Our January issue is dedicated to health and wellness in this new year: eating right, engaging in physical fitness and seeking purposeful connections. The importance of being healthy in body, mind and spirit is our focus. I love this month's features. I am inspired by the soul food recommended by Janice Brooks, and I am going to visit Snow Canyon more often like I used to and maybe toast a friend with a cup of hot chocolate. I am anxious to see Corbin Allred's video presentations and I applaud him in his work, for he truly is magical and inspiring and a force for good. I would like to meet Dave Rose someday; after all, BYU is my alma mater, and I actually taught at Pine View High School many years ago, but it was after Dave left. Still, I love making connections. Dave Listul of KIA, I confess, sold me a car, but it was a smooth sale. No pressure. He knew I was in the market for a new vehicle and I had been studying lots of makes and models, but he did make a recommendation. After many hours of research, I took the bait, with no regrets. I am ready now for a roadtrip to visit family and dear friends! I love the energy in this community of ours, with so many people doing great things and lifting others to do the same. From the Lone Star State to Utah’s Dixie and onto Cougar Country, the influential athlete and coach, Dave Rose, has scored an impressive career record, earning an enduring place in the Dixie State University Hall of Fame. Dave returned to St. George this past October to accept this major honor, joining the ranks of his former college coach, Doug Allred, and good friend and former major league baseball pitcher, Bruce Hurst. Athletics is not the only St. George connection, but athletics is where it began. Growing up in the Houston area, Dave became a high school basketball and baseball star. His prowess caught the eye of then Dixie Junior College basketball coach, Doug Allred, and Dave set out to play for the Rebels. Dave played both sports his first year with great success, then took a leave of absence to serve a mission for the Church of Jesus Christ of Latter-day Saints in Manchester, England. Following his return, someone caught his eye. On the second day back on campus, he met Cheryl Lang—a local, blonde beauty—while attending a business class. Dave says it was the best thing that ever happened to him. Although the debate about who made the first move has not been settled, the attraction was mutual and the two were married. Dave finished his playing career at the University of Houston, where he was a co-captain and shooting guard for the team known as “Phi Slama Jama,” going all the way to the NCAA championship. His hopes of playing professionally were dashed by a serious knee injury. Upon graduation with a business degree, he took a

desk job. Yet, he missed basketball and wanted to teach the skills he had learned. After thoughtful prayer and with wife Cheryl by his side, Dave accepted his first coaching job at Millard High School in Fillmore, Utah. He later returned to St. George to coach at Pine View High School. Soon Dave accepted an offer at Dixie, serving as assistant coach for three years before becoming head coach. His teams won multiple conference championships, compiling a winning 167-57 record, and ranking in the top 20 of the National Junior College Athletic Association for basketball six times.
Dave moved on to Brigham Young University, with eight years as an assistant coach. He served as head coach from 2005 until his retirement in 2019, where he compiled a remarkable 348-135 record, winning multiple Mountain West Conference championships and Coach of the Year honors. In his Hall of Fame acceptance speech, Dave said: “When I think of Dixie, I think of having great friends and great times, both as a student and a coach, and that good friends equal a good life.” Dave’s dad passed away two years ago, but his mother, Gae, and the extended Rose family attended the ceremony to
share in his honor, joined by former players and others he has influenced. A family man and a fighter, Dave has survived pancreatic cancer, a heart attack and a stroke. He and Cheryl have three children along with eight grandchildren. They return to the St. George area often to visit their son, Garrett, and his family and Cheryl’s two sisters. As he reflects on his career, whether as a Rebel, Eagle, Panther or Cougar, this Rose—by any name—takes pride in helping many fine student athletes, both in their athletic careers and personal lives. He says, “It was fun to coach every day.”

The year 2021 was the year of changes, some disappointing and others joyful. Perhaps a loved one passed, or a precious baby was born; one child left for college or went on a mission and an older child joyously returned to take up temporary residence with their growing family in tow; job or health challenges may have outwitted one’s sensibilities; and renewed commitments regarding spending time with family and friends may have soared to new heights. The Scottish poet, Robert Burn’s 17th century “Auld Lang Syne” musical composition of a much older oral Scot’s phrase, has become the song to mark the passage to the year ahead.
For auld lang syne, my jo, for auld lang syne, we’ll tak’ a cup o’ kindness yet, for auld lang syne (in modern English, auld lang syne means “old long since” and jo means “joy”) Once the gold-hued celebration balloons have lost their gravitational strength and beverage glasses are emptied, a New Year’s resolutions list is proclaimed—plotting healthier food selections and fitness routines, albeit fleeting in execution. Soul Food Stew
Bread bowls are lovely
INGREDIENTS • 2 lbs stew beef or cubed tofu • 2 tablespoons flour • 2 tablespoons vegetable oil • 2 cups hot water • 1 clove peeled garlic • 1 bay leaf • 1 medium sliced onion • 1 teaspoon salt • 1 teaspoon sugar

1/2 teaspoon pepper 1/2 teaspoon paprika 1 teaspoon allspice 3 large sliced carrots 2 cups baby red potatoes halved 2 cups baby yellow potatoes halved 1 12-ounce bag frozen sweet corn 1 12-ounce bag frozen green beans
DIRECTIONS Toss meat or tofu in flour. Brown in 1 tablespoon of vegetable oil in a large frypan. While cooking, caramelize/fry onions in 1 tablespoon vegetable oil in large stock pot until lightly browned. Add water, garlic, bay leaf, salt, sugar, pepper, paprika, allspice, and meat/tofu mixture to the large stock pot. Stir mixture approximately 3-4 minutes on high heat. Reduce heat, cover and simmer on low 1 hour. Remove bay leaf and garlic clove. Add carrots, potatoes, frozen corn, and frozen green beans. Cover and cook another 30 minutes or until vegetables are tender. Sprinkle or garnish individual bowl servings with parsley or thyme.

The EV6 has the same 114.2-inch wheelbase as the Kia Telluride, and compares with the width of a Ford Mustang Mach E and the wheelbase and ground clearance of a Tesla Model Y. As an actor, Corbin Allred has shared the silver screen with the likes of Kirk Douglas, Dan Aykroyd, Susan Sarandon and Natalie Portman. As an emergency medical technician and paramedic, Corbin has cared for those facing cancer, cardiac arrest, COVID-19, major trauma and debilitating depression. Now, the St. George resident is channeling both professions—and stints as a singer/songwriter, comic, writer, producer and director—into a media movement to enlighten ‘tweens and teens about the impact of social media. Through his Looking Up Foundation, Corbin hopes to create brighter, happier futures for all. Beginning at age 12, Corbin actively pursued a Hollywood film career. Now 42, his enviable resume of credits includes roles in “Robin Hood: Men in Tights,” “Teen Angel” and “Saints and Soldiers,” along with multiple LDS Cinema productions. Though

grateful for his success, the profession took a toll. “I learned growing up that I was only as valuable as someone else thought I was,” Corbin noted. “It had everything to do with how I looked; what sort of ‘product’ I was, and nothing to do with my character. Over time that can make you very vulnerable and insecure.” Fortunately, Corbin’s familial support system kept him grounded through his formative years. Yet he draws a parallel between his Tinseltown experiences and the impact of social media on the younger generation’s sense of self-worth. Working at St. George Regional Hospital, he often witnesses the grim aftermath. “When I started working in emergency medicine, I saw children who were so broken mentally, who didn’t have the capacity or tools to deal with the depression and societal pressures they’re facing with social media. I was tired of being on the ‘outcome’ end; we have to get out in front of the problem,” Corbin said. Corbin believes the best route to establishing connections with young people is more time spent in person, and much less time tethered to “smart” devices— although those devices can effect change. “If we’re going to get through to young people, we have to combine our teaching, at least partially, with the digital content they actively consume. I want to help

people think and feel. So we’ll talk about what they’re feeling, and then make a plan for growth and change.” With that aim, Corbin is writing, producing and directing short films that touch on important themes. “Sticks and Stones” captures the power of social media to terrorize and paralyze young girls, while “All That Matters” stresses that for those suffering from depression, kindness can make the critical difference between mental triumph and tragedy. Corbin and his Looking Up partners hope to connect with communities and school districts nationwide, share their films and accompanying course content, and educate and empower participants to make positive life choices. The strategy closely mirrors Corbin’s principles. “I try to focus on four things, which I call LIFT: love, inspire, fulfill and teach. If what I’m consuming or putting out there doesn’t fall into one of those categories, it’s basically a waste of my time,” Corbin said. “None of us is immune to negative influences. In a short 12 months, The Cold Plunge quickly garnered attention as a result of organic growth, wellness influencers who embraced the product, and a pandemic that forced people to focus on their health and added time at home. It’s also worth noting that the likes of Tony Hawk and Kerri Walsh Jennings swear by their cold plunges for their athletic recovery. The goal with the cold water is to lower your core body temperature, and it takes time to do that. “Water cools your body at 25 times what cold air does. Cold water is the quickest activation to do it.” Ryan shares his sentiment on doing something uncomfortable first thing in the morning to make the biggest, most positive impact on your day. What you can expect to feel is, “I did something first thing in the morning that I didn’t want to do, but I know it is good for me.” Cold plunging can be done daily or multiple times a day. It’s all about getting people to explore what works for them. They may offer up recommendations, but ultimately it’s you building a relationship with your cold plunge. Many like the morning plunge, others enjoy nighttime. For some, it cools the body down resulting in better sleep. The Cold Plunge offers four different models, all the same size, all cold at 39-55 degrees, and one that can turn into a hot tub at 103 degrees. The heat can be great for clients in really cold environments. There is also an app to control the temperature via bluetooth.
