As summer begins to wind down and the start of school commences, the carefree days of slower morning routines and spending more time adventuring is exchanged for busier school and sport routines and schedules. The summers tend to progressively feel like they fly by the older we get, as do the years, but the simple pleasures of summer never get old. Although the routine of school for our children is often a welcome friend by the time August rolls around, it is generally a little bittersweet. Our August issue is dedicated to some of the best members of our community—kids and pets. They both have a way of making us feel good and their loyalty and sense of wonder is refreshing. In this issue, we highlight Casa Manana, an organiztion that helps kids and is making a difference in our community. We also wanted to share a few of our go-to spots to enjoy with kids and fur-kids. As summer comes to a close, we hope you are able to take a few moments to relax and spend time with the ones you love!

Fort Worth Country Day Breaks Ground on $3.5 Million Track & Turf Field Improvement Fort Worth Country Day (FWCD), the oldest co-ed college-preparatory school in Fort Worth, has broken ground on what many refer to as its most significant athletics improvement project in the school’s 59-year history. AT THE THEATER CASA MANANA IS SHAPING THE FUTURE OF THEATER WITH THEIR INCLUSIVE SUMMER CAMPS

Ask around Fort Worth about Casa Mañana and you’ll hear a slew of raving reviews. If you ask a Fort Worth Native, you might even hear about their second-grade field trip to the magical playhouse venue. Indeed, Casa Mañana is well established as a premiere live theater in Fort Worth’s cultural district. Since 1958, the dome has dazzled viewers with whimsical performances, but in the summer, Casa Mañana is happiest serving and inspiring the next generation of theater artists and technicians through their summer camps. So, while you may just think of Casa Manana as a theater house, the non-profit is deeply rooted in educating children. Monica Bermea, Director of Marketing for Casa Mañana, explains how their passion projects: Camp Casa, Camp Casa Junior, and All Abilities, are not only bringing children to the theater, but building a more confident, capable generation of Fort Worthians.

“The All Abilities Camp is very important to us because the opportunities we offer are otherwise very limited for special-care needs kiddos, so we are very proud that we’ve been able to hold these student's engagement for, up to, 10-15 years,” explains Bermea. Casa Manana holds classes year round at their Casa Manana Studios, located across the parking lot of the dome, but in the summer they host camps: Camp Casa, Camp Casa Junior, and the All Abilities camp. The programs are designed to fit each kid's personal goals and skill requirements, with a vast number of theater specialties to choose from. Camp Casa Junior is the shorter program, but it caters to all ages, the same as Camp Casa. “Camp Casa Junior is typically a week. Students will learn a show or theme, right now we are focusing on Disney villains as well as Madagascar,” says Bermea. The All Abilities camp caters specifically to 7-12 year old students, however the year round program accommodates all ages, and they see a lot of retention with these kids. Bermea believes students come back because of Casa Manana’s dedication to individual care, “if they need help with memory retainment, growing confidence or just plain old fun, there are different classes that will hone in on bringing out the best in that child, to help them grow individually, however they need.” To ensure students are able to continue growing with Casa Manana, Bermea explains that the camps and classes must remain accessible to everyone. “We work to make sure the doors stay open to everyone. We also offer scholarships for both camp and classes. Information and scholarship applications can be found on casamanana.org/education,” elaborates Bermea, “we see confidence and imagination develop at the theater every day, it brings kids out of their shells… And so we really try to cultivate a better community, where all shapes and sizes and backgrounds can afford this opportunity to come to the theater.”

SEMI-HOMEMADE ICECREAM SANDWICHES Upgrade store-bought cookies by decking them out with delicious ice cream pairings and toppings.

ingredients: • 12 store-bought cookies • 1 pint vanilla ice cream or flavor of your choice • Miniature chocolate chips, sprinkles, or chopped nuts

directions: 1. Top cookie with a scoop of ice cream. Top with another cookie; press down with the palm of your hand gently to ensure the cookie doesn’t break. 2. Roll sides of ice cream sandwich in chocolate chips, sprinkles or nuts. 3. Wrap in plastic. Freeze until serving.

NO-BAKE DESSERT BITES ingredients: • • • •

1- store-bought pound cake 1- Can of store-bought icing (I used buttercream) Berries Powered Sugar (optional)

directions: 1. Cut cake into squares or circles. I used a square cookie cutter. 2. Place icing in a ziplock. (see note) 3. Snip the tip off the corner of the bag to allow the frosting to be piped out. Be careful with how large you create the hole based on how you’d like to pipe out your frosting. Start small, you can always make it bigger. 4. Squeeze dollop of icing onto each cake bite 5. Top with berries 6. Dust with powdered sugar if desired NOTES: If you want to elevate the taste of store-bought icing, mix in a package of softened cream cheese or a stick of butter. MAKE-AHEAD ITALIAN PRESSED SANDWICHES These make-ahead sandwiches combine hearty ciabatta bread and are loaded with delicious Italian deli meats and cheese. This sandwich is impressive, tasty, and perfect for pool parties, picnics, and tailgates.

ingredients: • • • • • • • • • •

1 Ciabatta Baguette or loaf, cut in half horizontally 3 Tbsp butter 3 medium red peppers 3 cups arugula, spinach or mixed greens, rinsed and patted dry 1 ball of mozzarella, sliced thin 10 oz Assorted Italian deli meats, (I used Soppressata Salami, and Mortadella) Olive Oil Italian seasoning Salt and Pepper, to taste 1 tablespoon capers (optional)

directions: 1. To roast the red peppers: Set your pepper on your cooktop flame or grill. Cook until they are mostly black, turning as needed. Place the peppers in a plastic ziploc bag or papper bag and let sit for 15 minutes. Remove peppers from bag and peel off the blackened skin. Discard the skin and slice the peppers in to wide strips. Place in a bowl and drizzle with a bit of olive oil and sprinkle with salt and pepper. Add a tablespoon of capers if using. Set aside. (you can also roast peppers under your broiler) 2. To prepare the sandwiches: Butter each piece of ciabatta and sprinkle with salt and pepper. Butter will help prevent moisture from getting into the bread. 3. Place a generous layer of overlapping cold meats. Top with cooled roasted red pepper strips. 4. Tap dry your mozzarella slices with a paper towel. Top the red peppers with a layer of the mozzarella slices. Sprinkle generously with salt, pepper and Italian seasoning. Top with a generous layer of arugula. Top with top slice of ciabatta. 5. Wrap each sandwich tightly with plastic wrap and place on a platter or baking sheet. When all the sandwiches are prepared, place the platter in the refrigerator. Top with a heavy skillet or brick. (alternatively top with another baking sheet and place some large cans on top for the weight). 6. Refrigerate at least 6 hours or ideally, overnight. 7. When ready to serve, remove from plastic wrap. Slice into pieces using a serrated knife holding the sandwich in place while using a sawing motion.

NOTES: These sandwiches are endlessly customizable. Just use your imagination. Pesto and olive tapenade are great additions. See my video on how to make the sandwiches and wrapping tips. Lauren-Lane.com

WHAT IS A FAVORITE MOMENT OR FUNNY MEMORY WITH YOUR PET? We have other pets, but Gon is special because we fostered him from a tiny baby. Our family fosters baby cats from our local shelter that need to be bottle fed, we fostered Gon and his eight other brothers and sisters. Gon always wanted us to hold him and it felt like he chose us to be his forever family. To this day, he sleeps with us every night.

In her essay, Paulino explains how the scholarship will help her achieve her goals of becoming a physical therapist and to one day open her own dance studio. A lifelong dancer, starting at the age of 3, Paulino says that dancers can often push themselves to the max; by studying kinesiology/dance science at Texas A&M, she hopes to promote positive body movement, and minimize any possible injury to dancers at her own studio. Paulino explains that dance can also take a mental toll, detailing some mental struggles that she dealt with as well as a string of injuries that left her uncompetitive for a year. “It really brought me down, but I went to therapy and counseling, also I’m a Christian so I would read the bible. I would find verses that really spoke to me and lifted my spirits, so that eventually I found myself no longer identifying as a dancer but as a child of God” Paulino is remarkably resilient, and her experiences motivate her to change the way that her own studio will operate. “I want my studio to be a community of dancers who help each other out and lift one another up,” elaborates Paulino; a community similar to that of Perkins Orthodontics. “Dr. Spradley gave me braces when I was younger, and anytime I would go into the office I was greeted with a smile and my old nickname ‘Gigi.’ Hearing that nickname makes me so happy because only certain people call me that from my childhood. Usually, you dread going to the doctor but going to that office always made me so happy!” So many congratulations to Giovanna Paulino as she heads to College Station in the fall. It is clear that she is ready to tackle any challenges that come her way with wisdom and the full support of the Fort Worth community at large.
