Could there be anything better than chocolate and wine? As we move into slightly cooler weather here in Las Vegas this month, it’s time to get out and explore our favorite dishes and beverages around town (or maybe a destination or two).
We had the pleasure of sitting down at a few spots for this month’s issue — everything from Shaq’s Big Chicken to a road trip out to Allegretto Vineyard Resort in Paso Robles, California. Fall menus are in full swing, so get your tastebuds ready; you are in for a treat. We also included a somewhat hidden gem with Jean-Marie Auboine Chocolatier — the maker of award-winning handcrafted artisan chocolates made right here in Las Vegas.
If you’re like me, fall has always been the time of year that brings back memories from sitting at home as a child in my family’s kitchen with wonderful smells wafting — everything from pumpkin and apple pies to banana breads and more. Food has always been a big part of my family growing up. Food brings us together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.
This month, as we gear up toward the holidays, take some time to break bread with family, friends (new or old), and slow down just a bit. With the crazy hustle and bustle, you may not know how much it will mean to the other person.

Make-A-Wish Southern Nevada fulfilled the wish of local teen Maliylah Silvba, who, facing a nervous system disorder, desired a membership at the accessible DRIVEN Neurorecovery Center. The surprise reveal took place at Findlay Subaru Las Vegas, attended by family, friends, dealership staff, and DRIVEN Neurorecovery Center and Make-A-Wish Southern Nevada representatives. Findlay Subaru granted her a 2-year membership, complete with roundtrip paratransit transportation.
The Shade Tree, a 24-hour accessible emergency shelter and resource center designed to specifically meet the needs of domestic violence and human trafficking survivors and their children, is seeking donations of new and gently used luggage, suitcases, duffle bags, and backpacks for its clients, who often arrive at the shelter with little or nothing, including a reliable bag in which to carry their belongings. With The Blondetenders, you’re not just working with a regular bartending service; you’re collaborating with an all-encompassing service where every client will experience all of their needs being taken care of.
“In 2018, my friend and I were brainstorming names to ensure that we would give an idea of the vibe our new business would have,” said Mallory. “We knew we were fun and energetic, and we were both blonde - and when it came to our minds, we knew that was it!”
The Blondetenders team is a powerhouse, ensuring everything is stress-free and perfect.
“Think of The Blondetenders as hiring a close friend to bartend for an important milestone. There is no event too big or too small for us,” said Mallory. “We like to envision ourselves as not just bartenders but that go-to person who can help out during an event. We want to take any of the stress that may come with planning off our clients, making sure they enjoy themselves.”
Each client will receive two bartenders, two prepped garnishes, bar tools, a neon cheers sign, and more. The Blondetenders like to treat each of their clients individually regarding cocktails and experiences.
“First is the initial consultation call for needs and expectations, information about our business, and what's included,” said Mallory. “I always send over a proposal to the new client with all of the information that was discussed, any add-ons, information on the event, and how to pay.”
There is an optional add-on of a signature cocktail curation and signage.
“I work with my client on coming up with what drinks they will want for their party, the signature drink names, and go over what design they want for the menu signage,” said Mallory. “We have options for drinkers of all varieties, so we like to be as creative as we can.”
Mallory and the team also ensure each guest is hydrated equally while they serve.
“It is best for clients to book their event with us as early as they can, but a

month out minimum is preferred,” said Mallory, “We always try to make exceptions for last-minute events and try to make accommodations, if possible.”
Leading up to your event, clients will need to pay the deposit, make sure the bar area is stocked with what The Blondetenders need, and communicate with Mallory about all questions and concerns. Such as wanting a themed party? The Blondetenders will show up on theme, happily.

Shaquille O’Neal may have scored plenty of slam dunks on the court during his legendary basketball career, but now the 15-time NBA All-Star is scoring a slam dunk in the culinary world thanks to Big Chicken.
The fast-casual chicken concept opened its first location just off of the Las Vegas Strip in 2018 and has since opened more than a dozen locations across the country, including one in southwest Las Vegas earlier this year. Best known for its tasty crispy chicken sandwiches — like Uncle Jerome’s Nashville Hot chicken sandwich created by O’Neal’s longtime bodyguard, Jerome Crawford — Big Chicken fuses O’Neal’s homecooked childhood favorites, including a Cheez-It-crusted mac n’ cheese inspired by his mom Lucille’s recipe, with today’s trending flavors.
“Being based here in Las Vegas, we know that many locals don’t travel to the Strip and neighboring locations on a regular basis, so we wanted to bring a location where locals can enjoy Big Chicken on a regular basis with a drive-thru to offer the added convenience,” said Big Chicken’s managing partner, Matthew Silverman. “We also use the Tropicana location as one of our test stores, so at any given time, you may see us trying out new menu items before we roll them out to all our other locations.”
Silverman noted that while O’Neal may stop by the restaurant whenever he's in town to get The Original Big Chicken sandwich “with American cheese and no pickles,” it was important for the Hall of Famer that Big Chicken’s food spoke for itself. Aside from an autographed Shaquille O’Neal jersey on the wall and other subtle touches throughout the 68-seat eatery, like an NBA Jam arcade game that guests can play for free, Big Chicken isn’t themed after the basketball icon or even the sport in general. Instead, the true stars of Big Chicken are its preservative-free premium chicken that’s been humanely raised with no cages,
hormones, or antibiotics and its shakes made with all-natural Southern vanilla ice cream produced using hormone-free milk.
Although there are currently only two locations in Las Vegas, Big Chicken recently announced a franchise agreement with local restaurateur Vincent Alba to open eight additional locations in Las Vegas and Henderson in the future. With nearly 250 Big Chicken locations in development worldwide, soon Las Vegas foodies will never be far away from its flavorful offerings — even while on vacation!

Allegretto Vineyard Resort — your next fall road-trip destination
A little over a 5-hour drive from us sits Allegretto Vineyard Resort — a true wine oasis. After a quick road trip through the southwest desert and Californian farmlands, you arrive into the heart of Paso Robles.
Approaching the resort, you can feel the atmosphere begin to take over. Passing by other local wineries and pulling into the resort, you experience the blending of Italian heritage and world-class wines. The common theme at the resort is the Cello; everything from the shape of the property (the north edge of the property curves much like the instrument) to the design of the courtyard, the names of the wines, and the name of their on-site restaurant.
Allegretto’s resort includes over seven acres, with one of its three local vineyards sitting directly on the property. Working with Michelle during our tasting, she guides you through the full experience - working with your palette to get the perfect taste from each varietal.
The tasting list included a 2022 Cello Chardonnay, which is finished in stainless steel barrels, and was light, crisp, and citrusy. The 2019 Heart of the Vibe, a blend of Petit Verdot, Cabernet Sauvignon, Malbec, and Tannat, had hints of lily and lavender and reminded me of my days in the Oregon wine country. The 2018 Cabernet Sauvignon from the Willow Creek Vineyard was a surprise because of how clean it finished. Not being a big Cab drinker, this one was very agreeable. The 2020 Cello Red, a blend of Cabernet Sauvignon, Tempranillo, and Tannat. Ending with their 2018 Tannat from their Allegretto Vineyard on property.
As someone early on in their wine journey, each tasting was truly unique and tasteful. The progression from Chardonnay to Tannat helped the palette develop and enjoy the flavors and notes of each unique bottle. To my surprise, CONTINUED >
the robust Tannat was easily the favorite. The grapes originated from southern France through Uruguay and are now grown across the globe. With notes of butterscotch, cherry, and tobacco, it was rich and smooth. Tannat is also touted as one of the “healthiest” wines due to its high level of antioxidants.
Shortly after the tasting, there was little time to explore the resort itself, from the breathtaking art pieces to the peaceful courtyard, bocce ball court, and the chapel. I think the most impressive piece may have been a cross-section of a sequoia tree that was felled in 1952, dating back to before 214 BC (before the Great Wall of China was built).
Moving on to dinner, we sat down at Cello Ristorante, the on-site restaurant and bar. Looking for the absolute best experience to share with our readers, I entrusted our server, Betsy, to pick out their top dishes and drinks. She also informed me about the fact that they have not only resort guests who eat here but also regular locals.
I started off with one of Cello’s signature cocktails, the New Fashion — an amazing twist on the regular Old Fashioned that includes Basil Hayden Bourbon, Nitro-Infused Vanilla Espresso Turbo (made in-house and infused with a cinnamon smoke directly from a fresh cinnamon stick, an orange, and Angostura bitters.
Betsy started our meal with the Shrimp & Risotto dish, made with garlic roasted shrimp, spring peas, mascarpone, baby arugula, pecorino romano, truffle, tomato confit, and Calabrian romesco. As I took my first bite, it was almost an out-of-body experience. The blends of flavors from the garlic shrimp, bitter arugula, and smooth cheeses didn't last long on the dish.
Shortly after, the 16-ounce Lamb Rack and a glass of the 2017 Tannat arrived. After admiring the truly beautiful plating (stacked upright and together), it was time to revel in the dish. Paired with fresh grilled vegetables, a buttermilk and confit garlic mash, and drizzled with a Tannat demi-glace, this dish was more impressive than the first dish, which I thought would be hard to top.
Finally, it was time for the Triple Chocolate Bomb. A chocolate soufflé cake with raspberry dark chocolate mousse, framboise scented ganache, topped with toasted almonds, chocolate chunks, fresh raspberries and blackberries, and a white chocolate sauce. The softness of the cake and mouse, with the crunch of the almonds, made this subtle, sweet, and too good to pass up and completely devour.

Locals hungry for a Strip-quality dining experience on the southwest side of town that won’t break the bank needn’t look any further than Locale Italian Kitchen.
Since opening in 2019, the intimate dining destination at 7995 Blue Diamond Road has become one of Las Vegas’ most beloved restaurants. Open nightly for dinner and Sunday for brunch, the 100-seat restaurant is known as much for its impeccable Italian fare as its affordable prices, including a seasonal prix fixe menu that highlights some of the restaurant’s made-from-scratch signature dishes and seasonal offerings.
“We wanted to offer our guests a seasonal menu with some great food selections that also had a great value,”
said Locale’s chef, Jacob Williamson. “We take great pride in producing Strip-quality food at an affordable price point.”
Diners can even savor a 36-oz. tomahawk ribeye as part of the seasonal prix fixe menu for an additional fee, or they can order Locale’s Tomahawk for Two prix fixe menu every Tuesday where couples can share the succulent steak alongside two starters, two sides and a dessert for one low price. Locale also offers an all-day happy hour menu at its bar featuring food and drink specials, an affordable kids’ menu, and a selection of bottomless libations during brunch for just $25, making it easy to see why it has become a Mountain’s Edge favorite.
Locale’s fall soup is not only delicious but also easy to make at home.
Soup Ingredients :
• 1 3-lb. butternut squash, halved vertically, seeds removed
• 1 cup yellow onions, thinly sliced
• EVOO (extra virgin olive oil) as needed
• 2 tbsp. chopped garlic
Directions:
1. Preheat oven to 375 degrees and line a rimmed baking sheet with parchment paper. Place butternut squash on pan, lightly coat inside of squash with EVOO, and sprinkle with kosher salt.
2. Place squash face down and roast until the flesh is soft and tender (about an hour). Once cooked, remove from oven, and allow to cool for 10 to 15 minutes.
3. While squash is cooling, add 1 tbsp. of EVOO to a medium-sized saucepot over
• 2 tbsp. honey
• 1/8 tsp. ground nutmeg
• 3 to 4 cups vegetable or chicken stock
• ½ cup heavy cream
• Kosher salt as needed
medium heat. Add onions and cook until translucent. Then, add garlic and cook until fragrant, stirring constantly. Transfer contents and squash flesh to a blender. Discard skin.
4. Add remaining ingredients to blender, beginning with three cups of stock (more can be added later to thin out soup, if needed).
5. Purée until smooth.
Crème Fraîche Ingredients : Directions:
• ½ cup crème fraîche
• ½ tbsp. finely chopped Calabrian chilis, oil completely drained
• ¼ tsp. paprika
• ½ tbsp. honey
• Kosher salt to taste
1. Combine ingredients in a small mixing bowl and purée with an immersion blender.
2. Check seasoning and adjust, if necessary.
3. Drizzle sauce on top of soup just prior to serving.

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.
