Publisher's Letter OUR CITY IS UNLIKE ANY OTHER CITY IN THE WORLD. If you travel the world, you will be hard-pressed to find another place that displays such neighborly love and creative collaboration between business and community as Nashville does. When I moved here 10 years ago, I was immediately intrigued by what was going on in the city as I knew it was something truly special. Everywhere I looked there were people helping others, no matter the situation. Once I arrived and made the city center my home, the first thing I wanted to do was to give back and get involved in the community just as I saw others doing. Whether by simply helping a neighbor in a bad time or developing a fundraiser for a local charity, giving back to my community has always been one of my biggest passions. As a local real estate agent, my primary focus is to enrich the lives of my clients in our community every single day. I am also an investor in the community and am blessed to work strategically with many local business owners. The conversations

(CON TI N U ED)

IF YOU WERE LUCKY ENOUGH TO BE BORN INTO A FAMILY THAT RUNS SUMMER CAMPS, WHAT WOULD YOU DO ONCE YOU BECAME AN ADULT? Well, if you are Hayes Hitchens, a Nashville resident who grew up spending summers at his family-run camp in northern Wisconsin, you keep a good thing going, maybe even taking it up a notch or two. Hayes is the founder and president of Moondance Adventures, one of the nation’s premier adventure travel companies for teens. With more than 110 trip leaders and 1,300 students in grades 6 to 12 traveling across the globe, Moondance now operates programs in 11 states, 17 countries and five continents. But things weren’t always so grand. In fact, the beginnings were pretty humble. In 1996, the first year Hayes launched the enterprise, just 33 young adults signed up for adventures in the two available locations: the Grand Tetons and the Blue Ridge Mountains. Using skills he had acquired from years of working with young people — Hayes was dean of students at the Lovett School in Atlanta — plus years of summer camp experience and training with outdoor programs like Outward Bound and the National Outdoor Leadership School, Hayes built the business into the thriving success it is today. These days, despite the demands of keeping up with more than 1,000 teenagers spread across five continents, overseeing their safety and ensuring the quality of their experience, Hayes still finds time to go a few trips himself, meeting and spending time with the young adventurers who remind him of how powerfully traveling can broaden one’s horizons. “I have never wanted to be the biggest teen adventure company, but my aspiration continues to be the best," Hayes says. "After 23 years, we are proud of where we are and the wonderful people who work for us.” Got a young person in your life who wants to see the world while developing skills, meeting new friends and giving back to others? Then feel free to give Hayes a shout. After all, it’s a marvelous time for a Moondance.

KYLE

PATTERSON’S

INSPIRED AND CREATIVE TAKE ON CLASSIC AMERICAN CUISINE WILL PLACE BEFORE YOU DISHES TO DELIGHT ALL YOUR SENSES. The heavy meals of winter give way to lighter, crisper, more colorful fare as the local farms from which Sinema sources emerge from their long winter's nap. “It is, by far, my favorite season for ingredients and cooking — the first strawberries and peas of the year, the ramps (a wild vegetable similar to leeks), favas, all of it,” Kyle says. Kyle blends the fresh flavors and crisp textures of spring to paint on the plate a meal to be remembered in a setting to be savored. Hungry? Try one of Kyle’s latest masterpieces of the season, truffle fettuccine carbonara.

TRUFFLE FETTUCCINE CARBONARA I N G R E D I E N TS + 1 pint heavy whipping cream + 2 ounces chopped black truffle + 4 ounces Parmesan rinds + 6 ounces chopped cherry tomatoes + 8 ounces chopped oyster mushrooms + 6 ounces baby spinach + 4 ounces sliced spring onions + 4 ounces broccoli + 2 ounces chopped garlic + 4 ounces peas + 2 ounces chopped herbs (optional) + 12 ounces cooked pasta + 4 ounces olive oil + Truffle oil (optional)

DIRECTIONS Add cream, truffles and Parmesan rinds into a heavy pan. Put over medium-low heat for 30 minutes and let steep. Strain Parmesan rinds and set aside. In a large, heavy pan, add olive oil and put on medium-high heat. Add mushrooms and onions and caramelize. Once there is a nice sear, add broccoli, garlic, peas and cherry tomatoes and cook for approximately 5 minutes. Add in sauce, spinach and pasta and toss until fully mixed and hot. Add salt to taste. Plate and finish with truffle oil, chopped herbs and black pepper.

NASHVILLE’S

DOWNTOWN

CAN

SEEM

SO

CLOGGED WITH CRANES AND CROWDS THAT SOMETIMES IT’S HARD TO REMEMBER THAT SPECIAL SPOTS — PLACES THAT ARTFULLY FUSE PAST AND PRESENT IN WAYS THAT DELIGHT ALL THE SENSES — STILL EXIST. Well, for those in the know, one such place is Noelle, a recently restored 224-room hotel on Fourth Avenue. The building, first opened in 1930 as the Noel Place Hotel, is an art deco gem complete with walls of Tennessee marble featuring portraits of notable Nashvillians, works of art created by local artists. Also inside Noelle is Trade Room, a modern lounge with elegant touches of the past still in place like the terrazzo flooring. With its classic cocktails, extensive wine list and rotation of local beers, Trade Room is a great place to hang out and meet old friends or perhaps make new ones.

200 Fourth Ave. N, Nashville, Tennessee, 615.649.5000, Noelle-Nashville.com

When your party gets hungry, you need not leave the building. A truly remarkable restaurant, Makeready Libations & Liberation, is on Noelle’s ground floor. With its seasonal approach to American tavern cuisine, the restaurant honors its Printers Alley roots in its name, Makeready, a catchall term in printing for getting everything set up right. And getting yourself set up right is easy here; just order anything off the menu, and the friendly staff will serve it swiftly. From an extensive in-house charcuterie to rotisserie-fired meats to exquisitely seasoned vegetarian dishes from locally sourced produce, ordering wrong is simply not possible here. After your meal, make sure to go up to the 12th floor to visit Rare Bird, the rooftop bar, and enjoy a unique perspective on the city. With views of the Cumberland River, Nissan Stadium and the Shelby Street Bridge, Rare Bird is a great place to enjoy a nightcap beside one of the two limestone fireplaces with its cozy seating. So invite a good friend, and go cozy up. Now you Noelle!
