APPROACH OF THANKSGIVING, THE HOLIDAY SEASON AND TIME SPENT WITH OUR LOVED ONES. The winding down of the year always brings about a time of reflection for us— remembering everything we’ve done or accomplished in months past; looking back on turkey disaster stories, mornings watching the Thanksgiving Day parade or afternoons spent curled up on the couch after one too many pieces of pie; thinking of the people, experiences and things we’ve been blessed with in the last year. As we press pause on the hustle and bustle of life putting together a monthly magazine, we’re able to look back on the past year and, most meaningfully, the stories from all of you that have made what we do possible. We also take this chance to think of those less fortunate and encourage you to take the opportunity this giving season to donate to local organizations or charities giving back locally. DIRECTIONS Fill a rocks glass (or any unconventional container you have laying around) with desired amount of ice. Add vodka and pumpkin spice liqueur, then top with cereal milk. Cheers!

ARTICLE WILLIAM HARWOOD Sweet potatoes, cranberries, rice and dressing in one easy, healthy dish! Available throughout the holidays through Calypso Catering if you run out of time. Yield: 10 servings
INGREDIENTS + 1/2 cup dried cranberries + 1/4 cup orange juice concentrate + 3 tablespoons olive oil + 2 tablespoons fresh thyme + 4 teaspoons fresh rosemary + 1 teaspoon salt + 1/4 teaspoon black pepper + 3 cloves garlic, minced + 2 1/2 cups sweet potatoes, cubed + 3 cups mushrooms (baby bella or button, thickly sliced) + 1 large red onion, chopped + 1/2 cup chopped celery + 3 cups cooked rice of your choice or salted grain (farro, barley, etc.) + 2/3 cup toasted pecans, coarsely chopped + 1 bunch parsley, chopped and sprigs
DIRECTIONS 1. Preheat to 425 degrees F. 2. Soak cranberries in orange juice concentrate and set aside. 3. Mix seasonings in olive oil and toss with raw vegetables in a 3-quart casserole dish. Roast 15 minutes, toss well, and roast an additional 10-15 minutes until sweet potatoes are tender. 4. Combine cranberry mixture with cooked rice or grain of your choice and mix with roasted vegetables in casserole. 5. Top with pecans and chopped parsley as well as sprigs for garnish.

TURKEY OR CHICKEN GUMBO A savory solution to any leftover turkey or chicken at Thanksgiving. Too busy to roast your own? Calypso offers a limited number of Calypso Thanksgiving turkeys. Yield: 8 servings
INGREDIENTS + 8-16 ounces cooked turkey or chicken, cubed + 1 medium carrot, chopped + 2 stalks celery, chopped + 2 medium onions, chopped + 2 garlic cloves, minced + 1/4 cup flour + 4 ounces kielbasa, diced and browned in 1 tablespoon olive oil + 1 14.5-ounce can diced tomatoes + 1/4 cup tomato paste + 1 medium red pepper, chopped + 1 bay leaf + Salt, thyme, ground red pepper and allspice, to taste + 10 ounces frozen cut okra + White or Calypso Rice
DIRECTIONS 1. Make stock with 2 1/2 quarts water, chicken or turkey carcass, carrot and half of the raw vegetables: celery, onion and garlic. 2. Heat to boiling, reduce heat to low and simmer uncovered, 1 hour. 3. Drain broth and discard solids. 4. In a cup, stir turkey broth into flour until paste forms (for thicker gumbo, use more flour) and add to 2 3/4 cups turkey broth. 5. Add kielbasa, remaining celery, onion and garlic, tomatoes with their juice, tomato paste, red pepper and bay leaf. 6. Heat to boiling, add frozen okra; simmer, covered, 45 minutes or until vegetables are tender. 7. Stir in turkey or chicken meat and adjust seasonings. 8. To serve, discard bay leaf from gumbo. Spoon gumbo over rice in bowls.

I had always romanticized owning a restaurant, mostly because of the connectivity piece, the emotional space that we open when we eat. My desire within EiO has been to create an energy where people feel really good about the food they are eating and the space they are eating in: the Hive. IN WHAT WAYS DOES EIO GIVE BACK TO THE COMMUNITY? I feel strongly that building community is as much a social responsibility as anything else. Our parking lot parties, free yoga and fitness classes, along with being an aid station for Achilles International athletes are two very important integrations in our business model. We support our neighborhood school fundraisers and have some upcoming dinner/conversations with local health experts. CAN YOU SUM UP EIO'S MISSION IN A SINGLE SENTENCE? At EiO & THE HIVE, we are committed to sourcing local and organic ingredients, we work directly with local farms to not only purchase from them but also to help them grow. Sustainability is a key value of our business. We compost nearly all waste, recycle what we cannot compost and produce very little trash. WHAT DOES THE FUTURE OF EIO HOLD? We are looking at expanding into the airport, and I’ve just started the process of writing my first book in col-

HardWin Adventures is a multi-sport event company that organizes challenging events for athletes of a wide range of abilities. HardWinAdventures.com HOW DID HARDWIN GET ITS START? Our first event was the Sasquatch Trot which was held at my family farm in Watertown, Tennessee, in 2012. My best bud, Cody Goodwin, and I had the idea to put together a trail running company in Nashville after an adventurous run up Clingmans Dome. For that first race, we hung flags on branches through deer paths and expected people to be happy. We have come a long way since. WHAT INSPIRES YOU TO DO WHAT YOU DO? I don’t know why, but I have always enjoyed putting on events. Perhaps it is because I’m good with people. I have an easy time understanding all walks of life. I think this helps me provide people with a genuine experience. But when it comes down to why I keep putting on these not-so-profitable events, it’s because of people and their efforts. I get a real high from their smiles and tears as they finish. The human spirit is a beautiful thing. The more it is tested, the brighter it shines. HardWin affords me the privilege to look each person in the eye who crosses that line and shake his or her hand. Something mutual is shared at that moment. In a sense, all who get out there and push themselves is my family. I truly love this family. I can’t get enough of it. TELL US ABOUT THE NEW KIND OF TOWEL YOU INVENTED. The NoSwet Towel was an idea I had after returning from my car from a long hot run at Percy Warner Park. I have a background in designing electronics, so I put my manufacturing skills to work and created a towel that soaked up but not through. I was so

I feel its vital that we don’t settle for the status quo when it comes to business and our environment and to continue to look at ways we can improve starting locally.

FACE IT. WE ALL WANT TO LOOK OUR BEST. SOMETIMES THAT REQUIRES THE SKILLS OF A SURGEON.
But surgery is both a science and an art. So, of the many plastic surgeons from whom to choose, who best embodies both? Who brings to the table—literally—the knowledge of the best practices and techniques in the field, and who employs them expertly with the eye of an artist? Well, in Nashville, the name of that person is Dr. J. Roberto Ramirez Gavidia.
From the time he was a teenager, Dr. Ramirez Gavidia wanted to be a plastic surgeon. The reason? His mother, an orthodontist in their adopted Mexico City—the two hail from El Salvador—worked closely with a plastic surgeon to provide succor to people with craniofacial anomalies, a wide range of deformities of the head and facial bones. The teenage J. Roberto watched the plastic surgeon transform the lives of people for the better and determined to become one as well—so he did. Completing his residency in general surgery at the renowned Cleveland Clinic, Dr. Ramirez Gavidia relocated to Nashville to pursue three years of specialized training in plastic and reconstructive surgery at Vanderbilt University Medical Center. Throughout his residencies, Dr. Ramirez Gavidia learned from and trained with the very best and published multiple articles and abstracts in journals. It was also a time of great personal growth. In Cleveland, for example, he was in acute care surgery. "We were literally dealing with life-or-death situations,” Dr. Ramirez Gavidia recalls. “After that, I was very comfortable with almost anything." Then, as now, Dr. Ramirez Gavidia’s practice centers around state-of-the-art techniques.
