THE FLAVOR OF FALL

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cureall, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.

CULINARY CREATIONS | FOOD + BEVERAGE 12

APPLE GALETTE WITH CARAMEL DRIZZLE

Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.

INGREDIENTS: INSTRUCTIONS:

Crust:

• 1 1/2 cups flour

• 1/4 cup sugar

• 1/4 teaspoon salt

• 1 stick cold unsalted butter, cubed

• 1/4 cup iced cold water

Filling:

• 2 apples, peeled and sliced into thin slices

• 1/4 cup packed dark brown sugar

• 1 1/2 tablespoons flour

• 1 1/2 teaspoons lemon juice

• 1 teaspoon cinnamon

• 1/4 teaspoon ground nutmeg

• Caramel sauce

• Optional: 1/4 chopped walnuts or pecans

Crust:

(Note: If running short on time, store bought crust works great, too.)

Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.

Filling:

Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.

Assemble and Bake:

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ELEVATED GRILLED CHEESE

This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.

INGREDIENTS: INSTRUCTIONS:

• 1/4 red onion, sliced

• 2 tablespoons brown sugar

• 1 tablespoon olive oil

• Sliced sourdough bread

• 1-2 tablespoons butter

• 4 ounces Brie, sliced

• Fig jam, or preferred choice of jam

• 1 Granny smith apple, sliced

• Arugula

• Thinly sliced ham, optional

Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!

APPLE CHUTNEY

This Indian-inspired dish is the perfect fall topping for pork chops and also pairs nicely with ham. This is so easy to make and will fill your kitchen with the aroma of fall.

INGREDIENTS:

• 4 tablespoons butter

• 2 cups Granny Smith apple, chopped

• ¼ cup pecans or walnuts

• 1/3 cup apple juice

• 3 tablespoons brown sugar

• 3 tablespoons dried cranberries

• 1 teaspoon lemon juice

• ¾ teaspoon cinnamon

• ½ teaspoon nutmeg

INSTRUCTIONS:

Heat butter in saucepan, then add remaining ingredients. Cook over medium heat until the sauce has cooked down and the apples are tender. Serve over pork chops. Enjoy!

FALL RECIPES FROM MARRIOTT'S CULINARY CREATIONS

Here are some delightful recipes shared for our readers from the Marriott Hotel located in the heart of Westlake. Their dining restaurant is a blend of American cuisine designed to cater to both the local community as well as traveling and corporate guests. Follow these directions for a tasty treat for your autumn celebrations and get togethers with family or friends.

Herb Seared Salmon

INGREDIENTS:

• Corn Oil:2 ½ Tbsp.

• Salmon: 6oz

• Kosher Salt: 1/8 tsp

• Corn Oil: 2Tbsp

• Fingerling Potatoes: 4oz

• Green Beans (Blanched): 3oz

• Grape Tomatoes: 1oz

• Mustard Vinaigrette: .5oz

• Kalamata olives: 1oz

• Mustard Vinaigrette: 1oz

DIRECTIONS: Heat oil in sauté pan. Season salmon with salt and pepper then place in oil with presentation side down. Cook until golden brown then flip and finish in 350 degree oven to requested temperature. Heat corn oil in a separate saucepan, add fingerling potatoes, roasted until lightly brown, add green beans, grape tomatoes. Drizzle the mustard vinaigrette over vegetables, add Kalamata olives. Sautee all ingredients until properly heated. Place vegetables in center of the plate, then place salmon over vegetables and drizzle the mustard vinaigrette over salmon before service.

Roasted Herb Chicken

INGREDIENTS:

• Olive Oil 4 TSP

• 6 oz. Chicken Breast 1 Each

• Asparagus (cut) 3 oz.

• Cherry Tomatoes 2 oz

• Kalamata Olives 1 oz.

• Mushroom blend 1 oz.

• Brown Rice (heated) 4 oz.

DIRECTIONS: Heat 2 TSP oil in skillet. Place chicken in heated skillet sear until slightly golden then flip and put in oven until chicken reaches 165 degrees. In second pan, heat remaining oil. Add vegetables and cook until tomatoes are heated. In separate pan, add oil and sauté the brown rice until it reaches 165 degrees. Place heated brown rice in center of plate. Place chicken on top of rice. Drizzle remainder of natural jus over chicken. Arrange vegetables around bed of rice. Garnish with parsley.

Mustard Vinaigrette

INGREDIENTS:

• Red Wine Vinegar 1 cup

• Dijon Mustard 2 ½ fl. Oz.

• Sugar 1 tsp.

• Black Pepper 1 tsp.

• Salt 2 tsp.

• Olive Oil 2 cup

• Parsley (Chopped) 4 oz.

DIRECTIONS: Using a mixing bowl, combine all of the ingredients, except the oil and parsley, together in a mixing bowl. Whisk in the oil in a slowly steady stream until emulsified. Add the chopped parsley and adjust seasoning with salt & pepper as needed. Reserve covered for service. Make sure to stir the dressing well before each use to re-emulsify the dressing.

possible. Trader Joe's and Central Market are my favorites for cheese selections. Green pesto gouda is a must have for pesto lovers and sage derby, port wine, and Irish Dubliner are a few of my go-to cheeses. I also love the mini bries, Tapas Trio, 1,000 days aged gouda, bacon gouda, and blueberry vanilla goat cheese from Trader Joe's when available. Kroger’s, Sam’s Club and HEB are good as well if you have one nearby.

Fall is here, let the parties begin again! There are so many things you can do with your charcuterie boards during the fall. Accenting with pumpkins, Halloween décor, or even turkeys for Thanksgiving, will put some “pop” into your board and make it extra special.

Pumpkins are my first go to for Fall, and there is a wide variety of colors you can use based on the event. For a recent baby shower I purchased pink and white pumpkins from Michaels and wrapped eucalyptus (faux or fresh will work) around them for some added green. (Trader Joe's is great for finding fresh eucalyptus) Having a variety of sizes and colors down the center of your table, with a variety of your favorite meats and cheeses will impress your guests when you have them over!

Next comes the meats! Thank goodness for my trusted taste testers, because believe it or not I’m really not a salami girl. I love to use the trio pack from Boar’s Head (available at Kroger), Wild Boar, artisan meat, and mozzarella variety wraps, but any variety charcuterie pack will work too. There are so many different varieties out there, maybe pick three of your favorites and try three new ones every time you make a board just to be adventurous. If you’re having a themed party, it’s always fun to use the themed skewers for an added touch.

Next comes the toppings! I love the honeys from Pearl Honey Spreads. Their raw creamed honey is nothing like you’ve ever tasted and is a must for any charcuterie board! I also love fig preserves and hibiscus marmalade to accent my meat and cheeses. Fresh honeycomb is delicious too if available. Don’t forget to include your mini honey dipper stick!

I also include a variety of fruits, and anything you love that also looks pretty will work! Dried fruits like dried kiwi, pomelo, apricots,

and figs work well. Including some vegetables, primarily cucumber, carrots, sugar snap peas, and other veggies you love will probably work also, although I would stay away from lettuce-type veggies. Sweetened dried hibiscus flowers (they’re like an adult fruit rollup) are a must-have on any board that I do.

The sky's the limit with fun things you can find in stores to have fun with Halloween. You can place random cupcake holders on your board to resemble little cauldrons, plastic spider rings, and any other small Halloween decorations you can find. Or if you have time and some creativity you can make mummies out of brownies, roll your artisan cheese wraps to resemble fingers with sliced almonds for the fingernails, or make prosciutto wrapped olives look like eyeballs.

I love to buy the pumpkins on a stick during the fall (they’re a version of eggplant), rosemary, fresh flowers or greenery to garnish my board. I also include artisan crackers, cornichons, olives, salted caramel chocolates, and cake pops by Alli’s Delicious Treat of course!
