Our features this month tell us how Brewburgers’ Michael Bacon got creative when faced with staffing shortages, transitioning to a new concept—pizza and bagels—in his newly opened Brew-Za-Bagels right on Venice Island. SUCCESS AND HAPPINESS. But Phil’s road to where he and his loved ones are now was a difficult journey. For nearly ten years, Phil suffered terrible abuse at the hands of his stepfather. “I was the lucky one,” Phil says. “I was able to escape when I was 12 and live with my father. But my siblings were never able to get out. I always say I was lucky and that’s why I want to give back.” Phil went on to serve as a medic in the Navy, then built a two-decade career in the health care industry, recently as Director for Provider Outreach for all three

Phil volunteers on behalf of the Child Protection Center, speaking about the abuse he suffered and how the CPC helps kids like he was. His relationship with the CPC began after hearing the CPC’s VP of Philanthropy Sheila Miller speak at the Venice Chamber two years ago. “I went up to Sheila and told her, ‘I don’t know if you guys need any help, but I am your guy,’” Phil recalls. “I survived childhood abuse, I have a story to tell, and I want to do what I can to give back.” Ever since, Phil has spoken about his experiences in support of the CPC, including as the keynote speaker at last year’s Night of Hope and Healing. He currently serves on the CPC’s advisory board and the couple donate some of their business profits to the nonprofit. “The work that the CPC does for children is essential,” Phil says. “The CPC puts me in places where people can benefit from my story. When it comes to child abuse, you don’t want a child to rely on luck, you want Phil and Fawne at their Auntie Anne's pretzel truck.

STAFFING PROBLEM AT HIS TWO BREWBURGERS RESTAURANTS, THE POPULAR BURGER COMPANY HE FOUNDED HERE IN VENICE. Simply put, he could not keep enough staff to make both Brewburgers locations operate at his demanding level. So back in May he made the tough decision to close his Venice Island location and send all his staff to the larger Commercial Court site. “I decided it was better to have at least one location operating effectively,” the ever-friendly Michael laughs and says. “It’s a hard reality, but there just isn’t enough staff right now to go around.” But Michael had worked too hard to simply shutter his beloved Venice Island location. It was time to get creative.

Ingredients: 6-8 Jumbo Gulf Shrimp peeled and deveined. 1/4 cup blistered grape tomatoes (roast 7-10 grape tomatoes in the over at 350 degrees for 15-20 minutes). 1/4 cup sliced mushrooms. 2-3 pieces of asparagus sliced thin. 1/2 cup fresh spinach. 1.5 - 2 tablespoons Cajun seasoning (The chef likes Paul Prudhomme Redfish Magic). 2 cloves chopped garlic. 1/3 cup shredded parmesan. 1/2 pound fettuccine. Fresh parsley for garnish. In a large saucepan at medium to medium high heat add 2 teaspoons oil to the pan. Add the garlic, blistered tomatoes, asparagus and mushrooms. Sautee 3-4 minutes. Garlic should be slightly brown. Add shrimp and Cajun seasoning and continue to cook for three more minutes. Shrimp should be slightly undercooked. Turn heat down to medium and add heavy cream. Simmer for 6-8 minutes until the cream starts to thicken. Add fresh spinach and parmesan cheese. Simmer for three more minutes until spinach is wilted and cheese has melted. At this point, you should have a thick, rich sauce. Throw in the cooked pasta and stir well. Pour into a large bowl and garnish with fresh parsley and shredded parmesan.
