I don’t know about you, but this time of year I am always torn. I find myself torn between resisting the commercialization of another greeting card holiday and indulging in all the sweet excuses to enjoy the season. To do a Valentine’s Day date out or enjoy a cozy night at home? To buy a card or just say a kind word? I usually land somewhere a little in between. We’ll each arrive at different answers based on our preferences and personalities, but what we hold in common is an opportunity to make sure those around us know we love them. And regardless of how you choose to celebrate, we hope the pages of this month’s magazine will help you do just that as we celebrate and highlight what’s to love in your local community. While we teeter between the chill of January winter and the excitement of spring, we hope you’ll be inspired to take a moment to come together with the people in your life. Founded in 1846 a mere year after Texas was annexed into the Union, Sherman has a history as rich and storied as Texas itself. From the downtown’s humble beginnings born under the shade of a Pecan tree to the bustling urban and industrial setting you see today, there is so much more to come as Sherman is propelled into the future by unprecedented growth. Today, a visit to Sherman’s downtown sees less history and more empty or institutional buildings. Seemingly lost are the tapestry of stories such as underground tunnels leading to speakeasys, vibrant commerce, crime sprees like Bonnie and Clyde, or the facades of great buildings that formed the backbone of what Dun & Bradstreet referred to as “the financial center of Texas.” That will all change if a group of local business leaders have their way. But, revitalizing downtown Sherman is not a new idea. Many efforts have been attempted in the past but encountered wild fluctuations in real estate values, financial markets, and other difficult times. What makes this latest effort different from past initiatives? The answer is coordination and focus, complete with new energy and levels of support from the business community, investors, citizens, and the City of Sherman directly. Restoring the past, embracing the future, and building the community. That is the purpose of Urban Sherman, a group formed to achieve the goal of making Downtown Sherman vibrant once more and worthy of its history. This new focus is the direct result of Sherman’s recent Master Plan revised with heavy input from citizens. The people of Sherman overwhelmingly stated that one of the top priorities over the next decade should be on its historic downtown. While many investors and businesses already had the vision, having the citizen’s support plus the commitment of the city’s elected officials and staff, confirmed the need and demand.

Urban Sherman was established shortly thereafter to make all this happen by being a consolidated voice for downtown revitalization. It communicates opportunities available downtown by sharing information on properties to potential investors, or for people who want to establish a business downtown. By connecting people with accessible real estate, it brings businesses, investors, and the community together. In order to maintain the momentum of these efforts, Urban Sherman actively works to promote existing businesses in downtown, bringing awareness by supporting events, news, and emerging projects. Finally, Urban Sherman strives to be a neutral advocate for downtown. The organization makes sure investors and businesses are aware of the city’s programs like the 380 Program, TIRZ incentives, and DBig. The 380 Program provides a refund of sales tax to downtown business owners and DBig grants monies using TIRZ dollars to provide matching dollars spent on investing projects. Developers associated with Urban Sherman can speak to what they have learned from the city and share that knowledge and first-hand experience with new developers and investors. As one of several founders and active investors in Urban Sherman, David Downtain is thrilled to share the story of what is happening downtown. You can feel the enthusiasm when he talks about the efforts. “We are seeing what it’s becoming – a great urban mercantile community again, where it all begins.” He recalls the rich history of downtown that was the center of commerce resulting in a decline due to big box stores and development. “So many people have fond memories of downtown, and Urban Sherman is honoring that history plus Sherman’s cultural arts, while embracing the future,” he continues. Urban Sherman gets calls every week from people wanting information about workspace, restaurant,

living and retail real estate opportunities downtown. He continues, “Let’s create multiple projects and promote all new and existing downtown businesses equally. By welcoming the conversation with other developers and investors and working with them, we become the glue to bring it together.” The City of Sherman deserves ample praise for their support. “The City of Sherman, City Council, and staff have done a great job listening and helping,” David continues. “They came to us with how to aid this public private initiative of Urban Sherman. It combined is what’s finally allowing the revitalization to occur.”

Former Deputy Mayor and current City Councilman Josh Stevenson agrees. “The City is very excited about what Urban Sherman is doing for downtown,” he says. “Downtown is the heart of our city, left alone for a long time. Now we see the unrealized potential with a bright future. It will be our focal point for the next fifty plus years!” Urban Sherman is bringing all the coalitions together to achieve its goal: Restoring the past, embracing the future, and building the downtown community. Courtney Mitchell is celebrating her 15th year in the photography business. Last year she received her Master’s of Photography degree from Professional Photographers of America. She is also a Certified Professional Photographer. Courtney says the best part of living and working in Sherman is its tight-knit community. She loves to see the widespread participation in town traditions like Friday Night Football and the Stroll on the Square. It’s a place where as a business owner, she enjoys contributing to the community’s thriving growth and vitality by serving on the Main Street Advisory Board as well as the Sherman Cultural District Board and the SEDCO (Sherman Economic Development Corporation) Women and Minority Owned Business Committee. Courtney and her husband, Ian, have been happily married for a year and a half. Together they have an incredible blended family with five children ranging from 12 to 31 years of age. They also have a small dog and a lizard. She loves her family’s joyful chaos, spending quality time together, traveling and hanging out with friends.

Tucked in a corner on Main Street in downtown Denison across from Heritage Park, Split Window Studios quietly asserts its presence. The window, adorned with a table, chairs, and four microphones, offers just a glimpse into the world of innovation and artistry housed on the second floor. Here, Tony Giarraputo and Chris Romain have established a sanctuary for creativity, where local artists are given a voice to reach the world. Tony Giarraputo, involved in the community as a recording producer for many bands (who still call him Uncle Tony), which was built in his barn, and through his work with nonprofits like the Sherman Symphony and the Texas Blues Society, plays a strong supportive role in promoting the arts in Texoma. His contributions have been instrumental in not only elevating the local music scene but also in fostering a sense of cultural identity. “The symphony and blues society are more than entertainment; they are part of the tapestry that makes up our community’s musical cultural life,” Tony says, reflecting his passion for enriching lives through music. Chris Romain’s vision for Split Window Studios is equally compelling. He aims to create an all-encompassing hub for artists of all genres, leveraging the latest

technology to enhance artistic expression. “Our goal is to blend cutting-edge technology with the raw talent of artists,” Chris notes, underscoring their commitment to staying at the forefront of artistic innovation. The journey of Split Window Studios is a testament to resilience and strategic planning. Seizing an opportunity during a tumultuous period, Tony and Chris crafted a business plan that transformed an old space into a technological haven for artists. Today, the studio stands proud, equipped with advanced recording and production facilities, challenging the norms of traditional studios. The audio studio is set for live recording, isolation booths, foley sound effects, and more. While the image studio boasts an imagination boosting high definition LED wall and lighting rigs to create (and recreate) so many different spaces for artists with such diverse needs and visions. One of the key aspects of Split Window Studios is its inclusive approach. Tony and Chris have made it a point to offer affordable rates, making high-quality production accessible to artists with limited budgets. During the pandemic, they invested in livestream technology and offered many musicians free studio time to create and stream music to audiences at home while they were unable to play in the live venues to earn money. They’ve since taken this service forward to free concert support, listening sessions, and broadcasting doing all they can to help spread the word of the artistic community in the Texoma area. Possibly even more life changing - Chris and Tony are willing to meet with and mentor artists in business and creative development to help them turn their dreams into reality. As a hub of artistic creation and community engagement, Split Window Studios transcends its physical space. Tony Giarraputo and Chris Romain have not only provided a platform for artists to flourish but have also woven a vibrant tapestry of culture and creativity. CHOCOLATE and WINE The Key to a Successful Wine and

Chocolate Pairing Lies in Finding the Right Combination of Flavors and Characteristics.

Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another. Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. We’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

CREATING THE PERFECT PAIR DA R K CHOCOLATE TIP 1: M ATCH SUGA R WITH SUGAR When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.

TIP 2: M ATCH INTENSIT Y WITH INTENSITY If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.

T I P 3 : PA I R F L AVO R S W I T H F L AVO R S Wine and chocolate both carry their own intense flavors. If the chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

Bitter to semi-sweet dark chocolates, that are 50 to 100% cacao, have intense, bitter flavors, and earthy to fruity undertones. Match the intensity without adding more dryness by pairing these chocolates with full-bodied, yet fruit-forward wines. Pairs well with: Cabernet Sauvignon, Pinot Noir, Port, Merlot, Shiraz, Barolo

MILK CHOCOLATE Milk chocolate is typically creamier and sweeter with flavors of brown sugar, vanilla, and cream. It requires a wine that is light to medium in body, with a ripe fruit character. Pairs well with: Pinot Noir, Merlot, Sweet Riesling, Ice-Style Wine

WHITE CHOCOLATE White chocolate has a sweet, buttery flavor with notes of cream and honey. Sweet white and rosè wines help cleanse the palate of the rich flavors from white chocolate, as does sparkling spumante like Moscato d’Asti. Pairs well with: Sweet Riesling, Moscato, Semi-Dry Sparkling Whites, Gewurztraminer
