rent facility can no longer handle the rising case load, she says. But a planned capital campaign for the new building had to be put on hold during the height of the pandemic in 2020. Then, in February 2021, the campaign was restarted, only to be halted again when Winter Storm Uri wreaked havoc across Texas. Now, with the campaign in full gear, the energy is palpable and the need is greater than ever for construction of the new facility to begin, she says. Constance says that child sexual abuse cases have spiked during COVID, and the pervasiveness of Internet crimes against children is growing. Children and their families are arriving at the center after experiencing ever greater violence and more complex trauma. She says the new facility is meticulously designed to support the needs of these traumatized children, down to separate care spaces, with size and scale variations based on the age of the child.

SPIRITS OF THE SE ASON Kirby's ginger old fashioned, with Chivas Regal 12-year-old blended Scotch whisky

WE’VE TAPPED FOUR LOCAL SPIRITS GURUS AND

Director of Marketing & Events at Kirby's, Eric Saville

GATHERED THEIR TIPS FOR YOUR WHISKEY SHOPPING LIST. These bourbons, ryes and scotches make a great addition to your bar cart for holiday celebrations and a smart gift for

Fielding's Sazerac cocktail, with Knob Creek rye

the aficionado in your life. You’ll also find their suggestions for simple, “bartender-approved” 4-to-5 ingredient cocktails that are easy to replicate at home and will showcase your favorite “brown water” in all its glory.

Luis Valbuena, Bar Manager at Fielding's Local

WHISKEY GURUS SHARE TIPS FOR BUYING AND ENJOYING THE PERFECT BOTTLE

KIRBY’S STEAKHOUSE: RESIDENT WHISKEY GURU: Sam Miller, General Manager + Tips for the Scotch Aisle: When choosing a scotch whisky (Yes, the spelling is different–there is no "e" if you're referring to scotch whisky.), learn the lingo so that you can read the labels, experiment, and better focus your selections over time. Note whether the scotch is single malt or blended, the age statement, region of origin, the type of cask used for aging—all of these factors affect the flavor and body of the scotch. + Good for Sipping: “I prefer a single malt scotch from the Islay Region of Scotland. Medium-to-heavy peat, such as Laphroaig. It has an approachable price point for a 10-year Islay but still has a nice punch of peat and some dried fruit and floral characteristics.” + Good for Mixing: Choose a mild, blended scotch such as Dewars or Chivas Regal. (“You want the flavors to shine but not overpower the other ingredients in the cocktail.”) + Suggested Recipe: Kirby’s Ginger Old Fashioned–In a rocks glass, muddle an orange slice and 2 slices pickled ginger, add 2 oz. blended scotch, a splash of Angostura bitters and a splash of sweet vermouth.

FIELDING'S LOCAL KITCHEN AND BAR RESIDENT WHISKEY GURU: Luis Valbuena, Bar Manager + Tips for the Whiskey Aisle: It's always helpful to ask your local bartender for suggestions! + Good for Sipping: Thomas H. Handy Sazerac rye (“best rye overall”), Woodford Reserve (“a very well-balanced rye”) + Good for Mixing: Bulleit Rye, Knob Creek Rye + Suggested Recipe: Fielding’s Sazerac: Start with an absinthe rinse of your drinking glass. (Swirl a bit in the glass, coating the glass thoroughly, then save, discard—or drink!- the excess alcohol.) In an iced mixing glass, add 2 oz. Knob Creek or other rye, .5 oz. simple syrup, and a dash of Peychaud’s bitters. Stir, then strain into the prepared glass and serve straight up with a lemon twist. (Twist the peel twice over the glass to express the aromatic oils, then add the twist to the glass.)

BLEND BAR AND DAVIDOFF CIGARS: RESIDENT WHISKEY GURU: Alex Ables, Assistant General Manager + Tips for the Whiskey Aisle: If you’re not sure what you like, a safe bet is to choose something that’s been aged 10-12 years. If you know your own palate well, look for whiskeys that have been cask-finished in port, tequila, or sherry barrels to get the flavors you prefer. (“Tequila casks, for example, tend to lighten out the whiskey, and add vanilla and cedar notes.”) + Good for Sipping: Jefferson’s rye, Basil Hayden rye (“Basil Hayden has complex notes of caramel, dark dried fruit, cinnamon, nutmeg, and a port finish.”) + Good for Mixing: Jefferson’s rye, WhistlePig rye + Suggested Recipe: BLEND’s Maple Old Fashioned: In a mixing glass, muddle an orange slice with a couple of fresh cherries. Add 3 oz. Whistle Pig or other rye, 1 oz. maple syrup, and 2 dashes orange bitters. Strain into a rocks glass and add a large ice cube. Garnish with a skewered, candied bacon slice. CONTINUED >

Refuge's single-barrel Rossville Union rye and Blue Note Juke Joint bourbon

REFUGE STEAKHOUSE AND BOURBON BAR RESIDENT WHISKEY GURU: Louis Padilla, Director of Beverage + Tips for the Whiskey Aisle: If you prefer your whiskey neat, choose a higher proof. For cocktails, choose lower proof to lower the drink’s acidity and provide a balance to other ingredients. + Good for sipping: Blade and Bow bourbon (“It has the depth of flavor of a very expensive bourbon, but it’s easier to find.) + Good for mixing: Elijah Craig bourbon, Buffalo Trace bourbon + Suggested Recipe: Refuge’s Majestic Blue cocktail: In a rocks glass, mix 1.5 oz. Elijah Craig or other bourbon, .5 oz. St-Germain elderflower liqueur, .25 oz. fresh lemon juice, and .5 oz blueberry simple syrup. Serve with a single large cube and a skewer of fresh blueberries.

GIVING AWAY AFTER A SUCCESSFUL CAMPAIGN LAST YEAR, LIFESTYLE PUBLICATIONS IS GIVING $300,000 TO RECIPIENTS IN NEED THIS CHRISTMAS SEASON AND BEYOND... AND WE NEED YOUR HELP!

ABOUT SIX YEARS AGO ANNA SAROL, THE DAUGHTER OF A SINGLE MOTHER, WAS PARALYZED IN A GYMNASTICS ACCIDENT WHEN SHE WAS A FRESHMAN IN HIGH SCHOOL, BUT UNTIL LAST YEAR SHE DID NOT HAVE A STAIRLIFT IN HER HOME. The stairlift was made possible when Lifestyle Publications gave her family $10,000. “I watched my community come together to help me get this equipment to my house, and words can’t explain how appreciative my

family and I are,” Anna says. The money for Anna’s stairlift was part of a giveaway campaign from the company during the 2020 Christmas season that benefited more than 80 recipients across the country with a final distribution of $250,000 throughout the year. When the company opened nominations, they were flooded with submissions. Community leaders such as judges, police officers, teachers, nurses, social workers, mentors and readers like you nominated people that were in need of assistance. As the eyes and ears of the community, these readers were able to help identify people who might have

otherwise gone unnoticed or unrecognized. One such nominee was Kathy*, an aunt who is raising her three young relatives. The children came from an abusive situation, and Kathy, a single guardian, works tirelessly to provide for them. Nevertheless, the family was already living in poverty despite her working seven days a week when Kathy lost her job during the pandemic. She resorted to selling tamales to help pay the rent. When a case manager with a Big Brothers Big Sisters foster youth mentoring program heard about Lifestyle’s campaign and call for nominations, she quickly thought of Kathy. “When I shared the news that Kathy was selected and would be receiving $3,000, she cried, screamed, and was in disbelief,” the case manager said. “She immediately wanted to give back to me and the donor by providing endless tamales. This funding allowed the children to have a small Christmas tree for the first time ever. Kathy was able to pay her rent and utilities for three months, and the children were able to experience a holiday season in peace without financial stressors.” In yet another case, Emily* who worked as a janitor at a school, was a recipient and was struggling to afford simply buying groceries for her children. Before the ongoing difficulties of the pandemic even started, a tornado destroyed the school she worked at just a couple weeks before the initial shutdown in March 2020 which resulted in a loss of income for her. Emily was incredibly surprised and grateful to receive assistance from the giveaway. *Names changed for privacy

ARTIST'S PALETTE FOR DAHLIA DEAN, PHOTOGRAPHY IS MEDICINE THAT SOOTHES THE SOUL

ARTICLE LAURA GREEN PHOTOGRAPHY DAHLIA DEAN

OU R C OV E R A R TI S T DAHLIA DEAN IS AN AWARD-WINNING AMATEUR PHOTOGRAPHER. She’s also a dedicated healthcare worker, taking care of hospice patients in her own home. Her vital work is rewarding, she says, but the emotional stress can be daunting. “Six years ago, my daughters gave me a camera for Christmas. ‘Go out, see the beauty of the world and nature,’ they said.” With her new Sony Alpha 6000 in hand, she heeded her daughters’ advice, and began taking “Mother Nature” landscape photos. She found the activity relaxed her and created a feeling of beauty that she couldn’t find anywhere else. Soon she was photographing her travels through national parks, seeking out places with rocky roads, quiet forests, cool streams and tow-
