As a mom, I know that I should never have a favorite child. I often think of this magazine as my third child (much to the dismay of my two sons) so I know that I should not choose a favorite issue of West Chester + Liberty Lifestyle, but I can’t help it. As someone who LOVES great food and genuinely enjoys cooking, our annual October Foodie issue is always my favorite. Over the years we’ve done a variety of focuses for this issue including fine dining, comfort foods and home cooking. But one angle we’ve never explored until now is healthy eating. So this year we debut our first issue focused on foods and recipes that are both delicious and healthy. Sometimes healthy eating gets a bad stigma, with visions of rice cakes and celery coming to mind when those frightful words are uttered. But inside this issue we show just how tasty and fulfilling healthy meals can be. Our cover story introduces Clean Eatz, the new West Chester business that offers well-balanced meals at their dine-in cafe as well as take-home meal plans prepared fresh on-site. We also celebrate the 10th anniversary of The Spicy Olive and owner Melanie Cedargren shares two delicious recipes using some of her signature olive oils and balsamic vinegars. Each spring I try to grow a garden, and by harvest time the only things still thriving are my fresh herbs. As we transition to fall, herbs can be easily grown inside too—even if you’re like me and can’t grow a thing (I even managed to kill a cactus once). On page 19 we share three easy ways to use fresh herbs in your cooking. So even if you’d rather curl up with a pizza than a salad, you’ll still find something to tempt your tastebuds inside our first healthy foods issue. We promise—none of our recipes include rice cakes or celery!

“Clean eating is not a diet—it’s a lifestyle,” Adam says, gesturing to their motto on the Café wall. An extensive menu awaits at Clean Eatz, a new eatery in West Chester. You might be surprised to see the variety of flavors and favorite dishes that count as nutritious, like Buffalo Mac and Cheese, BBQ Brisket or Chocolate Chip Waffles. There are no limits to their tasty dishes, made fresh and in-house. Clean Eatz makes it convenient and affordable to eat clean and nutritious, even on the go. Business owners Andrea and Adam Dobrozsi opened the doors at Voice of America Centre in West Chester last February. The husband-and-wife team delight in bringing quick and healthy meal options to the neighborhood. “We want to help the community by giving them something convenient and still nutritious,” explains Andrea. “You don’t have to sacrifice your everyday, fun meals. We make healthy tweaks to favorite foods, pizza, mac and cheese, burgers, by substituting healthier ingredients and keeping them properly portioned and macro-based.” With three ways to enjoy their meals, there’s something at Clean Eatz for everyone. The Café offers daily hours for ordering off the menu. Nutritious melts, build-a-bowl, flatbreads and smoothies are ready in minutes for dine-in or take-out. They have a kids’ menu that will please even the pickiest eaters and also offer catering. But Clean Eatz is so much more than just another restaurant. They provide a Grab ‘N’ Go station, where you’ll find hundreds of frozen prepared meals in both individual and family-size portions to take home. They take healthy eating even a step further by preparing made-to-order Weekly Meal Plans. Andrea explains, “Every week we come out with a new menu of six meals: five lunch or dinner, one breakfast and a pizza. Our customers submit an order online by Sunday at midnight and pick up their meals for the week on Sunday, Monday or Tuesday. There’s no subscription, no minimum order and no obligation to buy.” “You get lots of variety with the changing meal plan menu each week, paired with our rotating Grab ‘N’ Go’s,” Adam adds. “We also provide special options: extra protein, lowcarb and vegetarian to match your nutritional needs.” Customers rave about the delicious meals that are quick and easy to prepare with only 500-600 calories each. “Our meals are made fresh, right here in our kitchen,” Andrea says. “They are made to consume within 4-6 days or freeze for later.”

Andrea adds, “We opened this business as a supplement to leading active lifestyles. We advocate for health and wellness and now we are fueling your active goals with nutritious food. Fresh Herbs can take meals to the next level, adding more flavor, vitamins, antioxidants and color than their dried counterparts. They’re also easy to grow. Herbs can thrive in indoor containers under a grow light, then be transplanted outside in the spring. We offer three easy recipes for cooking with fresh herbs. If you don’t have a green thumb, they’re also available in the produce section of grocery stores.

G A R L IC HE R B B U T T E R This butter is incredibly versatile. Use on top of bread, popcorn, veggies, steaks, as a sandwich spread and more.

INGREDIENTS • ½ cup unsalted butter, softened to room temperature • 4 tablespoons fresh parsley leaves, chopped • 1 tablespoon fresh herb of choice (we suggest dill, basil or oregano) • 1 clove garlic, minced • 1 tablespoon fresh lemon juice • ½ teaspoon salt • Cracked pepper to taste

DIRECTIONS Add all ingredients in a food processor (or mix by hand in a bowl). Transfer butter mixture to parchment paper or plastic wrap. Cover butter tightly and roll into a log. Refrigerate until firm.

HERB S A LT Herb salts are becoming a popular way to add flavor to a variety of dishes. There are endless flavor combinations, and these salts are so handy to have as a staple in the kitchen. Plus, they make great gifts for family and friends. All you need is a blender or food processor and minimal ingredients.

INGREDIENTS • 1 cup salt (we prefer Himalayan pink salt or Kosher salt, but any salt will work) • ½ cup fresh parsley leaves (¼ cup if using dried) • ¼ cup fresh basil (2 tablespoons if using dried) • 1 tablespoon oregano • 1 tablespoon lemon zest • 1 garlic clove, minced • Optional: Any additional herbs you prefer

DIRECTIONS Add fresh parsley, garlic, lemon zest and a little bit of salt to the blender or food processor. Mix for 10 seconds. Add additional ingredients and blend again. Line the baking sheet with parchment paper and pour salt mixture on sheet and spread evenly. Set in a cool oven overnight to dry. Pour salt into a container of choice and enjoy!

HERBED POPCORN Add a little kick to your traditional popcorn with this buttery and savory combination of ingredients.

INGREDIENTS • 3 tablespoons coconut oil or olive oil • ¾ cup popcorn kernels • 5 tablespoons butter • 2 teaspoons garlic salt • 2 teaspoons parsley (dried) • 1 teaspoon thyme

DIRECTIONS Add oil to a pot and melt over medium heat. Add popcorn kernels, cover pot with lid and cook over medium heat until kernels are popped, shaking pan occasionally. Melt butter in a separate dish and add seasonings. Pour on popcorn and enjoy!

Autumn brings a craving for foods that warm the kitchen and the soul. Follow the call of fall to The Spicy Olive, the local tasting emporium, wine shop and gourmet gift store filled with a mouth-watering selection of the freshest olive oils and finest balsamic vinegars. September marked the tenth anniversary for the unique shop, founded by passionate local business owner, Melanie Cedargren. “I love cooking. I love food. I’ve always wanted to have a small business. This checks all the boxes for me,” Melanie says. “Adding the wine shop has been especially fun!” From foodies and gourmet cooks to health food eaters who want the best, The Spicy Olive draws a large fan base. “We have some customers who’ve been coming since the very beginning,” she shares. “We wouldn’t still be here if it wasn’t for our great customers. We are so grateful.” The Spicy Olive newsletter comes out bimonthly, featuring seasonal recipes and highlighting enticing flavored oils from around the globe. Their aged balsamic vinegars come straight from Modena, an ancient

Italian city known in culinary circles as the best source in the world. “I enjoy choosing the flavors of the month to match the season and inspiring customers to cook with healthy, fresh ingredients year-round,” Melanie says. Melanie brings these delights to our plates not only for their delicious flavors, but for the health benefits they add to our diets. HARVEST SALAD WITH ROASTED BUTTERNUT SQUASH ingredients: • • • • • • • • • • • •

1 apple, cubed 1 pear, sliced ¼ cup pumpkin seeds ¼ cup pecans ¼ cup blue cheese crumbles ¼ cup red onion, thinly sliced 1-2 lbs. butternut squash, peeled, seeded + diced in 1-inch cubes 1 package baby arugula or fresh mixed greens 1 sprig fresh rosemary ½ cup The Spicy Olive’s Cranberry Pear White Balsamic or Maple Balsamic Vinegar ½ cup The Spicy Olive’s Hojiblanca or Arbequina Extra Virgin Olive Oil Salt and pepper to taste

directions: 1. Preheat oven to 400 degrees F. 2. Whisk together the balsamic vinegar and olive oil until completely incorporated and slightly thickened to create the vinaigrette. 3. Use 1/3 cup of the vinaigrette and toss with squash cubes to coat. Save the remaining vinaigrette to use for the dressing. 4. Sprinkle diced squash with salt and pepper and roast on a parchment lined baking sheet for 30-35 minutes, until tender, golden and caramelized. 5. Sauté pecans and pumpkin seeds in a dry pan over medium heat until lightly toasted. Remove from heat when fragrant. 6. Place greens in a salad bowl. Top with all other ingredients, including the cooked squash. 7. Pour remaining vinaigrette over salad. Toss to evenly coat.

WILD MUSHROOM + SAGE CHICKEN + NOODLES

ingredients: • 1½ pound chicken thighs or chicken tenders, boneless and skinless • 4 thick strips smoked bacon, diced • 1 large sweet onion, thinly sliced • 8 ounces wild mushrooms, sliced • 4-inch piece fresh thyme leaves • ¼ cup The Spicy Olive’s 18-year-aged Traditional Balsamic Vinegar • 2 tablespoons The Spicy Olive’s Wild Mushroom + Sage Olive Oil • ½ cup heavy cream • 1 pound pappardelle or wide egg noodle pasta, cooked and drained • Pinch salt and pepper

directions: 1. In a large skillet, crisp the bacon over medium-high heat. Drain all but one tablespoon of bacon fat and set aside. Add olive oil to pan and heat one minute over medium-high. 2. Liberally salt and pepper the chicken on both sides. Sauté until golden brown on both sides, in batches to avoid overcrowding. Set aside. 3. Cook onions in the pan drippings for five minutes, stirring frequently. Add the mushrooms and sauté three minutes over medium-high heat, until slightly caramelized. 4. Add thyme and balsamic to pan, scraping up browned bits from the bottom. Cook one minute. Stir in cream. Add the bacon and chicken. Bring to a simmer. Cook two minutes until the chicken is cooked through and the sauce thickens. Season generously with salt and pepper. Serve over pasta.
