A Lot of Love for Our Favorite City And just like that, 2024 is off and running – right into the open arms of “Love Local.” Both Marc and I dearly love Knoxville and this month we feature some of the people and their labors of love who daily build our reputation as a city that exudes a passion for “place.” Our cover story is the new French brasserie on Gay Street, Lilou, the latest culinary love child of Knoxville restaurant power couple Jessica “Rabbit” King and Aaron Thompson. Proprietors of Brother Wolf and Osteria Stella, Jessica and Aaron have created a spectacularly elevated space that sits squarely at the intersection of historic preservation and European dining luxury. For longtime local restaurant fans like me, it feels like a kindred space to the late visionary Kristopher Kendrick’s The Orangery. Knoxville foodies from all over town are wild about what they consider their own neighborhood bakery and coffeehouse on Central Avenue. Wild Love Bakehouse owner Meg Hunter-Parrish creates scratch-made savory and sweet goods that all disappear before the end of each day. This city has a big love for the thriving craft beer scene. We visited with Joel Leffew from Crafty Bastard and President of Knoxville Area Brewers Association to get a look at how driven KABA is, quite literally, to support the Knox Ale Trail, grow a national reputation, and keep our local beer lovers’ money local. In a Q&A with Knoxville novelist Emily B. Riddle, we’re introduced to her romcom Kissing Series where small business-heroines find swoon-worthy love in their own hometown. Check out Knoxville History Project postcards, donated by Knoxville collector Alex Riedl with rarely seen city views and stories. This modern yet modest bakery-cafe was born out of Old City Java, which Meg Hunter-Parrish owns with her husband, Shaun, and served as the initial customer base for her home-baked pastries. “Food was my mother’s creative outlet, so she was constantly cooking and creating new dinners,” says Meg. “I grew up in the kitchen, and we always had a garden. You don’t realize until you look back and see it’s been there all along.” As the demand for treats grew at Old City Java, so did the idea for a separate bakery. Opened in December 2015, Wild Love is known for its croissants, a recipe that takes four days to create, as well as its growing selection of cakes, pies, and cookies. “We’re a small bakery that focuses on doing things really well and with heart. We enjoy what we do, and we hope that translates to our customers,” says Meg. “We do sell out every day because we have limited fridge space.” Part of the bakery’s success is due to the high-quality ingredients Meg insists upon, from European butter to Carolina Ground Flour. The other part of their success is their staff. There are 11 bakers at Wild Love, including Meg. “We all work really closely,” she says. “Everyone cares so much. With Valentine’s Day looming, it is easy to get caught up in dreamy notions of overpriced chocolates, flowers, dinner reservations, and extravagant gifts. Yet, amid these romantic pursuits, it is important to pause and reflect on another dimension of love, one that is different from the traditional Valentine’s Day expressions and, instead, takes on the form of meaningful actions.

This season, I've been contemplating the idea that love is not just a noun; it is a verb. Stephen Covey writes, “Love is a verb. Love is something you do: the sacrifices you make, the giving of self. If you want to study love, study those who sacrifice for others. Love -- the feeling -- is a fruit of love the verb.” During this month of love, I feel called to redirect my focus toward expressing love through tangible deeds, especially toward the places I call “home.” Beyond the glitter and glamor of romantic gestures, there is an abundance of opportunity to love our community through service. There are a number of organizations here in Knoxville that facilitate serving the needs of others. These organizations cover a broad spectrum of needs from Emerald Youth and Amachi Mentorship, which support at-risk youth in our community, to Men of Valor, which assists men who have been previously incarcerated, to The Restoration House, which gives aid to struggling single-parent families. In 2022, Americans spent an astounding $23.9 billion on Valentine’s Day. We all love romance and thoughtful gestures of love; however, I can’t help but imagine the transformative potential of redirecting some of that towards actions that tangibly benefit our community. Whether it is $20 donated or one hour served, each act of service has a deep impact on our community. Here at PYA Waltman, one of our core values is gratitude. It is out of gratitude for the community around us that we are inspired to redefine the way we express love, not just during the month of February but throughout the entire year. Each one of us can redirect our collective love towards actions that can be transformative to our community. This month is a wonderful time to recognize our potential to steward some of what has been entrusted to us in a way that gives others the opportunity to improve their situation. Let's not only embody love as a verb in our personal lives but also in the collective impact we can make by serving and uplifting the community that surrounds us. Mt Le Conte Postcard

At the nonprofit Knoxville History Project, we are always on the lookout for old images for our Knoxville Shoebox digital collection. If you have interesting photographs, postcards, or brochures, from any era, we’d love to hear from you so we can preserve the visual history of Knoxville and make it available for researchers of the future. This month, we highlight four postcards donated to KHP by Knoxville postcard collector Alec Riedl.

MOSES SCHOOL

The Moses School in Mechanicsville is an impressive brick building dating to 1916 and named for New Hampshire native Col. John L. Moses (1822-1887), an attorney, journalist, and civic and Baptist church leader. In addition to the school, Mechanicsville still presents traces of Moses’ influence, as some of the older streets are named for members of his family. The building is an enlargement of the Mechanicsville School, a school for white children in an era when race-mixing in the classroom was illegal in Tennessee. It’s been closed as a public school for many years but has been used for a variety of purposes since then: police training center, performance space, and most recently Emerald Academy, a public free charter school run in conjunction with the faith-based Emerald Foundation. It’s one of the older school buildings in Knoxville.

MOUNT LE CONTE

This picturesque view of Mount Le Conte in the Smokies was likely produced in the 1930s when the Great Smoky Mountains National Park was a new tourist destination. Although unofficially

opened to visitors by 1930, the park officially opened in 1934 and was famously dedicated by President Franklin D. Roosevelt on September 2, 1940. The hand-tinted photograph is credited to Thompson Co., aka Thompson Brothers. That firm was originally established by commercial photographer James E. (Jim) Thompson who began trips into the Smokies to capture wildflowers and landscapes with his camera lens around 1915, and his younger brother, Robin, who specialized in aerial photography. Almost a decade later, Jim’s photographs swayed Park Commissioners who were so impressed with Thompson’s images that they quickly visited the Smokies and soon after recommended it to become a national park.

SHIELDS-WATKINS FIELD

Established in 1921, Shields-Watkins Field is the nucleus of Neyland Stadium, home of Tennessee Vols Football. In the days before generous funding for athletics, the field was built by volunteer effort, enlisting students, engineering faculty, and other fans. Originally it was used for baseball, football, and track events, and occasionally high-school tournaments. The field was named in honor of a major donor to the effort, prominent banker and UT trustee W.S. Shields and his wife, Alice Watkins Shields. During Coach Robert Neyland’s extraordinary era, the stands’ capacity rose from 3,200, when the stadium was little more than bleachers, to over 46,000, when it was a proper masonry stadium built in a horseshoe shape, with the northern end open. This undated postcard shows an illustration of something that’s elusive in local photographic archives: the outdoor swimming pool at the Andrew Johnson Hotel on the 900 block of Gay Street. It originally opened as the Tennessee Terrace in 1928 but changed its name soon after to honor the 17th U.S. President who was experiencing a new phase of historical esteem. This 17-story hotel (then the tallest building in East Tennessee) attracted tourists heading south to visit the new Great Smoky Mountain National Park. Perhaps inspired by hotels in New York, the Andrew Johnson also hosted live radio programming in studios on its roof.

When did you know you wanted to write? I’ve wanted to be a writer for almost as long as I’ve been a reader. What I enjoy reading has always influenced what I write, and I’ve played with different genres. However, my heart beats wildly for a good romance and apparently my pen follows suit! Writing love stories, romantic comedy specifically, is a natural fit for me.

What is your writing process? From rough draft to published book, “First Comes Love” took about two years. I wrote the first draft quickly, rested it (let the book sit without reading) for longer than I needed to, and then spent what felt like half my adult life editing it. And as far as the book being in my hot little hands – that was an amazing experience, not quite as momentous as holding a newborn baby but also less messy and almost as fun to show off to strangers. I often have characters walking around in my head, which sounds disturbing in theory but isn’t in practice. There were three different stories that wanted telling and the longer I sat with them, the faster they fell into place, including the order in which to write them. The writing process was the same (butt in seat, hit that word count goal every day) but easier the second time around.

What are your literary goals? Writing stories that make women laugh and give them all the swoony feels is my goal. It’s my hope that readers finish one of my books and feel uplifted, that it gives them a sense of how romantic their ordinary, extraordinary lives truly are. Just like in America, every region of France has its specialties. When we interviewed Jessica King and Aaron Thompson about their Italianinspired bar (Brother Wolf) and restaurant (Osteria Stella) for our December 2022 issue, the first thing Jessica said was, “We’re a divide and conquer kind of couple.” As they celebrate the opening of their French-inspired cocktail bar and restaurant, Lilou, on the main floor of Hotel Cleo on Gay Street, it’s clear their passion and drive to offer authentic European cuisine has not waned. “The last year has been full of discoveries and surprises, both good and bad, but we’ve been navigating owning and operating existing businesses while preparing to open the new one, all while having a threeand-a-half-year-old daughter,” says Aaron. “It’s been interesting but rewarding. Every day we’re getting to flesh out this idea that

we had many years ago, but we’ve never done it on this scale before. This is bigger.” Their shared professional history and personal relationship dates back to the late 2000s, when Aaron became the proprietor of Sapphire, the former cocktail bar, and Jessica was in the throes of creating the original drink menu for the Peter Kern Library. Initially, they agreed not to work together so as to not blur the line between personal and professional. But, when a couple shares the same dream for a slew of European-inspired restaurants and bars, suddenly that line doesn’t seem so necessary. The partnership works. In 2022, Esquire named Brother Wolf one of the Best Bars in America. With the Italian spots in smooth operation, it was time to turn their attention to their affinity for France. CONTINUED >

“France is similar to Italy in that life is built around food and wine. We fell in love with the country’s history and agriculture. Around every corner is something new to discover,” says Aaron. “As for wine history, there’s nothing more definitive than that in France. My first love in wine was Burgundy, so that set me on my journey to discover French pinot noir and the history of how they parcel their land. Just like in America, every region of France has its specialties.” Which is why it was crucial for them to find the ideal executive chef to replicate the quintessential dishes of French cuisine in a way that appeals to both the French food connoisseur and the novice. They worked with a recruitment firm to find someone who was trained in the French brigade system, who spoke fluent French, and was willing to relocate to Knoxville. They spent what accumulated to more than a month traveling through various regions in France, as well as patronizing the best French restaurants in New York and Washington D.C. They wanted to see, smell, and taste everything from the basics to the exquisite. “One of the first things we said was to make the food approachable and not pretentious. It’s a balancing act. You can have escargot on the menu, or frog legs, but balance it with items that Jessica’s grandad is going to eat. Steak Frites is a good example of something that pleases most people because they’ve been eating steak and fries their whole lives,” says Aaron. “French onion soup is the north star. Same with beef bourguignon. These aren’t fancy dishes. They’re served all over France. If you make it the way they’re supposed to be made, they’re incredible. You have to get the stock right or it’s a caricature.”

When the couple met Chef Benjamin Tilatti, who grew up between Gascony and the Basque country along the western Pyrenees, their interest was piqued. He’d recently sold his restaurant in Singapore, and despite working in Canada for a time, had never been to the United States. They booked him a plane ticket on faith so he could cook for them, tour the city, and see how he’d draft a menu that aligned with their goals for Lilou. “He grew up in the countryside and ate humble food, but that wasn’t enough to be hired. We’d trained our palates, and we had to approve the core menu so our vision was being met,” says Aaron. “He sent us an amazing menu, and his administration skills are very good. That’s hard to find – an executive chef and kitchen manager. You can tell he ran his own restaurant. All that’s to say, our primary directive is to not compromise.” As for the interior, Aaron gives all credit to Jessica, who spent years collecting artwork and fixtures from estate sales, bringing home pieces from their trips to France, and working with local artisans, such as Pretentious Glass Co. and Emily Key, to create an authentically French atmosphere. “We wanted to beautify Sapphire’s place. Losing it was hard, so we had to pay tribute,” says Aaron. “It always boils down to service. It takes time and training, but we must make people feel comfortable. We’ve given them an environment that feels like an art gallery with an open kitchen, where you can hear the chef’s French accent.” Learn more at LilouKnoxville.com CONTINUED >

In 2015, as interest grew, a group of local beer brewers got together and formed the Knoxville Area Brewers Association (KABA). The organization is dedicated to supporting local brewers by banding together for events, competitions, and shared success through the Knox Ale Trail. “The biggest perk of being a member is getting on the Ale Trail. It creates a sense of community. You know where the beer came from because it’s right in your neighborhood,” says Joel Leffew, Head Brewer and Production Manager at Crafty Bastard and President of KABA. “You’re helping to support local people, your neighbors.” CONTINUED >

Like the Tennessee Whiskey Trail, the Knox Ale Trail offers a physical and digital map of 25 breweries in Knox and surrounding counties. Patrons can stop in for a pint and get their map stamped. Once the passport is full, they can head over to Knox Brew Hub at 421 Union Ave. for a selection of prizes, like stickers and pint glasses. The Knoxville craft beer scene has been steadily on the rise, and several local breweries have received national recognition. In the 2016 World Beer Cup, Blackberry Farm Brewery won the gold medal for its Classic Saison, and in 2022, Xül Beer Co. earned the gold medal for its Rhymes Like Dimes IPA. Last year, Balter Beerworks celebrated two medals – gold for its Sunsphere Wheat and silver for its Vecino – along with earning the title of Brewery of the Year (for their size) at the Great American Beer Festival in Denver, Colorado. “I drove Knoxville’s beer entries to Denver myself,” says Joel. “I don’t know if they would’ve entered if we hadn’t taken care of the shipping.” This year, KABA is working with the Tennessee State Guild to ship all of Tennessee’s brews to the World Beer Cup in Las Vegas to see how they fare. “It’s the first year we’ve teamed up to make sure our members’ beer gets there,” says Joel. “The hardest part of getting to these competitions is paying for the shipping, so we thought it would be cool to take that burden off of our members so they didn’t have to worry about it.” Shopping locally has long since been a popular trend, and patronizing local breweries is no different. “I’ve always been a fan of trying to shop local, so why not do the same with your beer? Drink local!” says Joel, laughing. “You know the money you’re spending is paying the wages of your neighbors. Let’s keep it in the Knoxville family.”
