A year ago, he revamped the catering menu to accommodate smaller gatherings of six to eight people, and also offered a holiday special with turkey and fixings geared for one or two persons so people could pick up and deliver meals to relatives and friends in lieu of being in-person. This year, he plans to offer a limited Thanksgiving menu for larger groups to be picked up the day before the holiday. Heading into this year’s autumn and winter, John says comfort foods are in demand. “Mac and cheese pops, and Philly Cheesesteak eggrolls, are very popular,” he adds.

This Thanksgiving season, John says he’s fortunate for the health and well-being of his family, but he’s also extremely grateful for the commitment and work ethic shown by the company’s catering staff. “We were in the public during this pandemic, and it does make us a bit nervous. But we had safety protocols in place and we didn’t let our guards down. The Serock team knew a topnotch job still needed to be done, and they showed up to do it. For that, I’m truly thankful and I celebrate and toast them,” he adds. John understands firsthand how important family and work-family ties are, given that he got introduced to the catering business when he was only 12 years old, working as a dishwasher for his grandmother, who was a cook and banquet manager. Replace bread baguette with English Cucumber sliced on angle to take shape of traditional bread. Make bruschetta by finely dicing six fresh Roma tomatoes and 1/4 cup or more fresh basil leaves; add 1 tablespoon olive oil; sprinkle with sea salt; refrigerate until ready to scoop onto sliced cucumbers. Reduce about 1/4 to 1/2 cup balsamic vinegar by half in a small saucepan over medium heat; drizzle on top just before serving. 20

Armed with a one-two punch for weight management, Jen is helping others discover the true meaning of wellness as a health/nutrition coach. “I guide clients through confusing parts of nutrition. We also focus on sustainable habit changes so they can handle life’s twists and turns,” she says. After first conducting a personal health assessment, Jen says she offers foundational weight loss and meal plans. Her coaching specialties include plant-based whole food options; gluten sensitivity and intolerance; healthy cooking and substitutions; weight loss plans; and meal planning with supportive recipes. To nibble through the upcoming holidays in healthy ways, Jen shares numerous tips with West Chester Lifestyle readers: 1. Keep a glass of water in hand at gatherings. 2. Choose a small plate and make ONLY ONE TRIP to the food bar. 3. Always take a dish to parties that’s on your personal plan, one preapproved for eating. 4. Devote time to talking to other event attendees, rather than mindlessly eating more than realized. 5. Load up on proteins and vegetables, such as shrimp and veggie trays or salads. 6. For desserts, stay with fruit-based choices, such as fresh berries, whipped cream and a drizzle of sauce or chocolate chips.

7. For sweets, allow only one serving, such as one cookie, not a dozen. 8. For every alcoholic beverage consumed, drink a full 8-ounce glass of water. 9. Choose to drink bubbly beverages, because the carbonation fills stomachs. 10. For alcoholic drinks, choose clear beverages, such as vodka, over wine or beer when possible. “A priority during the holidays is to maintain, not gain, weight. And when you know you have an event, exercise enough that same day to burn off an extra 300 to 400 calories,” recommends Jen. Accountability is key, she adds. “At parties, my clients track what they eat and write it down to send me afterward. Therapy Dog Symposium 20th Year of The National Dog Show: David Frei, Mary Carillo, John O'Hurley

MORE THAN 50,000 THERAPY DOGS EXIST IN AMERICA, ACCORDING TO NATIONAL GEOGRAPHIC SOURCES, AND AT LEAST 60% OF U.S. COLLEGES HAVE PET THERAPY PROGRAMS. Therapy dogs are fondly nicknamed “comfort dogs.” No doubt, dogs are more than people’s best friends. To celebrate that special bond, the third National Dog Show Therapy Dog Symposium for therapy dog communities will be held Nov. 30 at Rowan University in Glassboro, New Jersey, home of The Shreiber Family Pet Therapy Program at the University’s Wellness Center. Animal therapy incorporates animals as a way to help people cope with, and recover from, physical and mental health conditions. Depending on the function of the therapy, people may choose dogs,

horses or birds. Such animals provide comfort, alert about dangers, or perform direct actions to help a person’s condition when they are in need. This year’s all-day therapy symposium is open to the public, both on-site and online. Pre-registration, at a cost of $20 for the livestream and $50 for in-person attendance, includes lunch and a post-conference reception. A livestream link will be sent to online registrants a day before the event. Virtual attendees will be emailed PDFs. Organizers indicate this unique forum is designed for dog handlers, therapy advocates, veterinary practitioners and aspirants to share information and develop best practices. The conference launched in 2019 with 200-plus on-site participants at Rowan University. In 2020, due to the COVID-19 pandemic, symposium organizers went virtual, presenting a daylong livestream, which attracted an international audience of more than 200 online participants. David Frei, the symposium’s co-founder and

Symposium organizers include David, co-host of The National Dog Show Thanksgiving Day on NBC, and Michele Pich, assistant director of The Shreiber Family Pet Therapy Program, adjunct professor and research associate at Rowan University. Joining David for NBC’s broadcasting of the National Dog Show on Nov. 25 is award-winning actor, “Family Feud” show host, former “Seinfeld” television star, winner of “Dancing with the Stars” and purebred dog owner, John O’Hurley, in addition to NBC Sports analyst, Olympics broadcaster and lifelong dog lover, Mary Carillo. The show, celebrating its 20th year, will be aired from noon to 2 p.m. Organizers indicated it’s the most widely viewed dog show in America. David, an internationally-known canine expert and member of the Kennel Club of Philadelphia, is a longtime leader in the therapy dog movement. She operates the Shreiber Family Pet Therapy Program at Rowan University, recruiting, assessing and scheduling certified animal-assisted therapy teams to visit University students, staff and faculty, along with serving the community at COVID-19 vaccine clinics and other events. The Shreiber Family Pet Therapy Program functions both as an independent department, and also in collaboration with other Rowan University departments, such as both of Rowan’s medical schools (CMSRU and SOM), the Autism PATH

Michele previously worked at the Penn Vet Ryan Veterinary Hospital at the University of Pennsylvania, served as a veterinary grief counselor and taught courses in the human-animal bond. She is the former co-director of the VetPets Animal Assisted Activities at Penn Vet, as well as working with New Leash on Life-USA, Philadelphia’s animal-assisted prisoner re-entry nonprofit. David and Michele are certified presenters for continuing education credits via the Registry of Approved Continuing Education and the American Association of Veterinary State Boards. Another symposium speaker will be Carlo Siracusa, DVM, MS, PhD, PennVet Behavioral Veterinary Medicine department head at University of Pennsylvania.
