Food brings us all together, and we couldn’t be luckier when it comes to the amazing dining options we have right here in Tulsa. We think you’ll agree when you flip through these delicious pages! We all have our little quirks about food. I have to try linguini and clam sauce if it's on the menu no matter where I am and if it's good, I remember where the restaurant is in case I ever go back. The best so far has been an Italian restaurant in Cabo San Lucas, a tiny hole in the wall about a block from the beach in Wildwood, NJ, and the photo is a dish I had in Venice. Of course I go to Mondo's in Tulsa if I get that craving and don't feel like cooking. As always, thanks for reading, and we’ll see you around town!

RESTAURANT BASQUE When Andrew Donovan became the Executive Chef of Amelia’s Wood Fired Cuisine, he brought to the table an impressive resume. Enlisting his expertise, owner Amelia Eesley opened what has become the hottest new place to dine in Tulsa’s Art District. Basque cuisine, originating from an area that straddles the borders of Spain and France, is commonly served in small portions. Like tapas, it is designed to be shared. “The Basque country has more Michelin-starred restaurants per capita than any other section of the world,” offered Donovan. He helped to develop the Restaurant Basque concept with Eesley by drawing from his travels in Spain, and through his experience as Executive Chef at the Zagat-honored Tia Pol — named the best Spanish restaurant in New York City.

Chef Donovan’s wife, Ashley Whitfield Donovan, is a

made specifically for the American palate.” “For me, a lot of it really comes down to the authenticity of the ingredients,” explained Donovan. “We’re not using Spanish-style cheese or Spanish-style vinegars. We import all of that directly from Spain.” The restaurant’s tuna is sourced from Spain also, with the halibut coming out of Pacific waters and the mussels from Prince Edward Island. Restaurant Basque is now open six days a week, including Mondays. A covered patio and a private dining area are being developed. Eesley advised that the restaurant is currently accepting catering requests and reservations for private events slated for the upcoming holidays.

DUET Tuck Curren and his wife Kate have owned restaurants and worked together for 35 years. In 2018, they opened Duet in the Tulsa Arts District’s historic Archer Building, showcasing eclectic, vibrant American food with a global influence. The 140-seat jazz club located in the restaurant’s lower level is closed for the time being, but music presented on Duet’s patio is a crowd pleaser. Tulsa’s foodies will know the Currens from their Biga restaurant, 4329 S. Peoria, featuring casual Italian fare.

Don’t Bid Against Yourself in Family Law Matters Many individuals are very anxious to get their divorce or family law matter concluded quickly. They want the case to end. They want the pain to end. They want it to stop as soon as possible. They want to move on with their life. To try to get a case settled, they issue a settlement offer. In some cases, a response to the settlement offer is not forthcoming by the deadline that was set for the offer to expire. Instead of patiently waiting for a response to a settlement offer, and continuing to move their case forward in the interim, many are tempted to issue another more enticing settlement offer. In other words, they offered one particular proposal and since there was no quick response, they desire to butter up the original proposal with an even better offer. When a party to a divorce or family law matter does this, they are

essentially bidding against themselves. They are sweetening the pot, in essence, with the hope that the other party will bite on the more generous offer to conclude the case. In some cases, it is certainly possible this might cause the other party to bite. But in many cases, the other party might come to realize that by not responding to the original offer, they got an even better deal. This can lead to a party thinking that they might not respond to the second offer, either. By not responding to the second offer, the thought is the there might be an even better third or fourth offer coming if they just keep not responding. This path can lead to a party becoming way too generous just to get a case done. This can ultimately lead to regret at some point after the case concludes. For most parties, submitting a settlement offer to attempt to settle the case makes sense. But bidding against yourself (when there was no response to the original offer) does

not usually make sense. If you have submitted an offer, it’s usually best to wait for a response before issuing a second settlement offer. Even if the deadline you set for a response has passed, it’s best in most cases not to submit another offer until a response is provided to the original offer. If there is no response, consider continuing forward in preparing your case until you get a response to the original offer. THE BEAUTY AND DIVERSITY OF THE AGAVE

WE AMERICANS LOVE TEQUILA. It’s currently the fastest growing category of spirits sold in the US and we consume a great deal of it…albeit as margaritas or shooters with salt & lime. While there is love for Tequila, there’s also a lack of appreciation for how truly diverse this spirit can be. Tequila is made primarily in the Jalisco region in Mexico as well as smaller designated areas in five other districts. The best ones, labeled as “100% Blue Agave,”’ are made with pure Blue Weber agave and contain no other ingredients. These Tequilas are divided into different categories based on production and aging methods. Blanco or Silver is bottled with little or no aging. It has classic, complex sweet-minty-fruity-vegetal flavors and aroma that are associated with Tequila but is also the harshest on the palate. Blanco Tequila is loaded with tannins, the same element that makes red wines dry and astringent. Lime and salt are two elements that will counter the effects of tannin, producing a softer, more appealing sensation for the drinker. (The trick is to hit the lime and salt before the shot, not after. Dip your lime wedge in a bit of salt, hit it and take your shot. Even really cheap Tequila will taste better.) The traditional recipe for a margarita always includes salt and lime for this reason.

Añejo Manhatten

Aged Tequilas are categorized by how much time they spend in white oak barrels, often used whiskey barrels from the US or Canada. Reposado or “rested” Tequila is aged for a minimum of two months and generally less than a year. Añejo or “aged” Tequilas age at least a year in barrel and up to three years in some cases. Additional aging in stainless steel can be used to prevent excessive evaporation that occurs in the barrel. The charred wood acts as a filter to absorb the more aggressive elements of the spirit and creates a richer, more mellow final product. These Tequilas often express less alcohol burn on the palate. The final two types are Extra Añejo or “extra aged” which is held for a minimum of three years in barrel, and Cristalino, aged Añejo or Extra Añejo Tequila, that is mechanically filtered with charcoal to make a crystal-clear spirit that has the character of an aged Tequila with the fruited flavors of a Blanco. Then there’s “Mixto” Tequila which is also called “Gold” or “Joven”. The least expensive versions only need to have 51% pure blue agave and the balance can be other types of fermentable sugars. The addition of grain alcohol and coloring agents is also allowed. Higher quality Mixto Tequila can be a blend of unaged and aged agave spirits with no grain alcohol used. Mixto is primarily used for making margaritas or doing shots as cheaply as possible. (Lime & salt are a must here.) For making variations on many traditional cocktails, substituting an aged Tequila for a barrel aged spirit like Bourbon or Scotch offers a new take on an old favorite. Añejo and especially Extra Añejo will have many of the attributes of whiskey…notes of vanilla, caramel, butterscotch and smokiness, but trading the sweetness of corn for more subtle flavors of agave-tropical fruit, citrus notes and spice. Blanco and Reposado Tequilas are great substitutes for white and gold rum in cocktail recipes. They work well with tropical fruit and citrus flavors.
