We Wish You Peace of Mind for 2022 Starting a new calendar year means opening the door to innumerable opportunities. We love to make plans and goals, but we also hold space and hope for unforeseen delights to come our way. How might the stars align? What new relationships might we form? How might our circumstances improve in ways we never imagined? While it might seem cliché to build a January issue around Health and Wellness content, we believe that health is more than physical fitness and wellness more than the absence of a cold. Ultimately, living a healthy, well-balanced life takes a multi-faceted approach. It means tending to all the things our mind, body, and soul needs. It means strengthening relationships and making wise financial decisions. It might even mean shifting your diet or making more home-cooked meals. This month, we are pleased to share two versions of a favorite family recipe from Jeff Carter, the executive chef at Dancing Bear Appalachian Bistro. One version is quick-and-easy, while the other favors fresh ingredients. (When he says no substitutions for the Conecuh Sausage, he means it.) We also have an interview with Femeika Elliott, owner of Meik Meals. She is dedicated to curating more plant-based dishes and educating the community about holistic wellness through a plant-based diet. If you have a graduating senior this year, then you’re probably feeling all sorts of emotions as deadlines and graduation dates approach. Anna Graham, School Counselor for College & Career at Hardin Valley, has some words of wisdom for you. As always, we love working with our partners to bring you expert advice and content. Coming back from a joint injury—specifically in your lower extremities—can be a slow process when any type of weight-bearing exercise is a challenge. Whether you’re an ultra-marathoner or need a fall-free zone to improve your gait, the folks at East Tennessee Spine & Sport have a machine just for you: the AlterG Anti-Gravity Treadmill. Prior to this technology, which was originally developed by NASA in the 1990s, the only way to reduce the pressure of weight-bearing exercise was to take to the water. However, once users are zipped into the vacuum-sealed bubble via neoprene shorts (sizes run from X-Small to 3XL), rehabbing leg joints on a treadmill is doable again. “It’s the same concept as underwater treadmills,” says Greg Sills, physical therapy assistant. “But this way, if someone is supposed to be at 50 percent weight-bearing after surgery, we can set a true 50 percent [on the treadmill].” Two populations in particular benefit from anti-gravity technology: athletes rehabbing a joint injury but still need to maintain cardiovascular fitness levels and those who are at a fall risk, such as an older patient with a shuffled gait or someone in need of help with balance. For example, take the runner who might be training for the Knoxville Marathon but has a nagging case of tendonitis. He or she can still work on their fitness level while mitigating the stress and strain on joints. “Athletes can still train but we can unload the joints,” says Greg. “It’s also a fall-free zone, so, for example, someone

with Parkinson’s can work on their gait and weight-bearing status. We can start at 50 to 65 percent of weight, but I’ve started someone at 30 percent. He had nerve damage and that’s where we needed to start.” This is where the clear walls of the vacuum-sealed bubble come in handy. Physical therapists can watch their patient’s gait and stride from all angles, record the exercise if necessary, and make adjustments as the program unfolds over time. From a slow-and-steady walk to sprinting, the AtlerG is entirely customizable and adjusts to whatever the patient needs, from 100 percent weight bearing all the way down to 20 percent. For example, someone who weighs 200 pounds might feel as light as 40 pounds during a walk or run on the treadmill. The cardiovascular benefits are still there, as is the stabilization, but pressure on the joints is significantly less. Finally, Tennessee is a Direct Access state for physical therapy, which means you don’t need a doctor’s referral to see if the AlterG Anti-Gravity Treadmill would benefit you. Sunsphere Between May 1 and October 31, 1982, Knoxville’s World’s Fair attracted 11 million visitors in its six-month run. Nothing embodied the Fair’s theme “Energy Turns the World” more than the iconic Sunsphere designed by Knoxville’s own Community Tectonics Architects. Visitors could ride the elevator up the 266-foot-tall structure to a restaurant with a 360-degree view of the Fair grounds and, to the south, the Great Smoky Mountains. Another way to enjoy the view and get around the Fair was to take the elevated Chair Lift or Gondola. This spring, numerous organizations will host public events to celebrate the Fair’s 40th anniversary. The Knoxville History Project will document the history of the spectacle and maybe help us understand its lasting impact. Shared by Gary McMahon.

China Pavilion The People’s Republic of China’s first-ever World’s Fair pavilion was the Knoxville’s Fair’s most popular with long lines forming every day as soon as the Fair opened. Visitors were treated to a cultural display including the famous ancient terracotta warriors, bricks from the Great Wall of China, and artists, including one who painted delicate designs on the inside of miniature bottles. Other countries promised their own spectacles: Japan had its painting robot, Peru displayed an ancient mummy, controversially unwrapped during the Fair, Hungary had a giant Rubik’s cube (that year’s most popular toy), while Great Britain claimed to have Princess Diana’s own Mini Metro automobile, which she drove before the royal wedding just the year before. State of Tennessee Amphitheatre Still standing today, the “futuristic” State of Tennessee Amphitheatre provided seating for almost 1,500 spectators, and its open-sided feature allowed thousands more to watch from around the Fair site. The building is a rare architectural landmark, noted for its 76-foot peaks of tensile fabric, an early design by globally renowned German modernist engineer Horst Berger— but some wags preferred to call it “Dolly’s Bra.” Well-known entertainers who performed at the amphitheater included Richie Havens, Leon Redbone, the Warsaw Philharmonic, the young Ricky Skaggs, and, every day, the musical Sing Tennessee troupe. Folklife Festival According to the Official Guidebook, every week the Folklife Festival, located at the most northern edge of the World’s Fair, promised “a new cast of musicians, dancers, craftspeople, storytellers, and moonshine makers” to showcase the many sides of Appalachian culture. Among the many demonstrations by basket makers, quilters, and blacksmiths, was a folk-art sculpture garden and a working moonshine still. Here, Tennessee musician and storyteller Hamper McBee offered visitors a whiff of something else he excelled in: moonshine. Several now-legendary blues and country musicians performed here. Advice from Aardvark Family Services

When Dr. Brenda Ponsford founded Aardvark Family Services in 2020, the primary goal was to create a safe, nurturing, and neutral space where non-custodial parents could visit their children in meaningful, productive ways. Improving the parent-child relationship is always the desired result, and there are few key guidelines that can help nudge families in the right direction.

NO GROWN-UP TALK AROUND THE KIDS “We try to be empathetic and acknowledge how stressful things are, so we convey expectations and have requirements for participation. One of those requirements is no grown-up talk around the kids,” says Dr. Ponsford. “No legal stuff, financial stuff, nor romantic dating relationships. No speaking negatively about the other parent. We aren’t the setting for that. Ultimately, we care about the well-being of the child. We hope to provide an environment where the non-custodial parent can be productive.” This means keeping the heavy topics at bay. In a situation that is already stressful, it’s important to mitigate compounding the stress with comments and conversation that is above the child’s understanding and/or makes the visitation untenable.

SET AND KEEP APPROPRIATE BOUNDARIES Building trust is crucial when repairing the parent-child relationship, and that means even the smallest attempt at manipulation can erode progress. Dr. Ponsford says that setting boundaries improves mutual respect. “We call out inappropriate behavior,” says Dr. Ponsford. “We don’t allow manipulation. We’re there to have a good visit and help the parent and child develop a healthy relationship.”

NURTURE AND REINFORCE THE FAMILY RELATIONSHIP With family reunification in sight, it’s important to celebrate every step parents take in the right direction and encourage them along the way. The professionals at Aardvark Family Services do not involve themselves in legal or therapeutic matters, but they are quick to refer families to specialists, to encourage follow-up phone calls, and encourage parents to be actively involved in all areas of their child’s well-being. They even help new parents hone their own instincts when it comes to child care and development. “As members of the the Supervised Visitation Network, we used their training materials. We’re educated in child development, which is helpful when two parents have different ideas about what age and stage certain things happen. So, we’ve done simple things such as helping new parents learn how to change diapers, or teaching new parents how to identify when a child needs another bottle,” she says. “We aren’t giving parenting classes here, but we often have parents ask us how to do certain things, like a dad and teenager whose conversations often stall. We try to come up with topics that everyone thinks is interesting to get them talking to one another. These are small baby steps to reinforce the family relationship.”

BUSINESS NAME: Meik Meals OWNER: Femeika Elliott (She prefers to go by Meik) WHAT DRIVES YOUR WORK, AND HOW DOES IT HELP OUR COMMUNITY? I love food, and I’m in love with food education. With food education, the nutritional aspect comes with it. Still, I find the fun in exploring alternatives to our typical American foods. Being a conscious eater while bringing awareness to my community and digital platform is my "Why"— transforming lives through good healthy food one taste bud at a time. I bring my background in plant-based cuisine curation, herbalism, and holistic wellness to curate this safe space for our community. Meik Meals is an experience, and we love to see our community members have excitement and be inquisitive about plant-based alternatives. I believe this assists our community with food liberation and self-sufficiency with the knowledge that is provided. I’m here to play my part— part of that is to start a food revolution through plant-based eating.

We promote a healthy lifestyle of clean, affordable, and flavorful meal preparation believing in the freedom of choice by providing customized meal plans to meet our clients’ desires. We now operate as a plant-based company. We offer digital services such as holistic health consultations, meal preparation 101, and creative meal planning sessions. In addition to our digital services, we host pop-ups, markets, and curate specialty community events.

Cooking has always been a way of life for me, but in 2019 something sparked— alchemy and creativity. Meik Meals is not just a space for vegans or plantbased but a space for the community. HOW DOES IT WORK? Currently, we are no longer offering meal preparation to the general public as we launched a muchneeded service for mothers postpartum called the Lotus Program. In the spring and summer months, we host pop-ups and vend at the local farmer markets for those that need a quick plant-based bite. For our pop-ups and markets, we do have the Meik Meals Mobile App that launched this year— it is available in the Apple Store & Google Play. We conduct most of our educational programs online through digital platforms. Instagram is always a must as reels and pictures are extremely helpful! We love when our community books speaking engagements, as we love educating community members on the various health foods/groups. Awareness is everything! We operate out of Real Good Kitchen (RGK) off East Magnolia Avenue in Knoxville.

Southern Comfort Food from Chef Jeff Carte r Executive Chef Jeff Carter has spent most of his professional career in the foothills of the Great Smoky Mountains, honing his skills in Appalachian cuisine, but his roots are well-set in the coastal Creole, NOLA-style flavors of the gulf region. This Mobile, Alabama native enjoys the kick of just enough heat, so when he says there are no sausage substitutions for his family’s Turnip Green Soup, he means it. (Conecuh or bust.) Currently the Executive Chef at Dancing Bear Appalachian Bistro in Townsend, Jeff understands what it takes to build a farm-to-table menu with locally-sourced ingredients, full of flavor and style. But as a father of five, he also understands when you need a big meal, quick and easy, to satisfy a hungry crowd. There are two versions of the Turnip Green Soup - one with easy items off the grocery shelf, the other with fresh, from-scratch ingredients.

TWO VERSIONS OF TURNIP GREEN SOUP WITH CONECUH SAUSAGE

TURNIP GREEN SOUP WITH CONECUH SAUSAGE AND CORNBRE AD CORNBREAD INGREDIENTS • 2 cups stone ground yellow cornmeal • 1 Tbsp sugar • 1 tsp salt • 1 tsp baking powder • 1 tsp baking soda • 1 egg • 1 ¾ cups buttermilk • ¼ lb unsalted butter, melted • 2 Tbsp bacon fat or oil

DIRECTIONS 1. Place a 9-inch cast iron skillet in a preheated 425-degree oven while making the batter. 2. Mix dry ingredients in a bowl; mix egg and buttermilk in a separate bowl. Combine the wet with the dry ingredients, then stir in melted butter. 3. Pull the pan out of the oven and add the 2 Tbsp of bacon fat or oil into the pan and swirl around. Pour in batter. Reduce oven to 375 degrees and bake cornbread on middle rack for 15-20 minutes or until set.

TURNIP GREEN SOUP (Q U I C K V E R S I O N ) INGREDIENTS • 2 bags (14 oz) frozen turnip greens with diced turnips • 1 medium onion, diced • 2 Tbsp olive oil • 1 lb Conecuh sausage, cut into bite size pieces (no substitutions) • 4-5 cups chicken stock • 2 cans (15.5 oz) great northern beans, drained and rinsed • 1 pack (1.4 oz) Knorrs vegetable soup mix

DIRECTIONS 1. In a 5 or 6 quart Dutch oven, sweat onion in olive oil for 2-3 minutes. Add Conecuh sausage and cook for an additional 1-2 minutes, then add the rest of the ingredients. 2. Bring to a simmer, then turn the heat down to low and cover. Let the stew simmer for a couple hours on very low heat. 3. Serve with cornbread, hot sauce, and chow chow. CHEF’S NOTE: This is a family recipe that is ideal for busy weekends or weekdays that does not take a lot of time in the kitchen. Throw everything in a pot and let it simmer for a while.

INGREDIENTS • 2 lbs fresh turnip greens with turnips • 1 medium onion, small diced • 1 red bell pepper, small diced • 1 medium carrot, peeled and small diced • 4 garlic cloves, minced • 2 Tbsp olive oil • 1 lb Conecuh sausage, cut into bite size pieces (no substitutions) • 4-5 cups chicken stock, preferably homemade • 2 cans (15.5 oz) great northern beans, drained and rinsed • 1-2 Tbsp salt • 1 Tbsp soy sauce • 2 Tbsp cider vinegar • 1 tsp black pepper • 1 tsp red pepper flakes • 2-3 bay leaves

DIRECTIONS 1. Wash and chop the turnip greens and set aside. Peel and small dice the turnips and set aside. 2. In a 5 or 6-quart Dutch oven, sweat onion, pepper and carrot in olive oil for 2-3 minutes. Add the garlic and cook for an additional minute, then add Conecuh sausage and cook for 1-2 more minutes. 3. Add the rest of the ingredients and bring to a simmer, then turn the heat down to low and cover. Let the stew simmer for a couple hours on very low heat. 4. Check seasoning and serve with cornbread, hot sauce, and chow chow.

CHOW CHOW INGREDIENTS • 1 head napa cabbage, quartered, cored removed and sliced thin • 2 red bell peppers, small diced and seeded • 2 green bell peppers, small diced and seeded • 2 jalapeños, small diced and seeded • 1 green tomato, small diced • 6 cloves garlic, minced • 1 onion, small diced • 2 cups cider vinegar • 1 ½ cups brown sugar • 1 tsp turmeric • 1 tsp ground ginger • 1 Tbsp salt • 1 Tbsp red pepper flakes

DIRECTIONS 1. Place all ingredients except napa cabbage in a medium sauce pot and cook until tender, about 20 minutes. 2. Add napa cabbage and cook for 10 more minutes, or until cabbage is soft. Yield about 3 quarts

Senior Year Stress Advice for Parents and Students Headed Towards High School Graduation ARTICLE BY ANNA GRAHAM

It’s hard to believe that four months from now the Class of 2022 will be walking across the stage to receive their high school diplomas. Doesn’t it seem like only yesterday we were packing their lunches and walking them into kindergarten for their very first day of school? How can they possibly be old enough to be graduating from high school? The spring semester of a graduation year is both a tender and anxious time for students and parents alike. Some students will be staying in the area to enroll in a community college or nearby university, either packing up and moving into the dorm or perhaps continuing to live at home. Others are moving halfway across the country to begin their college careers. Some of our seniors are entering the workforce. To help prepare for the big changes coming, here is what to expect in the coming months:

WHO WILL YOUR SENIOR REACH OUT TO IF THEY ARE HAVING ACADEMIC OR TIME MANAGEMENT CHALLENGES WHILE AT COLLEGE?

IS YOUR SENIOR STILL ON THE FENCE ABOUT WHERE TO ENROLL IN THE FALL?

Parents, buckle up, because you are now transitioning from the traditional parent role to the parenting coach/ consultant role. There may be times your child asks you a question, but remember to ask yourself: do they want you to solve their problems or do they just want a sounding board? How will that conversation look? If you’re like me, you’ll want to take away any problem they have. That’s the natural tendency of parenting; press pause and give them time to problem solve. Recently I was talking with a group of parents of college aged kids, and we all remarked that as the years pass, parenting has gotten tougher, not easier. But remember, as our seniors leave the nest, this is their time to learn and grow from their mistakes. Take a deep breath, count to three, and remember: you did it, and they can too! If so, consider visiting colleges one more time before you send in the enrollment deposit or register for classes. Parents, you may be thinking “not again!” but this next step in life is a really big deal, as the monetary outlay (even if your student is receiving scholarships) is similar to a car purchase. When you bought a car, you did your research, kicked the tires, and took the car for a test drive, so take that college for a test drive one more time before your student makes their final decision.

And remember, they WILL have challenges. Do they know how to write a professional email? Do they currently use a calendar to organize their activities, either on their phone or a paper planner? When they are in college, be it around the corner or hundreds of miles away, they are in charge of planning their days and activities. Talk with them now about how tough it can be to make time for multiple activities and emphasize how important it is to eat right, exercise, and sleep.

MP: WHAT WOULD YOU CONSIDER TO BE AN ESTATE PLAN? JE: A basic estate plan should include a last will and testament, a financial power of attorney, and a health care advance directive. These documents direct the distribution and settlement of your estate and who you select to speak on your behalf regarding financial matters and important medical decisions. An estate planning attorney can assess whether a trust would be appropriate for a client's needs and goals. The attorney can guide the client through selecting the appropriate types of trusts to implement in the client's estate plan. Business ownership or partnership interests, home ownership, and minor children are just a few of the considerations that an attorney will evaluate when guiding a client in creating the estate plan.

YOU EITHER HAVE ALL OF THEM OR NONE OF THEM In 1943, an American psychologist named Abraham Maslow authored a paper titled “A Theory of Human Motivation” and introduced an idea that would forever change how we view and assess our development as individuals. Today, that idea is commonly known as Maslow’s Hierarchy of Needs, a five-tier model of human needs—physiological needs (e.g., food and shelter), safety needs (e.g., physical and financial security), belongingness needs (e.g., interpersonal relationships and connectedness), esteem needs (e.g., self-respect and respect from others), and, representing the top of the hierarchy, self-actualization needs (e.g., personal growth and fulfillment). Maslow believed that each tier was independent of the other and that a person could not satisfy the needs of a particular tier without first satisfying the needs of the tier below it. For example, a person couldn’t adequately address his or her belongingness needs before

his or her safety needs. However, like many ideas in the fields of health and science, the interpretation of Maslow’s hierarchy has changed over time. Many now believe the tiers are interconnected, meaning a person at a lower point in the hierarchy can still be impacted by higher tiers if those needs are neglected. For instance, a person’s journey to becoming financially secure could be more difficult without the proper relationships with friends and family and the encouragement and support that come with them. As financial advisors, our focus is helping people live their best financial lives, but there’s much more to a person’s financial life than the dollars and cents. One’s relationships, sense of security, health, and more play just as big of a role. That’s why going through the financial planning process and crafting a financial plan tailored to you is so important. It places just as much emphasis on the qualitative, like your values, as it does on the quantitative. Do you want to spend more time with the people you care about? Do you want to ensure your lifestyle is protected? Do you want to improve your health? A financial plan can help you do all of that and more. Most people aren’t concerned with money for money’s sake. They’re concerned with money because of what it enables them to do, the freedom it provides. As Morgan Housel wrote in his book, The Psychology of Money, “Use money to gain control over your time, because not having control of your time is such a powerful and universal drag on happiness. The ability to do what you want, when you want, with who you want, for as long as you want to, pays the highest dividend that exists in finance.” As you begin this new year, take some time, either by yourself or with a financial advisor, to reflect on how your financial life affects other areas of your life and vice versa.
