We’ve all heard of the term green space and the healing nature of trees. This month we are exploring blue space. There’s something incredibly calming about being near water.  The tranquility of blue spaces can renew our minds and bodies, helping us return to our daily lives as better versions of ourselves. In meeting with many of you, there has been a common theme.  You love the Ozarks outdoors and our water access!

Consider implementing efficiencies that replace time-consuming tasks, carving out more “blue space” time for yourself. This will help you create space for meaningful experiences and connections. Make the most of these opportunities to connect with nature, loved ones and appreciate the simple pleasures of life.

This Independence Day, let’s celebrate our freedom to explore and set a slower pace. By doing so, we can return to our daily lives with a renewed sense of purpose and a clearer view of what truly matters.

Eric Summerville, who is known for his Dad Jokes, laughs, and is joined by his wife, Melissa. For the past 21 years of marriage, the couple have planted

son, Ashton, 20, is likewise successful, living in Columbia and working as a new car salesperson at a Hyundai dealership. “Although they do not live locally, they are still in Missouri,” Melissa says.

roots in Springfield, where they raised a family and built a beloved business — Squeegee Squad — that keeps the area’s buildings gleaming.

Fittingly, Eric and Melissa met as vendors at a bridal show. “I was putting a banner away at the end of the show and Eric came over to give me some friendly advice on how to roll it more efficiently,” Melissa says.

Knowing they would spend their lives together, there was no question they would stay in Springfield, where Melissa grew up and where Eric had called home since 1997. “We love the community spirit and beautiful landscapes in Springfield. People are very friendly and supportive and there is a vibrant local culture. It is a great place to raise a family and build a business,” Melissa says.

Today, their son, Landon, 26, is a police officer near Kansas City, where he lives with his wife, Michallia, a nurse in a pediatrics office, and their son, Theodore, who was born last November.  The Summervilles’ other

During the year, they travel to attend professional conferences to improve their services and add in a few days to take in the sights. “A conference we love to attend is in Arizona,” Melissa says. “We love going to Sedona to hike and explore.”

This love of exploration motivated the couple to launch a window-cleaning business in 2010. They joined Squeegee Squad franchise two years later and have been steadily serving communities in Southwest Missouri. “In 12 years, we went from being based in our home garage with Eric using our 1997 Dodge Caravan, employees and five trucks,” Melissa says.

They like to bring smiles to their customers. (On their website, you can see Eric donning a shirt with a Superman shield and flashing a thumbs-up.)

a bit lighthearted,” Melissa says. “This extends to how we stay connected with customers through regular updates, personalized communication and community involvement.”

They recommend cleaning interior windows at least twice a year and outside quarterly to keep them maintained and enhance the home’s curb appeal. “Having our team inspect gutters for clogs is also important as it allows us to address issues before clogged gutters send rainwater into the house,” Eric says. After every service, they make “happy calls” to ensure customer satisfaction. Additionally, they launched The Squad Club, a subscription-like service that allows customers to set up regular window, gutter and home exterior cleaning, receive savings on services as well as on options like holiday light installation.

Each year, Squeegee Squad turns into Santa’s helpers, illuminating homes and businesses for the holiday season. “We use Christmas Light Installation Pros Association Certified Installers, stock quality commercial-grade lights and offer mock ups of holiday lighting to help people envision what their home or business could look like,” Melissa says. “Lights are affixed by professional grade clips, so there is no drilling or anchoring into the house.”

“We start installations in September and then can add the timer later,” Eric says. “Since we order lights in advance, the earlier people call us, the better chance they will get what they want.”

Trends include using energy-efficient LED lights and RGB lighting, which combine red, green and blue to give color options — perfect for people who want lights beyond one season.

“There’s a growing trend toward new color choices and patterns,” says Eric, who lit his own home last year in teal and red. “It gave a neat pop — very different than classic white lights. We complemented it with beautifully lit outdoor wreaths and bows to give our home a festive daytime look.”

Vacation time is just around the corner. We are dreaming of sitting on a secluded beach, sipping exotic cocktails with umbrellas in them. But why wait till vacation to enjoy a fun cocktail? These two easy and refreshing classics will instantly transport you to paradise.

Piña Colada

INGREDIENTS:

• 1 1/2 oz cream of coconut

• 2 oz light rum

• 3 oz pineapple juice

• Juice of ½ lime

• 1/2 cup frozen pineapple

• 1/2 cup ice

• Pineapple wedge for garnish

INSTRUCTIONS:

Blend frozen pineapple and ice for a couple of seconds. Add in the liquid ingredients and blend until smooth. (To make thicker, add ice. Add pineapple juice if too thick.) Garnish with a pineapple wedge.

Bay Breeze

INGREDIENTS:

• 2 oz vodka

• 3 oz cranberry juice

• 2 oz pineapple juice

• Pineapple wedge & maraschino cherry for garnish

INSTRUCTIONS:

Put desired amount of ice in glass, add vodka and pineapple juice. Top with cranberry juice. Garnish with a pineapple wedge, maraschino cherry and umbrella (of course).

Fabulous Flatbread

This dish is from Chef Evon Profitt, the director of culinary operations for all of Westside Concepts in Arizona. This flatbread with grilled peaches, house-made rosemary paneer cheese, soppressata, fresh mint, and pistachios with a balsamic drizzle is to die for.

Grilled Peach Flatbread with House-Made Rosemary Paneer Cheese

Yield: 4 flatbreads

INGREDIENTS:

• 2 peaches cut into 8 pieces each

• 12 slices soppressata or any salami

• Fresh mint

• 1 tbsp. olive oil

• ¼ cup pistachios, chopped

• Balsamic reduction

• 4 baked naan bread

FOR THE PANEER CHEESE:

• 6 cups whole milk

• 2 tbsp. rice wine vinegar

• ½ tbsp. fresh rosemary, chopped

• 1 tsp. kosher salt

HOW TO MAKE PANEER CHEESE:

Paneer cheese is made by curdling milk using an acidic additive such as lemon juice or vinegar. Paneer cheese does not use any kind of rennet, nor fermentation or aging.

In a pot, bring 6 cups of whole milk to 200 degrees. Once milk has reached temp., stir in the 2 tbsp. of vinegar and turn off heat; milk will begin to separate. Allow milk to curd for 5 minutes, strain whey and curds into a cheesecloth-lined colander. Transfer curds to a mixing bowl and add chopped rosemary and 1 tsp. kosher salt, mix ingredients together, reserve the cheesecloth for the next step. Place the curds back into the cheesecloth, pull the corners of the cloth together, ring out excess whey from the curds, and hang for 30 minutes to continue draining. Once the curds have drained, place cheesecloth-wrapped curds back into the colander and place a heavy item on top, in order to press the curds into shape and press more of the whey from the cheese, for 3-4 hours. Use cheese fresh or keep refrigerated up to 4 days.

FLATBREAD:

Brush olive oil onto both sides of naan flatbread, and place in oven on rack for 10 minutes at 400 degrees, or grill for 2 minutes each side. Grill peach slices for 2 minutes each side, or place in oiled sauté pan till each side begins to caramelize. On a cutting board, lay flatbread down, and place grilled peach slices around flatbread. Take small pieces of Paneer cheese and place throughout over the peaches. Be creative and find place for the soppressata or salami of your choice. Garnish with crushed pistachios and torn fresh mint. Cut flatbread, transfer to serving plates, and drizzle with balsamic reduction.

Luke Bryan makes a stop at Thunder Ridge Nature Arena on Saturday, July 27 as part of his Mind of a Country Boy tour. He will be joined by Larry Fleet, Chase Matthew and Alana Springsteen. Parking is available for purchase in the ticket purchase process. A loop is also available from Big Cedar Lodge.

This event will offer backpacks, hygiene items, groceries, immunizations, connections to community resources and more! Plus, a special appearance from KC Wolf, the Kansas City Chiefs Mascot!
