ARTICLE BY VALERIE BIANCULLI | PHOTOGRAPHY BY PLUG NEW YORK Interview By Brigitte McLaughlin Staten Island City Lifestyle gets a behind-the-scenes glimpse into the world of Stratis Morfogen, a restaurateur who is known for his innovative entrepreneurial spirit and for disrupting the food industry with his outof-the-box thinking.

CONGRATULATIONS ON YOUR MANY ACCOMPLISHMENTS! WOULD YOU MIND STARTING OFF BY TELLING US A BIT ABOUT YOURSELF? I am a 3rd generation restaurateur. My grandfather had the first Greek restaurant called Pappas from 1910 to 1975. This year I am bringing it back to the Morfogen

family after 45 years and opening Pappas Taverna in the West Village. At 6 years old my father had about 14 restaurants. Everything from Greek diners to steakhouses to catering halls. I was very intertwined with my father’s career. Instead of going to Disney World, I would go to the Fulton St Fish Market. At 6 years old I knew what I wanted and when I went to school it was so uninteresting to me. I preferred to be a busboy at my father’s restaurants instead of coloring with crayons and watching cartoons. At 18 years old I outgrew my father and became a full-on entrepreneur. I was best known for Philippe Chow, Jue Lan Club, Gotham

Diner, etc. In 2014 I sold Philippe and Jue Lan and created Brooklyn Chop House. It was inspired by Chelsea Chop House which was my father’s restaurant. I like to develop concepts by asking questions so I decided to ask my 17 Chinese chefs what came to mind when they thought of the word ‘chop house’. They told me chop sui, chopsticks, and a chopper who is a very respected person in the kitchen. It was completely different than what came to my mind when I thought of ‘chop house’ which was pork chop, lamb chop, cream of spinach, etc. I wanted to respect both cultures – Beijing Chinese food and an American steak house so we created a combination of both. We started dim sum and chops as well as LSD (lobster, steak and duck). It was the only place you could go for authentic Peking duck, a dry age porterhouse steak and salt, pepper, ginger, garlic lobster done Chinese style. I started the concept in 2018 and it took off from there. We were also doing out-of-the-box concepts such as pastrami dumplings, bacon cheeseburger dumplings, and French onion soup dumplings and I decided to apply this to Brooklyn Dumpling Shop and take it a step further.

WE LOVE THAT YOU OPENED BROOKLYN DUMPLING SHOP HERE ON STATEN ISLAND. CAN YOU TELL US MORE ABOUT THE AUTOMAT AND WHAT THAT PROCESS WAS LIKE? My idea was that I wanted to create a 2 oz sandwich shop. My partners thought I needed a psychiatrist. What’s a 2 oz sandwich shop? It’s a dumpling. I love to create and I love technology. I started studying about the automat (food being served by vending machines) and before I knew it we had created an interactive kids’ meal where Joey Dumplings starts eating dumplings. A QR code will take you into a world of games. I have always disrupted everything I’ve done. Which is how my book came about. The concept was to get people in and out.

IT’S A GENIUS CONCEPT! WHY DID YOU CHOOSE DUMPLINGS? It’s a 2oz sandwich. Everything else is over-explained. When my daughter didn’t want to eat fish at 6/7 years old I got out my dumpling maker, chopped up some fish put some garlic, butter whatever wrapped it into a dumpling, pan-fried it and all of a sudden my kids are eating fish. We can elevate the sandwich business and the dumpling business all in one.

ANY ADVICE YOU CAN OFFER FOR YOUNGER GENERATIONS? School doesn’t define you. Give yourself your twenties to find what you are passionate about. Fix it in your thirties. Start making money in your forties and retire in your eighties.

CL: TELL US ABOUT YOUR CHILDHOOD; WERE YOU ALWAYS INTO THE ARTS AS A KID? Malfi: I’ve always loved doing arts and crafts. I have to give my parents credit for that. My dad always took me to museums, and in New Dorp there was this art supply store called Frank’s that I always visited with my mom. She would go there for flowers, and I would get new markers or paints. As long as I would make something, she never said no. I always felt their support. When I was 14, my dad came home with my first set of Prismacolor markers from Pearl Paints. I used them all through high school, which I built my portfolio for FIT with.

CL: YOU WENT TO SCHOOL FOR JEWELRY DESIGN. HOW DID THAT TRANSITION INTO THE WORK THAT YOU’RE DOING NOW? Malfi: I went to a conservative Catholic high school, where art wasn’t considered a career. I thought, “Alright, I can’t be an artist, but I can be creative. I can be a designer, I like designing jewelry.” At FIT I was taught by some of the greatest designers in the world. In fact, Judith Ripka came to my class and wanted to hire me, but then the 2008 recession happened. I saw adults who had worked for companies for years get tossed out like it meant nothing. I thought, if there was no such thing as job security, why not team up with other artists from FIT and hold an art show? The show was a great success. Then I was driving home at 3 AM—high off adrenaline—and I got pulled over for speeding. Every dollar I’d made in that show paid for the lawyer, which turned into a minor parking ticket. But it was still worth it. Since then, I never looked back.

CL: WHAT’S HELPED YOU GROW THE MOST? Malfi: Social media helps, but word of mouth has been the biggest factor. I take pride in my work, and I want the experience for the end user to be special. My dad always taught me to under-promise and over-deliver. Do your research, make a plan, and be honest with them. Challenge yourself but be honest.

CL: WHAT IS YOUR STYLE? Malfi: I don’t focus on one thing or style. I don’t have a favorite type of art. I love it all, and that’s how I am able to survive as an artist in New York. One day, it’s an oil portrait, the next, it’s a graffiti mural, wedding proposals, birthdays, memorials – the list goes on.

CL: WHAT ARE YOU UP TO NOW? Malfi: I just did this project for Lil Uzi Vert. They gave me an Italian leather jacket made by Alexander McQueen to paint on for a memorial. It was super last minute, but I was able to memorialize someone who was taken too soon for them. That gave me a lot of pride.

CL: WHAT ADVICE CAN YOU GIVE ASPIRING ARTISTS? Malfi: Making art is more than just painting and drawing, you’re in sales. There are ups and downs and there is a lot of pressure. I wanted to create art, but I had to sell it to live, too.

CL: HOW CAN PEOPLE KEEP IN TOUCH WITH YOU? Malfi: Everybody can find me on Instagram at (@_malfi_). I just want to say thank you to everyone that supported me. Giving Campaign Now in its third year, the City Lifestyle Giving Campaign will give away $300,000 this holiday season to help individual community members who would benefit from a helping hand during their time of need. But they need YOUR HELP to make it happen! Maybe you know of a single parent struggling to provide, an elderly person who has experienced loss, a child enduring a health issue, a co-worker suffering a sudden, unexpected tragedy or a neighbor with a financial hardship who has fallen between the cracks of getting assistance. Chances are you know someone with a specific need—even if nobody else does. To preserve and protect the dignity of every recipient, the City Lifestyle Giving Campaign is completely confidential. No identities will be revealed or publicized in ANY way. (Even those who nominate others may remain anonymous if they choose.) Last year, City Lifestyle was able to give to more than 70 recipients all over the country by sending checks in the mail through New Year’s Eve. (This year, the goal is to double that number with checks ranging in amount up to $3,000 each.) With nominations flooding in from community members and leaders such as judges, police officers, teachers, nurses, social workers, mentors and readers like you, we were able to reach people who might otherwise go unnoticed. “We believe in giving back and serving the communities where we live in a real and tangible way,” says Steven Schowengerdt, CEO and founder of City Lifestyle. “This Giving Campaign is all about personally impacting the lives of people we know with an unexpected check in the mail just to say that someone thought of them this holiday season.” Together with Matthew Perry, Chief Sales Officer, Steven adds that the outpouring and gratitude from the recipients was overwhelming and affirmed that this is a tradition they want to continue. “We believe God has blessed our company with continued success,” Matthew adds, “so we in turn want to be a blessing to others.” City Lifestyle has also enacted an internal giving program whereby every employee in the company receives $100 to give away to someone in the community. “The idea is to encourage our employees to keep doing it on their own,” Steven says. “Taking care of one another and blessing others is so rewarding that it perpetuates a cycle of giving. It’s extremely important to me as a person and as a company to foster that culture of generosity.”
