive oil or flavored oils. Add chopped pecans or walnuts, golden raisins, chickpeas, chopped fresh dill or parsley, or seasoning mixes like za’atar. Fried Ravioli or Tortellini Cook pasta as directed, then drain well and gently toss with two tablespoons olive oil and a light coating of parmesan. Air fry or oven bake at 350 degrees 8 to 10 minutes. Serve with a side of warm marinara or alfredo sauce to dip. Try pumpkin ravioli, or add a spoonful of canned pumpkin puree to the alfredo sauce. Use the remaining pumpkin to make a pitcher of pumpkin martinis, with glasses rimmed with sugar/apple pie spice mixture and decorated with a cinnamon stick, a star anise, and a blood orange slice.

Fried ravioli are a perennial favorite

Charcuterie Boards Add a fall touch to this perennial favorite with sliced blood oranges, apples, pears, pomegranate seeds, and figs. Wrap meats around cracker-style bread sticks for ease of eating! Garnish with rosemary sprigs and fresh cranberries. Make a non-dairy cheese and fruit board with delicious vegan cheeses such as smoked Gouda and bleu from the health food section of the supermarket.

Not every bartender is a mixologist, a specialist who studies the creation of cocktails. We asked two mixologists about their work. Amelia Cadieux is a bNapoli mixologist at 185 Elm Street in West Springfield with 11 years of experience, including working at a craft cocktail bar that started her journey into cocktail curation. Alastair Cowieson is a mixologist at The Federal at 135 Cooper Street in Agawam with 17 years of restaurant experience.

AMELIA, WHAT ARE TRENDS FOR FALL COCKTAILS? We’re moving from the “pumpkin spice” trend and exploring new fall flavors. Our fall menu features a house-made mulled cider and house-infused raisin triple rum blend. More amaro and vermouth are being used—something different.

WHAT ARE YOUR FAVORITE FALL DRINKS? I love a good sangria for its versatility with ingredients, and fall twists on classics, like an apple cider mule.

WHAT ARE SOME FAVORITE INGREDIENTS FOR CREATING NEW DRINKS? I gravitate toward sour drinks with fresh citrus juices, and subtle flavors— a whisper of elderflower or chartreuse. I do a lot of infusions instead of flavored syrups, bringing flavors into the spirits themselves.

HOW DO YOU HELP WITH A COCKTAIL RECOMMENDATION? I ask what spirits guests prefer, and whether they like sweet and fruity, tart and fresh, on the boozier side, or even spicy, such as our house-made ginger beer. I can create something brand new, or mix a classic cocktail or a bNapoli original.

WHICH BARTENDING TECHNIQUES DO YOU PREFER? Double straining ensures we get all ice, herbs, pulp, and fruit out of a cocktail before serving. We use strict recipes for consistency so the drink you enjoyed last week tastes the same tonight, even if you have a different bartender.

ALASTAIR, WHAT ARE TRENDS FOR FALL COCKTAILS? We like using seasonal fare and local ingredients where we can. I’m a sucker for anything honey or pear. As for local industry trends, margaritas are enjoying their moment in the limelight.

I like coordinating with our culinary team to use products that either harmonize with their menu or allow us to utilize ingredients in totality to help prevent waste. I find walking around the numerous farmers markets in our area helpful, especially for the next year’s menu inspiration.

HOW WOULD YOU DESCRIBE YOUR BARTENDING STYLE? My style is well rounded, with an emphasis on prep outside of the guests’ dining experience so that there are no lags between time of drink order and enjoyment.
