Meet Shenandoah “Shen” Cronin Reyna and John Reyna, a husband and wife duo who run Teakwood Tavern Hospitality. Their diverse and unique backgrounds blend like one of their favorite Rhone wines to deliver an amazing experience for their lucky clients. The latter enjoy their educational classes and custom drinks for their home bar. As Shen says, “Everyone should have a personalized drink!” We couldn’t agree more! Shen and John run Teakwood Tavern as a side gig. For their “day” jobs, John is a professor and attorney and teaches Restaurant and Beverage Management at the University of North Texas at Dallas. Shen works as a Client Executive and tech geek for Sirius.
CITY LIFESTYLE TROPHY WEST (CLTW): TELL US WHEN YOU STARTED TTH. TTH: John spent several decades in the hospitality industry before law school as a restaurant manager, sommelier and banquet manager. [His] passion was always on the beverage side of hospitality; he enjoyed creating wine and cocktail programs. Fast-forward to 2015. We met at a bar, and since we’re both newly transplanted to Dallas, we spent our courtship exploring the Dallas food and beverage scene. As we built a life together, we also built a home bar. Never the bunch to do something half-hearted, we invested in cocktail and wine books, glassware and booze. Pretty soon, our home bar had its cocktail menu for guests. Our friends took notice and began asking us to create beverage programs for special events. Whether we’re making his-and-her cocktails for a wedding or pairing wines for dinner parties, there was a demand for our liquid talents. In March 2020, at the start of the pandemic, we found ourselves with a little extra time so we finally executed our dream to form Teakwood Tavern Hospitality, LLC.
CLTW: HOW HAS TTH EVOLVED FROM WHEN YOU STARTED? TTH: Starting Teakwood in March 2020 meant everything had to be virtual. Nowadays, we hold more in-person events than virtual ones. We recently taught a wine class for the staff of one of DFW's premier restaurants – Roots Southern Table. We've created cocktails for holiday work parties. Lately, we’ve worked with many individual clients who want a specialty cocktail or zeroproof beverage for their homes. We love this: Everyone should have a personalized drink!
CLTW: WHAT ARE SOME OF THE SERVICES, AND EXPERIENCES YOU PROVIDE? TTH: We offer educational classes, beverage creation, wine pairing assistance, party planning, and home bar makeovers. Whether you want to learn bartending basics, Pre-Prohibition cocktails, or how to taste wine, we provide educational classes at levels from novice to aficionado. We create cocktail and wine menus to match any party theme. We will guide you into stocking the home bar of your dreams so you can entertain like a professional mixologist and sommelier.
CLTW: IS THERE A TREND TOWARDS INCORPORATING LITTLE TO NO ALCOHOL DRINKS INTO GATHERINGS AND PARTIES? TTH: There is a trend of no-and-low beverages being more accessible at restaurants, bars, and parties. We love this trend. Individuals who choose not to drink (or want to limit consumption) shouldn’t be limited to Shirley Temples or club soda. They deserve quality beverages that are every bit as sophisticated as craft cocktails. Recently, a lot of non-alcoholic alternatives have come to market … The possibilities are endless when it comes to no-and-low beverages.

Candy Apple Spritz
In honor of All-Hallows Eve, Shen and John generously provided several cocktail recipes to enjoy. Two of the cocktails are Teakwood Tavern originals – including a non-alcoholic cocktail – and the third is a classic cocktail that fits Halloween perfectly. Cheers from Teakwood Tavern Hospitality!
WITCHES’ BREW A quick internet search will provide a lot of recipes for Witches’ Brew, but most of them are awful sugary messes. Not here. This cocktail is delicious just like this, but adding egg white takes the drink to a whole other level. The egg white creates a richness in the mouth and balances the tartness and sweetness of the other ingredients. Serve this magical brew at your Halloween party, and your guests will be so delighted they won’t care whether you’re a good or bad witch. • 1.25 oz Midori Melon Liqueur • 1 oz blanco tequila • 0.75 oz fresh lime juice (strain through a fine-mesh sieve to remove pulp) • 1 egg white Combine ingredients in a cocktail shaker. DO NOT ADD ICE YET. Perform a dry shake: close the shaker without ice and shake vigorously for 10 seconds. After the dry shake, open the shaker, add ice, and shake again for 15 seconds. Strain the drink through a fine mesh strainer into a coupe glass. The foam will sit at the bottom of the shaker so be patient when pouring into the glass.
CANDY APPLE SPRITZ The Candy Apple Spritz reimagines an iconic Halloween treat as a sparkly cocktail that still embodies a candy apple’s flavor profile and bold color. Fresh lemon and sparkling apple cider brighten the Candy Apple Spritz to rid your October 31 of evil spirits. • 1.5 oz Apple Brandy (We use Laird’s Applejack) • .75 oz fresh lemon juice (strain through a fine-mesh sieve to remove pulp) • .75 grenadine (Homemade - recipe below) • 4 dashes of Peychaud’s bitters • 3 oz Sparkling Apple Cider (We use Martinelli’s) Combine all the ingredients except the sparkling cider in a cocktail shaker. Fill with ice. Close the shaker and shake for 15 seconds. Strain into Collins glass with ice. Pour sparkling cider over the top, add a straw, and stir. Garnish with an apple slice and cinnamon stick. Homemade Grenadine • 150g pomegranate juice • 150g white sugar • 1 cinnamon stick • 1 teaspoon vanilla Combine all ingredients in a saucepan on medium-low heat. Heat just until the sugar dissolves, stirring regularly. Do not let your grenadine boil. Once cooled, remove the cinnamon stick and refrigerate for up to 2 weeks. THE GREAT PUMPKIN (NON-ALCOHOLIC COCKTAIL) This drink is a perfect example of how zero-proof cocktails can be as sophisticated and delicious, if not more so, than alcoholic cocktails. Dhōs Orange Liqueur is a delightful non-alcoholic orange liqueur that you can buy online or find in specialty stores. Carrot juice brings the pumpkin color and pairs beautifully with oranges. The fresh lemon juice and a pinch of cayenne brighten up the drink. This zero-proof cocktail will scare away the haters who think real cocktails require alcohol.
• 2.5 oz Dhōs Orange Non-alcoholic Liqueur • 1.5 oz carrot juice (we use Bolthouse Farms organic) • 0.75 fresh lemon juice (strain through a fine-mesh sieve to remove pulp) • Pinch of cayenne pepper (or more to taste) Place an ice sphere into a rocks glass, and set it aside. Combine ingredients in a cocktail shaker. Add ice. Close the shaker and shake for 15 seconds. Strain into the rocks glass. Garnish with celery stalk and cilantro. Cut small slits into the celery to hold the cilantro as it wraps around the celery.

Here’s what Vincent had to say about coffee trends, who would be a good fit for his coffee classes, and offered some good brewing tips to keep in mind for your next cup of joe.
ON COFFEE TRENDS HE IS SEEING: • Coffee to go. • From hot beverages to cold beverages, more young people are interested in cold than hot. • Cold brew, nitro cold brew, and other modern and creative cold beverages are extremely popular. We asked Vincent who would be a good student for Texas Coffee School’s two-day Barista, Espresso & Milks Class and Quality Brewing. “It’s usually a person who has a home espresso machine or some cool home-brewing gear who feels like they have plateaued

watching videos on YouTube. They want to get deeper down the rabbit hole of this really fun and exciting coffee hobby … our classes are a popular gift for people who are impossible to shop for! COFFEE BREWING TIPS:
1. Buy freshly roasted coffee weekly instead of in large batches for the month. 2. Brew with water that is right in the 200-degree (Fahrenheit) range. 3. Stop using bottled water; it usually doesn’t have enough mineral content for the coffee to extract properly and taste good.
4. When buying coffee gear, spend more on the grinder since it plays one of the most important roles in ensuring your coffee doesn’t taste awful. Blade grinders are about as precise as a hammer would be. Get a burr grinder.

The Trophy Club Rotary Club recently volunteered for Community Storehouse’s Summer Reading Camp. Travis Inge, a volunteer with TCRC, shared about the organization’s work in the community.
TELL US ABOUT YOUR RECENT SERVICE PROJECT. Fifteen local Rotarians served by cooking hot dog lunches, reading to camp kids, facilitating crafts and playing games to celebrate the last day of their Summer Reading Camp. The Trophy Club Rotary Club also brought enough books for each camper to take a book home.
WHO COORDINATED THE EVENT? For many years, Community Storehouse, based in Keller, has hosted a great Summer Reading Camp with hands-on activities designed to provide students with problem-solving opportunities, experiential and engaging interactions, social engagement and academic skill review. They provide various services and resources to support and encourage students and their families.
WHAT IS COMMUNITY STOREHOUSE’S (CS) MISSION? CS’s mission (communitystorehouse.org) is to keep children active and thriving in the Keller, Northwest,
Argyle and Carroll Independent School Districts. They're doing everything possible to keep children in school and help them succeed year-round. Volunteers participate in various activities from after-school reading, tutoring, organizing donations in the Donation Center, restocking the food pantry, helping with special events and so much more.
TELL US ABOUT TROPHY CLUB ROTARY CLUB: The Trophy Club Rotary Club was chartered in 2019 and is a service-based organization bringing together business professionals and leaders for the betterment of the local community and supporting global humanitarian projects under Rotary International, founded in 1905.

Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags

Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
