Who Doesn’t Love a Good Stone Soup? I’ve always loved the old folk tale “Stone Soup”, a one-of-a-kind meal born of necessity and ingenuity. To paraphrase: a stranger came to a small village needing a meal, but found no one willing to share. Undaunted, he fired up a kettle, filled with just water and… a few stones. Curious villagers passing by inquired; the visitor replied, “It’s Stone Soup! It’s delicious, but could use a few more ingredients; toss in a few things from your garden, and you can dine with us!” Villagers soon toss in bits-and-bobs of their own bounty, and the kettle provides a healthy serving of soup for all… passing the stones on for the next culinary adventure. To me, the story’s really about the initiative of the visitor to engage others and “get the party started.” Every sleepy hamlet needs occasional jump-starts from folks with new ideas, forging out-of-the-box collaborations to combust the communal kindling. Our January issue of SW Lake is quite a delicious New Year’s Gumbo, thanks to kind villagers in Lake Co. and beyond. We're serving up a tasty story on Plant-Based Eating, with some sage advice (pun most certainly intended) on ways to eat more naturally. Local fitness guru Sean Lee (Restoration Fitness) shares four practical tips for anyone who wants to “Get Fit.” Publisher Michael Beightol serves tasty nibbles of three outstanding non-fiction books to cuddle up with by the fireplace, or pedal through on the Peloton. He also revisits a remarkable recent presentation by physicist—visionary Dr. Brian Greene from the GPF Foundation’s 5th Annual Event, “An Evening of Discovery.” Last and somewhat mind-bendingly, Russ Riendeau shares key revelations from his recent TEDx talks. How to Take Steps to Creating a Healthier You in 2023. Healthy living doesn’t begin with a decision to start working out or eating healthier. It starts with paying attention to your mind. Your thoughts and what you tell yourself precede action (or inaction). Learning how to adopt a mindset of self-care will lay the foundation for sustainable changes and a healthier you. Here’s how to get started. Accept Where You Are: The paradox of becoming healthier is that you first must accept where you are now. While in the short term trying the latest exercise or diet fad may motivate temporary lifestyle changes, we know that eventually many revert to old habits. Progress happens when excitement for a healthy life coincides with love and acceptance of who we are. Appreciate your body and admire the life that you are living, and make future changes based on self-enhancement, not self-punishment. Create a Plan You Enjoy: It’s essential to create a plan you enjoy and will stick to. Follow my four steps on crafting a plan, based around activities you enjoy, foods you like, and a schedule that works for you. Commit to Action: Motivation is not something that’s going to crash down from the sky like a lightning bolt and magically kickstart your plan. Motivation only comes from one thing: action! It could be one workout. One pushup. One healthy meal. A small step in the right direction. Taking that first step is never easy. It requires courage. A leap of faith. Step 1: Identify your goals: Write down 1-3 things and build from there. Weight loss? Build muscle? Increase strength? Improve muscle tone? Reduce aches and pains? Get off meds? Are your goals functional, aesthetic, or both? Start by getting in touch with why you want to get healthy—then, start building a plan around those things.

Choose physical activities you like: There’s no “right way” to be active. Whether you enjoy running, biking, hiking, weight training or boxing, there are plenty of fun ways to get active with things you enjoy and find fulfilling.
Start eating a little healthier: A complete overhaul isn’t necessary. Removing everything you enjoy eating won’t end well. Start with the first meal of your day. A meal rich in protein, fiber, and healthy fat will increase satiety and improve blood sugar regulation which prevents overeating later in the day. Hydration is also important. A full glass of water with a meal is the best way to rehydrate.
Create a schedule that works for you: When will you exercise and for how long? Where will you exercise? How many meals will you cook a week? Will you eat prepared meals from the grocery store? Will you use a meal service? Will you eat out? With answers to these questions, and when all your other responsibilities are considered, now you’re ready to block out time for exercise, grocery shopping, and meal prep.

ARTICLE BY MICHAEL BEIGHTOL | PHOTOGRAPHY BY STEPHEN NEILSON It wasn’t your usual after-dinner talk at a charity event by Brian Greene: Columbia University professor, theoretical physicist, co-founder of the World Science Festival and guest star on TV’s The Big Bang Theory. But the GPF Foundation is not an ordinary charity. Dedicated to saving lives, the Foundation develops educational programs that help young adults understand the risks associated with recreational drug use while creating clinical training tools for front-line medical providers that address a critical “blind spot” in the accurate diagnosis and effective treatment of those experiencing adverse effects of psychostimulant use. About 150 supporters—and potentially hundreds more watching a live stream on YouTube— participated in the GPF Foundation’s “Evening of Discovery” where Greene talked about some of the giants of physics, including Isaac Newton, Albert Einstein, and a little-known Catholic priest from Belgium.
Greene’s strength is to use story-telling as a means to understanding the mysteries of the cosmos, whether it’s the presence of gravity in the vacuum of space, Einstein’s epic curiosity or the scientific work of a Jesuit priest after the end of World War I. To understand the big qualities of the cosmos, Greene said, "The starting point is the universal law of gravity,” thanks to Newton. It was Einstein “who famously said that ‘only two things might be infinite—God and human stupidity.’ And he said he wasn’t sure about God.” In 1927 Fr. George Lemaître used Einstein’s theory of relativity to develop his “Big Bang” theory of the origin of the universe. Specifically, the universe expanded from an initial point ("Primeval Atom”) and was continuing to expand. In response, according to Green, Einstein demonstrated his good humor when he agreed that Lemaître’s math was correct, “but his physics is atrocious.”

Most people think a plant-based diet is strictly for those vegan and vegetarian types, but there is no debating the overwhelming evidence showing the benefits of improved health for those who make that diet choice. Plant based eating is more of a lifestyle than a diet. You are simply eating more foods that are closer to their harvested state with minimal processing. Meatless diets have been shown to improve health outcomes by lowering the risk of developing heart disease, diabetes, high blood pressure, inflammation, and some cancers. It also improves gut health because of added fiber to your diet. A plant-based diet still allows you to consume the carbohydrates, protein, fats, minerals, and vitamins that are necessary for good health, with the added benefits of being higher in fiber and phytonutrients.
You do not have to give up meat entirely, and there are labels to identify where you fall in your plant eating journey. Do what is comfortable for you so you will stick with it. You can choose to be a flexitarian which means that you occasionally eat meat, but you choose plants as the primary foods you eat. You have some flexibility with your diet. If you choose to be a vegetarian, then you do not eat meat, but you still eat eggs and dairy products as opposed to being a vegan who eats no animal products. • Make small changes to test your comfort level when reducing meat intake. There is a risk of being overwhelmed if you suddenly stop eating meat altogether, and it will be harder to stick to your choice long term. Increase consumption of plant foods you already like. • Plant based diet does not mean boring. You can create a variety of dishes including ethnic meals that are meat free and delicious. This is a great time to try new spices to add a punch to your vegetables and add green leafy vegetables to your smoothies. • Use the whole plant because there are nutrients in every part of the plant including the stems, and leaves. Use the leaves from celery, radishes, beets and carrots, and use the stems from spinach. Don’t throw away vital nutrients like potassium, vitamin C and fiber. You are also reducing waste. • Eat the rainbow! Choose different colored fruits and vegetables to get a variety of nutrients. The color of plant-based foods is often an indicator of the vitamins and minerals they contain. So, more colors mean more nutrients. Example: Orange foods contain beta carotene, the precursor for vitamin A. • If you do not eat any animal products, you will need to take a B12 and possibly an iron supplement. Vitamin B12 is an essential vitamin available only in animal products. Low B12 can cause anemia and damage to the nervous system. Some vegan foods are fortified with vitamin B12. A meat-free diet does not automatically mean healthy if you replace the meat with highly processed junk food and meat substitutes. You need to eat good, fresh quality fruits, vegetables and grains to get the health benefits that can add years to your life. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8—10 minutes or until al dente; drain. While pasta cooks, heat olive oil over medium heat in a large skillet. Cook onions and bell pepper in oil until lightly browned, about 10 minutes. Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives, seasoning mix, and salt and pepper; cook until thoroughly heated, about 5 minutes. Toss sauce with cooked pasta. Plate, garnish with chopped cilantro or parsley, and serve.

Consider for a moment that everything that has happened to you since birth has led to this moment. If we had the time anyone of us could trace our life history back to childhood, connecting memory and activity to map exactly what events advanced your future to where you are right now. Last year I presented at two local TEDx Talk events, including one at the Barrington Area Library, where I looked at how the pandemic accelerated our life timelines. My TEDx talks, based on medical, social and neuroscience research, suggests that the pandemic advanced our traditional timelines of thinking about and reacting to what happens around us. For many of us COVID-19 delivered a “Life flashed before our very eyes” experience, forcing us to examine what is most important. We have had a few years now to really assess how our minds and bodies are changing. Science tells us that genes are being altered and expressed differently from stress, anxiety, pandemic fatigue and indecision. Genetics is the study of human creation. Our DNA, unique to each of us, has the same sequence in every one of our billions of cells. We inherit 50% from each parent. Epigenetics is the workhorse for our development. It is the science of how our genetic code— one’s DNA—is modulated, expressed and regulated from the time we develop in the womb. It is the software telling our chromosomes (the hardware) which genes to turn into a heart cell, an eye cell, a neuronal cell, even the cells that comprise one of our little toes.
After birth, epigenetics helps manage our health and our environment. It tells what genes need to express themselves in myriad ways to ward off illness, disease, protect us from dangerous toxins, foods and chemicals—even keeping watch for bad relationships, violence, abuse, and addictions. And its changes are reversible, having a neuroplasticity to them. Epigenetics is also on the lookout for opportunities to excel in academics, sports, overall intelligence, attracting mates, choosing the best foods and regulation of our sleep hygiene. Epigenetics influences everything about who we are and what we can become. The metaphor of an “Invisible Schoolhouse” suggests we are both student and teacher in our worlds. Our actions, ideas and perspectives all influence decisions of generations to come through our offspring. We literally influence how other’s genes are shifting their expressions and resetting their futures. And while scientists are not sure if epigenetic changes are long term, we do know changes have been passed on from the last three generations already. And now, with MRI imaging, medical science can monitor, measure and map disease patterns, following which and where dilating blood vessels are heading, then pinpoint where disease or potential issues will appear. With this pathology, scientists can use pharmacology to build drugs that turn on-or-off specific genes to help cure diseases, such as cancer or autoimmune disorders, as well as mental health challenges.

In this case, in the tuition-free Invisible Schoolhouse a child is happily learning, unknowingly experimenting in advanced subjects such as physics, chemistry, mathematics, competitive intelligence, language, kinesiology, physiology, behavioral psychology, neuroscience and political science, to name a few. All this happens to a child just by simply playing and reacting to clues in their environment. The result is they are learning lessons to be retained forever.
Long before a child attends school for the first time, their mind has developed billions of neural circuits to prepare them for homework, socialization, prepping for college exams, and dare we say, creating lasting relationships. At my TEDx talk I created a mind map that reflects the many ways our lives are influenced by daily events that prompt the activities and emotions that help us advance our lives. We have had a glimpse into the future that may help us navigate our lives more purposefully. In 2023 let’s all see and feel what is important and jettison those activities that are not high value.
