We are so glad you are here! Welcome to the first issue of Waconia City Lifestyle magazine, a monthly guide to the great stories and events that are fit to be shared – celebrated really –with you, our neighbors and friends. Our mission is to inspire and uplift readers through entertaining articles, expertly curated hyper local content and unique experiences that connect our community. As a little girl, I would sit in my basement and create magazines, loving the process of putting beautiful pictures and inspiring content together, cutting and stapling to make it my own. I never thought I would be living out that dream, creating beauty for my own community. When I started my career in media and marketing 18+ years ago, I fell in love with helping businesses and inspiring people through different media. Then 3 years ago, life changed, when I realized I wasn’t happy. From the outside everything looked amazing, but it wasn’t on the inside. I was working for a digital marketing agency that served hundreds of resorts all over the country, it was my dream job. Until it wasn’t. I felt unsettled in my life. Thus began the non-linear road ahead that led me here. Our amazing team of writers and photographers are dedicated to sharing stories and experiences of living inspired, loving local and providing an authentic and uplifting guide to luxury living in our beautiful community. This magazine is a place to pause and reflect, to take in good news, and to plot your next adventure or meal. We want to hear your stories! NO BAKE RASPBERRY PIE A simple, refreshing and absolutely delicious summer dessert!
ingredients:

Pie Crust: (NOTE: If you don’t have a springform pan you can make this using your own favorite pie crust or even just buy a pre-made pie crust and only make the filling.) • 65 Nilla wafers, finely crushed • 6 Tablespoons unsalted butter Pie Filling: • 1 1/4 cup water, divided • 6 (6 oz) containers of Driscoll’s raspberries • 1/3 cup sugar • 1 Teaspoon fresh lemon juice • 3 Tablespoons cornstarch • 1/3 cup sugar • 1 pkg room temperature cream cheese (dairy-free works!) • Optional: whipped cream for topping Pie Topping: • Depending on how big your pie is, you will need 2-3 additional 6oz containers of Driscoll’s raspberries.
1. Place crushed Nilla wafers in large mixing bowl. 2. Stir and bring to a boil and then reduce heat. 3. Use the back of a wooden spoon to smash raspberries. 4. In small mixing bowl, combine 1/4 cup cold water and cornstarch, whisk together. 5. Add cornstarch slurry to saucepan and stir constantly until it thickens (about 1-2 minutes). 6. Remove from heat and let cool. 7. Place cream cheese in mixing bowl and use a hand-mixer to whip. 8. Place remaining Pie Filling raspberries in a mixing bowl and pour raspberry sauce on top. 9. Gently fold raspberries in one or two times. 10. Take whipped cream cheese and gently spread over bottom of crust. 11. Pour raspberry mixture on top and gently spread evenly. 12. Place in refrigerator for 2 hours. 13. Remove and, if desired, cut your Pie Topping raspberries in half (carefully and with a sharp knife) and place in circles around the pie, overlapping each other as shown in pictures. 14. CREAMY CITRUS DRESSING + GRILLED PINEAPPLE SALAD A sweet and delicious dressing and summer salad!
makes: 2 servings
prep time: 15 minutes

ingredients: Citrus Dressing • 1/2 cup fresh squeezed orange juice • 1/4 cup fresh squeezed lemon juice • 1 Tablespoon unsweetened almond milk • 1/4 cup loosely packed fresh parsley • 3/4 cup olive oil • 1 Tablespoon rice vinegar • 1 Tablespoons minced shallots • pinch of salt Salad • 4 slices pineapple • 1 avocado, sliced • 1 corn on the cob • 1/2 cup pepitas • 1 cup fresh blueberries • 1 Tablespoon olive oil • 2-3 cups fresh mixed greens
directions: 1. Combine Dressing ingredients in mason jar and combine with immersion blender. 2. Heat grill to medium high/high heat (ensure grates are clean). 3. Lightly brush pineapple with olive oil. 4. Sear pineapple on direct heat (directly over flame) for 2 minutes a side. 5. Cook corn on the cob over direct heat for 5 minutes a side. 6. Once seared, remove pineapple. 7. Once corn is slightly charred, remove and (once cooled) cut off the charred kernels from the cob. 8. Take 2 salad bowls and fill with mixed greens. 9. Add 2 slices of grilled pineapple and then continue to split the remaining salad ingredients (corn, pepitas, blueberries and avocado) between the two bowls. 10. Drizzle with as much dressing as desired. 11. Enjoy.

6 boneless chicken breasts or chicken thighs 1 cup roughly chopped and loosely packed fresh cilantro 1/2 cup olive oil (avocado oil would work too) 1/2 cup fresh lime juice 1 Tablespoon olive oil 3 teaspoons kosher salt

GRILLED CILANTRO LIME CHICKEN A quick and delicious weeknight meal your whole family will love!
1. Combine olive oil, lime juice, cilantro and salt in a bowl and stir to combine. 2. Place chicken in either a large plastic bag or storage container and pour marinade over top. 3. Use your hands and gently massage the marinade into the chicken so every crevice is covered. 4. Cover and place in the refrigerator for a max of 30 minutes. 5. Clean grill grates and preheat grill to medium-high heat (about 400 degrees). 6. Chicken Thighs: Grill chicken on direct heat (directly over flame) for 3-4 minutes per side (the bigger the thigh the longer you will need to cook it), flipping once. Remove from grill once the internal temp has reached 160/165. 7. Chicken Breasts: Place chicken on direct heat (directly over flame) and cook at medium heat for 4-5 minutes per side. Move chicken away from the direct heat (direct flame) so that it is cooking on indirect heat (maintaining the same grill temp) and cook for an additional 5-7 minutes (you don’t need to flip during this point because the chicken will cook as if it is in an oven) or until the internal temperature of the thickest part of the chicken reads 160 on your meat thermometer. 8. Remove from grill and let rest at least 5 minutes; internal temp will continue to rise as it rests (up to 10 degrees). Chicken is safe to eat when it reaches an internal temp of 165 at its thickest part. - Kosher Salt: make sure you are using kosher salt and not table salt! Table salt will result in a much too salty flavor. - Bone-In Chicken Thighs or Breasts: you can use bone-in chicken thighs or breasts, just adjust your cooking time accordingly, they will take longer because they are bone-in. - Serving Suggestion: Serve with fresh guacamole for best result. If you are looking for a fun, non-alcoholic alternative this summer, this light and refreshing mocktail is for you!
ingredients: • 4 cups Watermelon – you will want to get the juiciest, most ripe one you can find so that the juice is full bodied. Use the darkest meat. • 4–6 Mint leaves • 1 Lime • 1 Tablespoon Club Soda • Optional: Honey • Optional: Vodka (1/2 shot per drink)
directions: 1. Roughly chop up 2 -3 cups of dark watermelon meat; try to remove as many seeds as possible. 2. Add to blender along with 2-3 mint leaves. 3. Blend until fully liquid. 4. Taste and, if you want it to be sweeter, add a little bit of honey at a time until you have reached your desired sweetness. 5. Optional: you can strain the watermelon at this point to ensure you just get straight juice, but you don’t have to. 6. Take cocktail glass and add 3 cubes of watermelon (about 1×1 inch) as well as several ice cubes. 7. Pour watermelon mixture over top, leaving about 1/2 inch or more at the top. 8. Add a splash of club soda or other sparking water. 9. Garnish with additional mint leaves and a slice of lime.

As we take in all the Vitamin D possible, we’re more than ready for refreshing drinks lakeside with friends or a savory bite followed by a quick stop for a sweet scoop. You can’t go wrong with a gin and tonic or classic mojito, but for a real taste of summer try Iron Tap’s Spicy Cucumber martini. Dana Dziuk, of Lee Lyn Construction, has been picking up nails on job sites her whole life. “My dad worked for his dad, and my mom’s dad was also a remodeler,” so it was only fitting for Dana to dive into the family business in 2016. Lee Lyn Construction (middle names of her parents) was started in 1980 and has since taken their custom home building business to a whole new level. They recently began sharing their creativity by bringing Waconia clients’ dreams to life in the coveted Woodland Creek development where Dana states, “We just really want our clients to, as much as they can, enjoy the selection process. There are a lot of decisions that go into building a custom home and when it all comes together, we want them to feel like, “This is my home!”

The beautiful, mature Woodland Creek development is located east of Highway 284 and just south of the Sierra neighborhood. The developers left as much of the natural elements as they could when designing the landscape. Mature trees, wetlands, a bubbling stream and band ponds make up this new 17 acre area. The age-old question, what to splurge on and what to skip? Dana and the skillful sub-contractors they partner with, get inspiration from their very own experiences. They study and survey what trends and styles they’ve seen the most of and what they do in their own homes. “Sometimes I even love trying something that I don’t have the guts to try in
my own home,” Dana says with a laugh. For example, she tried a dark artistic grey tile in a bathroom, and it was a hit. “Every single project you learn a little more.” When it comes to splurging, Dana recommends asking yourself how often the upgrade will be used. She shares that putting your money into high end cabinets or quartz countertops makes a lot more sense in your kitchen versus your wet bar in the basement that you may use less frequently. They also love that the neighborhood will have character with all of the custom-built homes from different builders. How A Near Death Experience Changed An Outlook On Life
Learn how Jeremy Kaschinske had an unexpected path to a second chance at life

If you see a guy in a logoed polo, picking up and dropping off white or blue buckets at your neighbor’s door, don’t be alarmed. Twice a month you’ll find Jeremy Kaschinske, owner of Minnesota Salt Co. serving his Waconia clients with something pretty unexpected. Water Softener Salt. Also unexpected was when a genetic illness, combined with a unique set of genes topped with stress, caused his liver and kidneys to fail, which resulted in a liver transplant in 2021. Life’s uncertainty at that time made Jeremy reevaluate everything. “I practiced law for 10 years. I won all the awards, had the nice office, the fancy suits, but I was miserable”, Jeremy admits. “The least I could do for all the people who went through this with me was to make some significant changes.” This is how Minnesota Salt Co was born. Jeremy decided to go back to his roots, as he grew up with a Mom and Dad who were small business owners in the Wisconsin town of Poynette. His goal was to help people, help the earth, provide a service and stay active. “My wife’s Grandma Jean would have to take 20 trips up and down her stairs with an ice cream bucket of salt. I thought, there has to be a better way.” Inspired by small businesses like Junk King, who started with a truck and themselves, he knew he needed to get creative. Here’s how it works. You sign up for a plan that suits your needs. You’re then assigned a “salt day”. When your salt day is approaching, you’ll receive a text reminder to leave your empty bucket at your door. He’ll then replace your empty bucket with a fresh, filled one. Jeremy asked around. He wanted to know, if you could spend the same amount but have the salt dropped at your door, would you do it? “Everyone replied with, why wouldn’t I do it?” The company also provides full service fills where they will fill the tank for you. “I still love interacting with people, that may be the only thing I missed about being a lawyer.” Jeremy wanted his service to be convenient for the Grandma Jeans of the world. He also wanted to make
sure it was friendly for the environment. “We’ve done the math and figure we’ve saved almost 10,000 bags in the 7 months we’ve been doing this.” He also wanted it to be affordable and consistent, saying with a laugh that he always hated when his wife told him they needed salt on his way to Home Depot for something else. The last thing he wanted to do was haul a big, floppy, annoying bag in his cart and then leave it in his trunk for 3 months. Minnesota Salt Co currently serves 1,000 homes and small businesses and delivers about 50,000 pounds of salt a month. One notable highlight was when the Arboretum called. “We knew we were onto something when the Arboretum asked us to provide all of their salt. They’re all about sustainability!” Recently he also added Kruckman Family Dentistry to his list of customers who, he says, has been so supportive and motivational. “This community is the best. Especially when something is new and fresh, people want to see people do well, if they put in the work.” He says he witnessed this growing up with his parents’ small businesses as well. “I remember how awesome people were.” Since starting Minnesota Salt Co, he’s been able to spend more quality time with his wife and daughter and realizes with even more certitude that he’s “got life to live.” He remembers very little about his transplant day, but does remember the whup-whupwhup of the helicopter coming with his new liver and his wife telling him to hang on. He later learned that while the helicopter was landing with his new liver, the hospital was holding an Honor Walk for the donor and their family. An Honor Walk is held as the donor is transferred to the operating room. “I wish everyone could take a little pill to go in the mindset of knowing you only have 45 minutes to live.” Turns out Jeremy’s donor’s family lived 8 miles away from him and still lives close. He’s in touch with them often and admits that he owes them everything. Jeremy is undeniably taking advantage of his second chance at life. “I went from courtroom to delivering salt, and I love it!”

Paul Schaumberg Design. Building a Dream. PAUL SCHAUMBERG DESIGN IS A DREAM BROUGHT TO LIFE RIGHT IN WACONIA
Faith, family, friends and career has always been the motto Paul Schaumberg lives by. “I couldn’t ask for a better life.” But he’s taken quite the journey to get here. Paul grew up the son of a general contractor and as early as high school he was helping his dad and brothers with all the details of that work. The vision they held for the future is that they would each own some aspect of the business his dad built, and eventually, work on it all together. It was in college that Paul discovered interior construction and knew that it’s what he was meant to do. While he studied, he continued to help out where he could on the family business from afar. After College, life took him and his then fiancé, Ellen, to Milwaukee where he worked at several architecture firms during the day and on his dad’s business on the side. He always felt like he should be heading back home to work on the family business full time, but other opportunities continually pulled him in new CONTINUED >

and exciting directions. “I was learning so much. It was all so valuable.” News that his dad was moving the family business to Florida, coupled with his now wife being offered an opportunity to move back to her home state of Minnesota, gave Paul and Ellen an opportunity to consider some options about where they wanted to be located. It wasn’t an easy decision but it “…all ended up being a blessing in disguise” and they headed to Minnesota. Once settled in Minnesota, Paul and his wife started a family. Not only was work busy, but life was busy too. Among other opportunities he found a position at Lifetime Fitness where he felt the most challenged he’d ever been in his career. It was about this time that his dad passed away. His brothers kept the family business going, but only here and there as they also perused careers of their own. “The dream of working on the family business died with my dad.” Paul thought his only option was to climb the corporate ladder, so he continued on. The causality of a pandemic layoff, Paul ended up consulting through several other firms with lots of opportunity to work

on various, exciting projects but always found himself working 60-70 hours a week. With a young family at home, “The work life balance was not making me happy.” It was at this point that Paul took a step back and really assessed what was important to him. Paul realized that the dream he had of the “family business” was possible for him, it just looked different than he grew up envisioning. “My dream came true. I live and work in a community that I love.” Paul started his own firm, Paul Schaumberg Design, and works out of his home. He’s thrilled to be 5 minutes from his boys’ school and on his boat in 10. He’s still busy, but “good busy” and reflects daily that it took him 21 years to get to this point, but that he got something from every one of those years. Every morning he wakes up grateful and goes to bed grateful knowing that his dad would be proud. “We absolutely love Waconia. We’re putting our flag in the ground. We never want to leave.” Paul lives in Waconia with his wife Ellen and their two boys. In his free time, he loves to boat, relax with his family on their deck and cheer on the Green Bay Packers.
