Welcome fall!
With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We had the pleasure of sitting down with the chef and owner at Bluestone Steakhouse & Seafood, and got an in depth look at what goes into making their food and drink superb, and we found out about the supper club experience they offer —so get your taste buds ready, you are in for a treat.
The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple, pumpkin, and soups of any kind brings me right back to her table. For me, fall is the smell of fresh apples. There was an apple farm up the road that offered various hot and cold cider drinks that we would enjoy while my mom bought a couple of bushels of apples. We canned apple sauce and apple butter, made apple pies, apple bread, apple crunch and froze apple slices for use during the year. We saved some for ‘dunking for apples’ at the annual Halloween party we held in the dirt cellar. (It was scary all year long) Good times and memories! - That also reminds me of the hours spent picking green beans (and cutting and freezing them) at Max Yeager’s farm that would eventually host Woodstock but that’s another story.
There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. FRENCH HARVEST CELEBRATION GOT INVITED TO AN AMERICAN FAMILY HOLIDAY DINNER

The culture of wine is ancient, dating back to the beginning of civilization… rich in history and tradition.
Until the last few decades most of that culture wasn’t known outside of the native country or region that created it. Now we have a truly global awareness of wine that’s driven by consumer interest and supported by media and wine professionals that provide background and education. Given the easy availability of in-depth information via the internet, a plethora of print publications, blogs and advertising, it’s easy to forget that there was a time before social media and on-line marketing when an introduction to new wines and traditions was revolutionary!
A perfect example is the phenomenon that is called Beaujolais Nouveau.
It’s a tradition in the Beaujolais region of France that celebrates the conclusion of a successful harvest dating back more than two centuries.
The French have a term, “vin de primeur” which translates to “early wines”. These are wines that are made to be drunk with little or no aging in the same year as the harvest.
Beginning in the 1800’s, this is an unusual practice that is only allowed legally in 55 appellations in all of
France. The wines were simple, sweet, refreshingly fruity and often served directly from the barrel.
In 1937 the system known as Appellation d'Origine Contrôlée (AOC) was established to oversee and regulate the wine industry in France, ensuring quality and consistency of the wine and adherence to local custom and tradition. Over time the rules regarding Beaujolais Nouveau evolved, including when the wine could be released to the public. In 1987 it was decided that the third Thursday in November would be the official day, creating a uniform release worldwide for a thirsty public.
The reason this regulation was required is due in large part to a man named Georges Duboeuf.
Georges was born in 1933 on a small farm near the village of Chaintré in the Burgundy region of France. His family had a small vineyard that produced Chardonnay grapes and they made wine under the Pouilly-Fuisse appellation. It was a venture that everyone in the family participated in, including Georges. He began his winemaking career at the age of six by turning the crank of the small, manual grape crusher the family used to make their wines.

When his father passed away, the business was run by his uncle and older brother. He learned winemaking from the two of them and helped make the wines.
As a teenager, one of Georges’ jobs was to deliver wines on his bicycle to local buyers, bars and restaurants. At 18 years old he took it upon himself to visit several Michelin starred restaurants in the area and promoted the family wine so well that they became new customers, raising the family’s reputation as quality winemakers. Eventually he accepted a commission from a client to produce wines from the Beaujolais region to the south of where his family lived.
In the early 1950’s Georges set up a modest bottling operation and took contracts from small wine producers in the region to custom bottle and help market their wines. Up until this point many of these wineries sold wine only in small casks. He then established a syndicate of small growers in the region, the Ecrin Mâconnais-Beaujolais, helping to grow and develop the wine industry in the area.
This eventually led to Georges moving to Beaujolais and establishing himself as a négociant, a wine merchant that makes wines and buys and sells wines from other suppliers under his own brand. To promote awareness about Beaujolais wines Duboeuf took the rustic, regional tradition of the Beaujolais Nouveau celebration to fine dining restaurants in Paris and invited celebrities to his own festival hosted by his company, Les Vins Georges Duboeuf. It became a hugely successful event that grew in popularity as the years passed and influenced other wineries to follow his example. His company has become one of the largest négociants in France, producing over 25 million bottles of wine per year.

In the 1980’s he introduced Beaujolais Nouveau worldwide. The flavorful, off-dry, fizzy, fruity wine that had aromas of pink bubble gum was a huge hit in America, Australia and even Japan! Beaujolais Nouveau became a global phenomenon.
In America the annual release date on the third Thursday of November happened to coincide with the tradition of Thanksgiving dinner that follows a week later. Beaujolais Nouveau has now become a fixture on many Thanksgiving tables. The semi-sweet flavors of cranberry, red cherry, raspberry, the high acidity and slight effervescence from the fermentation makes it a perfect complement to roast turkey with all the fixings.
Like most youngsters, it’s a wine that demands your immediate attention. It’s made to be experienced now…not later and offers simplicity and freshness rather than depth and aging potential.
Or as a friend of mine says…it’s for drinking, not thinking.
So, my fellow wine lovers, mark November 16th on your calendar this year and grab a bottle before it’s gone.
Think of it as a reminder to live, (and drink), in the moment and relish the experience because, like Thanksgiving, Christmas and birthdays, it won’t come around again for another year!

Why is Everyone Headed to Iceland?
The allure of Iceland is unlike that of most of the world’s top tourism hotspots. This remote island nation, resting on the outskirts of the Arctic Circle, is spare and sparsely populated. Icelanders live with 23 hours of darkness in December, and 22 to 24 hours of daylight in June. Icelandic weather can be fickle. The country’s terrain is notably treeless. Nearly two million people a year, mostly Americans, are exploring and loving Iceland. I wanted to find out why.

The picturesque town of Akureyri is a gateway to several fascinating geologic sites
The world’s most northerly capital, Reykjavík, is home to Iceland’s 320,000 people. They are listed in local directories by their first names, given that the tradition of naming after parents, Gunnarson and Ólafsdóttir, etc., can create confusion. Most visitors begin their Icelandic adventure in Reykjavík, spending about an average of six days in the country overall.
Reykjavík is a cosmopolitan hub with notable modernist architecture, many museums, good restaurants and lively cafes. Most of the city is heated with water pumped from hot springs and geothermal wells. We skipped the area’s geothermal spa experience to devote maximum time to the geological wonders of southern Iceland’s 190-mile-long Golden Circle.
In a country of 30 brewing volcanoes and 100 others that are tentatively dormant, there is much that lies beneath. The Golden Circle encompasses geysers, volcanoes, bubbling springs and dramatic waterfalls. Initially, Iceland was heavily forested. The early Vikings cut down most of the trees for shelter and heat. For me, there was something hushed, unique and moonscape-beautiful about miles of stark tundra. Icelandic horses roam through fields of wildflowers, and sheep graze on undulating hills. Iceland’s ratio of sheep to people is more than two to one!
One stop to make along the Golden Circle is the UNESCO Heritage Site called Thingvellir. This national park features Iceland’s largest natural lake and the only location in the world where tectonic plates — the edges of two continents — meet above water. You can even walk between them.
A few miles down the road is Gullfoss Waterfall. Here, powerful cascades have carved out a twisting, cavernous gorge. Another Golden Circle attraction is “Geysir,” after which all other geysers are named. It erupts less frequently than “Strokkur,” also on the site.
Traveling north by ship, with ice floes floating
by, we stepped off the off-beaten path in Iceland’s Westfjords, located at the lip of the Arctic Circle. Entering into the town of Isafjordur, where shops offer excellent woolen goods, we boarded a small boat for a 70-minute cruise through fjord majesty, then transferred to a rubber dinghy. Wearing hiplength waders, our boatman slid into icy water and pulled us to shore. The abandoned settlement of Hesteyri is barely livable during winter months and is a designated nature preserve. After a warming break of pancakes and coffee in one of the few buildings left there, we encountered an Arctic fox.
Farther south is the ski resort and fishing town of Akureyri, second in population to Reykjavík. Its harbor, festooned by snow-capped peaks, is breathtaking. The city’s red stoplights are heart shaped. A full-day excursion from here takes you to Lake Myvatn and the 2,300-year-old lava labyrinth named Dimmuborgir. Folklore has it that the troll/ogre Gryla lives there with her child-devouring cat. She has 13 sons, the Yule Lads, who leave gifts in kids’ shoes for 13 days before Christmas. Naughty children could find a raw potato! You can decipher the faces of the other-worldly creatures in the Dimmuborgir lava rocks. This area also encompasses geothermic pools, steam vents, volcanoes and dimply “pseudocraters.” The latter were formed when molten lava flowed into Lake Myvatn.
Our last stop was the avalanche-prone eastern town of Seydisfjordur, tucked away at the innermost point of a fjord. It’s a hiker’s dream. The town is robust with brightly painted houses and pubs. An outing from here offers spectacular panoramic views.
Iceland is one of the healthiest, happiest and most literate countries in the world, with vistas of pristine beauty awaiting every visitor. A land of fire and ice, the country is an alluring work of nature still in progress. Simple but deep, dynamic but austere, Iceland is poetic in that way. Bundle up and enjoy.

Back in the 1930s and 40s, America’s high society flocked to high-end supper clubs like New York’s Rainbow Room or Los Angeles’ Saucy Sister to enjoy an evening out. Dressed in tweed suits and drop-waist dresses, patrons sipped gin & tonics and dined on classic American fare as jazz greats like Dizzy Gillespie or the Count Basie Orchestra took the stage.
Supper clubs were the place to see and be seen. They offered a sense of community – a place to catch up with old friends and meet new ones while being
pampered by attentive wait staff. Quite the opposite of today’s hurried meals, supper clubs encouraged patrons to linger; dinner was an event, a celebration, an evening-long hiatus from the stresses of life.
Fortunately, supper clubs are not entirely a thing of the past. In fact, they have been making a come-back in trendy locales across the country, and Tulsa is no exception. The new owners of Bluestone Steakhouse & Seafood, Bill and Sharon Tackett, are committed to giving this time-honored tradition new life in Tulsa.

Bluestone Steakhouse & Seafood looks and feels decidedly different from a standard restaurant. Tucked into the corner of a shopping center at 101st and Sheridan, the restaurant’s modest exterior belies an elegant yet relaxed dining experience. The ambience is intimate and moody with dark wood-paneled walls and a mid-century, circular fireplace framed by dining space. Tables are tastefully set with candles and tablecloths, and guests are presented with leather-bound menus by formally dressed waitstaff.
Despite the sophisticated atmosphere, Bluestone welcomes Tulsans as they are. Whether you choose to dress up or wander in donning jeans and a t-shirt, you will be treated like royalty. The changing menu at Bluestone Steakhouse & Seafood is classic American cuisine made in-house with Certified Angus Beef ® taking center-stage. Though you won’t find a better steak in Tulsa, steak isn’t the only thing on the menu. Salads, pastas and seasonal seafood
like fresh Halibut and Sea Scallops are also prepared in-house by Bluestone’s culinary team. Whether it is vegetarian, vegan, keto or gluten-free, special diets and food restrictions can be accommodated as well.
For those not committed to a full meal, Bluestone has a loyal happy hour crowd, who stop in daily for drinks and halfpriced appetizers from 4 to 6 p.m. They enjoy a fully-stocked bar while watching the bartender mix a signature cocktail or smoke a glass of bourbon. We even spotted some hard-to-find whiskeys like Booker’s and Blanton’s available by the glass.
Wine is an important accompaniment to the perfect steak, especially when served in crystal goblets. A Napa cab, a South American blend, or a Spanish Tempranillo stands up beautifully alongside a 25-day aged Porterhouse or a 30-day aged Blue Ribeye. An unoaked chardonnay would pair nicely with Panko Fried Goat Cheese or Strawberry Salad. A lighter pinot noir or pinot gris would complement the halibut nicely. And don’t forget to pop a bottle of chilled champagne for special celebrations!

THE FLAVOR OF FALL
Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.
APPLE GALETTE WITH CARAMEL DRIZZLE
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
INGREDIENTS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ELEVATED GRILLED CHEESE
This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.
INGREDIENTS:
• 1/4 red onion, sliced
• 2 tablespoons brown sugar
• 1 tablespoon olive oil
• Sliced sourdough bread
• 1-2 tablespoons butter
• 4 ounces Brie, sliced
• Fig jam, or preferred choice of jam
• 1 Granny smith apple, sliced
• Arugula
• Thinly sliced ham, optional
INSTRUCTIONS:
Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!

It’s Pumpkin Bread Season
The Perfect Recipe For Some Autumn Comfort
Ingredients:
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1 1/2 teaspoon ground cinnamon
• 1 teaspoon nutmeg
• 1/2 teaspoon ginger
• 1 teaspoon salt
• 1 1/2 cups canned pumpkin
• 1 1/2 cups sugar
• 2 teaspoon vanilla extract
• 1/2 cup vegetable oil or canola oil
• 1/2 cup melted butter
• 2 eggs
Directions:
1. Preheat the oven to 350 degrees.
2. In a mixing bowl, add the flour, baking soda and baking powder, spices, and salt. Set aside.
3. Combine the oil, butter, and vanilla in a liquid measuring cup.
4. In a mixing bowl (with a paddle attachment), beat the pumpkin, sugar, and eggs until combined.
5. Turn the mixer to low and slowly add the liquid ingredients. Let this process take about 1 to 2 minutes so the mixture becomes light and fluffy.
6. Using a spatula, fold the dry ingredients into the wet and slowly fold until the ingredients are blended.
7. Prepare a 10 x 5 loaf pan by buttering it really well and then adding a strip of parchment paper to the bottom and up the sides for easy removal.
8. Bake in a preheated 350-degree oven for 1 hour. The bread will be fully risen in the center, like a loaf. Make sure it’s fully cooked and brown on the top otherwise it will fall in the middle once removed from the oven.
