FINDING HARMONY

The first thing Mollie remembers about music isn’t a performance or a lesson, it’s a feeling. A melody drifting through a crowded house. The instinct to stop, listen, and try to recreate what she was hearing before the moment slipped away.

“I love music,” Mollie says. “I love how it makes me feel and the things that we can express and share through it. It’s such a collaborative effort, and music has been a place of community for me.”

That instinct has guided Mollie through every stage of her life. It has shifted forms, added instruments, and expanded into new roles, but it has always been a place of belonging, expression, and healing.

When Molly began writing songs in Australia, it was just the beginning. She started exploring it more seriously once she moved back to Texas and knew from then on that she wanted to pursue performing and share her songs.

A CHILDHOOD SHAPED BY SOUND

Mollie’s musical journey began early, shaped by parents who noticed her excitement and encouraged it. She started piano lessons at around age nine, with a neighbor who played piano next door.

As she grew, her relationship with music deepened. Influences arrived in fleeting but powerful moments that felt like snapshots. One of the most vivid memories occurred during a Christmas party her parents hosted. Passing through the kitchen, she heard a cover of Joni Mitchell’s “River,” and the melody stuck in her mind.

“I spent the rest of the night trying to mimic it,” she recalls.

That moment planted a seed. So did later discoveries of artists like Bonnie Raitt, Mavis Staples, Sarah Vaughn, John Prine, Susan Tedeschi, and Holly Arrowsmith.

CLASSICAL ROOTS

Mollie’s formal training leaned heavily toward classical at first. Traditional piano lessons naturally led to school band programs, where she found a sense of community that would stay with her long after graduation. “Music became a safe place to express myself and belong,” she says.

From middle school through her first year of college, Mollie immersed herself in classical music, adding the flute to her repertoire, an instrument she still plays today. Inspired by influential music teachers, she enrolled at Texas Christian University with plans to pursue music education.

“I wanted to give back to music communities because of what was given to me,” Mollie shares. I worked as a music teacher for about four years while I was finishing my undergraduate degree and was beginning to perform around the area. I don’t currently work as a music teacher, but my love and passion for teaching remain.”

FINDING HER VOICE ABROAD

After taking a gap semester during undergrad, she joined a nonprofit and spent three years living and working in Toowoomba, Australia. It was during this season that her relationship with music shifted profoundly.

For the first time, Mollie encountered artists using music as a tool for personal storytelling. “I saw a side of music I hadn’t seen before,” she says. Around the age of 20, she began singing seriously, picked up a guitar, and started writing her own songs.

Songwriting unlocked something unexpected. It allowed Mollie to merge her love of writing with music, creating space for reflection, honesty, and emotional processing.

When Mollie returned to the U.S. in 2020 during the pandemic, she completed her undergraduate degree, carrying with her a new creative identity rooted in songwriting.

MELODY FIRST: INSIDE THE CREATIVE PROCESS

Mollie’s songwriting process is distinctly melodic, reflecting her instrumental background. “The melody usually comes first,” she explains. From there, lyrics and structure fall into place, shaped by whatever emotion or question she’s working through at the time.

For Mollie, songwriting is a way to make sense of the world. It’s a space to unravel experiences that don’t yet have clear answers, to sit with complicated emotions and give them somewhere to land.

Based in Fort Worth, Mollie draws energy from the city’s vibrant creative community. Collaboration plays a central

role in her work, and she values the shared language that emerges when artists come together to create something larger than themselves.

SUNSHINE GIRL

Recently, Mollie released her EP Sunshine Girl on Bandcamp, a milestone that marked both creative fulfillment and practical growth. The project gave her firsthand experience with digital distribution and the business side of releasing music. She has also produced physical CDs and is planning to release alternative versions of the songs in the coming year.

With the EP complete, Mollie is excited to carry these songs beyond her home base. She has spent the past few years performing locally and will perform at the Fort Worth Stock Show & Rodeo, with plans to tour several cities across the country.

Traveling with these songs, she says, feels like the natural next chapter.

WHERE MUSIC AND MENTAL HEALTH MEET

Alongside her artistic work, Mollie is pursuing a master’s degree in clinical mental health counseling and working toward becoming a Licensed Professional Counselor. Her interest in counseling grew out of her desire to help people navigate life’s complexities with care and compassion.

In the future, she hopes to work specifically with musicians and performers, people who understand the vulnerability of being on stage and the emotional weight that often comes with creative work. “I go through it too,” Mollie says. “I’m always collecting data points, trying to find equilibrium.”

For Mollie, music and mental health are deeply connected; both are tools for understanding, healing, and connection.

A HOPEFUL SOUNDTRACK

When asked how she hopes listeners feel when they hear her music, Mollie doesn’t hesitate. “Hopeful,” she says. Through melody-driven songwriting and unflinching honesty, Mollie offers more than music; she provides a place to land. Her songs welcome emotion, invite curiosity, and remind listeners that harmony isn’t something we arrive at once, but something we return to again and again, even when life remains unresolved.

The Legend of Luna, which uses lighting effects, video, sound, and even a flurry of snow to truly immerse our guests in this enchanting tale,” explains a resort spokesperson.

If the kids are dying to hit the slides, it’s an easy trek from your room to the bottom level. Aside from the expanded arcade and the new-and-improved Hungry Wolf Food Hall, this is where you’ll gain access to the 84,000 square-foot waterpark. Have toddlers along on your staycation? Hit Cub Paw Pool or Whooping Hollow, where the slides are just right, and the zero-depth entry is perfect for the tiniest guests.

If you’ve got grade-schoolers, teens, or adults who can’t get enough waterslide fun, thrilling rides like Coyote Canyon, Totem Towers, Alberta Falls, and River Canyon Run will keep them busy until it’s time to relax for a few trips down the Crooked Creek or brave the waves in Slap Tail Pond.

One of the things I’ve always loved about Great Wolf Lodge is how much else there is to do aside from the waterpark. MagiQuest is just one of the incredibly popular attractions at the resort, and the interactive adventure has been revamped with a whole new challenge! The game has been shortened from its original length, giving players of all ages a chance to complete the tasks, master the runes, unlock the treasure chest, and become a Master Magi.  Other new attractions include Virtual Frontier, where families can walk with dinosaurs and participate in interactive games; the fully immersive Laser Trail game, where players find themselves in the animated world of the Great Wolf Pack; Ten Paw Alley, a mini bowling alley, and Grounds by Topgolf, a family gaming den that features the classic Topgolf virtual golf games, but also Zombie Dodgeball and Hockey Shots, all played from the comfort of relaxing Adirondack chairs and cozy couches.

You won’t go hungry at Great Wolf Lodge. The popular buffet restaurant, Timbers Table & Kitchen, on the main floor, has been renovated, and what once was an outdoor patio space has been enclosed, reducing wait time significantly. All the family-style comforting dishes are still available for breakfast, lunch, and dinner.

Fireside Grill, a sit-down restaurant on the fourth floor, is a new addition to the Great Wolf Lodge dining options: the onion rings and steak frites are a must, and the jumbo chocolate-dipped ice cream cookie tower is hard to resist.

On the bottom level, you’ll find Pretzelmaker, Hot Dog on a Stick, FatBurger, and Wood’s End Creamery, the perfect places to find a savory snack like mini pretzel dogs and French fries or a sweet treat, whether that be a milkshake or a sundae.

ACADEMY 4 PROGRAMS REACH BEYOND STUDENTS TO IMPACT THE COMMUNITY

At Academy 4, the mission is simple. “We change lives through relationships. Studies show that positive relationships with adults are perhaps the single most important ingredient in promoting positive student development,” shares Tameya Robinson, Strategic Communications Director at Academy 4. “Building relationships is at the heart of everything we do because we understand the power of a relationship and how much it impacts the whole person.”

The organization’s signature program, Academy 4, utilizes adult volunteer mentors who meet one-on-one with fourth grade students in Title I schools for 90 minutes once a month. “Mentors and students

spend that time talking about leadership skills, talking about their lives, and building meaningful relationships,” says Tameya. “They also do activities and play games during the hang time.”

Volunteer mentors are trained and follow a structured curriculum complete with activities and conversation prompts so that mentors do not have to plan how to fill the time. All schools and students follow the same curriculum, which focuses on positive character traits, so the topics are the same across the board.

On mentorship days, students also attend two 30-minute Spark Club meetings before meeting with their mentor. These clubs are a fun and creative outlet for students to focus on hobbies such as cooking, dancing, and music.

Once students move on to fifth grade and have completed the Academy 4 program, they can participate in Leaders 5. This next step program allows fifth graders to mentor younger students in first grade or kindergarten in a structured, adult-supervised environment. Parents also benefit from

Academy 4, through the 4Families program, which provides parents with the opportunity to participate in a six-week program to equip them with parenting resources that not only helps their students, but the community in general.

One common question is why the organization focuses on students in the fourth grade. “We noticed through research that fourth grade is the perfect time to catch children’s attention, help them mold and shape themselves into leaders, and help them make a connection between how

they see themselves as fourth graders and the leadership skills they can build on,” explains Tameya. “Fourth graders are still receptive to the impact of positive adults and in fourth grade, their thinking goes from concrete to abstract so they can finally understand a concept like leadership. They are also becoming more individualistic, no longer just adopting behavioral norms of their parents and teachers but really starting to become who they want to be. The ages of nine and ten are also when the students’ ethics, values, and morals are really being shaped.”

Students, and in turn the schools and greater community, experience a wide range of benefits from participating in the Academy 4 programs. “Measurable impacts on students include academic motivation, social and emotional skill development, responsibility, and reduced high-risk behavior,” says Tameya. “The schools that we serve are Title I schools, meaning that many of the students face disadvantages and challenges in everyday life. By providing them with a one-on-one positive adult relationship, we

see improvement in a greater sense of selfworth, better school attendance, a decline in disciplinary action, and improved classroom behavior.”

Having an adult mentor also points the students to positive adult influences in the community and helps them realize that they too can be a positive influence on someone else.

Because of the support of donors and volunteers, during the 2025-2026 school year, Academy 4 is working with 60 schools and impacting the lives of over 13,000 students. “The work we do at Academy 4 goes beyond what we do with the students,” shares Tameya. “This full-circle program starts with the students but builds relationships with parents and families as well, which ultimately impacts the community.”

SHELBY WHITFIELD OF MODERN MENAGERIE

A FOUNDATION BUILT ON EXPERIENCE

Shelby Whitfield, owner and principal designer of Modern Menagerie, has built a design practice rooted in intention and collaboration. Based in Fort Worth, her full-service interior design studio helps clients create homes that feel personal, thoughtful, and enduring—spaces that reflect not only beauty, but the way people truly live.

Originally launched as a design blog to continue her education, the project has since evolved into a robust studio offering everything from online consultations to large-scale renovations and new construction. During the COVID-19 pandemic, Shelby’s online services gained traction. That momentum eventually led to the full-service studio Modern Menagerie is known for today, partnering closely with clients to craft intentional moments throughout their homes.

Growing up, Shelby spent time watching HGTV with her grandmother, an experience she credits with sparking her curiosity about interiors and architecture. “I always knew I wanted to be a designer,” she says. “I went to school for interior design, and I’ve learned so much from the fantastic designers I’ve worked for,” Shelby shares. A pivotal shift came after the birth of her son, when her previous company relocated to Dallas. Rather than make the move, Shelby decided it was time to step out on her own. The design blog she launched during the pandemic became both a creative outlet and a foundation for what would come next.

A PERSPECTIVE SHAPED BY PLACE

Shelby’s design sensibility is deeply influenced by her lived experiences. “I’ve grown up in a lot of places,” she explains. She spent time living in Berlin, where she developed a strong appreciation for modern architecture and clean lines, and later attended school on the East Coast, gaining exposure to more traditional and classical design approaches. Those varied influences now inform her work, allowing her to blend timeless architectural elements with contemporary updates in a way that feels fresh yet grounded.

FROM CONCEPT TO COMPLETION

Today, Shelby’s work spans large-scale renovations and new construction projects. She often joins clients at the very beginning of the process, working alongside architects and builders from the earliest planning stages. “I help with material selection—flooring, cabinetry, countertops—and I work closely with builders throughout the project,” she explains. “I’m onsite every week, checking in so the client doesn’t have to.” This hands-on involvement ensures continuity, minimizes stress, and allows Shelby to maintain the design integrity from start to finish.

In addition to architectural and construction-focused work, Modern Menagerie also offers custom furniture and finishing services, allowing clients to move into fully completed, turnkey homes. “I coordinate movers, order linens, silverware, towels, whatever clients need,” Shelby says. “We can do as much or as little as they’d like before they move in.” That flexibility has made her services especially appealing to busy families and clients managing complex projects.

A SPACE FOR EVERY GENERATION

One recent project that exemplifies Shelby’s approach is a custom-designed playroom space in Dallas. The client wanted a space where her grandchildren could play freely while also offering a comfortable environment for adults to gather, watch a game, and spend time together. “She wanted something that worked for everyone,” Shelby explains, an inviting, multifunctional space that balanced fun with sophistication.

After an initial walkthrough, Shelby carefully observed the home and the client’s existing art collection, allowing those elements to inform the project's direction. “When I do a walkthrough, I really let the house do more of the talking,” she says. “I look for inspiration in every corner.” That philosophy guided her toward a design that felt accessible to children while still aligning with the home’s overall aesthetic.

Shelby returned to the client with a comprehensive presentation, complete with fabric and stone samples, furniture selections, and layout drawings. For Rebecca Slemmons, owning and operating Prime Life Pilates & Fitness Studio was a continuation of a career already focused on helping people live a healthy lifestyle. “My career started in cardiac and pulmonary rehab and has spanned the entire array of health and wellness arenas: medical, corporate, nonprofit (YMCA) and private clubs. This experience has helped me prepare me for owning my own business,” explains Rebecca. “I was laid off from my last position and struggled to find my next career adventure.  At 50 years old, it’s tough! Through a completely random connection of strangers, I found this studio. I met the owner on Monday and bought the studio on Friday!”

Rebecca’s goal is to provide clients with a variety of resources they need for their wellness journey under one roof as well as create a welcoming and inclusive atmosphere where clients can feel comfortable. “My idea when I bought the studio was to set myself apart by offering a one-stop shop for health and wellness,” she says.

“It gets expensive and time-consuming to find all the different gyms, studios and health practitioner offices that people need.”

Prime Life offers a variety of classes that include reformer and mat Pilates, yoga, strength and conditioning, stretch and mobility, Pilates suspension, and private training. Through partnerships with other local professionals, studio members also benefit from access to physical therapy, nutrition counseling and meal planning, aesthetic services, and massage.

When it comes to Pilates, Rebecca explains that it is so much more than low impact stretching. “Pilates work helps clients to focus on core stability and back strength, improved posture, mental clarity and focus, breath work and stress relief,” she says. “Many of my clients are sent to me by their physician or physical therapist. We also have members with knee/hip/shoulder replacements, various injuries, scoliosis, and who are prenatal/ postpartum. Pilates is for all ages, abilities, and genders.”

One of the things Rebecca loves most about being in the studio is hearing client success stories. “Believe it or not, my favorite stories aren’t about weight loss,” she shares. “It’s when people are able to move freely with little to no pain, pick up grandkids, make new friends, and connect with other members to participate in social group activities like pickleball.”

CHOCOLATE and WINE

The Key to a Successful Wine and Chocolate Pairing Lies in Finding the Right Combination of Flavors and Characteristics.

Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another.

Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste.

For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue.

While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa.

Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with.

We’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

TIP 1: MATCH SUGAR WITH SUGAR

When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.

TIP 2: MATCH INTENSITY WITH INTENSITY

If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.

TIP 3: PAIR FLAVORS WITH FLAVORS

Wine and chocolate both carry their own intense flavors. If the chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

A NOTE ON SERVING WINE AND CHOCOLATE FLIGHTS:

Just as you would with any other tasting, it’s best to start with light chocolates and wines, increasing the intensity as you go along. Start with white chocolates and light wines and save the richest, dark chocolates and wines for last. By doing this, you will keep your palate from starting out too strong and missing out on the subtle sensations found in more delicate chocolate and wine selections.

CREATING THE PERFECT PAIR

DARK CHOCOLATE

Bitter to semi-sweet dark chocolates, that are 50 to 100% cacao, have intense, bitter flavors, and earthy to fruity undertones. Match the intensity without adding more dryness by pairing these chocolates with full-bodied, yet fruit-forward wines.

Pairs well with:

Cabernet Sauvignon, Pinot Noir, Port, Merlot, Shiraz, Barolo

MILK CHOCOLATE

Milk chocolate is typically creamier and sweeter with flavors of brown sugar, vanilla, and cream. It requires a wine that is light to medium in body, with a ripe fruit character.

Pairs well with:

Pinot Noir, Merlot, Sweet Riesling, Ice-Style Wine

WHITE CHOCOLATE

White chocolate has a sweet, buttery flavor with notes of cream and honey. Sweet white and rosè wines help cleanse the palate of the rich flavors from white chocolate, as does sparkling spumante like Moscato d’Asti.

Pairs well with: Sweet Riesling, Moscato, Semi-Dry Sparkling Whites, Gewurztraminer

AN ALPINE ESCAPE

In Switzerland’s Valais region, wellness and adventure are always part of the same itinerary. A CAR-FREE ALPINE ADVENTURE IN ALETSCH ARENA

An easy train ride from Zurich lands visitors in the Aletsch Arena, a high-alpine region on the south side of the Bernese Alps, home to three villages: Riederalp, Bettmeralp, and Fiescheralp. Known for its ski slopes in winter and hiking in summer, the area is entirely car-free, making walking and local buses the main modes of transportation through its quaint chalet-lined streets.

One of the main attractions of the ski-in/ski-out area is the Aletsch Glacier, the longest glacier in the Alps. A UNESCO World Heritage Site, the 12-mile glacier is visible from several vantage points, shaping every experience in the area.

WHERE TO STAY

Located in the heart of Bettmeralp, Hotel Panorama provides no-fuss accommodations steps away from the picturesque Chapel Maria Zum Schnee. The hotel’s restaurant offers delicious regional cuisine, including raclette paired with Swiss wine. A good bottle of Pinot Noir or Gamay is also easy to come by because the Valais region of Switzerland is one of the largest wine-producing areas in the country, with vineyards dotting the steep slopes of the Rhône Valley. In addition to wine and cheese, eating cholera, a covered vegetable pie invented in the region during the cholera epidemic, is a must.

Begin at Viewpoint Moosfluh, the closest and lowest vantage point of the Aletsch Glacier. From there, trailheads lead to Villa Cassel, once the home of a British financier and now a museum focused on history and conservation. The hike passes through a thousand-yearold forest with views of both the glacier and the Matterhorn.

Walk over Goms Bridge, a nearly 1,000-foot-long suspension bridge that connects two hiking areas over the Rhône River. For a final look at the majestic glacier, take the cable car to Viewpoint Eggishorn. At nearly 10,000 feet above sea level, it offers panoramic views of the Matterhorn, Mont Blanc, Jungfraujoch, or the “Top of Europe,” and the most comprehensive view of the Aletsch Glacier.

THERMAL WATERS AND MOUNTAIN VIEWS IN LEUKERBAD

After miles of hiking in the Aletsch Arena, it is time to relax and recharge in the mountain village of Leukerbad.

WHERE TO STAY

Hotel Restaurant Quellenhof Leukerbad is steps away from many of the area’s best thermal pools. The hotel also has a restaurant serving breakfast, lunch, and dinner with several regional specialties.

WHAT TO DO

Since the 1500s, the area has been a well-known destination for wellness and healing due to over 65 natural hot springs that

flow into the alpine village. Several public bathhouses welcome visitors year-round, including Leukerbad Therme, the largest thermal wellness resort in Europe. The family-friendly wellness center includes ten pools and a range of hot and cold plunge options. Walliser Alpentherme & Spa and Therme 51 also offer public access to the mineral-rich waters.

A hike through Dala Gorge provides beautiful mountain views while traversing a 2,000-foot suspension bridge over the Dala River. Hikers can also experience a 100-foot waterfall before the forested hiking trail leads back to Leukerbad.

The village is considered one of the most traditional and beautiful alpine settings in the country. It lacks the pretentiousness of Switzerland’s larger metropolitan areas and offers a storybook atmosphere with a friendly small-town feel. Walking through

No trip to Switzerland is complete without fondue. Dating back to the 17th and 18th centuries, fondue, which translates to “melt” in French, is a national dish consisting of a blend of Gruyere and Emmental cheeses. One of the oldest family-owned restaurants in Leukerbad, Restaurant Sternen offers traditional fondue along with a variety of mix-ins and dipping options. Pair the fondue with Valais wine for a celebratory meal. Restaurant Waldhaus is one of the most elevated restaurants in the village and is another family-run establishment offering a seasonal menu and over 70 different grappas to choose from.

HISTORY AND ALPS MEET IN MARTIGNY

A short train ride takes visitors to one of the largest cities in the Valais region of Switzerland. The city is a crossroads between Italy and France, with a history dating back to Roman times. Visitors can tour Roman ruins, including a well-preserved amphitheater, ancient settlements, and Roman baths.

WHERE TO STAY

WHAT TO DO

Take the steepest funicular in the world, the Mont-Blanc Express, on a scenic ascent through the Alps. The funicular connects to a smaller train that leads to the Trient Valley on the French-Swiss border, where, at the top, a full day of activity begins. Hiking, biking, zip-lining, or traversing the Emosson Dam, which straddles France and Switzerland, are all options. The crystal clear blue waters of Emosson Lake are perfect for a picnic or a break between adventures.

Back in Martigny, Barryland, the only theme park in the world dedicated to St. Bernard dogs, offers a look at the history of the dog, bred by monks in the 17th century for alpine rescue work. The Barry Foundation, founded in 2005, continues to preserve the breed and educate visitors about it. Guests can watch the dogs train, play, and interact as they learn about their role in the region.

Roman influence remains visible across the city, including at Les Bains Publics at Hotel Borsari, where visitors can soak in cement wine barrels located in the hotel’s spa. The baths sit on the site of a former wine tank factory and offer a circuit of hot and cold pools in a historically inspired, wine-colored setting.

WHAT YOU’LL NEED:

• 1.5 oz rosé

• 5 oz fresh grapefruit juice

• 5 oz simple syrup

• 1 egg white

• 3 oz bubbles (champagne or sparkling wine)

THE HOW-TO:

1. Pour the rosé, simple syrup, egg white, and grapefruit juice into an ice-filled shaker.

2. Shake vigorously for 10-15 seconds, until chilled.

3. Pour into a coupe glass using the strainer.

4. Top with champagne or sparkling wine.

5. Garnish with edible flowers and grapefruit peel.
