A bright new addition to downtown Barrington
Smoothies made fresh-to-order
In the heart of downtown Barrington, you will find Pink Flamingos, Dragon Fruit, and a delicious way to get your daily recommended serving of fruits and veggies. Husband-and-wife team Brandon and Loren Jaynes opened Nékter Juice Bar in March 2022. In this airy, open space, you can hear blenders whirring and see folks lined up for fresh creations. Back in the kitchen, cashews are soaked daily for plant-based milk while the team ferries fresh produce from an enormous walk-in cooler to prepare its fresh concoctions. What makes Nékter different? A passionate commitment to healthy, nutritious food. Nékter uses up to three pounds of fresh produce in every smoothie. “This is real food, not fast food. We have no mixes. We are peeling, dicing, and slicing to order. Everything is customizable,” Loren says. Brandon and Loren stress that fresh, healthy food takes time, but is worth the wait. However, they are mindful of customers’ time, especially with three young boys of their own. The Nékter app allows for advance orders at a convenient pedestrian pick-up window where you might be greeted by their oldest son. “Our 12-year old loves to be part of it,” Brandon says. Nékter has been welcomed by and impressed by Barrington. That goodwill is reciprocated with Nékter’s
commitment to the community, including fundraising activities and “give-back” days. “Barrington loves sneaking grains in their drinks. We all want our families to be healthy. But we still have menu transparency,” Loren says. No hidden ingredients or added sugars here, although Loren does confess to adding extra blueberries and cayenne pepper to her favorite celery juice. Brandon enjoys the cleverly named Popeye’s Acai, made with spinach (of course) among other fresh ingredients. One young customer proudly told me her favorite drink was “Mango Delight”, a colorful concoction made with mango, pineapple, homemade cashew milk, and agave nectar. You may not yet have it, but you see it every time you go shopping. You know the dress that I’m talking about, the one that you want for a holiday party or a night out with friends. You tell yourself that you’ll wear it after you have a place to go and, truth be told, maybe after losing some weight. If this is you, I have five tips that will help tone up and transform your body in just 42 days.
FOOD AND CALORIES
STRENGTH TRAINING
KEEP A FOOD DIARY
Muscle burns fat and strength training will help you get a toned body to complement your favorite little black dress. Many women avoid strength training because they don’t want to “bulk up.” The reality is women don’t have the hormones to become muscle-bound like men. Strength training is the best exercise to tone up, burn more calories and boost your metabolism in the long term.
CARDIO INTERVAL WORKOUTS
You don’t have to slave away on a treadmill for hours to drop a dress size. Not only does this cause unnecessary wear and tear, it’s not the smartest method for burning the most calories. When trying to lose a few pounds and get lean in the process, cardio interval workouts generate the highest caloric burn in the least amount of time.
Exercise is fantastic, but you aren’t going to slide into your dress without incorporating good nutrition. Find out how many calories you need to maintain the weight that you’re at, and then plan to cut 300-500 calories daily. Any more than that and you are looking at burning out and setting yourself up to binge, which will only take you further from a goal. Here’s another thing: not all calories are created equal. A 100-calorie handful of chips is not the same as a 100-calorie piece of fruit.
Write down what you eat before you put it into your mouth. By the time you write "two chocolate chip cookies" into your food diary, you might be over it and make a better choice. Food decisions will override even the best workout regime. Remember, you can’t outrun a fork.
DO INTENSE MINI-WORKOUTS
No matter how busy you always can make time to squeeze in a mini-workout. When you are trying to drop a few pounds, keep this motto in mind: something is always better than nothing. Eight to 12 minutes is all you need for a surprisingly serious metabolic boost. Plus, you’ll burn off an easy 100-200 calories. In a quiet country setting in Green Oaks/Libertyville there’s an exquisite waterfront home. The fourth side of the island opens to the informal dining area and family room and it is easy for people to transition from one area to another, as well as interact with whomever is doing food prep or cooking.” The Murphy’s style of entertaining varies. They enjoy intimate dinners for 4-8 people in the formal dining room, as well as having their son’s friends over for individual pizza and popcorn-ball-making parties. “The granite counters provide plenty of space for everyone to work on their own creations,” says Elaine. “We have also had larger gatherings for Brian’s office crew and for my colleagues.” A welcoming foyer reveals lovely and spacious living and dining rooms with beautiful cherry crown moldings and hardwood flooring. A hallway leads to a powder room, pantry/laundry and sun room that houses a Michael Phelps Swim Spa and Jacuzzi hot tub. It has spectacular lighting and a dedicated dry heat system to keep the room at an optimum temperature while keeping the humidity out of the rest of the home. A back staircase was installed during the renovation, which leads to a dramatic bonus room built over the garage with its own HVAC, a two-story cathedral ceiling and a wall of geometrically shaped custom windows. A new screened porch on the second floor overlooks the pond and gardens. Four large bedrooms and two remodeled bathrooms are also located on this level, including the primary suite with two spacious closets and a gorgeous bath with an oversized steam shower, dual cherry vanities and a heated tile floor. Clean Eating Emphasizes Whole Foods That Aren’t Processed or Contain Harmful Ingredients. ARTICLE BY KRISTEN TODOROFF | PHOTOGRAPHY BY STEPHEN NEILSON
What does “cooking clean” really mean? Clean eating essentially means consuming whole, unprocessed foods. The less-processed food is, the cleaner it is because it is absent preservatives and harmful food additives that can cause inflammation and disrupt hormonal balance. Whenever possible, using organic ingredients helps with avoiding pesticides and genetically engineered organisms (GMOs). I LOVE fall’s seasonal vegetables—they lend themselves perfectly to delicious soups, stews, and side dishes. I literally
crave mushrooms when temperatures start to drop. Nothing says comfort food like a hearty, steaming bowl of soup! The best thing about soups and stews is that you can easily scale the recipes, and they taste even better the next day as the flavors continue to meld. Here are a couple of my favorite fall recipes—they are easy to prepare, healthy, and delicious. These are also vegan and gluten-free, but you could easily add a protein of your choice if desired. Fall Harvest Soup with Wild Rice This cozy, savory soup is perfect for a hearty fall meal. It’s loaded with antioxidants to help reduce inflammation and boost immunity, fiber to aid digestion, and healthy fats to help regulate cholesterol and improve heart health.
INGREDIENTS • • • • • • • •
6 cups vegetable broth 1 Tbsp. coconut oil 1 cup uncooked wild rice 8 ounces baby portobello mushrooms, sliced 4 cloves garlic, minced 2 medium carrots, peeled and diced 2 ribs celery, diced 1 large (about 1 pound) sweet potato, peeled and diced
• 1 small white onion, peeled and diced • 1 bay leaf • 1.5 Tbsp. Old Bay seasoning • 1 15-oz. can of full-fat coconut milk • 2 large handfuls of kale, roughly chopped with thick stems removed (or 1-2 cups frozen kale) • Salt and black pepper to taste
INSTRUCTIONS 1. Heat coconut oil in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until soft and translucent. Stir in the garlic and cook for an additional 1-2 minutes, until the onions and garlic are starting to turn golden brown. 2. Add the broth, wild rice, mushrooms, carrots, celery, sweet potato, bay leaf, and Old Bay seasoning. Stir to combine. 3. Bring soup to a simmer, then reduce heat to medium-low. Cover and simmer for 45-60 minutes or until rice is tender, stirring occasionally. 4. Add the coconut milk and kale; simmer for another 5 minutes until everything is combined. Season with salt and pepper to taste if needed.

Ready for a healthy Brunch
Arugula Salad with Lemon Vinaigrette This is a simple salad to throw together. I love the combination of peppery arugula, crunchy cashews, tart cranberries, and creamy avocado—tied together perfectly by the lemon vinaigrette dressing. This dressing is very versatile and can be used on a variety of salads. Its bright, fresh flavor complements many other ingredients, including seasonal fall vegetables. It’s packed with healthy fats and antioxidants to help prevent fall and winter colds.
INSTRUCTIONS 1. Add the arugula, cashews, cranberries, and avocado to a large bowl. 2. In a small bowl, whisk the oil, lemon, mustard, and garlic together until combined. Add salt, pepper, and thyme to taste. 3. Add the dressing to the salad bowl and toss to taste (you may have extra dressing).

His dramatic jet-black chef’s apron boldly stated in all-white, all-caps: BEST. DAD. EVER. His black cap just as proudly proclaimed: PROUD ARMY DAD. Turns out this family man and home-cookpar-excellence knows how to swing a mean cleaver, as Lone Luangsomkham thoroughly smoked the competition and claimed the first place trophy at the recent Street Food Showdown in Long Grove. The event, produced by Culinary Fight Club (CFC) at Woodfire Tavern, attracted an enthusiastic crowd braving the early-event rain to watch eight teams wrestle over ingredients in the Whole Foods-sponsored pantry and prepare their best gourmet street food dishes within 60 minutes. Some attendees ducked out of the rain to enjoy the open bar in the VIP tent, and threw down some coin for the smartly-designed CFC merchandise. Event proceeds helped support the charity Fight2Feed, a volunteer-run organization whose mission is to reduce food waste and fight hunger in Chicago, Kansas City, and Atlanta. It’s been a celebratory few weeks for Lone’s family, as his daughter Lillian recently embarked on her college journey at Drake University, and Lone and wife Lisa celebrated their 24th wedding anniversary. Lone loves to cook for families, learning from his mom as a child; he specializes in Laotian and Asian-infused cooking, recalling his first dish made at age 12—papaya salad. His winning plate was a beautifully-presented Laotian dish called “larb,” a spicy combo of vegetables, greens, and herbs with the “mustuse ingredient” of this Street Food Showdown: a plant-based shrimp from event co-sponsor New Wave Foods. Judge Margie Luczak, Chicago Police Department (and last-year’s first-place Champion) commented, “I love the color... I mean, am I on vacation?... the chips: awesome... the spice: right on! I love it.” Lone’s winnings included a trophy, $400 cash, and a competition slot in the Season IX Championship event: Culinary Fight Fest, October 15 at Chicago’s McCormick Place. Third-place finisher Chef Victor Martinez, Culinary Instructor from Unite Here Chicago Culinary Institute, prepared a fire-roasted salsa with pineapple and shrimp. Second Place was

Marc brings his creative fusion concept to local breweries and special events throughout the western and northern suburbs. Taster’s Choice winner (selected by event attendees, aka “Fight Clubbers”) was Chef Michael Kubalewski, Executive Chef/ Owner of MK Culinary and Dank Morsels Gourmet Street Food, a food truck that serves at local events and concerts, including Dead & Co. and Dave Matthews Band. Chef Mike’s Shrimp Elote (Mexican street corn) wowed the crowd. CFC’s events bring together people who love to cook-and-create with those who love to watch intense competition and taste the culinary fruits of the chef’s labors. Competitors sign up at CulinaryFightClub. com; they cover the full gamut from restaurant executive chefs to skilled home cooks. Host emcee Paul Young, Corporate Chef of
Eby-Brown Co. LLC, engaged the crowd and competitors with his play-by-play commentary. The “Cheferee”, Kris Schoenberger (Chef/Owner of BBQ’d Productions in Lake Zurich and 2019’s Culinary Fight Fest 2019 Champion), ensured competitors followed event rules. Four judges were tasked to choose the champion plate: Chef Lance Avery (Big Fork Brands/Avery Innovations), Chef Caroline Martinez (Principal Culinary Program Manager—Whole Foods Market), Officer Margie Luczak (Chicago Police Dept.), and Claire Slattery, LZACC Exec. Director. They used a 50-point scoring system ranking dishes on Execution, Appearance, Creativity, and Taste. For Street Food Challenge, a key element was portability—the ability to handle/consume the dish on-the-go. Taste is weighted highest, as a beautifully-plated dish won’t cut it if it doesn’t leave you wanting more. According to Jiwon McCartney, Executive Producer and a founder of CFC, “We
challenge our community to be healthier and hopefully inspire our audience to cook through our events.” Competitors and audience of CFC should know that “this isn’t a carnival show; it’s about Food Sport, with all the exciting components of competition as a major league sport. You need to know how to use a knife quickly, work with improvised ingredients… cooking is a sport. At CFC, we show it all, live, and that it can be done with limited ingredients and time. But in a competition, anyone can have a bad day, and anyone can have a great day. You’re only as good as your last plate.” Judge Claire Slattery said, “It was great to experience the diversity of culinary talent in our area.
