Few people foresee animal health emergencies. But that’s all the more reason to have a plan should an emergency situation arise. When our pets are sick or injured, we need care we can trust – and fast. For many animal owners in Tulsa and the surrounding area, that means a trip to the Animal Emergency Center of Tulsa (AEC) located at 4055 S 102nd E Ave (41st St & HWY 169). The AEC has been locally owned and operated for over 35 years! AEC opened on Thanksgiving Day in 1987, when a group of 20 Tulsa veterinarians pooled their resources and formed a dedicated emergency hospital to better serve the needs of pets at night and on the weekends. AEC is focused solely on providing emergency, urgent and critical care services. From minor illnesses and injuries to critically ill patients and those requiring emergency surgery, the AEC is equipped to provide the care and comfort our pets deserve. They have also acquired the specialized equipment and expertise necessary to handle these types of situations. The AEC’s six veterinarians use the facility’s full, in-house laboratory and X-ray, endoscopy and ultrasound machines to help rapidly diagnose medical and surgical problems. They also have computerized ICU units that provide a controlled oxygen, humidity and temperature environment for critically ill pets. “The entire facility is tailored specifically to provide emergency medicine services,” Dr. Troy McNamara, the Medical Director of AEC, says. “We have

a large, centralized treatment area where all patients are in direct view of our staff at all times, as well as a dedicated isolation ward for animals that may have contagious diseases.” The Animal Emergency Center veterinarians and staff prioritize compassionate, high-quality care in critical moments. They are very proud of the longevity and dedication of their staff. ”Many have been with the center for decades; 10 - 15 years is common, with several of our staff working here over 20 years!” Dr. McNamara says. “Our staff’s longevity speaks to how dedicated they are to providing excellent emergency medicine.” Your animals are welcome at the Animal Emergency Center of Tulsa round-the-clock on weekends and from 6 AM to midnight on weekdays. Ah, the perfect Thanksgiving celebration is underway. A fire crackles in the fireplace. The gentle hum of convivial conversation is occasionally accented by a clink of glassware or a trill of laughter. The Thanksgiving table is laid with rich, savory delicacies: juicy slices of ham and turkey, creamy heaps of mashed potatoes, and piping hot rolls. What this scene needs, I say, is a splash of bitter cocktail. (A record scratches) ‘Wait . . . you must be mistaken,’ you’re thinking. ‘This is the time we adorn slices of pecan and pumpkin pie with whipped cream and muscle through a delicious – though slightly uncomfortable – third or fourth plate of food.’ Ok, ok. Hear me out. I enjoy traditional Thanksgiving fare as much as the next person, but I feel distended and lethargic by the end of the meal. I need something to counteract those rich, heavy foods. Why not turn to a bittersweet liqueur that has been used for millennia to help with just such problems?

ENTER AMARO The word amaro means “bitter” in Italian. It is a term that loosely describes bittersweet Italian liqueurs – though this category has broadened to encompass bittersweet, herbal liqueurs from all over the world. Sometimes bitter, sometimes sweet, and usually a combination of the two, these restoratives are often used as apéritifs (to stimulate the appetite) and digestifs (to aid in digestion). What does that mean, exactly? “When your brain senses bitterness, it kickstarts the digestive system,” explains James Beard Awardwinning author Brad Thomas Parsons in the book Amaro. “While your doctor won’t likely endorse the prescriptive merits of a glass of Fernet-Branca to help you feel less bloated and distressed after a gut-busting meal, it is hard to deny the restoring effect of bittering agents and herbs as they course through your body.” There is no spirits category steeped in as much complexity and confusion as amari (plural form of CONTINUED >

amaro). There are no standard production practices or ingredients. Many are made according to secret family recipes using neutral spirits, brandy or wine with a dizzying array of herbs, spices, flowers and other botanicals. Despite – or maybe because of – such ambiguity and lawlessness, bittersweet liqueurs are back en vogue. They are bold, adventurous, and exotic. “Amaro is a unique liqueur,” says Nick Gartelos, Spirits Specialist at Tulsa Hills Wine Cellar. “I think people should give it a try. Either for an after-dinner drink or as part of a cocktail.” For the amaro novice, we’ve included a short list of some of the most popular ones and recipes for classic-yet-simple cocktails that feature them.

CAMPARI This bright red aperitif from Milan is the most well-known bittersweet liqueur in the U.S. It flaunts a strong bitter flavor punctuated with orange peel, making it a go-to mixer behind the bar.

APEROL Often referred to as Campari’s little sister, it is sweeter, milder, and more floral, making it a good starter amaro. With less alcoholic content, it is a frequent choice for Italy’s happy hour crowd.

An after-work spritz is a long-standing tradition in northern Italy. The refreshing, palate-whetting flavor and low alcohol content of an Aperol Spritz make it a winning pre-dinner drink. Three simple ingredients are required for this surprisingly easy-to-make cocktail. Since prosecco – Italian sparkling wine – can be found in a range of sweetness levels, this drink is customizable to the bitter-sweet balance you prefer. Those looking for a bolder, more bitter version may opt for Campari, which has a higher ABV and is more bitter than sweet.

AMARO MONTENEGRO This widely beloved liqueur boasts 40 botanicals from four different continents. Try it in an Old Fashioned to bring out those baking spices!

AMARO NONINO QUINTESSENTIA This herbaceous and citrusy grappa-based amaro is considered a good starting point due to its lighter body and sweetness. As Maggie Hoffman of Serious Eats encourages, “think of it as a sippable, orange-laced caramel sauce for your apple pie. Vanilla and nutmeg notes are a natural complement to the cinnamon-spiced fruit and buttery crust.”

1¼ oz. bourbon 1 oz. bittersweet liqueur 1 oz. sweet vermouth orange twist for garnish

DIRECTIONS 1. Mix bourbon, bittersweet liqueur and sweet vermouth in a glass with ice and stir until well-chilled. 2. Strain into a rocks glass over fresh ice. 3. Garnish with an orange twist.

CYNAR Pronounced CHEE-nar, this amaro is less sweet than Aperol and less bitter than Campari. Though it is made with artichokes along with a secret blend of herbs and spices, it doesn’t actually taste like artichokes. Earthy and herbal, it is used as both an aperitif and digestif.

FERNET This bitter drink is made from numerous herbs and spices which vary according to the brand. Add a shot to your after-dinner coffee to make the bitterness more palatable.

Rich and warming, it is perfect for a chilly night. The Restoration Hardwareowned property is a wine, food, and shopping mecca comprised of five separate experiences—an indoor/ outdoor restaurant with a glass roof surrounded by 100-year-old olive trees and adorned with dramatic crystal chandeliers; a two-story wine-tasting space with its own share of crystal chandeliers and a sleek limestone bar; a limited-production wine center; an espresso bar; and a boutique design gallery grander in scale than even its ever-so-lavish sister property at the Scottsdale Quarter in Scottsdale. Award-winning chef Brendan Sodikoff leads the kitchen, sourcing seasonal ingredients from nearby farms and using them as inspiration for both whimsical, shareable, and New American fare, as well as twists on comfort-food classics. Whether you’re hosting Thanksgiving or an autumn dinner party, setting a festive table creates the perfect cozy atmosphere. Improvise and use what you have around the house for adding elements to the table. Candlesticks, vases, little pumpkins and gourds, or fall decor you have on hand can make a great centerpiece. Add fresh flowers or dried foliage for that extra layer of texture and color.

The Traditional Table For this classic, traditional look, a plaid throw blanket stands in for a tablecloth to establish a festive base layer. Brass candlesticks with brown taper candles create a simple and elegant centerpiece. Use familiar accents such as amber jars filled with dried grass foliage and brass pheasants to adorn the table. To add a little character to the table, use a recycled wine bottle as a vase. The simple place setting is enhanced with a dried grass accent and brown silk ribbon tied into a bow to add a special touch to your traditional display.

The Fall Garden Party Table Are you planning to dine al fresco this fall? Create an earthy, fall garden party on the porch by using natural, organic elements, greenery and flowers. To make a statement, create a floral chandelier by hanging flowers upside down above the table using fishing wire (if your space allows). The centerpiece that runs down the length of this table consists of fresh eucalyptus with gold candlesticks and a ceramic pumpkin vase filled with flowers placed on top a tree trunk charger. Adding small pumpkins and fresh flowers along the center gives a little extra character. Instead of going with the classic white plate, enjoy a pop of color at your outdoor fall garden party with a blue place setting as a nod to the sky.

Falling For Neutrals SEASONAL DECOR TIPS FOR KEEPING IT SIMPLE I love decorating for the holiday season, but it gets tough if trying to keep a home decor airy, light and neutral. My home is full of neutrals, such as linen, khaki, white and gray, so decorating for the holidays can be tricky with the bright and bold themes on display at the stores. Here are tips regarding how to achieve a festive look without going overboard.

LESS IS MORE First, whenever decorating for the holiday season, I clear what's possible to make room for what's coming. I eliminate decor pieces that are displayed year-round to avoid adding clutter to rooms. Giving decor pieces or floral arrangements their own space to shine can pull the room together and make it feel very designed.

GO COZY Swapping out usual throw pillows and throw blankets for plushy, cuddly materials and seasonal prints are another simple way to add holiday spirit without being so literal. Opting for neutral plaids, cable knits, or sherpa materials add that feeling of fall and winter.

CATER TO ALL THE SENSES Don’t forget about the smell! Stocking up on candles that smell like the season is the last missing piece for a holiday vibe. The total sensory feeling of the holidays is what really brings a home to life, whether it's pumpkin spice burning for Thanksgiving or a fresh pine and cedar for Christmas.

STICK TO THE PALETTE As best as possible, I try to stick to each of the color palettes in my room. When it’s time to bring out pumpkins or holiday Santas, I stick to white and neutral or add in color pops of gold and silver to keep everything flowing. If I start to add too many primary colors, it ends up looking like a mash-up gone astray.

CELEBRATE MEMORIES The holidays are often bursting with family traditions and memories, and decor can reflect that, too. I have many items handed down over the years that I like admiring, but if they aren’t quite right for my room, there are options to bring the spirit of them to life. Framed holiday family photos in a black and white filter are an excellent way to tie in your history of celebrating in a subtle way.

LOOK TO NATURE Some of my favorite items to use for holiday decor come from a simple nature walk. Using actual items you find, or just getting inspiration from the outdoors is a great way to bring sights of the season indoors. For fall, elements such as branches, leaves and neutral gourds match with everything. For winter, I love using sticks with berries
