AS NOVEMBER ROLLS AROUND, WE’RE ANXIOUSLY AWAITING THE APPROACH OF THANKSGIVING, THE HOLIDAY SEASON AND TIME SPENT WITH OUR LOVED ONES. The winding down of the year always brings about a time of reflection for us— remembering everything we’ve done or accomplished in months past; looking back on turkey disaster stories, mornings watching the Thanksgiving Day parade or afternoons spent curled up on the couch after one too many pieces of pie; thinking of the people, experiences and things we’ve been blessed with in the last year. I N G R E D I E N T S ++ 220 grams almond flour ++ 85 grams sugar ++ 80 grams Potato starch ++ ½ teaspoon baking soda ++ ½ to 1 teaspoon (to taste) cardamom ++ 1 ½ teaspoon orange zest ++ 1 stick butter ++ 1 teaspoon orange or lemon juice ++ 2 eggs
D I R E C T I O N S Preheat oven to 350. Place dry ingredients (almond flour through orange zest) in a medium bowl. Cut butter into chunks and work into the dry ingredients until it is evenly dispersed and crumb-like. In a small bowl, whisk eggs and juice together. Fold this into the almond flour mixture until well combined. Using a scoop or spoon, drop the mixture onto a baking sheet lined with parchment paper. Bake for 13-18 minutes, or until internal temperature reaches 170 (turning pan once halfway through baking).
The base (everything minus the cardamom and orange zest) can be used with a variety of ingredients, i.e. cherry chocolate, lemon poppy seed, or whatever flavor combination your taste buds desire! Have fun and enjoy!

D I R E C T I O N S Warm the milk on the stove and then whisk in the chocolate. Cook at a very low boil for around 3 minutes while whisking constantly. Remove from heat and add brown sugar to taste.
This can be made ahead and let sit for a few hours, just rewarm before serving. For a richer hot chocolate, use 1 cup heavy cream and one cup milk. For younger taste buds, milk chocolate can be substituted.

MOUNTAIN FORK RIVER Continue your drive on Highway 259 south past Broken Bow to the Upper and Lower Mountain Fork River for year-round trout fishing in the river’s rushing waters. Mark your calendar for the annual Beavers Bend Folk Festival & Craft Show November 9, 10th, and 11th and spend a crisp fall afternoon enjoying folk music, vintage crafts, hayrides and a wide variety of tasty treats. The Mountain Fork River area is abundant with camp grounds and lodging options. But make note that although Oklahoma State Parks are open yearround, certain campgrounds are temporarily closed for the winter season, so it’s a good idea to make a call before heading out for a holiday camping trip. LIGHTS ON THE ISLAND Lights on the Island is an annual drive-through light display held from November 16th though December 25th. The popular light display in Lake Wister State Park began over ten years ago with just a few donated lights. After years of dedication to the displays, the spectacular light show has grown with radiant color each and every year. Many volunteers brave the cold each winter to greet car loads of visitors and hand out candy canes. Over 300 light displays cover the entire island with several animated displays such as tumbling bears, dinosaurs, and a 32-foot-tall Lady Liberty.
